저선량 X선 조사 수입 오렌지의 상온 저장 중 품질 특성 (Quality Characteristics of Low-Dose X-Ray Irradiated-Imported Navel Oranges during Storage at Room Temperature (20℃))

  • X선 조사에 의한 수입 오렌지의 품질 특성을 조사하여 방사선 식품 검역 관리의 기초자료로 활용하기 위하여 미국산 Navel orange에 선량 0.2, 0.4, 0.6, 0.8, 1.0 kGy의 X선을 조사하여 상온($20{\pm}0.1^{\circ}C$)에서 12일간 저장하면서 색도, 경도, 당산비, 총당, 환원당, 비타민 C 함량을 조사하였다. 색도, 당산비, 총당 및 환원당 함량, 비타민 C 함량은 조사선량에는 유의적 차이가 없었다. 경도는 저장 후기에 비조사구와 조사구의 차이가 점차 감소하며 비조사구와 다른 조사구가 유사한 값을 나타냈다. 환원당 함량은 저장기간에 따라 감소하는 경향을 보였다. 관능평가에서 비조사구와 조사구는 단맛과 질감을 제외하고는 저장기간에 따른 유의적 차이가 없었다. 전체적인 선호도에서는 저장기간과 조사선량에 유의적 차이가 없었다. 상기의 결과를 종합하여 볼 때 X선 조사는 오렌지의 관능적 특성과 품질 특성에 영향을 미치지 않는 것으로 보인다.

메틸프룩토시드를 이용한 과당계열 당 지방산 에스테르의 효소적 합성 (Enzymatic Synthesis of Fructose-based Sugar Fatty Acid Ester Using Methyl Fructoside)

  • 과당계열 배당체인 메틸프룩토시드를 반응출발문질로하여 과당계열 당 지방산 에스테르인 메틸프룩토시드 올레산 모노 및 디에스테르를 효소적 용매 및 무용매공정에 의하여 합성하였다. 용매공정으로부터 머틸프룩토시드 올레산 모노에스테르를 합성한 결과, 최적 상용용매로는 2-메틸-2-프로관올이 우수하게 나타났으며 매틸프룩토시드의 용해도는 $60^{\circ}C$애서 400g/L이상에 상당하였다. 최적반응조건을 검토한 결과, 에틸프룩토시드 올레산의 최적올비 3.1, 에틸프룩토시드의 최적 초기농도 200g/L, Novozym 435의 최적 촉매함량 1%(w!v), 반응온도 $60^{\circ}C$에서 반응시간 8시간만에 70%의 평 형 젠화율애 도달하였으며 12.6g/L-hr의 생산성으로 매렐프룩토시드 올레산 모노에스테프 블 생싼할 수 았었다. 그리고, 무용매공정에서 메틸프룩토시드 올레산 디에스터르를 합생한 결과, 메틸프룩토시드와 올레산의 최적돌에 l.2, Novozym 435의 최적 촉매함령, 10%(w/w), 반응온도 $70^{\circ}C$, 진공도 20 - 200mmHg 에서 반응시간 10시간만에 95%이상의 전화율로 140g;L-hr의 생산성으로 메틸프룩토시드 올레산 디에스테르를 생산할 수 있었다.

창자파래로부터 citrate buffer를 이용한 전처리와 효소가수분해를 통한 환원당 생산 (Production of Total Reducing Sugar from Enteromorpha intestinalis Using Citrate Buffer Pretreatment and Subsequent Enzymatic Hydrolysis)

  • 본 연구에서는 창자파래(Enteromorpha intestinalis)로부터 citrate buffer를 사용하여 전처리 조건(고액비, 반응온도, buffer의 pH와 농도)에 따른 전처리 반응과 효소가수분해를 통한 가수분해 수율을 조사하였다. 0.25 M, pH 3.5의 citrate buffer를 이용하여 $140^{\circ}C$에서 60분간 전처리를 수행한 결과, 5.40%의 가수분해 수율을 얻었다. 최종적으로 전처리 반응 후 24시간의 효소 가수분해를 통하여 18.68%의 가수분해 수율을 얻었다. 이 결과는 대조구에 비하여 약 1.81배 증가한 결과이다.

고령자 친화 딸기 젤리 개발 및 저장수명 결정 (Development and shelf-life determination of senior-friendly strawberry jelly)

  • 설탕 또는 잔탄검의 함량이 증가함에 따라 딸기 젤리의 경도, 검성, 그리고 씹힘성이 상승하는 경향을 보였다. 딸기 젤리의 텍스처는 딸기 주스의 함량에 따른 경향성을 보이지 않았다. 고령자 친화 젤리에 알맞은 경도(1.3 N)를 가지도록 최적화된 딸기 젤리의 제형은 딸기 주스 함량 40.0%, 설탕 함량 10.0%, 그리고 잔탄검/로커스트콩검의 비율 1.5였다. 모든 저장 온도에서 젤리의 경도, 검성, 그리고 씹힘성은 증가하였고, 명도는 감소하였다. $15^{\circ}C$에서는 저장 일자가 길어질수록 황색화가 증가하였다. 경도를 품질지표로 선정하여 예측하였을 때 $5^{\circ}C$$15^{\circ}C$에서의 젤리의 저장수명은 각각 38일과 26일이었다. 본 연구를 통해 냉동 딸기를 이용하여 고령자 친화 딸기 젤리를 개발하였고 제품의 저장 중 품질 특성과 저장수명을 예측할 수 있었다.

Utilization of Urea-Treated Rice Straw and Whole Sugar Cane Crop as Roughage Sources for Dairy Cattle during the Dry Season

  • Two experiments were conducted to study the use of urea-treated rice straw (UTRS) and whole sugar cane (WSC) crop as roughage sources for dairy cattle during the dry season. Experiment I, four rumen-fistulated dairy crossbred steers were assigned to receive roughage treatments according to a $4{\times}4$ Latin square design: $T_1=urea-treated$ (5%) rice straw, $T_2=UTRS$ and WSC at 75:25% DM, $T_3=UTRS$ and WSC at 25:75% DM, and $T_4=WSC$. Experiment II, three rumen fistulated, late lactating multiparous Holstein-Friesian crossbreds were randomly allotted to a $3{\times}3$ Latin square design to receive three types of roughages; $T_1=WSC$, $T_2=UTRS$, $T_3=WSC+UTRS$ at 50:50% DM. It was found that combination of UTRS and WSC at 75:25 ratio significantly increased DM intake while intake of WSC alone was lowest. Moreover, inclusion of UTRS into WSC enhanced digestibilites (Exp. I). In Exp. II, combination of UTRS with WSC at 50:50 ratio (DM) enhanced DM intake (kg/d) (p<0.05) and especially milk yield, milk fat and protein percentages. The findings suggest the combined use of WSC and UTRS improved the feeding values of these roughages for dairy cattle during the dry season.

혼합물 실험계획법에 의한 쑥 첨가 찜 케이크의 최적화 (Optimization of Ingredient Mixing Ratio for Preparation of Steamed Cake with Mugwort (Pseudosasa japonica Makino) Powder)

  • This study examined the optimal ingredient mixing ratio for the preparation of steamed cake containing mugwort (Artemisia princeps var. orientalis) powder. After preliminary studies, the following ingredient ranges were determined; 110~129% sugar, 3~8% mugwort powder, 10~25% oil. Among the different mixture designs, the D-optimal design was chosen for analysis. The results of F-test, specific gravity, viscosity, volume and color values (L, a, b), hardness decided a linear model, while the sensory characteristics (color, taste, texture and overall acceptance) decided a quadratic model. The fitness analysis results showed that in all characteristic, the probabilities were significant within 0.05%; thus, the models were accepted as appropriate. The response surface and trace plot results showed that increasing amounts of mugwort powder decreased the brightness, and increased redness and yellowness. As the level of added oil increased, the softness of the cake increased. Cake samples received low sensory evaluation scores when sugar, mugwort powder, and oil were added above their optimal levels. The optimum formulations by the numerical and graphical methods, were similar, and with the numerical method presented as: sugar, mugwort powder, and oil at 120.7%, 5.1%, and 16.2%, respectively(flour weight basis). The above results demonstrate the feasibility of adding mugwort powder to sponge cake, and therefore, the commercialization of mugwort powder cake marketed as a functional food is deemed possible.

시설내의 탄산가스 시용이 딸기의 생육 및 생산성에 미치는 영향 (Effects of Carbon Dioxide Application on the Plant Growth and Productivity of Strawberry in Greenhouse)

  • The aim of this study was to determine the optimum level of carbon dioxide to maximize the quality and yields of strawberries cultivated in a greenhouse. Specifically, two strawberry cultivars, namely, 'Seolhyang' and 'Maehyang', were subjected to varying concentrations of carbon dioxide and patterns linked to their productivity were noted. Both cultivars showed improvements across various physical variables (i.e., leaf area, crown diameter, plant height, fresh weight, and dry weight) when carbon dioxide concentrations were at 1,500 ppm. The optimum carbon dioxide concentration for increased fruit yields and quality was 1,000 ppm. When carbon dioxide was at 1,000 ppm the yields of 'Seolhyang' and 'Maehyang' increased by 1.99 and 1.78 times, respectively, compared to control plants. The influence of carbon dioxide on fruit color was negligible. However, the carbon dioxide increased the sugar content and sugar-acid ratio of the experimental fruits compared to control plants. Specifically, the sugar-acid ratio, which is directly related to taste, was at its highest when the concentration of carbon dioxide was at 1,000 ppm (i.e., for both 'Seolhyang' and 'Maehyang'). Overall, the application of carbon dioxide culminated in improved yields and fruit quality for both cultivars of interest.

청피와 모려를 이용한 음료 제조

  • 청피와 모려에 다른 부재료를 사용하여 최적의 혼합비로 음료를 제조하기 위하여 모려에 대해 원소 분석한 결과 무기물 공급원으로 Ca가 18.8 ppm, Na가 23.8ppm으로 가장 많이 함유되었다. 청피에 대해 아미노산 분석한 결과 aspartic acid가 14290.431 pmol로 가장 많이 함유되어 있고, 필수 아마노산이 모두 함유되어 있었다. 이와 같은 분석 결과에 의해 음료를 제조한 결과 Citrus 1g, Amomum O.25g, Pueraria 0.5g, Ostrea 12g, citric acid 1g, sodium benzoate O.5g, aspartic acid 0.5g, raw sugar 90g 비율로 제조한 것이 관능검사를 실시한 결과 향기, 맛, 색 등 전반적으로 기호도 및 호감이 높은 것으로 나타났다. 일반분석한 결과 3종류간에 차이는 없었다.

어린 보릿잎을 첨가한 키위잼 재료 혼합비율의 최적화 (Optimization of the Ingredient Mixing Ratio for Preparation of Kiwifruit (Actinidia deliciosa) Jam Prepared with added Barley Sproutling Powder)

  • This study was performed to find the optimum ratio of ingredients for the manufacture of kiwifruit jam. The experiment was designed according to the D-optimal design of RSM (response surface methodology), which included 18 experimental points with 4 replicates for three independent variables (sugar $35{\sim}60%$, pectin $0.1{\sim}1.0.%$, kiwifruit paste $0.37{\sim}0.90%$). The compositional and functional properties of the prepared products were measured, and these values were applied to mathematical models. A canonical form and trace plot showed the influence of each variable on the quality attributes of the final product mixture. By use of the F-test, viscosity, color values (L, a, b), and sensory characteristics (color) were expressed by a linear model, while the L color value and select sensory characteristics (smell, taste, overall acceptance) were also expressed by a quadratic model. The optimum formulations by the numerical and graphical methods, were similar, and with the numerical method it presented as: sugar, pectin, and barley sproutling powder at 49.7%, 0.5%, and 0.6%, respectively. The above results demonstrate the feasibility of preparing kiwifruit jam added with barley sproutling powder, and therefore, the commercialization of a kiwifruit jam marketed as a functional food is deemed possible.

돼지의 자연성비와 정자의 전기분이에 의한 수태성적에 관한 연구 (A Study on the Natural Sex Ratio and Fertility of Galvanized Boar Semen)

  • This study was carried out to find the difference between the naturaly born sex rtio among 1,242 head of pigs(120 litters) at Swine Farm, Cheil Sugar Co. and B-body a, pp.arance from their semen, and to find the conception rates which were inseminated to 40 sows with sperm from the anode and cathode after electrophoresis of boar semen. In order to the electrophoretic separation, the semen was placed into the platimum loop electrodes(105 cc) at room temperature for 30 minutes with D.C. 3V. and 350${\mu}$A. constant. The sperm fluorescent staining method was performed in accordance with Bhattacharya's(1970) method. The spermatozoa were observed through a Olympus Vanox microscope(made in Japan) using exciter filter with I heat barrier HPO 120. The results obtained were summarized as follows: 1. The natural sex ratio of 1,242 piglets(120 litters) which were born at Swine Farm, Cheil Sugar Co. was 50%, and B-body a, pp.arance of its boar semen were 49.24%. 2. With electrophoretic separation, the anode and cathode attracted 65.5${\pm}$5.03% and 29.89${\pm}$4.29% of B-body bearing sperm, respectively. 3. After electrophoresis of boar sperm, they were inseminated to 40 sows with sperm from anode and cathode. The conception rate was 92.5%.
