품종별 한국산 감자 슬라이스의 냉장 중 이화학적 품질의 변화 (Changes in Physicochemical Attributes of Potato Slices with Different Cultivars during Cold Storage)

  • Three potato cultivars were prepared as slices and stored for 4 weeks at $5^{\circ}C$. Changes in Vitamin C content and other quality factors, such as color, pH, soluble solid and protein content were determined. Vitamin C content and L value decreased in three potato cultivars. Initial Vitamin C contents of three potato cultivars varied from 49.27 mg% in Sumi to 56.40 mg% in Namjak. Changes in L value showed that the tendency of browning in Daejima was slower than Sumi and Namjak. Changes in pH were small. Soluble solids and protein content increased and varied by cultivar. From the correlation analysis, correlation between browning degree and Vitamin C content was low in three potato cultivars.

단호박 분말을 첨가한 젤리의 품질특성 (Quality Characteristics of Jelly Incorporated with Sweet Pumpkin Powder)

  • 본 연구에서는 단호박 분말의 첨가량을 달리하여 젤리를 제조한 후 젤리의 물리화학적 품질특성(수분함량, pH, 가용성 고형분, 색도, 외관색상, 경도)과 소비자 기호도(색, 향미, 씹힘성, 맛, 전체적 기호도)를 비교 분석하였다. 젤리의 수분함량은 단호박 분말 첨가량이 증가할수록 유의적으로 감소하였으며, pH와 가용성 고형분 함량은 증가하였다(p<0.05). 명도를 나타내는 $L^*$값은 단호박 분말의 첨가량이 증가할수록 유의적으로 감소하였고(p<0.05), 적색도를 나타내는 $a^*$값과 황색도를 나타내는 $b^*$값은 유의적으로 증가하였다(p<0.05). 젤리의 경도 또한 유의적으로 증가하였다(p<0.05). 소비자 검사결과 2% 첨가군이 모든 평가항목에서 유의적으로 높은 평가를 받아 젤리의 관능적 품질을 최대한 유지하면서 단호박 분말의 기능적 이점을 최대한 활용하기 위한 최적 첨가 농도는 2%가 가장 적합한 것으로 판단된다.

Comparison of the Effects of Early and Conventional Defoliation on Fruit Growth, Quality and Skin Color Development in 'Fuji' Apples

  • We compared the quality of 'Fuji' apples (Malus ${\times}$ domestica) from trees whose leaves were not removed (no artificial defoliation; NAD) with apples from trees that underwent early defoliation (ED, treated in mid September and early October) and conventional defoliation (CD, treated in early and mid October). The experiment was conducted in three consecutive years using 15-year-old 'Fuji' apple grafted on Malus prunifolia. Fruits were harvested on November 7, 16 or 12 in 2011, 2012 and 2013, respectively. Compared to NAD treatment, ED and CD treatment reduced the fresh weight by 4.7% and 0.6%, respectively. The soluble solids content of NAD apples ($14.4^{\circ}Brix$) was slightly higher than that of CD ($14.1^{\circ}Brix$) and ED ($14.0^{\circ}Brix$) apples. Soluble sugar content, flesh firmness, water-core index, and titratable acidity were not affected by defoliation treatment regardless of treatment timing. The skin blush index of NAD apples (2.3) was inferior to that of CD (3.3) and ED (3.4)- treated apples. Furthermore, artificial defoliation treatments increased skin redness ($a^*$) and yellowness ($b^*$) and significantly improved the degree of skin blush compared to NAD fruits.

다단 수직형 혐기성 소화조를 이용한 유기성 폐기물 바이오가스화 기술 (The Bio Gasification technology of organic waste using vertical multistage anaerobic digester)

  • 유기성폐기물의 처리 방식은 친환경적이고 지속가능한 에너지 회수 및 슬러지 발생량의 저감이 가능한 혐기성 소화를 통한 에너지화로 전환되고 있다. 본 연구에서는 PFR 흐름(Plug Flow Reactor)과 수직 다단형 구조로 고농도 고형분과 높은 유기물 부하에 견딜 수 있도록 개발된 ECOPAD(ECOdays' Plug-flow Anaerobic Digster) 혐기성 소화 공법의 음식물 폐기물과 도계폐수에 대한 적용성과 효율을 파악하였다. 적용사례별 ECOPAD의 처리효율을 분석한 결과 P시와 S시의 음식물 폐기물 처리시설의 유기물 제거효율은(VS 기준 P시 84%, S시 88%) 였으며, 이때 발생하는 바이오가스량(P시: $1.1Nm^3/kg$-VSrem, S시 $1.0Nm^3/kg$-VSrem)과 메탄가스의 함유량(P시 70%, S시 71%)은 유사하게 측정되었다. 도계 폐수 슬러지의 경우 VS당 가스발생량은 $1.6Nm^3/kg$-VSrem로 측정되었으며, 메탄 함량은69%로 측정되었다.

시판 상면발효맥주의 관능 및 이화학 특성 분석 (Physicochemical and sensory characteristics of commercial top-fermented beers)

  • 시판되는 상면발효맥주 12종에 대하여 5개의 외관, 9개의 향, 6개의 향미, 4개의 입안감촉에 대한 묘사용어를 개발하였으며, 묘사분석을 실시하였다. 실제 상면발효 맥주의 주요 특성으로 알려진 다양한 과일향미, 쓴맛과 관련 향미 용어가 개발되어 향후 상면발효맥주의 관능검사에 주요 평가 용어로 활용이 가능하리라 여겨진다. 또한 가용성 고형분, 총산도, pH, 환원당, 쓴맛 정도(B.U.), 탁도, 색도, 아미노산 함량, 총페놀함량과 DPPH 라디칼 소거능의 12가지 이화학특성을 분석하였다. 관능특성 항목과 맥주의 중요 지표인 이화학 특성간의 상관분석을 통해 B.U., 총폴리페놀 함량, 총산도, 황색도, 가용성 고형분이 에일맥주의 주요 관능특성인 시트러스향, 파인애플향, 쓴맛과 높은 상관관계를 보임을 확인할 수 있었다. 향후 이러한 이화학적 분석 항목은 제품 개발 시 관능특성 분석과 더불어 주요 품질지표 항목으로 활용이 가능하리라 여겨진다.

직류전기를 이용한 하수슬러지 함수율 변화특성에 관한 연구 (A Study on Characteristics of Water Content Changes of Wastewater Sludge Using Direct Current Electricity)

  • This study examined the change of water content in sludge using direct current electric equipment for decreasing the amount of sludge. The experiment showed that the average density of solids in the sludge treated by direct current before the centrifugal dewatering process was increased by 47.8%, when compared to those not treated by direct current. From the result of measuring the granularity of the sludge by the direct current treatment, that the average particle size of the sludge that was not exposed to the electric current was 52.36 ${\mu}m$, and more than 90% of the sludge was <94.29 ${\mu}m$ in size. On the other hand, the average particle size of the sludge passed through the direct current was 28.67 ${\mu}m$, and more than 90% of the sludge was 52.46 ${\mu}m$. This means that the average particle size of the sludge treated by the direct current was 45.2% smaller, and the standard deviation of granularity was improved. Because of water that separated from sludge moves to the (+) pole, larger particles become smaller and fine particles combine together, resulting in the equalization of the particle size. On the sludge after the centrifugal dehydrator, the change of the water content by the direct current was measured. The results showed that the average density of the solids was increased by 44.2% compared.

Compositional differences of Bojungikgi-tang decoctions using pressurized or non-pressurized extraction methods with variable extraction times

  • Objectives : In other to determine the optimal extraction conditions, the various Bojungikgi-tang (BJIGT) decoctions prepared by different pressure levels and different extraction times were compared and evaluated in terms of the extract yield and the total soluble solid content. Methods : Decoctions were prepared by the pressure levels of 0 (non-pressurized) and 1 $kgf/cm^2$ (pressurized) for 60, 120 and 180 min. The extract yield and the total soluble solids content of decoctions were measured, and the amounts of the reference compounds in decoctions were investigated by the analysis using high performance liquid chromatography. Results : The extract yield and the total soluble solid content were higher in decoctions extracted by the pressurized method than those from decoction with non-pressurized method. The patterns of yield and contents showed a proportional increase to the extraction time. In analysis of the linear regression for four reference compounds such as liquiritin, nodakenin, hesperidin, and glycyrrhizin, the good linearity with the correlation coefficient more than 0.9999 was observed. The highest contents for four reference compounds were observed at 180 min of both the pressurized method and the non-pressurized method. Conclusions : This study suggests that the pressure in extraction method and the extraction time affect the compositional constituents in BJIGT decoctions. The extraction time of 180 min could be chosen in both pressurized and non-pressurized method as optimal extraction condition.

생산지역별 온주밀감의 품질특성 (Quality Characteristics of Satuma Mandarin According to Harvest Areas in Cheju)

  • Physicochemical properties of Satsuma mandarin(Citrus unshiu Marc. var. miyagawa) harvested in middle of November according to production areas of Cheju were investigated. Peel thickness of citrus fruits was ranged from 2.54mm to 3.13mm, and it was lower on fruits harvested in western areas than those of other areas in Cheju. Soluble solids were ranged from 10.1 to 12.0$^{\circ}$Brix, and it was lower on fruits harvested in southern areas. Acid contents of citrus juice were ranged from 1.28% to 1.42%, it was higher on fruits harvested in eastern areas, specific gravity of citrus fruits was ranged between 0.86 and 0.88. Flesh ratio was ranged from 75.1% to 77.6%, it was lower on fruits harvested in southern areas. Soluble solids, acid content and specific gravity harvested in southern areas of below 100m and over 150m sea level altitude were 11.8 and 11.2, 1.43% and 1.40%, 0.87 and 0.9, respectively. Fruits quality harvested in southern areas was better, compared to other harvest areas of Cheju.

플루오르화중금속 유리의 적외선에지 및 산화물(불수물) 흡수 (IR Edge and Oxide Impurity Absorption in Heavy Metal Fluoride Glasses)

  • The IR spectra of he heavy metal fluoride glasses showed peaks at $1, 400cm^{-1}$ or $1, 100cm^{-1}$ due to metal oxyfluoride impurities. The intensity of this band and hence the oxide impurity content of the glass could be reduced considerably by the use of reactive atmosphere melting under $CCl_4$ In comparison with the fundamental IR absorption band of heavy metal oxides the oxide impurity bands observed in the heavy metal fluoride glasses are multiphonon bands due to a 2-phonon absorption process. The envelope of the a vs. v curve beyond thue fundamental region shows the exponential fall off of a with increasing v-typical of intrinsic multiphonon absorption. In the multiphonon region the amount of structure is intermediate between that observed for covalent solids and that for ionic solids.

  • To prepare an environmental friendly high-solid coatings an acrylic resin containing 80% of solid content was synthesized by addition polymerization of caprolactone acrylate, n-butyl acrylate, ethyl methacrylate, and 2-hydroxyethyl methacrylate. The conversion was $78{\sim}93%$ and the prepared resin's physical properties are as follows: viscosity, $212{\sim}3424cps: $M_{n}$ $1740{\sim}2400$. There was a trend that viscosity and molecular weight of the resin increased with Tg, but no direct proportionality was observed.
