Effects of Soil Selenium Supplementation Level on Selenium Contents of Green Tea Leaves and Milk Vetch

  • This study was conducted to investigate the effects of soil selenium (Se) supplementation level on Se contents of green tea and milk vetch. Four different concentrations of sodium selenite ($Na_2SeO_3$) solutions (0.0, 3.3, 33.0 and 165.0${\mu}g/mL$) were prepared and one liter of each solution was well mixed with 10 kg of compost (cowpea soil) to give four different levels of Se-containing soil: $T_1$, 0; $T_2$, 33; $T_3$, 330; $T_4$, and 1,650${\mu}g$/100 g soil. Green tea plants and milk vetch were individually cultivated in those soils for 60 days. Se contents of freeze-dried green tea leaves were 6.87, 10.40, 12.04, and 20.19 ${\mu}g/g$, respectively; all of which were significantly different (p<0.05) from the others except for $T_2$ and $T_3$. The results showed that Se-contents of green tea leaves were increased 1.5$\sim$2.9 times as the Se level in the soil increased. Regression equation between Se contents in green tea (Y) and soil Se supplementation level (X) was: Y=0.007X+8.857. However, Se contents in the milk vetch were increased significantly (p<0.05) more with the same treatments $T_3$ (74 ${\mu}g/g$) and $T_4$ (187$\mu$g/g) in comparison to those at $T_1$ (5.0 ${\mu}g/g$) and $T_2$ (12.0$\mu$g/g). The increases ranged from approximately between 2.4 to 37.4 times that of the control group. Regression equation between Se contents in milk vetch (Y) and soil Se supplementation level (X) was: Y=0.1063X+15.989. The large difference of Se contents between green tea leaves and milk vetch would be attributed by the difference of protein contents between the 30% or higher protein-content of legumes and 15$\sim$20% protein of shrubs. The present study clearly indicates that green tea leaves and milk vetch can be enriched in selenium by supplementing the soil with Se. Therefore, Se-enriched green tea or milk vetch powder could be utilized as functional foods in Se-fortified green tea drinks or salads, or as food additives to enhance the daily intake of Se.

생쑥과 덖음쑥차의 향기성분 (Volatile Flavor Compounds from Raw Mugwort Leaves and Parched Mugwort Tea)

  • 한국에서 자생하고 있는 쑥(A. asiatica nakai)을 이용하여 전래의 녹차제조법에 따라 덖음쑥차를 제조하였다. 생쑥과 덖음쑥차의 휘발성 향기성분을 Tenax trap으로 포집한 다음, GC-MS로 분리, 동정한 결과 58가지의 화합물이 동정되었다. 이들 휘발성 화합물 중 향의 특징으로 보아 쑥향과 유사한 11가지 향기성분은 benzaldehyde, pinene, myrcene, cineole, 2-pyrrlidinone, camphor, thujone, 1-acetylpiperidine, caryophyllene, coumarin 그리고 famesol이었으며, 이들의 혼합물은 4월에 채취한 쑥의 향기를 그대로 재현할 수 있었으므로 이들 11가지 화합물을 덖음쑥차의 품질을 측정할 수 있는지 표가 되는 화합물로 생각되었다.

조리방법에 따른 감나무잎차의 Ascorbic Acid 함량에 관하여 (Studies on Ascorbic Acid contents in Persimmon leaves tea by different cooking methods.)

  • The purpose of this experiment was to find out the contained quantity of ascorbic acid form persimmon tea. They were different according to the month when the persimmon leaves were picked, the way of cooking and the length of time spent after cooking. The results of experiment can be summarized as follows : 1. About the same contained quantities of ascorbic acid were obtained among the persimmon leaves picked in September and October, and small contained quatities of it were obtained among the persimmon leaves picked in November. Therefore it can be concluded that the persimmon leaves picked in September and October are better than the leaves picked in November for permision tea. 2. According to the way of cooking the contained quantity of ascorbic acid were different. When green leaves were washed and boiled for 1 monute and dried in the shade for 48 hours, the largest contained quantity of ascorbic acid were obtained. When they were steamed in the steam box for 1 minute and 30 seconds and dried in shade for 48 hours medium contained quantity of ascorbic acid were obtained . The contained quantity of ascorbic acid were decreased when green leaves were dried without boiling when green leaves were dried without boiling or when branches of leaves were taken away by hand and dried. 3. The contained quantity of ascobic acid were also different according to the length of time spent after cooking. After 15 minutes from cooking it began to increase and after 150 minutes it reached the highest degree. After this time it began to decrease. 4. the best fragrance, taste and color of the Persimmn Tea are found out, after steaming in the steaming box for one minute and half second and after drying in the shade for fourty-eight hours.

완효성 비료 분시방법에 따른 첫물차의 수량 및 품질 (Yield and Quality of the First Harvested Tea Leaves as affected by Split-Application of Slow-Release Fertilizer)

  • 관행시비 (4회 분시)에 비해 완효성 비료 2회 분시가 수량이 12.5% 증수하였으나, 1회 분시는 $6{\pm}3%$ 감소하였다. 관행시비에 비해 완효성 비료 2회 분시가 총질소, 총 아미노산, 엽록소, 비타민 C 함량과 감칠맛 주성분인 theanine, glutamic acid, arginine 함량이 많았고, tannin 함량은 적은 편이였으나, 완효성 비료 1회 분시는 2회분시와는 반대의 경향을 나타냈다. 형상, 향, 맛 등 제다품질은 완효성 비료 2회분시가 1회분시나 관행 시비 4회 분시에 비해 우수하였다. 결론적으로 완효성 비료의 분시효과가 우수한 이유는 비료성분이 서서히 용출되어 나와 효과적으로 작물에 공급되는 한편 비료성분의 손실을 줄일수 있었기 때문으로 판단된다.

Effects of green tea or $Sasa$ $quelpaertensis$ bamboo leaves on plasma and liver lipids, erythrocyte Na efflux, and platelet aggregation in ovariectomized rats

  • This study was conducted to investigate the effects of $Sasa$ $quelpaertensis$ bamboo and green tea on plasma and liver lipids, platelet aggregation, and erythrocyte membrane Na channels in ovariectomized (OVX) rats. Thirty female rats were OVX, and ten female rats were sham-operated at the age of 6 weeks. The rats were divided into four groups at the age of 10 weeks and fed the experiment diets: sham-control, OVX-control, OVX-bamboo leaves (10%), or OVX-green tea leaves (10%) for four weeks. Final body weight increased significantly in the OVX groups compared with that in the sham-control, whereas body weight in the OVX-green tea group decreased significantly compared with that in the OVX-control ($P$ < 0.01). High density lipoprotein (HDL)-cholesterol level decreased in all OVX groups compared with that in the sham-control rats ($P$ < 0.05) but without a difference in plasma total cholesterol. Plasma triglycerides in the OVX-green tea group were significantly lower than those in the sham-control or OVX-control group ($P$ < 0.05). Liver triglycerides increased significantly in the OVX-control compared with those in the sham-control ($P$ < 0.01) but decreased significantly in the OVX-green tea group compared with those in the OVX-control or OVX-bamboo group ($P$ < 0.01). Platelet aggregation in both maximum and initial slope tended to be lower in all OVX rats compared with that in the sham-control rats but was not significantly different. Na-K ATPase tended to increase and Na-K cotransport tended to decrease following ovariectomy. Na-K ATPase decreased significantly in the OVX-green tea group compared with that in the OVX-control group ($P$ < 0.01), and Na-K cotransport increased significantly in the OVX-bamboo and OVX-green tea groups compared with that in the OVX-control ($P$ < 0.05). Femoral bone mineral density tended to be lower in OVX rats than that in the sham-control, whereas the green tea and bamboo leaves groups recovered bone density to some extent. The results show that ovariectomy caused an increase in body weight and liver triglycerides, and that green tea was effective for lowering body weight and triglycerides in OVX rats. Ovariectomy induced an increase in Na efflux via Na-K ATPase and a decrease in Na efflux via Na-K cotransport. Furthermore, consumption of green tea and bamboo leaves affected Na efflux channels, controlling electrolyte and body water balance.

녹차생엽의 자숙 및 튀김에 의한 화학성분 변화 (Changes in Chemical Components of Green Tea Leaves during Blanching and Frying)

  • Changes in chemical components of green tea leaves at different cooking conditions-blanching and frying-were surveyed as a method of utilizing low graded green tea leaves which missed appropriate plucking times. There was no significant difference in protein content during cooking. But contents of chlorophyll, tannin, vitamin C and caffeine were decreased during cooking, contents of chlorophyll and caffeine showed a greater decrease in frying than blanching. Content of total amino acid of green tea leaf was 15.8% and blanching showed bigger diminution of its content in comparision with frying during cooking.

감잎차를 위한 품종별 감잎생산력과 성분분석 (Analysis of Components and Leaves Yield by Cultivars for Persimmon Leaf Tea)

  • Comparing and analysing the productivity and the main ingredients of persimmon leaves by cultivars were conducted to improve the quality and productivity of the per-simmon leaf tea. As a result of the survey, Dungsi was decidedly good in growth co-ndition of survival rate, stem diameter and the number of shoots etc. Also , DUngsi had the highest leaf productivity of 567 leaves and the leaf weight of 1.98 kg per one plant after three years of planting . On accounts of productivity, ingredient analysis and panel test etc. we collectively through that Dungsi was the best cutltivar for the persimmon leaf tea.

Determination of Catechin Compounds in Korean Green Tea Infusions under Various Extraction Conditions by High Performance Liquid Chromatography

  • Liquid chromatographic methods with UV and fluorescence detection have been used to determine the levels of (+)-catechin, (-)-epicatechin, (-)-epicatechin gallate, and (-)-epigallocatechin gallate in Korean green tea infusions. The extracts of Korean green tea leaves or powders in water at various temperatures (100 ${^{\circ}C}$, 80 ${^{\circ}C}$, 60 ${^{\circ}C}$) and time, were washed with chloroform and re-extracted to ethyl acetate. The ethyl acetate phase was dried and re-dissolved in methanol and analyzed. Five catechin compounds were separated by gradient elution. The flavonoids were found decomposed on prolonged extraction, thus exhaustive extraction by a Soxhlet apparatus was found useless for green tea. Some unknown components were found in the extracts at 100 ${^{\circ}C}$. When the green tea was filtered and re-extracted with new fresh water, still some flavonoids were extracted. However, the contents of flavonoids in the third extract were found negligible. The flavonoid extraction rate of green tea powders was higher than that of green tea leaves, but flavonoid decomposition of green tea powders was also faster than that of green tea leaves. The traditional way of drinking green tea was found appropriate in view of flavonoids intake.

유기농 녹차잎을 이용한 녹차음료의 개발 (Development of Green Tea Beverage with Organic Tea Leaves)

  • 본 연구는 유기농 녹차 음료를 개발하기 위해 유기농 다엽의 카테킨류 함량을 비롯한 물리화학적 특성을 분석하였다. 다엽은 일체의 화학비료와 농약을 사용하지 않고 유기농 기법으로 재배한 시료를 사용하였고 채취시기가 다른 4월, 5월, 6월차와 반발효차를 수매하여 실험에 사용하였다. HPLC를 이용하여 다엽의 카테킨류 함량을 정량 정성 분석하였으며 녹차추출물의 색도와 pH를 측정하였다. 0.5%의 4월, 5월, 6월, 반발효차의 카테킨류는 각각 66.24, 29.19, 57.11, 5.27 ${\mu}g/mL$을 함유하고 있었으며, 카테킨류 중에서 EGCg의 함량이 가장 높았으나 EGC는 검출되지 않았다. 유기농 녹차 음료의 생산을 위해 카테킨류의 함량, 다엽의 가격, 수확량을 고려하여 6월차를 선택하였다. 6월차를 0.05, 0.1, 0.2, 0.5%로 추출하여 카테킨류를 정량한 결과, 0.1, 0.2, 0.5%는 0.05%에 비해 각각 1.50, 11.78, 41.09배 증가하였다. 6월차는 농도가 증가할수록 밝기가 증가하였고, 가장 밝고 녹색과 황색의 색이 짙었다. 반발효차의 pH는 5.83이었으며 나머지는 6.33-6.38의 범위를 가졌다. 6월차의 기호도 및 관능평가를 실시한 결과, 색상 기호도는 0.1%, 향기호도와 전체적인 기호도는 0.2% 추출물이 가장 우수한 평가를 받았고 단맛, 신맛, 떫은 맛의 정도를 평가한 결과 0.2%가 음용하기에 가장 적절하리라 사료된다. 또한 음료 제작 후, 저장 기간에 따른 녹차의 색 변화를 줄이기 위해 저장성 실험 결과 탄산수소나트륨을 0.03%를 첨가할 필요가 있다.

한국산(韓國産) 다엽(茶葉)의 특수성분(特殊成分)에 관(關)한 연구(硏究) (Studies on the Special Components of the Korean Tea-leaves)

  • 다류제품(茶類製品)의 품질(品質)을 좌우(左右)하는 다엽(茶葉)의 tannin, caffeine을 지역별(地域別) 및 야생다엽(野生茶葉)과 재배다엽별(栽培茶葉別)로 5월(月), 7월(月), 9월(月)에 적채(摘采)하여 분석(分析) 비교(比較)하였고 2종(種)의 3번재배다엽(番栽培茶葉)의 향기성분(香氣成分)을 분석(分析)하여 다음과 같은 결과(結果)를 얻었다. 1. Tannin의 함량(含量)은 $10{\sim}14%$ 범위(範圍)로 타(他) 중국종(中國種)과 같은 양(量)이며 정채시기(摘采時期)가 1,2,3기(期)에 따라 점차 증가(增加)하였으며 지역간(地域間) 및 야생다엽(野生茶葉)과 재배다엽간(栽培茶葉間)의 차이(差異)는 없었다. 2. Caffeine의 함량(含量)은 $1.5{\sim}3%$의 범위(範圍)로 타(他) 중국종(中國種)과 같은 양(量)이며 지역간(地域間) 및 야생다엽(野生茶葉)과 재배다엽간(栽培茶葉間)의 차이(差異)는 없었다. 3. 향기성분(香氣成分)은 두 재배다엽간(栽培茶葉間)에 비슷한 pattern이며 32개(個)의 peak 중(中) phenol, iso-butyl aldehyde, n-butyl aldehyde, iso-valeraldehyde, n-butyl alcohol, iso-amyl alcohol, iso-valeric acid, benzaldehyde, n-valeric acid 및 linalool 의 10종(種)을 동정(同定)하였다.
