Effect of Alkali Salts Adding on the Cooking Quality in Dried Noodles (면류용 알칼리제 처리가 건면의 조리특성에 미치는 영향)

  • The effects of alkali salts adding on the cooking quality improving in dried noodles were investigated in the good texture maintaining for preventing solid soluble losses ,through chemical analysis and actual manufacturing practice ,the following results were obtained. Experiments were took a special flour of ASW:DNS=70:30, thickening agent(TA) composed of K2CO3 58%, Na2CO3 36% and Na4P2076%, and emulsified oil(EO) mixing of corn oil 44%, polysorbate 23%, emulsifier(ester of glycerin and fatty acids) 21%, soy lecithin 12%. When the mixing ratio of TA and EO to flour, is 0.03 and 1.5%(w/w) or morel than, satisfied the good quality. The water soluble solid matters content of the lowest 3.2% in the treating group that TA and EO is 0.03 and 1.5%(w/w) respectively, comparing to the 7.3% in the control group provides a excellent cooking quality. The research achieves the similar effects at specific gravity, water absorption ratio, weight increasing rate and volume expansion ratio. Preparing Method and Physico-chemical Characteristics of $Terfenadine-{\beta}-Cyclodextrin$ Inclusion Compound (테르페나딘-${\beta}$-시클로덱스트린 포접화합물의 제조방법 및 물리화학적 특성)

  • Terfenadine, antihistaminic drug, is poorly soluble in water. The purpose of this study is to investigate the possibility of using $terfenadine-{\beta}-cyclodextrin$ inclusion compound, instead of terfenadine, as the active substance of solid dosage form by improving the solubility, dissolution and anti-histaminic activity of terfenadine. The solubility and binding characteristics of $terfenadine-{\beta}-cyclodextrin$ complex in pH $1.2{\sim}6.8$ were investigated. Furthermore, the preparing method of $terfenadine-{\beta}-\;cyclodextrin$ inclusion compound was setting up and its physico-chemical characteristics such as DSC curve, solubility, dissolution and anti-histaminic activity were investigated. In conclusion, the solubility of terfenadine was increasing ${\beta}-cyclodextrin$ and with the decreasing pH. $Terfenadine-{\beta}-cyclodextrin$ inclusion compound, whose yield is almost 100%, was prepared by neutralization method. This inclusion compound was 200-times as soluble as terfenadine in pH 1.2-6.8. In addition, it had the faster dissolution and anti-histaminic activity than terfenadine. Therefore, it is used to the active substance of solid dosage form such as tablet and capsule in stead of terfenadine.

Postharvest Quality of Satsuma Mandarin Fruit Affected by Controlled Atmosphere (CA 저장이 온주밀감의 수확 후 품질에 미치는 효과)

  • This research was conducted to find out whether controlled atmosphere(CA) can maintain Satsuma Mandarin fruit fresh longer compared to cold storage. Fruit harvested in Nov. 1998 at Jeju Province were stored in three different CA condition including cold storage. The CA treatments consisted of combinations of 3%, 5% and 10.9% $CO_2$ with 1% and 3-3.9% $O_2$, respectively. Weight and firmness were maintained higher in static CA chambers than in the cold storage. Soluble solid content in fruit of cold storage increased until 2 months of storage and thereafter sharply decreased, whereas that of CA-stored fruit increased slowly throughout the storage period of 120 days. Citric acid decreased obviously in all the treatments with a partially longer retention in CA chambers during storage. Sensory evaluation clearly showed that CA could extend market period of Satsuma Mandarin fruit.

Changes of Total Polyphenol Content and Antioxidant Activity of Aster scaber Thunb Extracts with Different Microwave-Assisted Extraction Conditions (마이크로웨이브 추출조건에 따른 참취 추출물의 총 폴리페놀 함량 및 항산화작용의 변화)

  • This study was conducted in order to compare reflux extraction(RE) and microwave-assisted extraction(MAE) in extraction efficiency and establish optimum microwave extraction conditions in obtaining Aster scaber Thunb extracts. Extraction time was reduced considerably in MAE. When 70% methanol, 50% methanol, 70% ethanol, or 50% ethanol was used, no difference was found in the amount of soluble solid and total phenol between MAE and RE. The optimum microwave-assisted extraction conditions for Aster scaber Thunb were achieved by 120-150 watts of microwave energy and 4∼8 minutes of extraction time. No significant changes were found in antioxidant activity using DPPH scavenging method over the variation of microwave power or extraction time. The use of diluted methanol or ethanol improved soluble solid content(30.8%), total polyphenol content(2.9%) and antioxidant activity(69% ).

  • (Mo.W)Si$_2$ composites were fabricated by vacuum hot-pressing elemental Mo, W and Si powders at various temperatures. Elemental Mo, W and Si powders were alloyed in the proper proportions to form solid solutions. The microstructure and properties of these materials was characterized by using x-ray diffraction, optical microscopy, energy dispersive x-ray spectroscopy and Vicker's technique. It was found that tungsten was mainly substituted for Mo atoms, and made a completed solid solution of (Mo.W)Si$_2$ over 1$600^{\circ}C$. The lattice parameters and Vickers hardness increased largely with increasing reaction temperature by the most soluble elements, due to the solid-solution hardening.

Comparison and Characterization of Silodosin-loaded Solid Dispersions Prepared by Various Solid Dispersion Preparation Methods (다양한 고체분산체 제조방법으로 제조한 실로도신 함유 고체분산체의 비교 및 특성분석)

  • This study focused on improving the solubility of silodosin, a drug poorly soluble in water, by utilizing solid dispersions. Three types of dispersions were examined and compared against the drug powder: surface-attached (SA), solvent-wetted (SW), and solvent-evaporated (SE). Polyvinyl alcohol (PVA) was identified as the most effective polymer in enhancing solubility. These dispersions were prepared using spray-drying techniques with silodosin and PVA as the polymer, employing solvents such as water, ethanol, and a water-acetone mix. The physicochemical properties and solubility of the dispersions were evaluated. The surface-attached dispersions featured the polymer on a crystalline drug surface, the solvent-wetted dispersions had the amorphous drug on the polymer, and the solvent-evaporated dispersions produced nearly round particles with both components amorphous. Testing revealed that the order of improved solubility was: solvent-evaporated, solvent-wetted, and surface-attached. The results demonstrated that the preparation method of the solid dispersions significantly impacted their physicochemical properties and solubility enhancement.

In situ viscoelastic properties of insoluble and porous polysaccharide biopolymer dextran produced by Leuconostoc mesenteroides using particle-tracking microrheology

  • With growing interests in using bacterial biopolymers in geotechnical practices, identifying mechanical properties of soft gel-like biopolymers is important in predicting their efficacy in soil modification and treatment. As one of the promising candidates, dextran was found to be produced by Leuconostoc mesenteroides. The model bacteria utilize sucrose as working material and synthesize both soluble and insoluble dextran which forms a complex and inhomogeneous polymer network. However, the traditional rheometer has a limitation to capture in situ properties of inherently porous and inhomogeneous biopolymers. Therefore, we used the particle tracking microrheology to characterize the material properties of the dextran polymer. TEM images revealed a range of pore size mostly less than $20{\mu}m$, showing large pores > $2{\mu}m$ and small pores within the solid matrix whose sizes are less than $1{\mu}m$. Microrheology data showed two distinct regimes in the bacterial dextran, purely viscous pore region of soluble dextran and viscoelastic region of the solid part of insoluble dextran matrix. Diffusive beads represented the soluble dextran dissolved in an aqueous phase, of which viscosity was three times higher than the growth medium viscosity. The local properties of the insoluble dextran were extracted from the results of the minimally moving beads embedded in the dextran matrix or trapped in small pores. At high frequency (${\omega}>0.2Hz$), the insoluble dextran showed the elastic behavior with the storage modulus of ~0.1 Pa. As frequency decreased, the insoluble dextran matrix exhibited the viscoelastic behavior with the decreasing storage modulus in the range of ${\sim}0.1-10^{-3}Pa$ and the increasing loss modulus in the range of ${\sim}10^{-4}-1\;Pa$. The obtained results provide a compilation of frequency-dependent rheological or viscoelastic properties of soft gel-like porous biopolymers at the particular conditions where soil bacteria produce bacterial biopolymers in subsurface.

A Study on the Simultaneous Analysis of Fat-Soluble Vitamins in Food Stuffs and Vitamin Products by High Performance Liquid Chromatography (고성능 액체 크로마토그래피에 의한 식품 및 비타민 제제중의 지용성 비타민의 동시 분석에 관한 연구)

  • The extraction method and quantitative analysis for the fat-soluble vitamins present in food stuffs and vitamin products have been investigated. The simultaneous separation and analysis of the vitamins by reverse phase high performance liquid chromatographic method was conducted using an isocratic elution with methanol : water (95 : 5) eluent on a Novapak $C_{18}$ column. The detection of vitamins was achieved by a variable wavelength UV detector. To improve the detection sensitivity detection wavelengths were set at the highest absorption bands such as 330, 265, 285, and 290nm for the respective vitamins. The analysis for the fat-soluble vitamins was finished within 40 minutes. Alkaline hydrolysis and enzymatic hydrolysis were investigated for the sample preparation; and liquid-liquid extraction and liquid-solid extraction were attempted for the extraction of vitamins. Both hydrolysis methods were turned out to be appropriate for the analysis for vitamins A, D, and E, while for the analysis of vitamin K the enzymatic hydrolysis method demonstrated better results. Diethyl ether, pentane, and n-hexane were found to give higher recovery for the liquid-liquid extraction and silica cartridge for the liquid-solid extraction.

Optimization of Extrusion Process Conditions to Increase the Corn Fiber Gum and Soluble Arabinoxylan Yield from Corn Fiber (옥수수 섬유질로부터 검과 수용성 아라비노자일란의 수율향상을 위한 압출성형 조건의 최적화)

  • The effects of feed moisture content (25, 35, and 45%), screw speed (230, 250, and 270 rpm), and barrel temperature (130, 140, and $150^{\circ}C$) on the product yield and soluble arabinoxylan (SAX) content from destarched corn fiber (DCF), and its optimization were investigated. The yield and SAX content of corn fiber gum (CFG) from the extruded destarched corn fiber (EDCF) were higher than those of DCF. Statistical analyses revealed that the feed moisture content and barrel temperature had a significant effect on the CFG yield and total SAX content. The optimum extrusion pretreatment conditions were as follows: feed moisture content, 30%; screw speed, 260 rpm; barrel temperature, $133^{\circ}C$. This study showed that the response surface methodology was suitable for the optimization of the extrusion conditions used to maximize the CFG yield and total SAX content from EDCF.

Comparision of Preparation Methods for Water Soluble Vitamin Analysis in Foods by Reversed-Phase High Performance Liquid Chromatography (역상 고속 액체 크로마토그래피에 의한 식품 중 수용성 비타민 분석을 위한 전처리법의 비교)

  • Owing to a need for simple extraction and purification for analysis of water soluble vitamins in food samples by RP-HPLC with UV-detector, the methods of bromelain and protease hydrolysis and $C_{18}$ Sep-Pak solid phase extraction were employed. The recoveries of standard water soluble vitamins by the bromelain and protease hydrolysis and $C_{18}$ Sep-Pak solid phase extraction were significantly high compared to AOAC methods in most of vitamins. The contents of pyridoxal determined with protest in the pork was similar, but in the bromelain hydrolysis and AOAC method, was high compared to the results of reference. The niacinamide, thiamin and riboflavin determined with bromelain and protease hydrolysis showed similar values to the results of references. In the potato, pyridoxamine was detected in the AOAC method, which was not detected in the bromelain and protease hydrolysis methods. Pyridoxal contents in the protease hydrolysis and AOAC methods were very similar to the results of references. The recoveries of fortified standard vitamins in food samples were significantly high and accurate compared to those of AOAC methods. The extraction and purification with $C_{18}$ Sep-Pak solid extractor might be considered superior method for the determination of water soluble vitamins in food samples.
