War against Japanese(1592-1599) and war against Manchurian(1636-1637), which had been occurred in Korean Peninsula throughout the history, and frequent trade with foreign countries since $18^{th}$ century have led to a distribution of foreign food into Korea. Several examples for this include tomato, apple, watermelon, maize, pea, cowpea, peanut, potato from China and red pepper, pumpkin, and sweet potato from Japan. Since these foods had been brought into Korea, they have been cultivated suitable for Korea's climate and land. Foreign foods with a few exceptions tend to have high calories. For instance, along with potato and sweet potato, pumpkin is considered a high-calorie food containing lots of starches as it becomes ripening. This helped a wide spread of the foreign foods across the nation where intake of high-calorie foods was critical for Korean people's nutrition at that time. Among those foods introduced from foreign countries, red pepper had a greatest impact on the dietary life-style of Chosun Dynasty. The use of red pepper has been greatly expanded from main ingredient to seasoning and garnishing in various forms of red pepper such as red pepper paste, red pepper powder, and thick soy paste mixed with red pepper. This study was performed to compare alcohol fermentation ability and saccharification of potatoes and sweet potatoes. Cooperated with ultrasonification process is not contain pass through cook process, but contain process using ulrasonification instead cook process. In result of sugar contents measurements sweet potato and potato was highest of a family at 6 hours fermentation, and it showed the highest sugar contents as each 11.5 brix, 10.4 brix. In result of alcohol contents measurements of sweet potato and potato, highest of a family in 4 days, and it showed th highest alcohol contents as each 8.2, 6.0%. The purpose of this study was to investigate the effects of dietary purple sweet potato(Ipomoea batatas) powder on serum lipid levels and antioxidative enzymes in normal and pretective effect on hepatotoxicity rats induced by carbon tetrachlolide. Four groups of rats (3-week-old inbred Sprague-Dawley male rats) were normal rats fed control diet(C), induced hepatotoxicity rats fed control diet(EC), normal rats fed purple sweet potato diet(P), and induced hepatotoxicity rats fed purple potato sweet diet(EP). Rats were induced by single injection of 50% carbon tetrachlolide(0.1 mL/100 g B.W., i.p.). The rats were fed ad libitum each of the experimental diet for 5 weeks. After 5 weeks the rats were sacrificed and activities of antioxidant enzymes and lipid peroxidation products were determined in their liver homogenates. But serum concentrations of lipid was not significant in all groups. Serum alanine aminotransferase(ALT/GPT) and aspartate aminotransferase(AST/GOT) of the EC and EP groups were heigher than the C and P groups. The hepatic glucose 6-phosphatase(G6Pase) activity of the group fed purple potato diet(P) was lower than the other groups(p<0.05). However, The glutathione peroxidase(GPx) activities was not statistically different between the groups. Renal glutathione S-transferase(GST) activity of the EC and EP groups were lower than the C and P groups(p<0.05). In conclusion, these results suggest that purple sweet potato is believed to be possible protective effect on hepatotoxicity rats induced by carbon tetrachlolide.
Stabilities of sweets potato f-amylase on various reagents were studied. The enzyme was stabilized by bovine serum albumin, Triton X-100 and 2-mercaptoethanol of 0.04%. Among them, bovine serum albumin was the most effective. And enzyme stability was increased by using the deairated solution. The enzyme activity was remained 0% in the absence of glycerol, 25% in the presence of 20% glycerol and 50% in the presence of 40% glycerol at 37$^{\circ}C$, for 15 hours in pH 11. SDS inhibited the enzyme, and 2-mercaptoethanol and dithiothreitol stabilized it.
Effects of cultivation methods on quality characteristics, pasting characteristics, chemical components, and antioxidant activities of sweet potatoes (Ipomoea batatas (L.) Lam) were determined. The Brix degree, hunter color value, pasting characteristics, moisture, protein, and mineral contents of the sweet potatoes showed significant differences from cultivation methods. The total polyphenol and flavonoid contents of the methanolic extracts of the sweet potato's pericarp were higher than sweet potato's sarcocarp. The 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity of the sweet potato's pericarp on the conventional culture and successful cropped hairy vetch culture was 776.38 and 715.20 mg TE/100 g sample. The 2,2'-azino-bis-3-ethylbenzo-thiazoline-6-sulfonic acid (ABTS) radical scavenging activity of the sweet potato's pericarp on the conventional culture and successful cropped hairy vetch culture was 708.03 and 708.58 mg TE/100 g sample. Generally, there was a difference in antioxidant compound content and radical scavenging activity on the methanolic extract of sweet potato with cultivation methods.
This study was conducted to evaluate the effects of adding purple-fleshed sweet potato (PFP) powder on the texture properties and sensory characteristics of cooked pork sausage. Sodium nitrite alone and sodium nitrite in combination with PFP were added to five different treatments sausages (CON (control) = 0.01% sodium nitrite, SP25 = 0.005% sodium nitrite and 0.25% purple-fleshed sweet potato powder combination, SP50 = 0.005% sodium nitrite and 0.5% purple-fleshed sweet potato powder combination, PP25 = 0.25% purple-fleshed sweet potato powder, PP50 = 0.5% purple-fleshed sweet potato powder). The sausages were cooked to $74^{\circ}C$, stored at $4^{\circ}C$ for 6 wks, and used for chemical analysis, textural properties, and a sensory evaluation on 0, 2, 4 and 6 wks of storage, respectively. Similar CIE $a^*$ and $b^*$ values were determined in sausages from CON, SP25 and SP50 at the end of storage, and they were higher in CIE $a^*$ but lower in CIE $b^*$ than that of the PP25 and PP50 sausages. Significant differences were observed for brittleness and hardness when PFP was added to the sausages but were not confirmed after 4 wks of storage. The objective color score was influenced by adding PFP; however, the effect was not dose dependent. In overall acceptability, panelists favored the CON, SP25, SP50, and PP50 sausages but did not prefer PP25 sausages at the end of storage. Therefore, adding PFP to cooked pork sausages improved color and texture properties and sensory characteristics, but further study is needed to determine the proper ratio of sodium nitrite and PFP.
This experiment was conducted to obtain basic information on the improved methods of soil physico-chemical properties and sweet potato yield cultivated on a newly-reclaimed land, a Songjeong loam soil. The crop was cultivated under the six different treatments for 4years since 1985 in the field conditions. Annual changes of soil properties and sweet potato yield were investigated and analyzed. Soil bulk density increased from the second year, and also soil hardness of topsoil increased, but that of subsoil had not tendency. Average yield of sweet potato for 4years in the integrated improvement plot was 32.68ton/ha, which is increased by 59% in comparison to that of the control plot. Crop yield was in order of integrated improvement>phosphate>subsoiling>lime>compost>control plots. The soil properties of the topsoil which showed high correlation coefficient to sweet potato yield were bulk density, hardness and cation exchange capacity(CEC), and those of the subsoil were bulk density, soil moisture and CEC. Ratios of changes of soil properties except organic matter content showed high significancy to sweet potato yield. Soil physico-chemical properties of the 4th year without soil conditioners application were worse than those of 3rd year.

This study was performed to investigate the effects of a diet with a red yeast sweet potato supplement on fecal amount and lipid metabolism in male Sprague-Dawley rats fed a high-fat diet for 10 weeks. Rats were fed a high-fat diet (15% fat) with additional lard (7%) and cholesterol (1%) based on AIN-93G basal diet (7% fat) for 6 weeks during the first phase. In the second phase, which lasted 4 weeks, the rats divided into four experimental groups which were composed of a high-fat diet group as a control (CON), a high-fat diet with 5% white-fleshed sweet potato supplement group (WFSP), a high-fat diet with 5% red yeast sweet potato supplement group (RYSP), and a high-fat diet with 5% purple-fleshed sweet potato supplement group (PFSP). The fecal amount of group RYSP increased significantly during the second phase compared to the other groups (p<0.05). The fecal total cholesterol (TC) and triglyceride (TG) content of group RYSP were also highest among all experimental groups. The serum TC and TG were shown to have the lowest levels in the group RYSP, and LDL-cholesterol levels were significantly decreased in groups RYSP and PFSP than in group CON (p<0.05). These results indicate that supplementation with red yeast sweet potato seemed to be effective in increasing feces and fecal lipid excretion, and also in decreasing serum lipid levels in rats fed a high-fat diet.
Total of 36 sweet potato field soils were sampled to survey the occurrence of the root-knot nematodes (RKN). The 61% of sweet potato fields in Haenam, 40% in Iksan and 31% in Yeju were infested with RKN, respectively. Average population density of RKN was 324 juveniles per 300 g soil. The resistance screening of sweet potato cultivars against RKN was carried out by using clay pots in a greenhouse. Average temperature under ground 10 cm in pot was 21.5$^{\circ}C$ during the test. There was no difference in number of egg sacs among different inoculation methods, however the egg-inoculation method was easy for treatlnent and had stable far results. The multiplication ratio of Melioidogyne incognita differed from 6.3 times (Jeungmi) to 63.2 times (Yulmi) by sweet potato cultivas. There were no cultivars showing resistance to M. incognita, but Jinmi, Jeungmi and Borami had resistance to if arenaria, M. hapla and M. javanica.
