This study was performed in order to compare the changes in fruit quality and antioxidant activity depending on the ripeness degree of the banana flesh and peel (unripe, ripe, and over ripe) when stored at room temperature for 6 days. The moisture contents showed differences such as the significantly lower maturity in the over ripe fruit peel and the moisture content increase in the fruit flesh during ripening. During the maturity stage, the L and b values decreased, while the a value increased. During ripening, the titratable acidity (TA) decreased, while the soluble solids contents (SS), sugar acid ratio (SS/TA), total sugar, and reducing sugar contents increased, respectively. Also during ripening, the glucose and the fructose contents increased considerably, thus resulting in the decrease of the sucrose content. In addition, this study revealed that the phenolic substance, which was part of the fruit skin, showed more favorable reaction to radical ability than the fruit flesh. Furthermore, the DPPH, ABTS radical scavenging ability, and reducing power showed better reaction for the fruit skin than for the fruit flesh, and there was a significant increase in the antioxidative activity as a result of the higher levels of phenolic substance. Therefore, maturity played an important role in changing the chemical composition and physiological activity of a banana. The unripe peels could be used as antioxidant ingredients and they could also enhance the biological activity in the utilization of by-products.
The effects of ultrasound-assisted extraction (UAE) on the physicochemical and sensory characteristics of coffee beverage were investigated. Coffee powder (4 g) was soaked into 80 mL distilled water and extracted for 15, 30, 60, 120, 180, 240, or 300 sec at $60^{\circ}C$ in an ultrasonic bath (40 kHz, 300 W). Hot-water extraction (HE) at $80^{\circ}C$ for 300 sec was used as a control. Content of soluble solids in coffee beverage prepared by UAE (60~300 sec) was same or higher than those of HE, however, no significant differences were observed among the four beverages extracted for more than 120 sec. Clarity and browning index of beverage prepared by UAE (15 sec) and by HE were significantly higher and lower, respectively, compared to those of the other. Content of phenolic compounds was lower and higher respectively, in beverage prepared by UAE (15 sec, 30 sec) and UAE (60~300 sec) than by HE. DPPH radical scavenging activity was highest in beverage prepared by UAE (15 sec) and HE. Sensory evaluation showed that color, aroma, taste, and overall acceptability were rated with the best score for beverage prepared by UAE (15 sec) and the worst score for beverage prepared UAE (120~300 sec). Therefore, ultrasound-assisted extraction can be used for improving quality of coffee beverage.

This study was conducted to investigate the effects of drying methods for Citrus junos peels on quality characteristics of the hot-water leachate from teabags containing those peels. Fresh peels were hot-air ($50^{\circ}C$), cold-air ($30^{\circ}C$), or freeze-dried ($-45^{\circ}C$), powdered to a size of 40 mesh, packaged with a paper sachet, and then the packaged teabags were leached for 10 min with hot-water ($70^{\circ}C$). $L^*$ value (lightness) and $-a^*$ value (greenness) of the peel powder were the highest in the freeze-dried samples. Soluble solids and titratable acidity of the teabag leachate were in the following order; cold-air, freeze, and hot-air dried samples. Among free sugar contents in all samples, fructose content was the highest, followed by glucose and sucrose. Fructose and glucose contents were not affected by drying methods. There was no significant difference in the flavonoid content among the peels dried using three drying methods. DPPH radical-scavenging activity of the leachate was the highest in the cold-air dried sample. These results suggest that cold-air drying would be an effective method to enhance the quality of hot-water leachate of teabags prepared from C. junos peels.
Effects of different processes or texture of cucumber pickles fermented in 7% NaCl solution were studied. Cucumbers were treated with different processes: control; preheating in 7% NaCl, 0.04M $CaCl_2$ solution ($60^{\circ}C$, 1hr); combination of preheating and post microwave heating (5 min, midium high level, 2450 Mhz); preheating in the solution which was adjusted to pH 8.5. In each process the pH and total acidity of brine solution, total pectin contents in alcohol insoluble solids (AIS), hot water soluble pectin (HWSP) contents and firmness of cucumber pickles were determined at 0, 5, 10, 15 and 25 days of storage periods. Total pectin contents and the firmness of pickles were decreased during 25 days of storage. Control group showed the lowest value and post microwave heating group marked the highest value in total pectin contents and firmness retention of cucumber pickles. The results of this study indicated that total pectin content seems to correlate with the firmness of cucumber pickles. However, HWSP content did not show any correlation with firmness of cucumber pickles. Post microwave heating method could be used to retain firmness of fermented cucumber pickles.
This study was conducted to develop a sauce prepared with sweet pumpkin and Korea Doenjang. The optimum conditions for manufacturing sweet pumpkin-doenjang sauce were investigated using the response surface methodology, based on the central composition design. The amount of stock added, the thickening agent, and doenjang were used as the independent variables, and the sensory characteristics (taste, flavor, color, and overall acceptability) were used as the dependent variables to evaluate the optimum conditions for the preparation of the sauce. The optimum conditions for the maximized-responses variables in the preparation of the sauce were 448.5 g of sweet pumpkin stock, 331.5 g of the thickening agent, and 20.0 g of doenjang. The quality characteristics of sweet pumpkin-doenjang sauce that was manufactured at optimum conditions were as follow: 89.55% moisture content, 0.70% crude protein, 0.10% crude lipids, and 0.71% crude ash. The pH of the sauce was 5.96; total acidity, 0.08%; and soluble solids, 6.80$^{\circ}Brix$. The total polyphenol content of the sauce was 5.70 mg/L. The electron-donating ability and reducing power of the sauce were, 14.24% and 1.64 OD, respectively.

This study was undertaken to investigate the effects of bone waste on the conservation of nitrogen in aerobic composting process by inducing the struvite crystallization, which was known as a powerful method for conservation of nitrogen in composting reaction. Bone waste was dried at oven and crushed to less than 3 mm prior to use. It was found phosphorus content in bone waste was about 20.9% of the fixed solids from the leaching experiments using sulfuric acid. Addition of seed compost affected the progress of composting reaction substantially. In case seed compost was not used, the duration of initial low pH was greater than seed compost was added. This prolonged acidic pH may have a beneficial effect on the leaching of P from the bone waste and struvite crystallization. The struvite crystallization and resulting conservation of nitrogen by addition of bone waste was confirmed by both reduction in ammonia loss and increased ammonia content in compost. However the level of struvite crystallization observed with bone waste addition may be less than the cases water-soluble phosphate salts were used.
The effects of freeze-drying (FD), room-temperature drying (RD), and room-temperature drying after roasting (RDAR) on the volatile organic compounds (VOCs), sugar content, flavonoids, and antioxidant activity of Hallabong peel tea were tested. This experiment was conducted to collect a basic information for developing of peel tea. FD samples showed lower total soluble solids and VOCs than other drying treatments. RDAR samples showed a significant difference in VOCs and visual color of FD samples. The reduced VOCs in FD samples was caused by freeze drying treatment; identical VOCs composition of hallabong peel was detected from condensed ice of freeze-drying machine. Metabolomics analysis showed no difference among three drying treatments. In addition, antioxidant activity and total phenolic compounds were not significantly different from three different drying treatments. Thus, RD or RDAR is a suitable drying method for hallabong peel tea rather than FD method in terms of VOCs and economical reasons.
This study was conducted to develop a preservation technology that can induce changes in physicochemical properties to effectively utilize of persimmon leaves. The application effects of steaming or freezing technique were investigated. Astringent persimmon leaves were steam-blanched (100℃, 30 sec) or frozen (-20℃, 15 d), followed by hot-air drying (50℃). The physicochemical properties of the extract obtained by hot-water leaching from the dried leaves were compared. The extract of leaves dried without pretreatment was used as a control. L* value was higher in steamed than in control and frozen. a* value was highest in the control. The browning index was higher in the frozen and lower in the steamed than in the control. Soluble solids were the highest in the steamed and the lowest in the frozen. Sucrose content was relatively high in the steamed, and the glucose and fructose contents were relatively high in the frozen. Total polyphenol content and DPPH radical scavenging activity were higher in steamed and lower in frozen than in control. Thus, it was confirmed that steam or freeze pretreatment after harvesting persimmon leaves affects the extraction yield, color, antioxidant capacity and component changes of dried persimmon leaves. Unlike steaming, freezing pretreatment showed the effect of promoting decomposition and browning reactions, and it is considered useful when such an effect is needed.
In this study, the availability of slurry composting and biofiltration (SCB) solution as an alternative for synthetic nutrient solution was determined by monitoring the growth, fruit yield, and fruit quality of cherry tomato (Solanum lycopersicum L. 'Unicon'). Treatments for nutrient solution were consist of SCB 1/2N, 1N, 2N, and commercial nutrient solution 1N (CNS 1N) based on nitrogen concentration (218.32 $mg{\cdot}L^{-1}$) of cherry tomato nutrient solution (control 1N). All nutrient solution including SCB solution (440~520 mL per day) was supplied to rock wool medium using a timer. After 31 days of transplanting, fresh and dry weights of shoots, leaf area, plant height, stem diameter, SPAD value and number of node were measured. After measuring growth characteristics of tomato plants, total fruit yield, ratio of marketable fruit yield, fruit weight, total soluble solids content, total acidity, total phenolic concentration, and antioxidant capacity were determined once a week for 7 weeks. As a result, among the SCB treatments, SCB 1/2N was similar to control 1N and CNS 1N in terms of fresh and dry weights of shoots, leaf area, stem diameter, number of node, and SPAD value. Increased N concentration of SCB inhibited the growth of tomato plants. Total fruit yield of SCB 1/2N was 47% of that of control 1N which showed the best result. Percentage of marketable fruit yield in SCB 1/2N was about 58%. Soluble solids contents, total acidity, total phenolic concentration and antioxidant capacity was the highest in SCB 2N and the other treatments were not shown any difference. Blossom-end rot rarely occurred in control 1N and CNS 1N while SCB treatments without Ca induced the physiological disorder of 7~19%. In conclusion, SCB 1/2N was good for the vegetative growth of cherry tomato plants but reduced yield and quality of fruit compared with control 1N and CNS 1N. Thus, it is possible to apply SCB solution to grow cherry tomato plants hydroponically but in the consideration of fruits yield and quality additional supply of several minerals would be required.
During the growing period, the integrated solar radiation inside the greenhouse was 12.7MJ·m-2d-1, and which was 90% of the average daily global radiation outside the greenhouse, 14.1MJ·m-2d-1. The 24-hour average temperature inside the greenhouse from July to August, which has the highest temperature of the year, was 3.04℃ lower than the outside temperature, and 4.07℃ lower after the rainy season. Before the operation of fog cooling system, the average daily RH (%) was lowered to a minimum of 40% (20% for daytime), making it inappropriate for paprika cultivation, but after the operation of fog system, the daily RH during the daytime increased to 70 to 85%. The average humidity deficit increased to a maximum of 12.7g/m3 before fog supply, but decreased to 3.7g/m3 between July and August after fog supply, and increased again after October. The daytime residual CO2 concentration inside the greenhouse was 707 ppm on average during the whole growing period. The marketable yield of paprika harvested from July 27th to November 23rd, 2020 was higher in 'DSP-7054' and 'Allrounder' with 14,255kg/10a and 14,161kg/10a, respectively, followed by 'K-Gloria orange', 'Volante' and 'Nagono'. There were significant differences between paprika cultivars in fruit length, fruit diameter, soluble solids (°Brix), and flash thickness (mm) of paprika produced in summer season at large single-span plastic greenhouse. The soluble solids content was higher in the orange cultivars 'DSP-7054' and 'Naarangi' and the flesh thickness was higher in the yellow and orange cultivars, with 'K-Gloria orange' and 'Allrounder' being the thickest. The marketable yield of paprika, which was treated with cooling and heating treatments in the root zone, increased by 16.1% in the entire cultivars compared to the untreated ones, increased by 16.5% in 'Nagano', 10.3% in the 'Allrounder', 20.2% in the 'Naarangi', and 17.3% in 'Raon red'.
