Quality Characteristics of Mulberry Cultivated under Greenhouse and Open Field Conditions (시설 및 노지 재배한 오디의 품질 특성)

  • This study investigated the quality characteristics of mulberry cultivated under greenhouse and open field conditions. Quality characteristics such as the number of aerobic bacteria, pH, acidity, soluble solid content, and contents of free sugar, polyphenol, and anthocyanin were investigated. The number of aerobic bacteria in mulberry cultivated in open fields was higher than that of mulberry cultivated in the greenhouse. The average pH was significantly higher in greenhouse mulberry whereas acidity was higher in mulberry grown in open fields. The average soluble solid content of mulberry cultivated in open fields was slightly higher than that of mulberry cultivated in the greenhouse, although the difference was not significant. Fructose and glucose were detected in mulberry as free sugar. The free sugar content of mulberry was not affected by cultivation conditions. The average polyphenol contents of mulberry cultivated in the greenhouse and open fields were 393.36 and 514.47 mg%, respectively. The average anthocyanin contents of mulberry cultivated in the greenhouse and open fields were 205.00 and 265.56 mg%, respectively. The average polyphenol and anthocyanin contents of mulberry cultivated in open fields were significantly higher than those of mulberry cultivated in the greenhouse.

Quality Characteristics of Bread added with Gochujang (고추장을 첨가한 식빵의 품질 특성)

  • This study was conducted to investigate the quality characteristics of bread added with four different amounts (0% 3%, 6%, 9%, 12%) of gochujang. The pH, total soluble solid and moisture content of bread added with gochujang were $4.88{\pm}0.05$, $62.00{\pm}0.81%$ and $42.88{\pm}007$, respectively. For amino nitrogen content $224.00{\pm}0.00%$, chromaticity had a L value of $24.46{\pm}0.06$, a value of $10.18{\pm}0.13$, and b value of $7.44{\pm}0.10$. The pH of bread decreased with increasing gochujang content in bread. Total soluble solids of dough increased with increasing gochujang in bread (p<0.001). For fermentation 3% expansion was the highest, and bread volume and specific volume increased with increasing gochujang in bread. For baking loss, 12% was the highest. L values of bread decreased for both crust and crumb with increasing gochujang content in bread, and b values tended to decrease for both. Moisture contents increased with increasing gochujang content (p<0.001). For hardness, cohesiveness, springiness, and gumminess, chewiness of 12% gochujang added to bread showed the lowest value. Evaluation of sensory characteristics of 3% gochujang added to bread was the best. In conclusion, these results confirm that bread with gochujang has good effects on fermentation and preference.

Characteristics Evaluation and Development of Peach Washing System (복숭아의 세척시스템 개발 및 특성 평가)

  • This study was conducted to find condition of improving the quality of peach by using surfacing washing system. The rate of weight loss of A,B groups were showed slower decreasing trend than CT group and the value of soluble solid degree was not different significantly among all groups from the results of stored peach treat with surface washing system of peach in the first experiment. The colory value of surface were increased with increasing storage period in all treatments. Browning pace of A,B groups were slower than control. Emission of carbon dioxide was increased from the results of respiration rate, 6-10 mL/kg/hr $(10^{\circ}C)$ and 32-41 mL/kg/hr $(25^{\circ}C)$. In second experiment with surface washing system of peach, the value of soluble solid was showed with similar value from 10 $Brix^{\circ}$ to 13 $Brix^{\circ}$. The pace of soft rot of EW groups were lower than CT groups from the results of hardness during storage period. The results of colory value was not showed with significant difference in $15^{\circ}C$ and $20^{\circ}C$ storage temperature but changed to browning in EW groups. The moisture contents was from 85% to 90% in all groups. And the count of total microorganism of EW groups were lower than control. Also total coliform of EW groups were negative. In sensory evaluation, washing peach was showed higher value with significant difference in all acceptability.

  • Results on growth and fruit elongation and quality by rootstock sort of oriental melon were followed; Growth of upper part of oriental melon was faster grafted seedlings than self-root seedlings and among grafted seedlings, Elite and Shintozoa rootstocks were better than Hongtozoa. Growth of Elite and Shintozoa rootstocks, stem length and leaf number, were laster after 30 days of seedling transplant. Fruit elongation had no difference in rootstocks sort. Fruit weight was higher Elite and Shintozoa grafted seedlings than self-root seedlings but soluble solid contents of fruit was higher self root seedlings, $13.9^{\circ}Brix$, than Elite grafted seedlings, $12.5^{\circ}Brix$.

Change in Quality Properties of Extracts from Roasted Pleurotus eryngii by Microwave-Assisted Extraction Condition (마이크로웨이브 추출조건에 따른 볶음 새송이버섯의 품질 특성 변화)

  • This study was performed to investigate the changes in quality properties of extract from roasted Pleurotus eryngii by microwave-assisted extraction (MAE). MAE was carried out under different conditions including ethanol concentration, extraction time and microwave power. Total phenolics compound contents, electron donating ability (EDA) and nitrite-scavenging ability at pH 1.2 were high at 50% ethanol concentration. Superoxide dismutase (SOD)-like activity was high at 75% ethanol concentration. Soluble solid and total phenolics compound content decreased as extending extraction time up to 7 min. EDA decreased as increased extraction time. SOD-like activity and nitrite-scavenging ability were not significantly different. The highest soluble solid content, total phenolics compound content and EDA were obtained at 100 W extraction of microwave power. SOD-like activity was high at 25 W. But microwave power did not significantly affect the nitrite-scavenging ability.

Change of Physicochemical Properties and Hesperidin Contents of Jeju Processing Citrus Fruits with the Harvest Date (수확시기별 제주산 가공용 감귤의 이화학적 특성과 hesperidin함량)

  • This study, the changes in physicochemical properties and hesperidin content of Jeju-processed citrus fruits according to the harvest date were evaluate. The soluble-solid content, pH, and soluble solid-acid ratios gradually increased, but titratable acidity slightly decreased with a delay in the harvest date. The color index, lightness, yellowness, and turbidity slightly decreased whereas the redness slightly increased with a delay in the harvest date. The hesperidin content slightly decreased with a delay in the harvest date. Hesperidin, which is the major cause of juice cloudiness, decreased with a delay in the harvest date. These results suggest that later-harvested fruit juice is bound to be less cloudy.

Optimization of Hot Water Extraction Conditions from Hericium erinaceus (노루궁뎅이 버섯의 열수 추출조건의 최적화)

  • Response surface methodology (RSM) was used to monitor characteristics of hot water extracts from Hericium erinaceus. A central composite design was applied to investigate the effects of independent variables, extraction temperature (X$_1$), sample ratio (X$_2$) and extraction time (X$_3$) on dependent variables such as soluble solid (Y$_1$), total phenols (Y$_2$), crude protein (Y$_3$) and electron donating ability (Y$_4$) of the extracts. As the sample ratio increased, the soluble solid content increased, while extraction temperature played a minor role. As a whole total phenols and crude protein contents increased with increasing the sample ratio. Electron donating ability increased in proportion to extraction temperature and sample ratio, which didn't increase at certain period. Then ranges of optimum extraction conditions for maximized physicochemical properties were 91.5∼96.5$^{\circ}C$ in extraction temperature and 3.5∼4.2 g/100 mL in sample ratio. Predicted values at the optimized conditions were coincident with experimental values.

A Study on Developement of Effective Utilization Method of Skipjack Tuna Viscera (가다랑어 내장의 효율적인 이용방법 개발에 관한 연구)

  • To develop an effective utilization method of skipjack tuna viscera, fish meal by an improved fermentation method(FFMA) was prepared by fermentation of the solid materials separated from autoclaved viscera with Aspergillus oryzae for 72 hours and by adding the concentrated soluble extracts separated from autoclaved viscera to the fermenting solid materials during fermentation, and FFMA fish meal was compared with the fish meals prepared by Kato mathod(FFMN) and conventional nonfermenting method(NFM). FFMN fish meal was prepared by fermenting the solid materials separated from autoclaved viscera with Aspergillus oryzae for 17 hours without adding the soluble extract. The extracts from FFMA fish meal(FFMA-E) and raw viscera(RM-E) were also prepared respectively after digestion with proteases obtained from Bacillus subtilis and Aspergillus oryzae and compared with each other on the contents of free amino acids. The peroxide values decreased greatly in contents of $Vitamin\;B_{1},\;B_{2}\;and\;C$ significantly increased in FFMA fish meal compared with those of other fish meals. The total free amino acid content of FFMA-E was significantly higher then that of RM-E. The total free essential amino acid content also greatly increased in FFMA-E in which threonine, methionine and lysine showed remarkable increments. Almost all individual nonessential amino acids were higher in FFMA-E then in RM-E. The content of taurine, a nonprotein amino acid, greatly increased compared with other nonprotein amino acids in both extracts.

Effects of Complex Carbohydrase Treatment on Physiological Activities of Pear Peel and Core (탄수화물 분해효소 처리에 의한 배 과피와 과심의 항산화 생리활성 증대효과)

  • The effects of treatment with various complex carbohydrases such as Pectinex, Celluclast, Viscozyme, and Ultraflo on the physiochemical properties, polyphenol extraction yields and antioxidant activities of pear peel and pear core were investigated. When pear peel and pear core were treated with complex carbohydrases, the soluble solid content of peel increased, whereas it did not change significantly in the case of pear core. When pear peel and pear core were treated with Pectinex, significant improvement of soluble solid content was observed along with the highest extraction yield of reducing sugar content. Total sugar content increased in most of the enzyme treatment groups. In the case of pear peel, the Viscozyme treatment group showed the highest total polyphenol contents, total flavonoid contents, DPPH radical scavenging activity, ABTS radical scavenging activity, and SOD-like activity. When the flesh and core of pear were treated with Celluclast, total polyphenol contents increased. All enzyme treatment groups except for the Ultraflo treatment group showed increases in total flavonoid contents. With regard to pear flesh, the Celluclast group showed the highest DPPH radical scavenging activity. When pear core was treated with the four complex carbohydrases, DPPH radical scavenging activity and ABTS radical scavenging activity did not increase significantly. However, the SOD-like activity of all enzyme treatment groups significantly increased. Consequently, dry matter and soluble solid contents, polyphenol content, and antioxidant activity of pear peel and core could be improved by complex carbohydrase treatment.

Quality Characteristics and Antioxidant Activities of Organically and Conventionally Grown Carrot (유기 및 일반재배에 따른 당근의 품질비교)

  • Demand for organic agriculture has greatly increased in the past decade. The objective of this study was to evaluate quality the characteristics and antioxidant activities of organically and conventionally grown carrots. Organically and conventionally grown carrots were harvested in Jeju Island, Korea. Carrot extracts were investigated for their antioxidative components (total phenolic and flavonoid contents) and their antioxidant activities (DPPH and ABTS radical scavenging activities). The quality characteristics of carrots were estimated in terms of hardness, length, weight, moisture contents, and soluble solid content (SSC). Conventionally grown carrots showed higher values than organic carrot in terms of hardness (p<0.05), but there was no significant difference in moisture contents or SSC. In the case of antioxidant activity, organic carrots showed a higher value for DPPH radical scavenging activity (p<0.05). However, there was no significant difference in other antioxidants. Consequently, quality characteristics and antioxidant activities were different between organically and conventionally grown carrots.
