조선시대 규범서(朝鮮時代 規範書)에 나타난 밥상머리 예절교육(禮節敎育) 내용에 관한 고찰(考察) (Consideration of the Courtesy Education at the Dining Table in the Books of Social Norms of Joseon Dynasty Era)

  • We researched the modern meanings of traditional dining table courtesy education and its correlation with the main values of contemporary personality education based on dining table courtesy education stated in the social norms texts of the Joseon dynasty. Among the social norms of the Joseon dynasty, we chose Sohak, Naehun, Dongmongsuji, Seonghakjibyo, Gyeongmongyogyeol, Jeungbosallimgyeongje, Sasojeol, and Koamgahoon for research. As a result of our research on these documents and books, the modern meanings of the courtesy education at the dining table can be summarized as follow. First, the courtesy education has table manners appropriate for the development level of early children. Second, it teaches right-handed dining manners that match the features of Korean food culture. Third, it has the self-discipline and the values of community life, sharing, solicitude, and communication. Fourth, parents and grandparents are involved in the education. Fifth, it has the core values of modern personality education: manners, filial piety, respect, solicitude, communication, cooperation, and responsibility. Future courtesy education at the dining table should include practical education programs that can consolidate the bond of sympathy between the home, school, and society, and can improve its practice; in addition, to expand the opportunities for education, proactive social support is demanded.

兒童의 食習慣과 嗜好에 관한 연구 (A Study on the Dietary Habit and the Food Preference of Pre-School Children)

  • A study on the dietary habit and the food perference of Pre-school Children was made in order to identify the state of their dietary life and provide the data of dietetic education which can help the children to live a desirable food life, by analysing the present dietry life into the dietry habits, food preference, the actual condition of nutrition intake and table manners. 1. The Diet Habits. Both boys and girls were fond of dinner best and tended to neglect breakfast and lunch. 64.2% of the total children took meals regularly. 2. Food Preference. The most favorite food was beef, ham, Dupoo (beancurd), squid, ice-cream, bananas, watermelon, sweet potatoes, corn, Ingeolmi (cake form glutinous rice), doughnuts, JJajangmyon (Chinese noodles), Coke, fried chicken. 3. The Actual Conditions of Nutrition Intake. The frequency of intake of meat and its processed food was the lowest and that of fishes, shellfishes, fats and vegetables was low, too. 4. Table manners and Sanitary Conditions. The average mark of table manners and sanitary conditions is 12.49${\pm}$2.65. The children didn't practice well in the following points; talking at table, beginning to eat after the beginning of elder person's, brushing their teeth after taking meals, keeping a straight posture.

한국 전통 식생활 예절에 대한 인식 및 실천 정도 (A Study on the Recognition and Performance for Korean Traditional Table Manners)

  • The purpose of this study is to provide useful information for establishing desirable table manner culture by investigating the perception, practice of traditional basic table manner. The subjects were consisted of 1,261 participants(618 males and 643 females) in Daegu and Kyungpook. The recognition, practice of traditional basic table manner were measured on the five-point Likert scale. The results were summarized as follows: The overall recognition score on ordinary table manner was 3.74 points, and of methods and kinds of dinner services was 2.99 points. The education score on table manner of parents for sons and daughters was 3.66 points, and the necessity score of table manner was 3.92 points. The scolding score of adults for table manner was 2.79 points, and cooking score of side dishes for adult was 3.25 points. In result of analyzing difference between perception and performance of traditional table manner, perception is much higher than performance. Respondents consider that the most perceptional and performant traditional table manner item is 'eating foods inside mouth by not seeing and rushing out'. Meanwhile, 'eating and taking some foods from a main dish' was the lowest perception and performance. The total recognition score on traditional table manner was 77.78 points, and the total practice score on traditional table manner was 71.72 points.

한국인의 공동체의식과 식문화에 대한 소고(小考)+ (A thought on Korea food culture and collectivity+)

  • This study examined dietary culture in Korea regarding collectivism through literature review. Based on the evidence from the origin of lineage and traditional customs, the Koreans' traditional collectivity appeared to have been grounded upon the northen nomadic culture emphasizing sentimental collectivity and harmonized with the characteristics of southern agrarian society related to mutual support and sociability. The inseparable relationship between collectivity and food was well revealed in the occasions such as rice-planting, kimchi and jang makings in which pooled labor was common as well as the gathering of mutual aid association. In these occasions, foods were offered and shared among members. Food sharing was a main activity and almost play a central role regarding the promotion of friendly relations among each other. In sacrificial memorials, food sharing was extended not only to the live persons but also to the passing spirits. Collectivity was also disclosed in the eating or table manners of Koreans. Koreans quite literally share food at every meal since the side dishes placed centrally on the table. The taste of Korean foods is completed inside the mouth by mixing foods with various combination, which let people create their own choice of taste. Therefore, the collectivity manners at the table appeared to be harmonized with individual freedom of creating his/her own taste of foods. The collectivity is still a very important concept in modem Korean dietary culture, as reflected by an increase of restaurants sewed shared dishes.

  • Of 1,244 junior high school students of boys and girls and their families in Tokyo and Seoul, we investigated the present situations of the participation in cooking and table manners. In both countries, the average age of parents was 40's, and the ratio of the kinds of fathers' job was similar including 75% of full-time salaried workers, while that of mothers' in Japan was 63%, in Korea 23%. The male participation in cooking in both countries was found in younger generations and that of fathers and boys in Korea was significantly fewer than in Japan, which is regarded as the influence of Confucianism and employment of housekeepers. The figure of frequency of supper taken together daily was 27% in Japan and 54% in Korea where they didn't begin eating until all families gathered or the elders began. In Japan the civilities before and after meals were so often customarily expressed and they had the regular order of seats. The figure of frequency of taking meals with TV watching was about 45% in Japan of breakfast and supper and more than 30% in Korea of supper. As for the participation in cooking and table manners, national characteristics were clearly found out. In both countries, the newly modernized and democratized style of dietary behaviors was being made, rather sooner in Japan, out of the specific East-Asian traditional dining culture.

조선시대 양반가의 주생활문화와 예의생활에 관한 연구 (A study on the housing culture and courtesy of the Yangban in Chosun Dynasty)

  • This study discusses the traditional main life culture of Korea and the relations with the traditional manners of Korean culture. According to studies of literature and an analysis, it shows the traditional courtesy can be linked to the housing structure of the Cho-sun dynasty which can be termed as a representation of traditional Korean society. Housing culture of Cho-sun dynasty led to a most characteristic living culture. To be specific sit-down culture use norms, hierarchy and fittings can be sited. The sit-down culture in turn led to the main courtesies of greeting, table manners, etiquette for entrance and exit, the carefulness shown to elders, the self-restraint of speech and action and the manners between men and women, But in today's world there are realistic difficulties that make the application of these norms in everyday life difficult. But at the same time we must realize that there are traditional norms which overcome time and which affect today's norms.

중.고등학생의 식생활행동과 영양섭취 실태와의 관계 연구 (The Dietary Behavior and Nutrient Intake Status of the Yooth in Rural Areas of Korea)

  • The purpose of this study was to explore the relationship between dietary behavior and the nutrient intake status in the youth of rural areas, based on their personal characters such as their sex, age, family type, number of family members, mother's age, occupation, and school career. This study was made by use of a self-administrated questionnaire with a 24-hour recall for 5days as an instrument with 439 randomly selected students. Statistical methods applied to analyze the data were frequency, percent, Willcoxon Rank-sum test, Kruskal-wallis test, x2-test by contingence table, and Spearman's correlation coefficient in non parametric statistical cases. Some of the interesting results are as follows : 1) The correlation between sex and breakfast is highly significant. That is, over 80% of male students had breakfast every day, whereas only about 60% of female students had breakfast every day. Bad table manners and some other problems are insignificant with respect to the personal characters in the relations between the personal characters and eating behaviors. However, the regularity of every meal, the frequency of having meals with other family members, and the frequency of meals eaten out and snacks show significant differences. 2) The mother's occupation does not have any influence on the nutrient intake of their students when the relationship between personal characters and nutrient intake was analysed. On the other hand sex, the mother's school career, the numbers of family members, the type of family, and the income of the family showed significant differences nutrient intakes. 3) The regularity and the frequency of having meals, meals eaten out with their family members, and the table manners during meals showed significant differences in the intake of nutrient elements such as calorie, protein, fat, fiber, calcium, iron, phosphorus, vitamin B1, vitamin B2, niacin and vitamin C. However some consideration during meals and problems in eating habit are insignificant with regard to nutrient intake.

남.여 중등학생의 식사관리에 대한 인식과 참여 실태 조사 (A Study about Perception and Participation on Meal Management in Junior and High School Students)

  • The purpose of this study was to find out the participation and perception on meal management of the junior and high school students and their fathers. Total of 446 junior and high school students in Pohang and Youngduk in Gyeongbuk were participated in the questionnaire survey. Among the 446 questionnaires collected, 385 questionnaires were analyzed for this study. The results of this study were summarized as follows. 1. Students participation frequency on meal management was quite insufficient, once or twice a month in average, and was differed by sex that female students participate more frequently than males. High school male students who have never been taught the home economics course showed the lowest participation. 2. Among the meal planning, grocery shopping, cooking, and dishwashing, 60% of the students chose cooking as the most preferred work. As whole, they chose the meal planning as the most difficult work, but high school male students chose cooking as the most difficult work. 3. Most of the students wanted to learn more about food purchasing, meal planning, cooking skill, table setting, food storage and table manners, the priority was given to table manners and cooking skill. 4. Participation score on meal management of student’fathers was even lower than that of students, only a little more often than once or twice a year. Because son usually identifies himself with his father, father should participate more often than now. 5. As for responsibility of meal management in the future, 78.2% of the male students and 91.8% female students answered that husband and wife must share the responsibility together when both husband and wife have jobs.

일부 초등학생에 있어 성별에 따른 식사 예절, 영양 지식 및 식습관 차이에 관한 연구 (Differences in Table Attitudes, Eating Habits, and Nutrition Knowledge in Elementary School Boys and Girls)

  • The purpose of this study was to determine the relationships between table attitudes(or table manners), nutrition knowledge, eating/snacking habits, and BMI in elementary school children. For the study, 350 [4~6th grade] elementary students were recruited and surveyed. Each response for 10 questions regarding table attitudes was scored by a 5-point scale(5 points=strongly agreed & 1 point=strongly disagreed) with a total score of 50. The reliability of 10 questions about nutrition knowledge was validated using Cronbach's ${\alpha}$(Cronbach's ${\alpha}$=0.80). Total scores for table attitudes were significantly different between the boys and girls(p<0.05). The total score for nutrition knowledge was significantly higher in the girls(7.67/10.0), compared to the boys(7.35/10.0)(p<0.05). The children showed high rates of incorrect answers in questions regarding the function or importance of specific nutrients. No significant differences between the boys and girls were found for places of snack purchase, or pocket money/day. Most of the children answered spending less than 800 won of pocket money per day. More boys preferred meals with meats and disliked Kimchi and vegetables compared to girls, and the differences were statistically significant. The score for table attitudes was significantly and negatively correlated with nutrition knowledge and gender. No significant correlations between BMI and table attitudes or nutrition knowledge were shown.

  • Using the Taguchi method, optimum process condition of lead frame blanking has been determined in the point of view of shape of blanked profile. As the main process parameters, clearance, strip holding pressure and bridge width are selected. According to the orthogonal array table, three levels of experiment have been carried out for each factors. The optimal blanking condition is analyzed with the SN ratio. It has been verified that the optimal process condition can be determined with a combination of basic blanking experiment and experiment design method. Both the effect of each factors and gain can be judged in the quantitative manners from the analysis of SN ratio.
