Starches obtained from Seipoong and Daeji potato were classified into go starch granules $(>41{\mu}m)$ and small starch granules $(<3{\mu}m)$. Rheological properties of heat-gelatinized starch paste were studied to elucidate difference of the fractionated starches. Heat-gelatinized starch paste of potato showed Bingham pseudo-plastic behavior. The consistency index and yield stress of small starch granule paste were greater than those of large starch granule paste. As starch paste concentration increased, consistency index and yield stress of heat-gelatinized small starch granule paste increased more than those of large one. As measuring temperature increased, consistency index of heat-gelatinized starch paste decreased and temperature depedence was greater in small starch granule paste than in large one.
This study was conducted to investigate the effect of binding agents on the physicochemical characteristics of granule prepared by Lentinus edodes. The mushroom powder was mixed with com starch, lactose, gelatin, gum arabic, or dextrin(DE=23), and the mixtures were passed to granule sieve. Solubility of granule was in the following order, gum arabic>gelatin>lactose, dextrin>corn starch. L value was in the following order, com starch, lactose>gelatin, gum arabic, dextrin. a value and pH were not affected by the binding agents. b value was in following order, lactose, corn starch>gelatin, gum arabic>dextrin. Viscosity was in the following order, gelatin, corn starch>gum arabic, dextrin>lactose. Water absorption was in the following order, gelatin>lactose>corn starch>dextrin>gum arabic. Sugar content was in the following order, gum arabic>lactose, dextrin>corn starch, gelatin. Protein content was the highest in granule formed with gelatin. These results suggested that gum arabic can be utilized for improving solubility and lowering absorption of Lentinus edodes granule as binding agent.
This study was carried out to investigate the effect of surfactant on the dissolution of relatively hydrophilic drugs, such as sulfanilamide (SF) and sulfacetamide (SFA) granules prepared by wet granulation. The additive incorporated in the granules is starch or microcrystalline cellulose(MCC) as an excipient, PVP as a binder, and polysorbate 80 (P-80) as a surfactant. The dissolution characteristics of SF and SFA granules in distilled water were as follows: The values of T$_{75%}$ were 4.60 and 2.50min, respectively for SF and SFA granules. Incorporation of 0.1% P-80 in SF granule ratarded the dissolution of SF as compared with control, but addition of 0.1% P-80 to SFA granule improved the dissolution of SFA in comparison with control. In SF and SFA granules formulated with either starch or PVP, the release of the drug was increased as compared with control. In SF granule, the dissolution of the drug was further reduced by the inclusion of P-80 in the granule containing starch or PVP. Incorporation of P-80 in SFA granule with starch or PVP affected little on the dissolution of the drug. Addition of a nonswelling excipient, MCC decreased the dissolution rate of SF and SFA granules. as compared with each control. The presence of P-80 in these granules made the dissolution rate slower in comparison with the granules containing only MCC.
Mechanism of the cyclodextrin (CD) production reaction by cyclodextrin glucanotransferase (CGTase) using swollen extrusion starch as substrate was investigated emphasizing the structural features of starch granule. The degree of gelatinization was identified to be the most representative structural characteristic of swollen starch. The most suitable degree of gelatinization of swollen starch for CD production was around 63.52%. The structural transformation of starch granule during enzyme reaction was also followed by measuring the changes of the degree of gelatinization, microcrystallinity, and accessible and inaccessible portion to CGTase action of residual swollen starch. The adsorption phenomenon of CGTase to swollen starch was also examined under various conditions. The inhibition mechanism of CGTase by various CDs was identified to be competitive, most severely by a-CD. The mechanism elucidated will be used for development of a kinetic model describes CD production reaction in heterogeneous enzyme reaction system utilizing swollen extrusion starch.
Starches isolated from Seipoong and Daeji potato were classified into small and large granules. The starch granule size for Seipoong and Daeji was in the range of $10-85\;{\mu}m$ and $13-90\;{\mu}m$, respectively. Seipoong starch contained more large granules $(>41\;{\mu}m)$ while Daeji starch had more small granules $(<30\;{\mu}m)$. There was no difference in water-binding capacity both between two starches and among granule sizes. Amylose content for toro starches was the same but was higher in large starch granules than small ones. Swelling powder at $80^{\circ}C$ for parent starches was essentially the same but small starch granules had much higher swelling powder than large ones. The large starch granules for Daeji showed higher peak viscosity by amylograph than small starch granules. No such difference was observed for Seipoong starch. The gelatinization temperature range of small starch granules was wider than that of large ones, but gelatinization enthalpy was the same between large and small starch granules. The starches regardless granule sizes were completely gelatinized at $70^{\circ}C$.
Large and small starch granules were isolated and characterized from kernels of Hiproly barley. Average size of large granules were $28-30{\mu}m$ and that of small granules were $6{\mu}m$. The small granules consist of 95% of total starch granules. Large granules contained more amylose than small granules. Distribution of isoamylase-debranched starch components, X-ray diffraction patterns, gelatinization characteristics by differential scanning calorimetry, and starch-granule susceptibility to acid were investigated. Large granules contained more long B chains of amylopectin and had the lower ratios of Fr. III to Fr. II , which represent one of the structural characteristics of amylopectin, than those of small granules. Small granules had higher conclusion temperature and smaller heat of gelatinization than those of large granules by D.S.C.. Both granules had A-type pattern of X-ray diffractopgrams, but hydrolysis of granules with acid showed different A-type patterns between large and small granules.

Rice ratooning is the cultural practices to produce easily second rice from the stubble left behind after the main-crop harvest. The main advantage of rice ratooning is that in areas where rice is the main crop, double crop of rice can be grown for additional returns. Three early ripened rice cultivars were tested for estimation their milled rice quality and starch characteristics from main and ratoon rice. The main crop was harvested at mass maturity, after which the tillers were mowed to stubbles of about 10 cm tall. And then it left without any further input until the ratooned plant was ready for harvest. Highly significant variations were detected in the milled rice quality between main and ratoon rice. Protein and amylose contents of ratoon rice were more increased than those of main rice. The Toyo value (gloss) of cooked rice of ratoon crop was measured also higher than that of main crop. It resulted from higher air temperature during grain ripening compared with that of ratoon crop. The mean temperature during ripened period of ratoon rice was favorable for optimal maturation for early ripened rice cultivars. Normalized chromatograms of branch chain length distribution of amylopectin are demonstrated a distinct difference between main and ratoon rice flour. Ratoon rice had higher amount of short chains than that of main crop rice starches. Microscopic examination of rice flours with scanning electron microscopy shows starch granule shapes affected by the cropping types, main and ratoon rice. It showed significant differences among rice starch granule shapes and in granule size between main and ratoon rice. Starch of ratoon rice had more neat and smaller granules than that of main rice.
Two fractions of ${\beta}-glucanase$(CMCase), two fractions of filter paper degradation enzyme (FPase) and one ${\beta}-glucanase$ fraction were partially purified from Fusarium moniliforme and applied to recovery process of red bean starch. Red bean were incubated with the fractions of CMCase and FPase at $50^{\circ}C$ for 2 hours and the starch granules are separated. Maximal sedimentation rate of red bean starch granules was obtained with treatment of the mixture solution of 0.004 units/ml of FPase and 0.3 units/ml of CMCase. In the enzyme treated process percent recovery of red bean starch granule increased about 7% and suspended solid in waste water was reduced about 40%, compared with those of control. The results indicated that red bean cell treated with cellulase fractions absorbed water more rapidly and specific gravity of starch granule increased.
The morphological properties of acorn starch granules and starch gels were examined with scanning electron microscope and X-ray diffractometer. The shape of acorn starch granule was rounded triangular and some elliptical. The size distribution of starch granule was also analyzed. The mean value of minor axis, major axis and the ratio of those were 4.785 $\mu\textrm{m}$, 7.30 $\mu\textrm{m}$ and 0.68, respectively. The surface micro-structure of acorn starch gels were investigated by SEM. Acorn crude and refined starch gel were very different in surface micro-structure. X-ray diffraction pattern of acorn starch was C-type, and the pattern of acorn starch gels were extremely different because of disintegration of starch granules by gelatinization. The diffraction intensity of acorn refined starch gel was slightly higher than crude starch gel.
