  • This experiment was conducted to investigate the hydroponic culture possibility and the optimal solution strength of 'Pechika' ever-bearing strawberry in summer highland. Maximum room temperature and minimum root zone temperature of plastic house were $30.8^{\circ}C\;and\;19^{\circ}C$ in highland respectively and $4^{\circ}C\;and\;3^{\circ}C$ lower than in level and. The growth of 'Pechika' was better in highland. There was effective in producing the good yield and fruit quality in highland and the deformed fruits also were decreased. The soluble solid and titratable acidity content increased in highland. Early growth was the most effective in standard solution $(EC\;0.75dS\;m^{-1})$ and had a tendency to be inhibition with increasing nutrient concentration. Standard solution was also the highest to yield about 2,064kg/10a among treatments, and 2/3S, 4/3S, 5/3S by turns. The browning roots and root activity increased when the solution strength was increased, especially in EC $1.25dS{\cdot}m^{-1}$. The soluble solids and acidity content of fruits were increased with higher solution strength. Therefor, the summer hydroponic culture of 'Pechika' ever-bearing strawberry was suitable in highland and effective in standard solution $(EC\;0.75dS{\cdot}m^{-1})$ in solution control.

  • This study was conducted to analysis the chemical properties of Peunggang river and investigate the effect of irrigation sources on the growth of tomato and cucumber. The salt concentration in Peunggang river was high by $3.22{\sim}3.62dS{\cdot}m^{-1}s$ from March to May and lower gradually from April to February of next year, which was also lower in upper stream than in middle or low stream of Peunggang river. The growth such as plant height, fresh weight and dry weight in tomato and cucumber was better in drain water and tap water irrigation than in PR water (Peunggang river) irrigation. Mean fruit weight was highest in the tap water, and that of cucumber was no significance in the treatments. The number of setting fruit was lower in the PR water than in the treatments, and which was no significance between rain water and tap water. The yield of tomato and cucumber was found to be highest by 10,594 and 11,826 kg/10a in tap water, respectively and also lowest in the PR water among the three treatments. The fruit quality, soluble solids of tomato shows a tendency to increase in the PR water as compared with the other treatment, and the rate of blossom-end rote was higher by 13.6% in the PR water. T-N and P content of tomato and cucumber were no significance in the treatments. Ca content was lowest, but Na content highest in the PR water. It was thought that a rain water and tap water as alternative irrigation source of a PR water were proper.

  • In hydroponics, the nutrient solution is supplied considering the water and nutrient uptake characteristics of crops. However, as the ionic uptake characteristics are changed as a result of the weather conditions or the growth response of the crops, the root zone can not be maintained in optimal condition. In addition, the coir substrate has been used mainly for the tomato cultivation in place of the inorganic substrate, there are few studies on long-term cultivation using coir substrate. Therefore, this study was conducted to investigate the effect of EC level of irrigation solution on tomato growth and inorganic ions of root zone in soilless culture using coir. Coir substrate mixed with 5 : 5 chip and dust was used. EC level of irrigation solution was 1.0, 1.5, 2.0, and $3.0dS{\cdot}m^{-1}$. At the initial stage, $NO_3-N$, P, Ca and Mg in the drainage were lower than the irrigation level at 1.0 and $1.5dS{\cdot}m^{-1}$. However, EC $2.0dS{\cdot}m^{-1}$ or higher, all the ions except P were highly concentrated in the drainage. The average fruit weight was not significantly different between 1.0 and $1.5dS{\cdot}m^{-1}$ until 3th cluster, but from the next cluster, the higher the EC level, the smaller the weight. The number of fruit and yield to 6th cluster was the highest at $1.5dS{\cdot}m^{-1}$. From the next cluster, The yield was decreased with the higher EC level. At the early stage of growth, BER occurred only in EC $3.0dS{\cdot}m^{-1}$, but increased in all treatments with increasing irradiation. The incidence rate of EC $3.0dS{\cdot}m^{-1}$ was higher than that of the lower EC level treatment.

  • This experiment was designed to optimize the process of manufacturing the soybean cheeses and to elucidate the chemical changes during ripening when the chemical changes during ripening when the milk components and enzyme preparations were added to the raw materials. Conditions for extracting soybean protein such as temperature, duration and amount of water added were determined; various coagulaters were compared by checking the curd texture and yield; starters from S. thermophilus, S. lactis MLB and S. cremoris EB-9 were tested as single- or multi-stain combinations; and the effects of skim milk and/or rennins-both microbial and calf origin-addition upon the process of manufacturing and ripening were studied. The results obtained were as follows. 1. optimal conditions for soybean extraction were found to be: temperature $100^{\circ}C$, duration 10 minutes, and amount of water added 9-fold, as considered the extraction rate of solids and proteins, and curd yield. 2. Sodium gluconate was the most effective among the coagulators tested, and 5% of single-strain starter from S. thermophilus was appered to be adequate inoculum for curd formation. 3. The effects of skim milk and/or rennins addition on the process of manufacturing and ripening of soybean cheeses were: 1) The addition of rennins resulted in fast formation of curd, especially with skim milk it was so. And Hansen rennet extracts brought better results in curd formation than Meito rennet extracts did. 2) No significant effect was observed on the changes in moisture content during ripening, however the levels of moisture contents in the products were higher in case of using Meito rennet extracts. 3) Effect on pH changes during ripening was also not significant in general, while levels of pH were decrease markedly during manufacturing and the initial stage of ripening. 4) The levels of bacterial counts were much higher in case of skim milk addition throughtout the ripening period. In general the numbers were reached to approximately $10^8cells/g$ during manufacturing, then decreased gradually to below $10^2cells/g$ in 8 weeks of ripening. 5) The addition of skim milk and/or rennin resulted in higher ripening index, and skim milk plus Meito rennet extracts was appeared to be best combination for the ripening index.

  • Diesel-burning air heater (air heater) and infrared heating lamp (infrared heater) were installed as auxiliary heaters in two single water-curtained plastic greenhouses with a set night temperature of $6^{\circ}C$ for cultivation of strawberry 'Seolhyang'. The average night air temperature was $6.6^{\circ}C$ in the infrared heater treatment and $7.1^{\circ}C$ in the air heater treatment. However, when the minimum outside temperature fell below $-10^{\circ}C$, the air heater had less internal temperature fluctuations. In contrast, the infrared heater had some cases of falling below the set temperature. The relative humidity was higher than 98% by the side-effect of water-curtain system regardless of the heating system. There was about $5^{\circ}C$ difference in leaf temperature between the turned-on and -off state of the infrared heater, and the efficacy of the infrared heater on leaf temperature was only limited to about 4 meters from the system. Peduncle length and plant height in the infrared heater tended to be greater than those in the air heater. There was, however, no statistically difference in leaf size and numbers of leaves, flowers on first cluster and branches. There was no difference in soluble solids content, fruit firmness, average fruit weight of the harvested fruits, and the yield. Comparing the heating costs, the air heater system took 622,662 won based on 543 L tax-free diesel, while the infrared heater system took 235,284 won by consuming 5,685 kWh of electricity, and 62.2% heating costs saving was achieved.

  • Ice plant (Mesembryanthemum crystallinum L.) was fermented in brine in the form of mulkimchi (IPMB), and its contents of organic acid and cyclitols and biological activities were compared with those before fermentation. The pH of the IPMB continuously decreased until the sixth day of fermentation. The lactic acid yield was greatest on the fourth day. D-pinitol in ice plant mulkimchi solids (IPMS) decreased during fermentation. However, myo-inositol and D-chiro-inositol increased. The radical scavenging activities of ABTS and DPPH, in addition to the activity of FRAP, of the IPMS extract were generally higher after fermentation, with the activities highest on the fifth ($79.09{\pm}0.69%$), fourth ($87.55{\pm}1.21%$), and sixth ($78.72{\pm}0.99%$) days of fermentation, respectively, when treated with 1 mg/ml of the extract. As shown by a lipid/MA assay, antioxidant activity was generally higher after fermentation. The viability of BNL CL.2 cells damaged by t-BHP, $H_2O_2$, and ethanol was $14.19{\pm}0.98$, $13.80{\pm}2.25$, and $25.89{\pm}2.90%$, respectively. When treated with $200{\mu}g/ml$ of IPMS extract, the cell viability was $57.06{\pm}4.52%$ on the first day, and $66.06{\pm}1.36%$ on the fourth day, and $50.07{\pm}04.85%$ on the sixth day of fermentation. Hepatocyte protective effects did not increase significantly after fermentation. ${\alpha}-glucosidase$ inhibitory activity was quite high, with a range of $83.52{\pm}2.69$ to $92.79{\pm}2.16%$, and the activity increased gradually in all the groups over the fermentation period. There was no clear correlation between ${\alpha}-amylase$ inhibitory activity and fermentation.

  • In Korea, the annual production of watermelon and cantaloupe melon is around 110,000 to 170,000 Metric Tons, and as the fruit does not keep well, studies were conducted to determine the feasibility of preservation in the form of natural juice or lactic fermented juice. The results obtained in these studies are summarized as follows: (1) The average yield of juice obtained from watermelon was 56.2%, and from cantaloupe melon 65.8%, of the fresh weight. (2) The colloidal components of watermelon juice separated from the juice by sedimentation within 24 hours. Cantaloupe melon juice gave a stable colloidal dispersion. (3) No change in the colour of the juices was detected by sensory evaluation or instrumental methods after they were treated at $100^{\circ}C$ for 5 minutes. (4) The addition of canesugar to give a total solids content of 11/13 Brix gave juices which were preferred by most tasters. (5) Lactic fermentation of natural juices pasteurised at $90^{\circ}C$ for 5 minutes, and inoculated with a pure culture of lactic acid bacteria proceeded without interference from competing microorganisms. (6) Sensory evaluation of lactic fermented juices indicated that 60% of tasters found the juices as acceptable or better than commercial fruit nectars at present on the market. (7) Taste panels showed a preference for natural melon juices over the lactic fermented juices. (8) The peroxidase activity of cantaloupe melon juice was higher than that of watermelon juice, with juice extracted from the core of the fruit showing a higher activity than that from other portions of the tissue. (9) Two types of peroxidase, of differing heat stability were detected in both juices. The more heat stable peroxidase had a decimal reduction time of 40 minutes at $80^{\circ}C$ and a z value of $11^{\circ}C$.

  • The soil moisture has an important effect on growth and development of highbush blueberry (HB), mainly because the root system, devoid of root hairs, is superficial. Moreover, the texture and organic matter content of Korean soil is different from the main producing counties, such as USA and Canada. To facilitate the growth and development of HB and long-term maintenance of productivity, the research related to soil moisture condition in Korea should be the priority. This study was performed to investigate the growth properties of the HB in various soil moisture conditions in order to determine the irrigation trigger point and optimum soil water potential. The texture of soil used in this experiment was loam. For the experiments, the soil was mixed with peatmoss at a rates 30% (v/v). Irrigation was scheduled at -3, -4, -5, -8, -15 and -22 kPa soil water potential then investigated leaf macronutrient, bush growth, and fruit properties. The leaf K content of HB showed the same trend in the soil water potential, but Leaf P and Mg content was highest in -5 and -22 kPa, respectively. The productivity and growth amount of HB showed the peak at the range of -4~-8 kPa as normal distribution pattern, and greatly decreased at above -15 kPa. Total dry weight and Cane diameter were highest at -4 kPa, plant width, fruit weight and yield were highest at -5 kPa, and plant height, cane number and shoot tension were highest at -8 kPa. Soluble solids content showed same trend in the soil water potential, but titratable acidity, anthocyanins and total polyphenols were not significantly different. Therefore, the optimal soil water potential for the development and a maximum production of HB were a range of -4~-8 kPa, and the recommended ideal irrigation trigger point was within -15 kPa.

  • Imported Valencia oranges were evaluated to determine the relationship between the fruit size and its quality. The orange size was classified into three groups on a commercial basis: small ($140{\sim}160g/113{\pm}5$ fruit/box), medium ($190{\sim}220g/88{\pm}5$ fruit/box), and large ($250{\sim}280g/72{\pm}5$ fruit/box). The physicochemical and sensory properties were analyzed to evaluate the orange quality. No significant difference in the peel thickness and flesh ratio was detected across the fruit sizes. The juice yield of the medium-sized orange and the TSS/TA ratios of the medium-sized and large oranges showed the highest value, respectively (p<0.05). The large orange had the highest vitamin C content, which was positively correlated with both its DPPH and ABTS radical scavenging abilities (p<0.05). In the sensory evaluation of the fruits and their juice, the scores for sourness and overall preference were significantly higher in the medium-sized and large oranges than in the small ones. The total soluble solids, total acidity, TSS/TA ratio, and reducing sugar content were significantly related to the sensory properties. Finally, the quality and sensory properties were considered superior in the medium-sized and lager Valencia oranges. Further studies on the effects of the variety and origin of Valencia oranges on their quality and sensory properties are required.

  • This experiment was conducted to test the suitability of various organic materials in order to reduce the use dependence of peatmoss as a soil pH regulator and to examine the effect of soil organic matter supply. A 2-year old northern-highbush blueberry (Vaccinium corymbosum L.) 'Duke' plants were planted in the field at $2.0m{\times}2.5m$ spacing in spring. Before planting, organic materials were incorporated into the soil including the planting hole at 20 liter per plant, as the following mixtures: peatmoss only (20 L), peatmoss (10 L) + pine needle (10 L, PN), peatmoss (10 L) + rice hull (10 L, RH), and peatmoss (10 L) + sawdust (10 L, SD). The pH of organic materials was lowest in peatmoss (pH 4.3), followed by PN (pH 4.8), SD (pH 5.7) and RH (pH 7.8). Soil pH measured right after planting ranged from 5.3 to 5.9 and was lower in PM only and PM + PN than PM + RH and SD treatments. In the third year, the pH lowered to the range of 4.2 to 4.5, with PM and PM + PN still maintaining lower values. The early growth was good in the mixed treatment of PM and PN, and the plant height and width and the number of new shoots were good in the PM treatment. Soil water content was maintained highest in PM + PN, followed by PM, PM + SD and PM + RH. Vegetative growth was maintained better in PM and PM + PN, and the number of flower cluster and yield were also slightly higher in those treatments while mean fruit weight was similar among all treatments. Fruit quality indices such as total soluble solids, titratable acidity and firmness were not affected.
