Effect of essential oils and linalool on berry quality during simulated marketing of 'Shine Muscat' grapes

  • 'Shine Muscat' (Vitis labruscana Bailey x Vitis vinifera L.) grapes recently have been greatly favored in Korea, and as of 2022, account for 38.6% of the total grape market in Korea. However, there is a lack of research on post-harvest quality control appropriate to the unique characteristics of 'Shine Muscat'. In order to continuously increase domestic demand and exports in the future, it is essential to establish proper postharvest techniques. Essential oils have remarkable potential as biologically active and environmentally friendly antiseptics for the fruit industry. The objective of this study is to evaluate the effects of essential oils and aroma constituent treatment on fruit quality attributes of 'Shine Muscat' grapes in order to extend fruit quality during a simulated export period. A cluster of 'Shine Muscat' grapes was placed in a newly developed paper box container, and treated with rosemary essential oil, thyme essential oil, and linalool, along with an untreated control. The results showed no significant effect on fruit quality indices, such as cluster weight loss, berry firmness, soluble solids content, titratable acidity, sugar acid ratio, and color change, but showed a positive effect on the alleviation of berry shatter compared to the untreated control. In addition, rosemary oil treatment reduced the proportion of unhealthy berries. Therefore, the results indicated that the newly developed packaging container along with certain essential oil treatment could be applied as a promising packaging material for table grape export.

Effects of K-Sorbate, Salt-Fermented Fish and $CaCl_2$ Addition on the Texture Changes of Chinese Cabbage During Kimchi Fermentation (보존료, 젓갈, $CaCl_2$ 첨가가 김치발효중 배추잎의 조직감변화에 미치는 영향)

  • The effects of $CaCl_2$, K-sorbate, and fermented fish sauces and blanching on the texture of Chinese cabbage of Kimchi were evaluated. The addition of salt-fermented shrimp or salt-fermented anchovy accelerated the pH reduction, acidity increase and reducing sugar consumption, but K-sorbate, Ca-chloride and blanching suppressed the ripening process of Kimchi. The latter retarded the softening rate of Chinese cabbage during Kimchi fermentation, as demonstrated by the cutting force, compression force, recovered height and work ratio. The sensory evaluation confirmed the results of instrumental texture measurments. The instrumental measurements, i.e. pH, acidity cutting thickness, cutting force and compression test parameters, showed acidity acidity was calculated as % lactic acid attributes, i.e. the preferences for taste, appearance and texture, and the level of crispiness, hardness, chewiness and fibrousness. The pH of Kimchi was appeared to be an important quality parameter, whiih had significant correlations with the taste, appearance, chewiness, hardness, fibrousness and crispiness.

Characteristics of Chungkookjang that Enhance the Flavor and GABA Content in a Mixed Culture of Bacillus subtilis MC31 and Lactobacillus sakei 383 (Bacillus subtilis MC31와 Lactobacillus sakei 383의 혼합배양으로 향상된 풍미와 GABA 함량을 지닌 청국장의 품질 특성)

  • Chungkookjang has several functional properties, such as fibrinolytic activity, anticancer effects, and antioxidant effects. However, children do not like Chungkookjang because of its foul odor. A mixed culture of Bacillus subtilis MC31 and Lactobacillus sakei 383 was used to improve the production of GABA in Chungkookjang and its flavor. Most of the foul odor of Chungkookjang was removed. The slime content and viscosity of Chungkookjang fermented in the mixed culture were similar to those of commercial Chungkookjang when B. subtilis MC31 and Lactobacillus sakei 383 were inoculated in a 1:1 ratio. The maximum GABA content was obtained when Chungkookjang was fermented with B. subtilis MC31 and L. sakei 383, which was fermented at $37^{\circ}C$ for 72 hr. During the period of fermentation, the viable cell number of B. subtilis MC31 reached a peak (log 9.13 CFU/g) at six days, and L. sakei 383 reached a peak (log 6.78 CFU/g) at two days. The moisture, crude ash, crude protein, crude fat, and crude fiber contents were 61.71%, 2.05%, 17.54%, 8.36%, and 1.95%, respectively. The amino-type nitrogen content of Chungkookjang fermented by B. subtilis MC31 and L. sakei 383 was less than Chungkookjang fermented by B. subtilis MC31 alone. The ammonia-type nitrogen and reducing sugar content of the Chungkookjang fermented by B. subtilis MC31 and L. sakei 383 were higher than that of steamed soybean. The glutamic acid and GABA content detected with an amino acid analyzer were 1.40 mg/g and 0.47 mg/g, respectively. These results suggest that fermentation with B. subtilis MC31 and L. sakei 383 in a 1:1 ratio removes more of the foul odor and increases the GABA content compared with single fermentation.

Effects of Mixed Application of Chemical Fertilizer and Liquid Swine Manure on Agronomic Characteristics, Yield and Feed Value of Rye (Secale cereale L.) (화학비료와 발효 돈분 액비 혼용 시용이 호밀(Secale cereale L.)의 생육특성 및 영양성분에 미치는 영향)

  • This study was carried out to investigate the growth characteristics, yield and chemical compositions of rye according to mixing ratio of chemical fertilize r(CF) and liquid swine manure (LSM) in paddy field cultivation. The experimental design was arranged in a randomized block design with three replications. The manure fertilizer ratio of five treatments were CF 100% + LSM 0% (C), CF 70% + LSM 30% (T1), CF 50% + LSM 50% (T2), CF 30% + LSM 70% (T3), and CF 0% + LSM 100% (T4) of rye. At this time, the application of liquid swine manure was based solely on nitrogen. Plant length did not show significant differences among treatments. Ear length, leaf length and leaf width were the longest in C, T3, and T2, respectively (p<0.05). The stem diameter showed in the order of T4 > T3 > T2 > T1 > C, which was thicker as the LSM application rate increased (p<0.05). Fresh, dry matter and total digestible nutrient (TDN) yield were the highest in T4 (p<0.05), whereas the lowest in C treatment. Crude protein, neutral detergent fiber (NDF), acid detergent fiber (ADF) and crude fiber content were did not show significant difference among treatments. However, compared to C, crude fat and crude ash were significantly higher in T2 and T3, respectively (p<0.05). Total mineral content decreased significantly as the LSM application rate increased (p<0.05). Total free sugar showed high in T3 and T4 with a high LSM ratio, but showed significantly lower in chemical fertilizer treatment (C) and low LSM treatment (T1) (p<0.05). The analysis of all the above results suggests that the application of LSM is very effective, considering the dry matter yield and the contents of free sugar. In addition, LSM may be possible to grow rye without chemical fertilizer.

Food Quality of Muffin with Germinated Brown Rice Soaked in Mycelial Culture Broth of Phellinus linteus (상황버섯균사체 배양액 침지 발아현미를 첨가한 머핀의 식품학적 특성)

  • The purpose of this study was to examine the qualities of optimized muffins with germinated brown rice soaked in mycelial culture broth of Phellinuslinteus (GBRP) using response surface methodology. Firstly, general compositions of optimized muffins with GBRP were higher than that of control and total sugar contents were similar. However, the total free amino acid and constitutional amino acid contents except for GABA were lower than those of control. Starch hydrolysis in control was higher than in optimized muffins with GBRP, whereas protein digestibility and protein efficiency ratio were not. The weights of optimized muffins with GBRP were higher than that of control (p<0.01), whereas height (p<0.01) and pH (p<0.001) were similar. The hardness (p<0.05) and chewiness (p<0.05) of optimized muffins with GBRP were higher compared to control; adhesiveness, springiness, and gumminess were similar, but cohesiveness (p<0.01) was not. The flavor (p<0.05) and taste (p<0.01) of optimized muffins with GBRP were higher than those of control; appearance, texture and overall acceptability were similar, but color (p<0.05) was not. The total polyphenol contents (p<0.01), DPPH radical scavenging activity (p<0.01), and superoxide dismutase-like activity (p<0.05) of optimized muffins with GBRP were higher than those of control, but nitrite scavenging activity was similar.

Improvement of the Antioxidative and ACE-inhibiting Activities of Commercial Soy Sauce using Gelatin Hydrolysates from the By-products of Alaska Pollock (명태 수리미 부산물 유래 젤라틴 가수분해물을 이용한 시판 간장의 항산화성 및 ACE 저해활성의 개선)

  • This study examined ways to improve the functional properties of commercial soy sauce using gelatin hydrolysates from the refiner discharge of Alaska pollock, Theragra chalcogramma. The total nitrogen content and pH of gelatin sauce prepared by dissolving the second-step gelatin hydrolysates (15 g), salt (20 g), sugar (5 g), glucose (2.5 g), inosine monophosphate (IMP) (0.5 g), black pepper (0.1 g), caramel powder (0.1 g), ginger powder (0.05 g), garlic powder (0.05 g), vinegar (3 mL), and fructose (3 mL) in water(100 mL) were 1.71% and 5.35, respectively. The results of a sensory evaluation indicated that when preparing blended soy sauce, the optimal blending ratio of gelatin sauce to commercial soy sauce was 20:80 (v/v). Because the total nitrogen content and pH of the blended soy sauce were 1.52% and 5.31, respectively, the blended soy sauce could be sold as a soy sauce. The oxidative property of the blended soy sauce was similar to that of 20 mM ascorbic acid, and its angiotensin-converting enzyme (ACE) -inhibiting activity was 1.5 mg/mL. The results suggest that the antioxidative and ACE-inhibiting activities of commercial soy sauce can be improved by blending gelatin sauce (20) with commercial soy sauce (80). The total amino acid content of the blended soy sauce was 9,107.3 mg/mL, which was higher than that (8,992.4 mg/100 mL) of commercial soy sauce. However, the taste value of the blended soy sauce was 415.8, which was lower than that (431.2) of commercial soy sauce.

  • An one percent sodium carbonate extract prepared from sclerotia of Poria cocos activated the proliferation of the T lymphocytes as measured by mixed lymphocyte responses(MLR). The active fraction, PCSC22, was isolated from an one percent sodium carbonate extract by a combination of fractionation procedures, including ethanol precipitation and chromatographies on column of DEAE-cellulose and Sephadex G50. Carbohydrate and peptide contained in PCSC22 were 78 : 22% in ratio. On employing gel filtration high performance liquid chromatography, PCSC22 exhitited a homogeneous peak with an average molecular weight of 8 kDa. The sugar moiety of PCSC22 was composed with mannose (92%), galactose (6.2%) and arabinose (1.3%), which might be indicated as heteromannan. Fifteen amino acids were found in peptide moiety of the polysaccharide and aspartic acid, serine, and valine were major components. PCSC22 activated the primary proliferation of T lymphocytes measured by mixed lymphocyte responses, the antibody production of the B lymphocytes and the secretion of nitric oxide from macrophage cell line, RAW264.7.

Characterization Analysis of Functional Gochujang including Grain Syrup with Tomato Puree (토마토 퓨레 조청을 함유한 기능성 고추장의 특성 분석)

  • To add functional specialty in a traditional fermentation product, Gochujang, and improve the taste and preference, an optimum fermentation condition of Gochujang supplemented with tomato puree was established in the conditions of GCJ 14, -16, -18, and -20. Varying the salinity concentration and the manufactured fermentation products, Gochujang was analyzed by the chemical nature, change in bacterial characteristics and contents of a functional chemical, lycopene, and sensory taste. As a result, the pH change of Gochujang containing tomato puree with grain syrup was diminished during the fermentation process. Its sugar contents were repeated by the increase and decrease. In addition, the water contents, salinity, and chromaticity of the Gochujang showed no significant change. Regarding the change in bacterial characteristics, total bacterial number and lactic acid bacteria number increased, with the rate of increase depending on the fermentation process. The ratio of lactic acid bacteria number against total bacterial number was confirmed to be significantly high at the conditions of GCJ 18 and -20. No significant change in the contents of lycopene was observed during the fermentation process. Notably, the change in crude proteins, crude fat, crude ash, and carbohydrates in addition to a sensory examination including taste and preference of the manufactured Gochujang suggest that the optimal fermentation product is produced in the condition of GCJ 20. Therefore, functional Gochujang satisfying a modern preference can be produced by using tomato puree with grain syrup.

Manufacturing of Watermelon Beverage Added with Natural Color Extracts (천연 색소 추출물을 첨가한 수박 음료의 제조)

  • Dilution concentration of watermelon juice, concentrations of added sugar, citric acid, and vitamin C, sterilization temperature and time, and natural color extracts were evaluated to determine optimum conditions for watermelon beverage production. Optimum dilution concentration of watermelon juice and optimum content of soluble solid were 40% and $12^{\circ}Brix$, respectively. Addition of 0.5 and 0.3 g/L or 1.0 and 0.3 g/L citric acid and vitamin C gave optimum sensory quality. Sterilization of watermelon beverage at above $70^{\circ}C$ decreased redness. Sterilization at $60^{\circ}C$ for 10 to 30 min or at $70^{\circ}C$ for 10 min achieved best sensory quality. Addition of 20 g/L raspberries gave best sensory quality among raspberries, omija, and borage. Hot water was better than alcohol for extraction of natural color. Ratio of extracts for optimum sensory quality was 7 : 3 for extract of 20 g raspberries/L : extract of 30 g omija/L.

  • The recent surge in consumption of traditional liquor related to health, the results of analyzing the chemical characteristics and antioxidant activity by creating Kwaha-ju and Baekhwha-chun, which use Godubab as a method of treating glutinous and normal grains, are as follows. Kwaha-ju is mainly made of glutinous rice, 5.21~12.52% alcohol content, 1.07~2.47g/L in reducing sugar content, 3.22~3.77% pH, Baikhwha-chun alcohol content was 3~5%, except for some experimental groups, and pH was low. As a result of the spectrum analysis of traditional liquor, 50% of the experimental group in Baikhwa-chun is located in the negative area of PC1 such as overload, and some amino acids such as lactic acid, isoleucine, and choline are the main ingredients of glucose, xylose, and maltose. Therefore, the chemical properties and antioxidant activity of Kwaha-ju and Baikhwa-chun, which show similar composition ratio of traditional liquor materials, and use them as basic data to identify and manufacture traditional liquor fermentation through mutual analysis.
