This study, consisting of three experiments, was conducted to determine the effects of feeding feather meal (FM), feather meal digest (FMD), L-cystine and methionine hydroxyl analogue (MHA) on taurine content of milk and milk production of Holstein dairy cows. In experiment 1, FM or FMD was supplemented at 0, 1, 3 and 5% of dry matter intake (DMI), respectively. Taurine concentration of 3% FM and 5% FMD treatment were increased by 14% and 220/0, respectively. The 5% FM treatment had a negative effect on milk yield and FM and FMD treatments had no significant or consistent effects on milk fat, protein, lactose, milk urea nitrogen (MUN) and somatic cell count (SCC). In experiment 2, Lcystine or MHA was supplemented at 0, 1, 3, and 5g or ml/d along with 5% FMD, respectively. Milk yield decreased at 3 and 5g or ml Lcystine or MHA supplementation along with 5% FMD. Fat and lactose in milk were not significantly affected by treatments. However, milk protein level increased significantly in the 5 ml HMA with 5% FMD treatment. SCC decreased significantly in 1ml MHA with 5% FMD supplemented treatment but increased in 5g Lcystine with 5% FMD and 5 ml MHA with 5% FMD treatments. Increase of milk taurine concentration of L'cystine with 5% FMD treatments was not significant but those of MHA with 5% FMD treatments were significantly higher than the control. The highest increase of milk taurine concentration was 65% shown in 1 ml MHA with 5% FMD treatment. In experiment 3, 5% FM, 5% FM+3% molasses or 5% FM+3% molasses+l ml MHA was supplemented to the based TMR diet. The molasses treatments (5% FM+3% molasses and 5% FM+3% molasses+l ml MHA) showed significantly higher milk taurine content than the 5% FM treatment. The molasses treatments significantly reduced MUN but increased SCC. It was concluded that FMD is more effective than FM in enriching taurine in milk. Maximum taurine enrichment (65%) in the milk was obtained by supplementation of 5% FMD/DM1+1 ml MHA/d/cow. Molasses supplementation to 5% FM diet increased milk taurine content. However, MHA supplementation in dairy cows increased ruminal escape, gastrointestinal absorption and response of serum methionine.

Taurine is one of the essential amino acids for humans and many of mammals. It is produced and contained in fleshes, shells, plants and algae, but has never been found in fungi. We examined six mushrooms for taurine and detected taurine in five of them. Taurine was determined by an automated amino acid analyzer using ion-exchange chromatography, being eluted between phosphoserine as a distinct peak on the chromatogram. Fruit bodies of Flammulina velutipes contained $83\mu$moles/100g fresh wt. the highest level among them, Agaricus bisporos $65\mu$moles, Lentinus edodes $49\mu$moles, Pleurotus ostreatus $9\mu$moles, and Auricularia auricula-judae $20\mu$moles. Taurine was not detected in Ganoderma lucidum. As far as fungi are concerned, this is the first report of the detection of taurine in Basidiomyces.
오징어 가공 폐액 중에는 기능성 물질로 분류되고 있는 taurine이 다량 함유되어 있다는 사실이 밝혀졌기에 고부가가치 물질로서의 이용을 위한 기초 자료의 확보를 위해 본 연구가 시도되었다. 오징어 가공공장에서 각 공정별로 시료를 취하여 유리 아미노산과 taurine의 함량을 측정하고, 탈피액이나 자숙액 중의 taurine 함량을 확인하였다. 그 결과 원료, 탈피 및 자숙 오징어의 경우 proline이 $800{\~}997mg/100g$으로 가장 높은 함량을 나타내었고, 다음으로 taurine이 $730{\~}820mg/100g$으로 높았다. 자숙 오징어는 아미노산의 손실이 일어나 원료에 비해 $60{\%}$ 정도의 유리아미노산이 감소한 것으로 나타났으며, taurine의 함량도 다른 아미노산과 마찬가지로 크게 감소한 것으로 확인되었다. 조미 오징어 제품에서의 taurine 함량은 큰 변화가 없었는데, 이는 자국 전처리 과정 중에 taurine이 크게 감소한 후 조미 및 구이 공정에서는 큰 변화가 없는 것으로 판단되었다. 한편, 탈피액 및 자숙액 중의 유리 아미노산 함량은 각각 639.1 mg/100ml, 470.7ml100ml이었고, 이중 taurine 함량이 각각 144.9mg/100ml, 117.9mg/100ml로 유리아미노산의 약 $30{\%}$를 차지하였다. 이상의 결과로 오징어 가공공정 중의 탈피 및 자숙 과정 중에 유출되는 taurine을 효율적으로 회수할 수 있는 방법이 개발된다면 가공폐수의 처리는 물론이고 taurine 산업적 생산도 가능할 것으로 판단되었다.
As diverse physiological functions of taurine have been reported, taurine-containing health drinks and products are marketed worldwide for the treatment of various conditions such as improvements of liver, heart and circulatory functions or as an aid to athletic performance. Although animal studies have shown that taurine is fairly safe when supplemented in the diet for an extended period, the effective dose range of taurine for dietary supplements is in controversy. Reports on dietary taurine intakes have been sparse, and would serve as a guideline for determining an appropriate taurine dosage. The present study was aimed to estimate dietary intake level of taurine using the taurine content database of commonly used food stuffs established recently in our laboratory, and also to evaluate plasma concentration and urinary excretion of taurine in adolescents and adults residing in Seoul area. Dietary taurine intakes of the subjects were 219$\pm$16.9mg/day for 16-19 years old(n=123), 177$\pm$18.1mg/day for adults older than 20 years old(n=123). Male subjects(n=115) consumed 216$\pm$21.1mg of taurine/day, while female subjects(n=131) consumed 181$\pm$14.3mg of taurine/day(p<0.05). The level of dietary taurine intake was positively correlated with the levels of dietary intakes of energy, carbohydrate, total lipids, cholesterol, vitamin A, vitamin B$_1$, niacin, vitamin C, calcium, phosphorous, sodium and potassium at p<0.01, and with dietary intakes of iron and animal lipids at p<0.05, respectively. Plasma taurine concentration of subjects were 135$\pm$5.9$\mu$mol/L, which is considered to be within a normal range for healthy subjects. The subjects excreted 1158$\pm$72.7nmol/ of tarine mg creatinine in their urine, which is approximated as 150-170mg of taurine/24hr urine based on the assumption that 18mg creatinine/kg/day is excreted in the urine of healthy adults, and this would be about 80% of the daily taurine intake observed in the same subjects. Dietary taurine intake level was positively correlated with plasma taurine concentration, as well as with urinary taurine excretion corrected by creatinine excretion at p<0.05. The present study was the first report of taurine intake, and plasma concentration and urinary excretion of taurine in a Korean population so far, and these results would serve as an index for the future study evaluating taurine status in a diverse population within and outside Korea. This study was conducted to increase the content of taurine in milk from the dairy cows fed the rumen protected DL-methionine matrix and methionie hydroxy analog matrix for 42days. Dairy cows fed rumen protected DL-methionine matrix showed 23% increased milk taurine concentration compared to the value of the control groups. Dairy cows fed rumen protected methionine hydroxy analog matrix showed 53% increased milk taurine concentration compared to the value for the control groups (p<0.01).
Osteoporosis development is closely associated with oxidative stress and reactive oxygen species (ROS). Taurine has potential antioxidant effects, but its role in osteoblasts is not clearly understood. The aim of this study was to determine the protective effects and mechanisms of actions of taurine on hydrogen peroxide ($H_2O_2$)-induced oxidative stress in osteoblast cells. UMR-106 cells were treated with taurine prior to $H_2O_2$ exposure. After treatment, cell viability, apoptosis, intracellular ROS production, malondialdehyde content, and alkaline phosphate (ALP) activity were measured. We also investigated the protein levels of ${\beta}-catenin$, ERK, CHOP and NF-E2-related factor 2 (Nrf2) along with the mRNA levels of Nrf2 downstream antioxidants. The results showed that pretreatment of taurine could reverse the inhibition of cell viability and suppress the induced apoptosis in a dose-dependent manner: taurine significantly reduced $H_2O_2$-induced oxidative damage and expression of CHOP, while it induced protein expression of Nrf2 and ${\beta}-catenin$ and activated ERK phosphorylation. DKK1, a Wnt/${\beta}-catenin$ signaling inhibitor, significantly suppressed the taurine-induced Nrf2 signaling pathway and increased CHOP. Activation of ERK signaling mediated by taurine in the presence of $H_2O_2$ was significantly inhibited by DKK1. These data demonstrated that taurine protects osteoblast cells against oxidative damage via Wnt/${\beta}-catenin$-mediated activation of the ERK signaling pathway.
An experiment was conducted to investigate the effects of dietary supplementation of feather meal (FM its) digests on the performance of broiler chicks and taurine content in broiler meat. A total of 1,000 broiler chickens were assigned to five dietary treatments : Control, FM diet(FM), FM+pyridoxine(FM+Pyridox), H$_2$O$_2$ treated FM diet(H$_2$O$_2$-FM) and enzyme treated FM diet (Enzyme-FM). Treated diets were supplemented with FM or FM digests at the level of 5 % to the control diet. During the stater period, weight gain of chicks fed FM+Pyridox was significantly higher(P<0.05) than those of the other FM or FM digest treatments but was not different from the control. Weight gam of overall period were not significantly different among treatments. Feed intake of the control was greater than that of FM or FM digest treatments. Feed conversion ratio(feed intake/gain) of chicks fed FM and H$_2$O$_2$-FM were significantly higher than those of Enzyme-FM and FM+Pyridox, but were not significantly different from the control. Taurine contents of leg and breast mucle were significantly (P<0.01) different among treatments but those of liver were not significantly different. Taurine content of FM+Pyridox was highest in both leg and breast muscle. It was 85 % higher in leg muscle and 15 % higher in breast muscle than that of the control. Sensory evaluation data showed significant but not consistant responses in various parameters. FM + Pyridox treatment showed highest score in aroma of raw leg muscle of male and in juiciness and tenderness of broiled breast muscle of male chickens. Control group showed highest color score in raw leg muscle of female and lowest overall acceptability score in broiled breast and leg muscle of male chicken. It is concluded that taurine can be enriched especially in broiler leg meat by 5 % FM diet supplemented with pyridoxine.
엑스성분에 대하여 비교적 알려진 것이 적은 담수어 중 가물치를 시료로 하여 가열 시간별로 육액스분중의 아미노산 및 그 관련화합물의 함량변화를 분석 검토하였다. 가물치의 생육중에는 glycine, taurine, glutamic acid, histidine이 특히 많은 함량을 보였고, 요소가 많이 함유되어 있는 것도 특기할 점이었다. 전술한 4 가지 성분이 전체아미노산 및 그 관련화합물중 약$53\%$를 차지하였다. 가열시간에 따른 전질소엑스분의 양적 변화를 측정한 결과, 대체로 가열 120분까지는 대폭 증가하였으나 그 이후부터는 감소하는 관계를 보였다. 120분간의 가열에서 특히 현저한 증가를 보인 성분은 요소를 비롯하여 taurine, glycine, alanine, hydroxyproline, ${\beta}$-aminoisobutyric acid 등이었다. 엑스분을 가수분해한 결과, 일부의 성분은 증가하였으며, ethanolamine, lysine, 1-methylhistidine, phenylalanine, glutamic acid, taurine 등은 현저한 증가경향을 보였다.
The effects of dietary supplementation of Eleutherococcus senticosus, taurine and carnitine on maximal endurance exercise performance along with other related parameters were evaluated in rats that underwent aerobic exercise training for 6 weeks. Thirty-two male rats (4 weeks old) were randomly divided into 4 groups, and fed experimental diets and/or aerobic exercise trained according to the protocol: SC (sedentary control group), EC (exercise-trained control group), EE (exercise-trained Eleutherococcus senticosus-supplemented group), and EETC (exercise-trained Eleutherococcus senticosus, taurine and carnitine-supplemented group). The food efficiency ratio of EC rats was significantly lower than the value for SC rats (p < 0.01). Exercise-trained control animals (92 $\pm$ 8.8 min) could run significantly longer until exhausted on the treadmill than sedentary control rats (11 $\pm$ 0.8 min) (p < 0.001). Animals fed an Eleutherococcus senticosus-supplemented diet, and an Eleuthherococcus sonticosus, taurine and carnitine- supplemented diet while undergoing aerobic exercise training for 6 weeks exhibited, respectively, 8 and 5 minutes longer running performance until exhausted than the rats fed the control diet. The gastrocnemius muscle glycogen concentration of the rats, measured at 48 hours post maximal exercise performance test, was 43% higher in EC rats than the value for SC rats (p < 0.05), but was not different among EC, EE, and EETC rats. The mitochondrial citrate synthase activity of the soleus muscle was significantly higher in EC rats compared to the value for SC rats (p < 0.01), and showed a tendency to increase, without statistical significance, in EE or EETC rats compared to the value for EC rats. These results indicate that aerobic exercise training for 6 weeks significantly improved maximal exercise performance, muscle glycogen content along with citrate synthase activity, which are important in the energy metabolism of muscle under aerobic exercise. Dietary supplementation of Eleutherococcus senticosus in rats while undergoing aerobic exercise training improved maximal endurance exercise performance without significantly affecting muscle glycogen content and enzyme activities involved in energy metabolism during exercise. Taurine and carnitine supplementation failed to show an additive effect on maximal endurance exercise performance when consumed along with Eleutherococcus senticosus.
우모 가수분해 물 첨가가 육계의 성장 및 가슴살, 다릿살, 간, 그리고 심장의 타우린 함량에 미치는 영향을 알아보기위해 1일령 육계 병아리를 실험 1에서는 4처리에 암 수 각각 5수씩 총40수를 배치하였고, 실험 2에서는 같은 방법으로 7처리로 70수를 배치하여 3주간 사양시험을 실시하였다. 시험사료는 대조구(T1) 사료에 5% R-FM(T2),5% NaOH-FM(T3) 그리고 5% $HNO_{3}$ -FM(T4)첨가하여 실험 1을 수행하였으며, 실험 2에서는 실험 1의 처리구들과 함께 5% M-$HNO_{3}$ -FM(TS),5% HM(T6) 그리고 시스틴 파우더 0.22%를 첨가한 처리구(T7)를 추가하여 수행하였다. 타우린 분석은 실험 1에서 가슴살과 간, 실험 2에서는 가슴살, 간, 다릿살 및 심장에서 분석하였다. 실험 1과2에서 모두R-FM과NaOH-FM첨가구가 대조구와 $HNO_{3}$ -FM 첨가구에 이해 증체율이 높은 경향을 나타냈다. 실험 2에서는 시스틴 첨가구가 다른 처리구들에 비해 증체율이 가장 높았으며, NaOH-FM, HM, M-$HNO_{3}$ -FM $HNO_{3}$ -FM대조구 그리고 R-/FM첨가구 순 이었다. 실험 1의 타우린 분석 결과, 가슴살에서 NaOH-FM첨가구가 대조구에 비해 유의하게 타우린 농도가 높았으며(P<0.05), 실험 2의 가슴살에서는 NaOH-FM과 CYS 첨가구가 다른 처리구에 비해 타우린 농도가 높은 경향을 보였다. 다릿살의 타우린 분석에서는 R-FM과 NaOH-FM 첨가구가 $HNO_{3}$ -FM과 EM 첨가구에 비해 타우린 농도가 유의하게 높았다(P<0.05). :간(실험 1과 2)과 심장(실험 2)에서의 타우린 농도는 처리에 따른 차이가 없게 나타났다. 결론적으로 5% NaOH-FM 첨가구가 육계의 가슴살과 다릿살의 타우린 함량을 높이는 결과를 나타내었다.
