Comparison of Fruit Quality and Antioxidant Compound of 'Niitaka' Pear Trees Grown in the Organically and Conventionally Managed Systems (유기재배와 관행재배 된 배의 과실품질과 항산화 활성 비교)

  • The study was established to compare fruit qualities and antioxidant compounds in 'Niitaka' pear (Pyrus pyriforia) trees grown in the organic and conventional farming systems. Fruits in the organic system appeared to have dark red color on the fruit surface. Fruit weight, soluble solids, acidity, firmness, and stone cells were not different between the farming systems. Organic fruits had a greater potassium concentration than the conventional fruits, but phosphorous, calcium, and magnesium concentrations in fruits were not different between the treatments. Peel, flesh, and juice parts in the organic fruits had greater phenolic compounds compared to the conventional fruits. Peel parts had much greater antioxidant compounds than the flesh parts, regardless of the treated-fruits. All fruits grown in the conventional and organic systems had a similar DPPH ($\alpha$, $\alpha$-diphenyl-$\beta$-picryl-hydrazyl) radical-scavenging activity in the peel, but flesh parts in organic fruits had a greater DPPH than the conventional fruits. Phenol and flavonoid compounds in the peel and flesh were positively related to the DPPH radical-scavenging activity. There were no significant differences for the nitrite scavenging activity in the peel and flesh parts between the treatments.

  • Knit products which had been limited only to underwear, recently became popularized, fashionized and highly classified covering even outer garments such as sportswear like golfwear, woman's dress, and man' s suit. As fashion cycle is getting shorter and the more a nation advanced prefers knit to woven fabrics knit industry has a very bright prospect, particularly woman's knit which is sensitive to fashion can be said as a fashion product with high value added. This study is to grasp the physical properties of stitch which are fundamental to the development of knit products. For this purpose, 2/20s of 100% wool were woven by the author of this study to basic plain stitch, rib stitch, varied transfer stitch, and float stitch on a SEMASEIKI cross knitter 7G to test the physical properties, and the result was as follows; 1. As for the relation between knit stitch and rate of extension recovery, rate of extension recovery was higher in the course direction than in the wale direction of three stitches except transfer stitch; rib stitch showed the highest rate of extension recovery in the course direction while float stitch showed the highest rate of extension recovery in the wale direction. 2. As for the relation between knit stitch and bursting strength elastic rib stitch showed higher bursting strength to indicate elasticity is an important factor of bursting strength and float stitch showed higher bursting strength too to indicate that the floating yarn on the surface plays a role of support. 3. As for the relation between knit stitch and air permeability perforated transfer stitch showed the lowest air permeability to prove that the size of perforation affects on the air permeability a great deal. 4. As for the relation between knit stitch and warmth retaining rib stitch through two lined needle bar showed the highest degree. The reason the warmth of perforated transfer stitch didn't decrease much was because the perforation wasn't big enough and content of air increased from the unevenness of the perforated parts through stitch variation. Based upon this result, each stitch can be characteristically summarized as follows; plain stitch showed a stable condition of knit cloth in four kinds of physical property test. And rib stitch is proper to tighten the edge of sleeve or clothe making use of its excellent extension recovery and to make socks for the highest bursting strength and warmth retaining. In the case of transfer stitch, seasonable designs can be taken by controlling the size of loop. Considering the pleasantness, underwear should be made of stitches with good air permeability float stitch was revealed to have color and pattern effects and a great bursting strength. This study has limitations in the aspect that it dealed with a small part of various knit stitches and the items of physical property test were not enough. The author of this study hopes that further studies would make deeper understandings about knit stitch based on more varied stitches and physical property tests ultimately to contribute to the development of fashionable designs proper to maximize the usage, function and originality.

  • This study investigated external symptoms, behavior characteristics and the distribution pattern of the scuticociliates in the skin, gill and blood vessel of the tiger puffer, Takifugu rubripes, infected with scuticociliates among tiger puffer cultured. The fish infected with scuticociliates did not show any external symptoms, such as change in body color or swimming behavior, in the early infection stage. However, they showed congestion, erosion, and ulcer on the skin and fin at advanced stages. They showed a turning movement, mainly stayed on the bottom, and swam with their mouths open at the surface of water. Some fish showed a sudden swimming movement of zigzag type. The scuticociliates were ovoid in shape and $20\times40{\mu}m$ in size. The scuticociliates had a contractile vesicle and a caudal cilium that ranged 10-12 ${\mu}m$, and reproduced by binary fission. Therefore the scuticociliates were identified as ciliated, belonging to class Hymenostomatia, order Scuticociliatida in morphogenetic character. The gills infiltrated with scuticociliates showed clubbed gill filament due to hypertrophy of gill lamella. Within the blood vessels, scuticociliates were observed one to ten individuals, depending on diameter of the blood vessels. Some of the scuticociliates were observed to have ingested erythrocytes.

Studies on Preservation of Concentrated Milk by Freeze - Flow Process (Freeze - Flow Process 를 이용한 농축우유의 저장에 관한 연구)

  • A method to store concentrated milk in the liquid state at $-15^{\circ}C$ was developed, and quality changes during storage of milk were evaluated. Combined cryoprotectants (CCP) suitable for storing concentrated milk in the liquid state at $-15^{\circ}C$ were consisted of 17.74% sucrose, 8.87% glucose, 8.87% fructose, 2% glycerol, 0.25% sodium hexametaphosphate, 0.25% NaCl and 0.02% ascorbic acid. The amount of CCP to be added to concentrated milk to depress freezing point to $-15^{\circ}C$ was 38% by weight. Gelation due to protein denaturation was the most serious quality change during storage, which adversely affected appearance and utilization of the stored product. Gelation was observed after 3 weeks storage in the control, but it was not in milk with CCP throughout 18 weeks storage. Amount of protein precipitated increased in the control during storage, whereas there was no protein precipitated in milk with CCP. Surface color and peroxide value of the control and treatment did not change significantly during storage, and there were no marked differences between the control and treatment. These results indicated that quality of concentrated milk could be preserved, without gelation, by storing milk with CCP in the -liquid state at the frozen storage temperature. Besides, energy required for freezing preservation of milk could be significantly reduced by elimination of phase changes for freezing and thawing, and the stored product could be continuously processed for the final products without long waiting time for thawing.

Optimization of Calcium Acetate Preparation from Littleneck Clam (Ruditapes philippinarum) Shell Powder and Its Properties (바지락(Ruditapes philippinarum) 패각분말로부터 초산칼슘 제조 및 특성)

  • The optimal condition for preparation of powdered calcium acetate (LCCA) which has high solubility, from calcined powder (LCCP) of the littleneck clam shell by response surface methodology (RSM) was examined. Increased molar ratio of LCCP led to reduced solubility, yield, color values, and overall quality. The critical values of multiple response optimization of independent variables were 2.57 M of acetic acid and 1.57 M of LCCP. The actual values (pH 7.0, 96.1% for solubility, and 220.9% for yield) under the optimized condition were similar to the predicted values. LCCA showed strong buffering capacity between pH 4.89 and 4.92 on addition of ~2 mL of 1 N HCl. The calcium content and solubility of LCCA were 21.9-23.0 g/100 g and 96.1-100.1%, respectively. The FT-IR and XRD patterns of LCCA were identified as calcium acetate monohydrate, and FESEM images revealed an irregular and rod-like microstructure.

The Effect of Processing Condition on Physicochemical Characteristics in Pine Nut Gruel (잣죽의 제조조건이 이화학적 특성에 미치는 영향)

  • The physicochemical characteristics of pine nuts gruel were investigated to find the effects of processing condition during the processing. Three-dimensional response surface methodology was applied to investigate effects of ratio of water volume and pine nuts weight to rice weight and heating time on dependent variables of the physicochemical characteristics. The dependent variables in physicochemical characteristics were viscosity (cP), spreadability (cm), pH, soluble solid content (%), color, total sugar (%) and amylose content (%). The F-value of ratio of water volume and pine nuts weight to rice weight and heating time to viscosity were 8.91, 4.54 and 5.02 respectively and they are significantly different at 5% level. The F-value to spreadability were 5.44, 7.88 and 8.04 respectively and they are significantly different at 5% level. These results suggest that water volume, pine nuts weight and heating time greatly affect the viscosity and spreadability of pine nuts gruel. The processing condition also affect the soluble solid content. The changes of the processing condition did not affect the pH of pine nuts gruel. We found that the L, a, b value were affected more by ratio of water volume and pine nuts weight to rice weight than by heating time. The water volume affected more the total sugar and amylose content of pine nuts gruel than pine nuts weight and heating time.

  • Quality stability of roasted lavers during heat treatment and storage was investigated measuring the changes in pigments including chlorophyll a, carotenoids and biliproteins, fatty acids and free amino acids as the major quality factors. In roasting of fried lavers, carotenoids were found to lie more stable than chlorophyll a, and biliproteins were most heat labile. The overall heat stability of the pigments depended upon heating time and temperature. Chlorophyll a and carotenoids were retained more than $90\%$ in the casts of roasting for 90 min. at $60^{\circ}C;\;60min.\;at\;80^{\circ}C;\;10\;min.\;at\;100^{\circ}C;\;or\;5min.\;at\;150^{\circ}C$ while biliproteins remained about $70\%$. The lipids of dried lavers including polyunsaturated fatty acids appeared rather heat stable when compared to the stability of pigments under the same conditions of roasting. Spray of sesame oil or seasoning solutions on the surface of lavers after roasting seemed desirable for stabilizing pigments and free amino acids during storage particularly at low water activity. And that was also benefit for the protection of polyenoic fatty acids from rapid progress of oxidation during storage. Free amino acids were reduced fast during roasting, especially most of threonine and glycine while glutamic acid was rapidly lost during the storage.

A New Record of Tarsonemid Mite, Stenotarsonemus spinki (Acari, Tarsonemidae) and Its Damage on Rice in Korea (한국 미기록 벼먼지응애, Steneotarsonemus spinki와 그 피해)

  • A tarsonemid mite. Stet~rotc~r.sot~rrrs~puin.sk i Smiley 1967. is an important rice pest in major rice producing countries of Thailand. Philippine. China, and Taiwan. S. spinki was found first time in Korea from rice grown in environment controlled greenhouse. Rice fed by the mite showed damage symptoms of deformed panicles and inflorescence, lesions on the inner surface of leaf sheath, and browning of rice hulls. Females of S. .spi~lkwi as 263.0 pni (246.5-284.6f 12.2) in body length and 92.4 pm (79.5- 104.9 t 7.6) in body width. Body was elongate and broadest in region of hysterosoma. Body color was pale brown. Legs were robust except for the legs IV which were typical tarsonemid female legs terminating in a whiplike seta two times the length of the leg. Male of S. spir~kiw as 196.5 pm ( 176.5-222.8 + 15.8) in body length and 109.3 ym (98.6- 1 17.7 + 6.4) in body width. Anterior ends of apodemes 111 were extended further than apodemes IV. Femur IV had large inner median lateral flange. and inner anterior and outer median setae were short about equal length. Tarsal claw was stout and curved ventrally.

Quality Characteristics of Rye Mixed Bread Prepared with Substitutions of Naturally Fermented Raisin Extract and Sourdough (건포도 천연 발효액과 Sourdough를 이용한 호밀 혼합빵의 품질 특성)

  • In this study, a nanatural fermentation starter formulation was developed for manufacturing bread products by substituting baker's yeast with naturally fermented raisin extract and sourdough. Four experimental groups containing 2.5, 5.0, 7.5, 10% naturally fermented raisin extract per 2,000 g of flour were compared based on quality characteristics, including the fermentation power on dough expansion, specific volume, baking loss, water activity, color, textural characteristics, and internal surface appearance. The activities of the naturally fermented raisin extract were examined in terms of pH changes, total titratable acidity, brix, and viable yeast counts. The raisin extract, which was cultured for 7 days at 30$^{\circ}C$, smelled of alcohol and produced $CO_2$. Yeast were also found in the extract after separation. As the incubation time of the raisin extract and sourdough increased, pH decreased, while total titratable acidity increased. The brix of the raisin extract increased until the $2^{nd}$ day of fermentation, and viable yeast counts increased until the $5^{th}$ day however, these gradually decreased by the $7^{th}$ day. The fermenting power on dough expansion increased in the bread with increasing incubation time. The bread samples containing 7.5% and 10% raisin extract had significantly higher specific volumes than the other samples. Baking loss was minimal with the 2.5% extract substitution. In analyzing the crumb, water activity, redness, and yellowness were highest in the 10.0% raisin extract bread samples, and lightness was maximal in the 5.0% group. In terms of textural characteristics, hardness was lowest with the 2.5% extract substitution. Gumminess, springiness, and chewiness were not significantly different among the bread samples. Cohesiveness was highest at the 7.5% extract substitution level, and resilience was lowest at the 10% level. In conclusion, based on the results, a natural fermentation starter formulated with 2.5% naturally fermented raisin extract (1 part raisins and 1.5 parts water) and 70% sourdough (1 part rye flour and 1 part water) has high potential as a baker's yeast substitute for making naturally fermented bread.

  • A new condensation process for manufacturing N-acyl taurates which generates less pollutant and produces more than 60 % yield in comparison with the conventional process has been developed in this work. Its optimum process conditions are at $210{\sim}230^{\circ}C$ of reaction temperature and 6 ~ 9 hour of reaction time when Parasol 123 of petroleum refired oil is employed as process solvent and mixed catalysts of sulfonic acid and phosphoric acid are utilized as process catalyst. And the qualities of N-acyl taurates produced by this new process are similar to or better than those of imported product judging from their acid value, amine value and color. Thus, it can be said that the newly developed process for manufacturing N-acyl taurates in this work is better than the conventional process. The physical properties of N-acyl taurates produced in this work such as surface tension, foaming power, foaming stability, hard water stability, and emulsifying power etc. were compared with those of commercially available anionic surfactants. And the experimental results show that N-acyl taurates shows good physical properties and that they can be alternative to conventional anionic surfactants.
