Dimethyl Trisulfide Produced by Bacillus sp. in Cooked Soybean

  • The neutral fraction of whole volatile flavor compounds produced by Bacillus licheniformis SSA3 and Bacillus subtilis PM3 in cooked soybean was identified by using GC/MS and Kovats retention index. The presence of dimethyl trisulfide, which emits characteristically Korean soy sauce-like odor in traditional Korean soy sauce, in identified volatile flavor components was confirmed. Dimethyl trisulfide may be produced by Bacillus licheniformis SSA3 and Bacillus subtilis PM3 in cooked soybean.

Effect of Curing Time on the Physicochemical and Sensory Properties of Beef Jerky Replaced Salt with Soy Sauce, Red Pepper Paste and Soybean Paste

  • This study was done to investigate the quality properties of beef jerky with soy sauce, red pepper paste, and soybean paste replacing salt. Sliced beef samples were cured in salt (control), soy sauce, red pepper paste, and soybean paste for 24 or 48 h and then dried at $70^{\circ}C$ for 8 h. Treatments showed higher final moisture content and lower $Na^+$ concentration than the control after drying for 8 h. The lightness and shear force values were lower in all treatment samples than in the control during 48 h of curing time. In particular, lower lipid oxidation was found in the jerky cured with red pepper paste than in the control. Sensory evaluation showed that color, flavor, and tenderness of jerky samples were improved by replacing salt with soy sauce, red pepper paste and soybean paste, and higher likeability scores of the beef jerky were obtained among those treatments after 48 h of curing time.

  • The aim of this study was to investigate the quality properties of beef jerky replaced salt with soy sauce, red pepper paste, and soybean paste. The quality properties of beef jerky including final water activity ($a_w$), moisture content, pH, color, shear force, total plate counts, thiobarbituric acid reactive substance (TBARS) values, and sensory evaluations were investigated. The sliced beef samples were marinated in salt (control), soy sauce (T1), red pepper paste (T2), and soybean paste (T3) for 24 h and then dried at $70^{\circ}C$ for 6-8 h. The water activity of finished beef jerky varied from 0.72 to 0.70. The water activity for control and T1 samples decreased more rapidly as drying proceeded up to 6 h. The samples with salt replacement showed a lower pH and lightness than the control (p<0.05). The T1 sample showed a significant decrease in total plate counts after 21 d of storage (p<0.05). The TBARS for all treatments increased with storage days (p<0.05). The TBARS were significantly lower in T2 and T3 samples compared to control and T1 until 21 d of storage (p<0.05). The samples with salt replacement showed a lower intensity of saltiness than the control. Sensory evaluations found that the replaced soy sauce of beef jerky samples had better overall acceptability scores than the other treatment samples. It was concluded that replacing salt with soy sauce can delay lipid oxidation and enhance the sensory acceptance of beef jerkies.

쌀된장 분말을 첨가한 돈가스 소스의 품질특성 (Quality Characteristics of Pork Cutlet Sauce Added with Rice Soybean Paste Powder)

  • 쌀된장분말의 식품소재로의 가능성을 평가하기 위해 쌀된장 분말 0, 1, 3, 5, 7%를 첨가하여 돈가스 소스를 제조한 후 품질특성을 조사하였다. 점도는 쌀된장 첨가량에 따라 $584\sim776$ cP의 범위에 속하였으며 염도는 $1.61\sim3.07%$의 범위에 속하였다. 명도는 쌀된장 분말 첨가량이 증가함에 따라 0.54에서 0.15로 감소하였으며 적색도와 황색도는 각각 2.61에서 0.36, 0.77에서 0.10으로 감소하였다. 쌀된장분말을 첨가한 돈가스 소스의 일반성분은 수분함량 $62.1\sim73.0%$, 조단백질 $3.2\sim7.6%$, 조지방 $0.2\sim0.5%$, 당질 $9.1\sim12.1%$, 조섬유 $1.5\sim2.3%$, 조회분 $9.9\sim12.2%$를 나타내었다. 관능검사 결과 대조구가 가장 높은 값을 보였으나 쌀된장 분말 1%와 3% 소스는 시판소스에 비해 우수한 것으로 나타났다.

한국 전통 간장의 숙성중 관능적 품질에 미치는 성분의 변화 -아미노산성질소, 아미노산 및 색도를 중심으로 (Changes of Components Affecting Organoleptic Quality during the Ripening of Korean Traditional Soy Sauce -Amino Nitrogen, Amino Acids, and Color)

  • This study was performed to investigate the changes of amino nitrogen, total amino acids, free amino acids, and color of Korean traditional soy sauce (kan-jang) during the ripening and storage for 12 months and the characteristics of the changes. All of the preparation methods for soy sauce followed the recommendations of the Korea Food Research Institute. The components of soy sauce were analyzed at 0,6, and 12 months. The contents of amino nitrogen of soy sauce were significantly higher than that of soybeans or meju (soybean cakes) at the initial stage of storage (p<0.05), and decreased during the storage. The content of total amino acids of soybean sauce was significantly lower than that of soybeans, and the content of free amino acids was higher than that of soybeans (p<0.05). The contents of total and free amino acids decreased in soy sauce after 12 months of storage (p<0.05). The composition of total and free amino acids and their ratios of soy sauce were changed during the storage. The ratios of free to total amino acids of soybeans, meju, and soy sauce were 0.8%, 17.3%, and 53.1-59.8%, respectively. Glutamic acid, which represents the savory taste, was detected the most abundantly in soy sauce during the storage. The ratios of free to total amino acids of glutamic acid were 42.9-59.5% in soy sauce. Lightness of Hunter color of soy sauce decreased over time (p<0.05). This study indicates that the ratios of free to total amino acids of soy sauce were much higher than those of soybeans, although its contents of total amino acids were much lower than those of soybeans. This study also indicates that this comes from the preparation and fermentation of meju. It was suspected that the organoleptic characteristics of soy sauce derived from the amino nitrogen, amino acids, and color might be inferior over 1 year of storage time. However, more detailed research should be conducted to interpretate this characteristics more accurately.

전통 장류로 제조한 양념육의 숙성 중 맛성분 변화 (Changes in Taste Compounds of Seasoned Pork with Korean Traditional Sauces during Aging)

  • 한국 전통 장류를 이용한 양념 돈육의 맛성분에 관한 연구로 돼지고기의 등심을 채취하여 $5{\time}15{\time}5$cm 크기로 자른 후 육을 동일한 비율의 양념액에 침지하여 $1{\pm}1^{\circ}C$에서 28일간 숙성하면서 양념육(간장소스 양념육, T1; 고추장소스 양념육, T2; 된장소스 양념육, T3)의 품질 특성을 조사하였다. Citric acid와 fumaric acid는 숙성 14일 높게 나타났으며, 고추장소스로 양념한 돈육이 다른 처리구에 비해 높은 함량을 나타내었다. Propionic acid와 lactic acid는 다른 처리구에 비해 된장소스로 양념한 돈육에서 높게 나타났다. 유리 아미노산은 간장소스로 양념한 돈육에 비해 된장과 고추장소스로 양념한 돈육에서 높게 나타났으며, 숙성기간에 따라 모든 처리구에서 약간 증가하였다. 숙성기간동안 IMP 는 감소한 반면, inosine은 증가하였으며, inosine은 간장소스로 양념한 돈육에 비해 된장과 고추장소스로 양념한 돈육에서 높게 나타났으며, 숙성기간에 따라 모든 처리구에서 증가하였다. 관능검사는 숙성기간의 증가에 따라 향과 맛은 물론 연도와 다즙성도 증가되어 기호성도 숙성 초기에 비해 증가되었다. 이상의 결과를 요약해 보면 기존의 양념육은 간장소스가 대부분이었으나 고추장소스나 된장소스를 활용한다면 맛과 품질이 우수한 다양한 양념육 생산이 가능할 것으로 사료된다.

국 종류에 따른 장류의 분양 결정과 조미료의 첨가효과 (A Study on Determining the Optimal Amounts of Fermented Soybean Foods in Various Korean Soups and the Effect of Condiments in Two Basic Stocks)

  • This sudy was conductted for the purpose of determining the optimal amounts of soy tauce, soy bean paste and hot pepper paste, in 3 different Korean soups and comparing the effect of condiments such as salt, soy sauce, black pepper, and Mono Sodium Glutamate, on the taste of two basic Korean Stocks, The results estimated by Palatability Test were as follows: 1. The average NaCl contents of two kinds of commercial soysauce were 15.9%, 25.6%, respectively. 2. The NaCl contents of 2% sardine stock, and 19% beef stock were 0.16~1.17%, 0.17~0.18% respectively. 3. @ According to Saltiness in sardine stock, there was no difference between the soy sauce-added group and the salt-added group. However, for the removing effect of Off-flavor, and Overall Taste, the soy sauce-group had higher score than salt-added group respectively. (p>.0.1) ⓑ In beef stock, there was no difference between the soysauce-added group and the salt-added group in Saltiness test. The soy sauce-added group had higher score in removing effect of Off-flavor (p>.0.1). On other hand, in Overall Taste, the salt- added group was more effective than the soy sauce-added (p>.0.1). 4 @ According to Saltiness test in beef stock, there was no difference between the black pepper-added and non-added group. However, for the removing effect of Off-flavor and, Overall Taste, the added group had higher score than the non-added group, respectively. (p>.10, p>.0.5) ⓑ Also, according to Saltiness test in beef stock, there was no diffetrence between the MSG-added group and non-added group. However for the removing effect of Off-flavor, and Overall taste, the MSG-added group was more effective than the non-added group. (p>.01) 5. The best recipes of soybean sprouts soup for S persons, in this experiment, were soybean sprouts 180 g, sardine 28 g, soysauce 1/2 T.S., salt 7 g, green onion 15 g, choppedgarlic It. s., against 7 C of water, and total cooking time was 20 minutes. 6. The best recipes of clear-beef soup were beef 200 g, radish 200 g, tangle weed 10 g, sesame oil 1/2 t.s., green onion 15 g, chopped garlic 1 t.s., black Pepper 1/8 1.s., and soy sauce 1 T.S., salt 7 g or soy sauce 2 T S., salt 3.5 g. The total cooking time was minutes. 7, The best recipes of soybean pasted Chinese cabbage soup were Chinese cabbage 300 g, sardine 28 g, green onion 15 g, chopped garlic 1 t.s., and bean paste 50 g, hot pepper paste 13 g, salt 3g or bean paste 65 g, hot pepper paste 16 g, salt 1.5 g. And the total cooking time was 25 minutes. 8. Soy sauce, black pepper, M.S.G., bean paste and hot pepper paste were effective on removing Off-flavor of experimental soups.

초임계 유체 기술로 추출한 목초액 첨가 장류의 품질향상효과 및 보존성

  • $40^{\circ}C$, 110bar 조건에서 초임계 추출장치를 이용하여 타르, 탄화취 등의 유해성분이 제거된 정제 목초액을 간장 및 된장에 첨가한 결과 간장의 경우 정제 목초액의 첨가 농도가 증가할수록 첨가하지 않은 것에 비해 균수가 적어 보존효과가 있었으며, 정제 목초액을 첨가한 간장은 산막효모의 생성이 전혀 없어 품질에는 변화가 없었다. 된장의 경우 정제 목초액을 첨가한 것이 첨가하지 않은 것에 비해 대체로 균수가 적어 보존효과가 있었으며, 된장의 색을 측정해 본 결과 정제 목초액을 첨가한 것은 된장의 갈변이 첨가하지 않은 것에 비해 느리게 진행됨을 알 수 있었다.

양조간장으로부터 항산화성 물질의 분리 및 그 특성 (Separation and Characteristics of Antioxidative Substances in Fermented Soybean Sauce)

  • 양조간장 중의 항산화료력을 가진 물질을 분리하고 그 특성을 알기위하여 Sephadex G-10, 50, 100을 이용하여 양조간장을 겔여과하고 각 획분에 대한 항산화성과 관련된 특성을 측정하여 다음과 같은 결과를 얻었다. 양조간장을 Sephadex G-10에서 분획한 결과 갈색도가 가장 높은 멜라노이딘 획분(MF-I)에서 항산화효력이 가장 컸고, 이 부분은 질소를 함유하고 있었으며 환원력이 매우 큰 물질이었다. Sephadex G-10에서 항산화 효력이 가장 큰 MF-I을 동결 건조하여 Sephadex G-50에서 재분획 한 결과, 갈색물질은 광범위한 범위에서 분획되었고 저분자의 멜라노이딘 부분(MF-II)에서 항산화성 및 환원력이 가장 크게 나타났다. 이 MF-II 획분을 다시 Sephadex G-100에서 재분획하여 항산화효력이 비교적 크고 환원력이 매우 큰 한 획분(MF-III)을 분리하였으나 환원력을 제외한 갈색도 및 항산화력은 상대적으로 낮았다. 그리고 양조간장의 항산화성 관련 물질의 구조적 특성을 알아보기 위해 분리한 각 획분의 UV-VIS 및 IR spectra를 측정한 결과 항산화성이 큰 각 획분(MF-I, MF-II 및 MF-III)의 UV-VIS spectra는 $260{\sim}320\;nm$에서 완만한 peak를 나타내는 전형적인 멜라노이딘의 특성을 나타내었다. 그리고 IR spectra의 경우 특징적인 OH기 및 amine기 구조를 지니고 있었고 이들이 항산화성을 갖는 기능기로 추정되었다.
