The Effects of Student Activity Centered Career Exploring Program on the Career Maturity Level in the Unit "The Choice of Career and Job Morals" of the 9th Grade Technology and Borne Economics (기술$\cdot$가정 9학년"진로의 선택과직업윤리"단원에서 학생활동 중심의 진로탐색 프로그램이 진로 성숙도에 미치는 영향)

  • The purposes of this study are to develop and apply the student activity centered career exploring program and to verify effectiveness on the students' career maturity level. The subjects of this study were 137 students. 4 classes of a middle school in Jinju. They were divided into two groups, the experimental group and the control group. For experiment, the career exploring program was input to the experimental group for 14 class hours. The results of this study are as follows: 1. The student activity centered career exploring program applied to the unit $\ulcorner$The Choice of Career and Job Morals$\lrcorner$ was effective in raising the attitude of the career maturity level. As the result of verifying the differences. there was a statistically significant difference between the experimental group and the control group in the planning quality and the attitude of works. 2. The student activity centered career exploring program applied to the unit $\ulcorner$The Choice of Career and Job Morals$\lrcorner$ was effective in raising the ability field of the career maturity level. The experimental group showed more statistically meaningful differences in the knowledge of jobs, the information exploring, and the self-understanding than the control group. Consequently. the effects of the student activity centered career exploring program on the career maturity level in the unit $\ulcorner$The Choice of Career and Job Morals$\lrcorner$. all the fields of the career maturity level showed the statistically meaningful differences except the independence quality of the attitude field and the decision making of the ability field. So it is concluded that the experiment program elevated the students' career maturity level. However. as the result of analysing independent sample t-test of the pre-test and the post-test. the program was ineffective in the independence quality and the decision making. When this career exploring program is applied to the unit $\ulcorner$The Choice of Career and Job Morals$\lrcorner$. it is recommended to strengthen the activities to cultivate the independence quality and the decision making power.

Textbooks and Textiles: Fashion in East Asia, 1920-1945

  • From the 1920s to 1945, East Asia experienced radical social change with the introduction of new fashion styles, and new ways of thinking, from the West. The emergence of a new generation of "new women" educated in modern schools was part of this phenomenon, and functioned as a trend-setting influence in East Asian society. In schools, education in dressmaking, sewing, and home economics were important parts of female education. Adopting a new fashion style is, by necessity, accompanied by the new technology of dressmaking. Given that ready-made clothing was not generally available, dressmaking education also served to introduce a new material culture. In Korea and Taiwan under Japanese colonization, the greater part of school curricula and textbooks mirrored those in Japan, which enabled these countries to develop and adopt transnational styles as well as local styles. This research explores the transition of women's fashion in East Asia in modern and colonial conditions from the 1920s to the 1940s by analysing curricula and textbooks on dressmaking in comparison with the prevailing styles in each region. This is expected to suggest the impact of modernity in East Asia and the transnational styles of fashion in colonial Korea and Taiwan, as well as Japan, developed within the local culture. Colonial conditions are also discussed in terms of their impact and limitations in the transition of styles.

  • It is interesting that the costume in the period of romanticism was very fantastic and peculiar in its aspects. The romanticism in the fashion theme of these days' mode represents the image of this France romanticism. Costume has unseparable relations with the style of art in the same period. Especially, plastic art has logical connection with costume because it is an art through silhouette, line, color and texture felt by visional and solid feelings. This kind of study is important in order to understand the fashion of today, to anticipate the fashion in future and to get recognition of costume as a genre of arts. This study is to analyse and compare the general features in the grown-ups' everyday clothes of France from 1815 to 1850 when costume in the period of romanticism reached its peaks with the art of architecture, paintings, sculpture and technology, with the aid of documentary recordings. The above study explain that costume is expressed by the same plastic art of the period if it coexists in the same cultural background. Finally, we can plan the costume in future on an artistic dimension by understanding correctly the characteristics of plastic art which modern costume pursue from an artistic point of view.

Changes of Microbiological and General Quality Characteristics of Gamma Irradiated Chungkukjang (감마선 조사된 청국장의 미생물 및 일반품질 특성 변화)

  • The effect of gamma-irradiation on the microbiological and general quality changes of the Chungkukjang was studied. Chungkukjang was prepared, irradiated at 0, 5, 10 and 20 kGy, and then stored at $25^{\circ}C$ for six weeks. The results showed that the vegetative Bacillus cell was decreased by 5 log cycles with dose of 10 kGy with 1.78 kGy of $D_{10}$ value. Also, Bacillus was nearly eliminated by 20 kGy and that survived 10 kGy gamma irradiation was decreased significantly with the duration of storage period. The formation of $NH_{2}-nitrogen$ and $NH_{3}-nitrogen$, acidification and browning were repressed by gamma irradiation. Therefore, it was considered that the Chungkukjang treated with gamma irradiation maintained better quality than that of the control with storage.

  • In succession to the previous paper(Korean J. Food Sci. and Techn., 21(2), 300, 1989), to investigate effect of salting process on physico-chemical properties of Korean radish cubes processed for kakdugi Ascorbic acid content, ${\alpha}-amylase$ activity, the penetration rate of glucose and red-pepper juice into the radish cubes, and aerobic microbial counts (bacteria, yeast and mold) were investigated during salting (packout ratio : 1:1g/ml) of radish-cube$(2{\times}2{\times}2cm)$ for kakdugi in the 15%(w/v) sodium chloride solution. For 6hr salting, ascorbic acid was reduced from 38.5mg% to 15.7 mg%, ${\alpha}-amylase$ activity was gradually increased until 5hr salting, and then deceased, Amount and rate of penetration of glucose and red-pepper juice(on base of redness) into the salted radish cube were both higher than raw cubes, and microbial counts were decreased, and mostly within one hour of salting.

A Survey on the Sodium Chloride Content of Common Restaurant Meals in Seoul Area (서울시내 대중식사중 식염함량에 대한 조사연구)

  • This survey was conducted to Investigate the NaCl contents of meals taken from common restaurants in Seoul area and further to estimate the total dietary intake of salt from the meals. The samples included Seoleung-tang (beef and rice soup)/Galbitang (beef-rib soup), Yeukkye-jang (spicy beef soup), Doenjangchigye-bab (boiled rice with soy paste stew), Bibim-bab (boiled rice with assorted mixtures) and Bibim-naengmyon (buck wheat vermicelli with assorted mixtures). The average content of NaCl for each sample was determined by saltmeter and its daily intake level was estimated. Doenjangchigye-bab was shown the highest concentration of NaCl Doen-jangchigye-bab was separated into drained residue and fluid, and the average NaCl content in the fluid was higher than that in the residue. In comparision of northern and southern region of Seoul divided by Han river, there was no significant difference in the content of NaCl. The average content of NaCl per meal was 10.6g, and from these data, the daily dietary intake of salt for adults was estimated to be 28.5g.

Quality Evaluation of Strawberry Jams Prepared with Refined Dietary Fiber from Ascidian(Halocynthia roretzi) Tunic (우렁쉥이(멍게) 껍질로부터 정제된 섬유소 첨가 기능성 딸기잼의 품질평가)

  • Strawberry jams were prepared with addition of 1.0 and 2.0% dietary fiber isolated from ascidian (Halocynthia roretzi) tunic for recycling wastes of seafood source and developing new food products. The texture of the jams examined were using a back extrusion rig. All of the rheological parameters decreased in the fiber-enhanced jams. Viscosity profiles were also decreased in the fiber-enhanced jam samples. Hunter L' and a' values increased in the fiber-enhanced jams, accordingly revealing reddish color. As a result of sensory evaluations, the result of taste tests and overall acceptability were significantly acceptable. In the list of acceptability factors, except spreadibility, jam where 1% fiber was added, high sensory scores and preferable acceptability were noted.

  • The purpose of this study is to develop ICT utilization learning materials for a chapter titled 'Environment Friendly Clothing and Reform of Clothing' in technology and home economics textbooks for Year 2 students in middle school. The research methods were selected from ten types of junior high school technology textbooks, which were revised in 2009, and mainly focused on items such as jeans, shirts, shirts, cardigans, and skirts, Using selected textiles and basic design t-shirts, five works were made using structural and decorative details. The results of this study are as follows. First, textile products shown in the chapter 'Environment Friendly Clothing and Reform of Clothing' are most commonly worn and found in daily life. With regard to a reuse method, structural changes to clothing are proposed. For example, cases relating to the changing of a neckline or the use of a shirt or a sleeve are presented. There are some decoration methods adapted in reuse; using ornaments, such as spangles and emblems, patchwork, shirring and the constucting of collages. Second, following the plan, 5 items are designed with T-shirts, shirts, cardigans and skirts. For the T-shirt design, other fabrics including organza and neoplan are used from design point of view, in addition to reused textile products. Detailed structural changes of necklines, sleeves and collars and detailed and the ornamentation method including shirring, smoking, patchwork and collages are used. Third, this study proposes 6 categories (profile, design planning, diagram, reused textile product, production method and order and pictures of T-shirts developed) under the title of 'T-shirt Made Out of Disposed Clothing', selecting a blog as active teaching and learning material as a part of the ICT utilization in educational settings.

Studies on Lipids and Proteins of Rabbit Meat -I. Emphasis on lipid component of rabbit meat- (토끼고기의 지방질과 단백질에 관한 연구 -I. 지방성분을 중심으로-)

  • Among animals, the rabbit is known to be affected most sensitively by dietary changes and to be most susceptible to atherosclerosis. The exact reason is still unknown as to whether the primary cause is intrinsic (tissue itself) or extrinsic such as a blood factor which could be influenced by various dietary means. It is of utmost importance to check the nutritional quality of rabbit meat before it is accepted and adapted as a daily food item. To evaluate nutritional quality of rabbit meat, studies on various aspects of lipid components were carried out in comparison with other animal meats such as beef, pork and chicken also included in the study was the question whether the cooking and storage conditions influence the composition of fatty acids and cholesterol level. Some results and findings are listed below: 1. The content of linoleic acid (18 : 2), one of the essential fatty acids, was much higher in rabbit meat compared to the other meats. The Percentages of this Polyunsaturated fatty acids, was much higher in rabbit meat compared to the other meats. The percentages of this polyunsaturated fatty acid in terms of total fatty acids were $37.3{\pm}3.7$, 5.9, 14.5, and 21.9% for rabbit, beef, pork, and chicken respectively. The degree of unsaturation was high not only in meat but also in liver and adipose tissue of rabbit. The values of iodine number, the indication of degree of unsaturation, were known to be $102{\sim}107$, $32{\sim}47$, $46{\sim}67$, and $55{\sim}77$ for rabbit, beef, pork, and chicken respectively. Such a high proportion of this polyunsaturated fatty acid contained in rabbit meat could be harmful due to their Peroxidation effect. 2. A small amount of lower (short chain) fatty acids was isolated from rabbit tussues, which were not observed in other animal's tissues. The significance of this small amount of short chain fatty acids contained in rabbit meat remained an open question. 3. The concentration of total cholesterol in rabbit meat was similar to that of otherr but the content of esterified cholesterol was higher in rabbit meat. This was probably due to the perference of cholesterol to esterify with unsaturated fatty acids. By roasting the percentage of Polyunsaturated fatty acids was decreased while saturated palmitic acid was proportionally increased. 4 The composition of fatty acids were affected more by dry heat than moist heat. More research should be pursued to improve methods of preservation and storage to prevent possible peroxidation and rancidity problems of rabbit meat. In the meantime, the public should be informed to eat fresh rabbit meat and not to store it for a long period of time. This study was supported by the Ministry of Science and Technology in Korea.

A Study on Policy and Movement to Strengthen the Competitiveness of U.S. Textile and Apparel Industries (미국 의류직물산업의 경쟁력 강화정책 고찰)

  • The U.S. response to increased international competition was examined in the present study in order to have more comprehensive understanding of the U.S. textile and clothing market. The method employed to conduct the study was the analysis of the written materials, interview with professionals, and the survey of the actual situations of the U.S. textile and apparel industries. The results are summarized as follows; 1. Official U.S. textile and apparel trade policy has been quite has been quite protective since 1950's. The protective trend has been embodied in Japan Cotton Textile Export Control (reciprocal trade agreement signed by the U.S. and Japan in 1957), Short Term Arrangement Regarding International Trade in Cotton Textiles, Long Term Cotton Textile Arrangement (1962∼1973), and Multi-fiber Arrangement (1974∼). Other governmental programs designed to improve the competitiveness of the U.S. textile and apparel industries include Long-term Textile and Apparel Products Export-expansion Program, and 807 Trade to take labor cost advantage. 2. Along with the quite protective governmental trade policy, the corporate responses have been made such as new sourcing mixes, investment in technology, specialization in the textile and apparel industries, and recent strategies pursued by retailer's. The apparel industry was subject to pressure from imports that increased at moderate levels, and the U.S. textile and apparel industries have made extensive efforts to adjust to the increasing competition from abroad. The textile and apparel industries have taken steps to increase labor productivity through automation, to speed management to create and introduce new products and new methods, and have lowered indirect overhead costs. Several industrywide promotion campaigns have attempted to establish a greater public awareness of international competition and to develop a preference for apparel produced in the United States. 3. Regarding these response of the U.S. and other situations of world textile and apparel trade market, much of the sense of crisis that pervades Korean textile and apparel industries has to do with the problem of adjusting government and corporate policy. Textile and apparel industry of Korea faces on going pressure to reduce costs, improve quality, increase service, develop new markets, diversify, and differentiate itself from its foreign competitors. The strategies that have been adopted in the past have generally worked in the past, but the time has come to adopt strategies that reflect present conditions. If this is not done, then we stand to lose large segments of these industries, which once lost will not easily be regenerated.
