대구, 마산, 광주, 제주지역 학교급식의 나트륨 및 칼륨 함량 분석 (Sodium and Potassium Content of School Meals for Elementary and Junior High School Students in Daegu, Masan, Gwangju, and Jeju)

  • 본 연구는 초등학교와 중학교에서 점심으로 제공되는 학교급식의 나트륨과 칼륨 함량을 분석하여 데이터베이스를 구축하고자 수행되었다. 대구, 마산, 광주 및 제주에 소재한 초등학교 12개교와 중학교 12개교에서 대략 열흘 동안 제공된 872 종의 음식을 수거하였으며, 이들 음식을 4종의 주식류, 15종의 부식류 및 5종의 후식류로 구분하였다. 각 음식의 나트륨과 칼륨 함량을 원자흡광광도계로 분석하였고 Na/K 비율을 산출하였다. 학교급식에서 제공된 총 24종의 음식군 중에서 초등학교와 중학교 모두 음료류, 과일류, 우유/유제품류 및 밥류의 네 음식군만 나트륨의 위해 기준이 낮은 "저(low) 나트륨(<120 mg/100 g)" 범위에 속하였고, 초등학교의 경우는 장아찌류, 소스류, 볶음류, 김치류 및 생채류 등 5종의 음식군과 중학교의 경우는 이들 외에 찜류와 구이류를 포함한 7종의 음식군이 "고(high) 나트륨(${\geq}500mg/100g$)" 범위에 해당하였으며, 나머지 음식군은 "중 나트륨(120~500 mg/100 g)" 범위에 들었다. "중 나트륨" 범위에 속한 음식군 중에서도 주식류의 일품요리류, 죽류, 특히 습식음식인 면류와 후식류에서 떡류와 빵/스낵류는 나트륨 함량이 비교적 높았다. 이러한 결과, 점심 한 끼로 제공된 음식의 나트륨 함량은 초등학교와 중학교 각각 974 mg과 1,466 mg으로 해당 연령대의 충분섭취량의 1/3 분량에 비해 각각 225%와 293%로 높았다. 이와 함께 동일한 음식의 나트륨 함량이 학교에 따라 상당한 차이가 있음을 밝힌 본 연구결과는 학교급식에서 조정 가능한 나트륨 함량이 통제되지 않았음을 시사해주었다. 나트륨 위해기준이 높은 음식군을 비롯해 각 음식의 레시피에 나트륨을 함유하는 소금이나 간장 등 장류나 소스류의 적정 사용량을 명시하고 이의 사용을 상시 모니터링하거나, 저염 음식을 개발하거나, 나트륨 함량이 높은 가공식품의 사용을 줄이거나 또는 나트륨을 제거하거나, 후식류의 경우는 학교에서 조리하지 않으므로 나트륨 함량이 낮은 음식을 선택하는 등 적극적으로 나트륨 저감화 방안을 찾아야 할 것이다. 한편 학교급식에서 제공된 음식군의 칼륨 함량은 나트륨에 비해 큰 변이를 보이지 않았다. 주식류에서는 밥류의 칼륨 함량은 낮은 편이었고 일품요리류, 죽류 및 면류는 높았는바, 이들 음식군의 나트륨 함량이 높은 점을 상쇄하였다. 그러나 부식류 중에서 습식음식군의 칼륨 함량이 건식음식군에 비해 절반 정도로 낮은 편이었다. 후식류에서는 과일류가 높았던 반면에 떡류가 낮은 편이어서 떡류는 나트륨 함량은 높고 칼륨 함량은 낮은 바람직하지 않은 특성을 보였다. 이러한 결과, 점심 한 끼로 제공된 음식의 칼륨 함량은 초등학교와 중학교 각각 378 mg과 528mg으로 해당 연령대의 충분섭취량의 1/3에 비해 각각 35%와 45%로 낮았다. 본 연구결과는 학교급식에서 칼륨 함량을 높이려는 노력이 없었음을 알려준다. 따라서 국류, 찌개류 및 탕/전골류 등 습식음식에 칼륨 함량이 높은 재료를 많이 사용하려는 시도가 필요하며 또한 후식으로 떡류 사용을 억제하고 칼륨 함량이 높은 과일류나 우유/유제품류를 적극 활용해야 할 것이다. 이와 같은 결과, 각 음식군의 Na/K 비율은 칼륨 함량보다는 나트륨 함량에 의해 결정되는 양상이었다. 즉 주식류에서는 일품요리류와 죽류, 특히 면류가 밥류에 비해 두 배 정도 높았고, 부식류 중에서는 장아찌류, 소스류, 볶음류 등이 높은 반면에 샐러드류와 생채류가 낮았으며, 후식류에서는 떡류와 빵/스낵류가 높았고 음료류, 과일류 및 우유/유제품류가 낮았다. 이와 같은 연구결과는 학교급식의 Na/K 비율을 낮추기 위해서는 나트륨 함량을 줄이는 동시에 칼륨 함량을 높이려는 시도가 필요함을 보여준다. 본 연구에서는 대구, 마산, 광주와 제주 등 네 지역 사이에 몇몇 음식의 나트륨이나 칼륨 함량에 차이가 있음을 확인하였다. 즉 나트륨의 경우 특히 초등학교에서 광주지역 학교의 여러 음식군이 타 지역에 비해 대체로 높았으며, 칼륨의 경우는 초등학교나 중학교 모두에서 대구나 마산지역 학교의 몇몇 음식군이 광주나 제주지역보다 높은 편이었다. 한편 초등학교와 중학교 사이에 나트륨이나 칼륨 함량의 차이는 뚜렷하지 않은 편이었다. 다만 나트륨의 경우 초등학교의 국류와 찜류가 중학교보다 높았고, 반대로 중학교의 전류는 초등학교보다 높았다. 칼륨의 경우는 숙채류와 찌개류에서만 초등학교가 중학교보다 높았다. 그러나 지역 간에 또는 초등학교와 중학교 사이에 나트륨이나 칼륨 함량에 차이를 보인 것은 동일한 음식에서 나타난 나트륨이나 칼륨 함량의 차이에 비해 중요한 문제가 아니었다. 나트륨 섭취량은 짠맛에 대한 민감성과 선호도에 영향을 받으며, 나트륨을 과다하게 섭취하는 식습관은 어린시절에 형성되어 나이가 들수록 강화된다는 점은 잘 알려져 있다. 초등학교 또는 중학교에서의 학교급식은 아동기와 청소년기의 식사에 큰 영향을 끼칠뿐만 아니라 영양교육에 있어서도 중요한 기회이다. 본 연구 결과가 학교급식의 나트륨 저감화와 칼륨의 충분 섭취에 기여할 수 있기를 기대한다.

A Review of Technologies for Detection and Measurement of Adulterants in Cereals and Cereal Products

  • Purpose: The continued increase in the world population has triggered an increased demand for food. Cereal grains, flour, and their products constitute the staple diet for most of the world's population. This high demand for food, particularly for cereal-based products, has been exploited for commercial gain through adulteration of food materials. We provide a thorough review of the current developments and limitations of modern, nondestructive analytical techniques used for detection of adulterants in cereals and their products and compare them with conventional methods. Results: Adulterated food poses a serious health risks to humans, animals, and the ecosystem in general. Over the last few decades, the adulteration industry has developed fraudulent practices that often outsmart conventional methods of detection and quality control. Therefore, technological advancements to aid in detection and measurement of adulterants in food products and to ensure food quality and safety are critically important to consumers worldwide. Conclusion: There is a continuous demand for development of nondestructive technology to improve the accuracy and efficiency of detection, measurement, and qualification of adulterants in cereals and other food materials.

가공식품의 영양강화 현황과 제 외국의 영양강화 정책 (Current Status of Nutrient Fortification in Processed Foods and Food Fortification Policies in Other Countries)

  • Nutrition fortification of processed foods with microelements is a popular practice in many countries to improve nutritional status of target population. In this study the current food fortification in Korea was evaluated and the regulations and guidelines for food fortification in other countries were presented. Most commonly added nutrients were calcium, vit.C, fiber, vit.Bs and iron. The level of fortified nutrients and the vehicle foods were variable. vit.C and fiber appeared to be overfortified in some foods and the necessity of fortification of these nutrients needs to be examined since the intakes of these elements appears to meet the RDA. Most of other nutrients such as vit.A, vit. $B_1$, vit. $B_2$, and iron were added at the level of 10~25% RDA per serving size. The vehicle foods for fortification were snacks, milk, ramyun, breakfast cereal, juices, candies and ready-to-eat retort pouch foods but not rice which is a staple food in Korea. The guideline and regulation for food fortification is required to ensure safe and proper supplementation of needed nutrients in processed foods.

일제강점기 라디오 요리프로그램의 특성과 내용 (A Study on Radio Cooking Program in Korea during the Japanese Colonial Period)

  • This study was conducted to examine the 2nd broadcasting cooking program of Gyeongseong Radio from April 26th 1933, when the 2nd broadcasting for Koreans started, to December 1941. From its opening date, there were continuously regular cooking programs such as 'Recipes' and introducing 'Japchae'. Analysis of names broadcasted in cooking programs included a total of 452 foods (328 types); specifically, 332 Korean foods, 71 Western foods, 24 Japanese foods, 18 Chinese foods, and seven other foods. Korean foods included 35 staple foods, 223 side dishes, 64 deserts, and 11 sauces. Western foods included seven soups, 25 main dishes, and 25 deserts. Main dishes included many deep-fried dishes, while diverse types of desserts were also introduced. In the case of Japanese food, there were many foods combined with Western food. Chinese food included many types of dumplings and fried rice, as well as many dishes using pork. Among people broadcasting cooking programs, there were 11 whose names were shown in the schedule, all of whom were recognized as the best cooking specialists and educators of the time.

  • I. Subject of the Study A study on the nutritive composition and utilization of wheat or barley for the improvement in our national dietary life. II. Purpose and Importance of the Stu요 1. Korea has long depended on rice for its staple food, but a sharp increase in population in recent years has brought about the shortage of rice, which makes it inevitable to import a great quantity of foreign rice. It is considered therefore that the development and utilization of other cereals than rice is a serious and pressing problem facing Korea. 2. Wheat and barley are the second largest products next to rice in Korea and it is desired that the composition of several kinds of wheat and barley be analysed and their nutrition which rates with differing degrees of hulling process be specified. 3. In this study, the experiment has been carried out in the following order: first, seven species were selected among various kinds of wheat and barley produced in Korea to analyze their respective composition, and to determine the most ideal degree of hulling process on 5 kinds among the 7 kinds: second, ratio of mixing rice with wheat or barley is increase the nutrition value and to seek selfsufficiency in staple food supply: third, economical and reasonable way of improving the nutrition value in the national dietary life is suggested by developing a simple and easy recipe which is also to the taste of the population. III. Contents and Scope of the Study 1. Objectives of the study The objectives will come under five items.

Evaluation of Grain Zinc and Iron Contents of Wheat Germplasm

  • Wheat is the staple food crop in the word, but wheat products have a low bioavailability of iron and zinc. So in the developing world, where wheat is a staple food, it suffers from micronutrients deficiency. This study was conducted to generate wheat varieties with enhanced grain Zn and Fe contents. Sixty wheat resource were cultivated over 2 years (2019-2021) in the field of NICS, Jeonju, Republic of Korea, to identify agronomic traits. Wheat grains were ground using grinder and analyzed whole wheat flour protein contents and Fe and Zn contents using ICP-OES. The average contents of Zn and Fe grain were 4.6 mg/100g (2.4~8.8 mg/100g) and 4.5 mg/100g (2.4~7.9 mg/100g), respectively. The contents of Fe and Zn in the wheat grain had a positive correlation with the protein content of whole wheat flour, but there was no correlation with heading date (4.22~5.27) and the thousand kernel weight (21.3~57.5 g). Although there was year variation, six resources with high contents of Fe (>5.2 mg/100 g) and Zn (>5.3 mg/100 g) grain in 2 years were selected. These results provide information for selecting breeding materials for biofortified wheat, and further studies on germplasms genetic variations and bioavailability are needed.

어린이집 아동들의 식생활 태도에 관한 연구 (A Study on Dietary Attitudes of Preschool Children in Child Care Center)

  • This study aimed at examine dietary attitude, eating behavior and food preferences of children in child care center. The children involved in this study were 153 boys and 134 girls, aged 3 to 6 years old. The eating frequency of breakfast and the number of meal times a day were significant difference according to sex(P<0.01). Reason for skipping breakfast was ‘no appetite’(49.3%). It was found that 51.5% of the children belonged to ‘fair’ in food habit score, while children in ‘poor’ and in ‘excellent’ were 25.0% and 9.7% respectively. There was no significant difference in food habit score between boys and girls. Their preferred staple foods were ‘cooked rice’ and ‘Chajangmyon’, their preferred soup was ‘seaweed soup’. Also, their most preferred side dishes with animal foods were ‘fried chicken’ and ‘Bulgogi’. The preference of ‘hard boiled soybean curd’ and ‘pan fried soybean curd’ among the side dishes with vegetable foods were significant according to the obesity index(P<0.05). Children preferred side dishes with animal foods to those with vegetable foods. First considered item in meal preparation was child's favorite(58.1%). Mother's response to child's unbalanced diet was ‘trying to persuade the child’(56.6%). It was significant according to mother's occupation(P<0.01). The nutritional management program at child care center is required to enhance the nutritional status of children. Also the nutritional education for the children and their meal planners is required for better growth and health promotion of preschool children.

영유아 보육시설 어린이의 식습관 및 기호도 조사연구 (A Survey of Eating Behavior and Food Preferences of Children in Preschool Nursery Facilities)

  • This study was aimed at examine eating behavior and food preferences of children in preschool nursery facilities. A survey was conducted on parents using questionnaires including general characteristics, eating behavior, and food habits at home and food preferences of children in 6 nursery facilities. The children involved in this study were 150 boys and 154 girls, aged 1 to 7 years old. Sixty three percent(187 children) of the children were on 'regular' meal times, and 37.0%(110 children) were on 'irregular' meal times. The major reason for their irregular meal times were 'their' concentration on other tasks'(26.6%) and 'no appetite'(25.5%). The meal eaten best by children was 'dinner' while that eaten worst was 'breakfast'. The major type of their eating habit problem was 'unbalanced diet'(62.1%), and their mothers' response to the unbalanced diet was 'trying to persuade the child'(71.6%). The number of snacks at home was one or twice a day(97.3%), and 'preference'(67.8%) was the main reason for selecting particular snacks. Their preferred staple foods were 'cooked rice with meat & vegetables and Chinese noodles', and 'noodles with bean sauce', and their preferred soup was 'seaweed soup' Also, their most preferred meat dishes were 'fried chicken' and 'thin sliced barbecued beef. Children preferred side dishes with animal foods to those with vegetable foods. Since children liked mixed dishes, it seems desirable to introduce foods which children dislike as ingredients in mixed dishes.

통일 대비 북한 농업생산기반시설 확충방안 - 경제성 분석을 중심으로 - (Agricultural Infrastructure Expansion Plan for North Korea Providing for Unification of the Korean Peninsula - An Economic Feasibility Analysis -)

  • We propose an Agricultural Infrastructure Expansion Plan (AIEP) for North Korea following unification from the standpoint of a united Korea's social stability. We predict the food demand after unification, according to four different development scenarios based on the AIEP. These scenarios include meeting a self-sufficient level in the staple food crop, satisfying long-term food supply and demand for the North Korean people, achieving a level of North Korean food consumption comparable to that of South Korea, and maintaining productivity to stabilize of North Korea's rural society. We present the results of a 'benefit-cost' analysis in meeting the production targets of predicted food demands after unification from a civil engineering perspective. We found that the estimated total costs would range from 15.2 to 43.0 billion dollars depending on the particular AIEP scenario. In our analysis, all of the four scenarios presented above demonstrated a high degree of economic validity. We conclude that the AIEP is a necessary and economically valid project for a united Korea's future because it would forestall the collapse of North Korea's rural communities, thereby preventing tremendous economic losses upon unification.

강원 홍천군 거주 노인의 농번기 급식용 메뉴개발과 적용 (Development and Field Application of Meal Service Menu for the Elderly on Busy Farming Season in Hongchun, Gangwon)

  • Meal service menu for the elderly on busy farming season in Hongchun, Gangwon was developed and applied using seasonal foods from local crops. Acceptance of each menu right after the meal service was investigated while unit cost and leftover of each menu were also monitored. Acceptance of the staple food in Menu 4 showed the highest value with a score of 8.97.and side dishes of Menu 4 were greatly prdferred with a score of 8.69(p<0.05). General preference on menu was the highest at Menu 4 scoring 8.87(p<0.05). The amount of leftover for a special meal of Menu 3 was 75.80 g, which was the highest (p<0.05). Males left the least of Menu 4(30.82 g) whereas females did of Menu 2 (10.63 g, p<0.05). The foeld application of preference and satisfaction, and the small amount of leftover of the supplied meals.
