Experiments were conducted to investigate the optimum concentration of nutrient solution for strawberry 'Maehyang' bred domestically for exportation in hydroponics. Nutrient solutions for strawberry, which was made by Yamazaki, were supplied electrical conductivity (EC) 0.6, 0.8, 1.2, and $1.8dS{\cdot}m^{-1}$ after planting on cocopeat medium during the experiment period. Growth of shoot of strawberries did not show any statistical differences among treatments. Fruit length showed the longest in EC 0.8 and $1.2dS{\cdot}m^{-1}$, followed by 0.6 and $1.8dS{\cdot}m^{-1}$ in the first and third cluster. It showed the shortest in EC $1.8dS{\cdot}m^{-1}$ in the second cluster but there were no significant differences among treatments in the fourth cluster. Fruit diameter did not show significant differences among treatments in the first and second cluster but was the longest in the lowest concentration EC $0.6dS{\cdot}m^{-1}$ in the third cluster. The shortest was in EC $1.8dS{\cdot}m^{-1}$ in the fourth cluster. The heaviest mean fruit weight appeared in EC 0.8 and $1.2dS{\cdot}m^{-1}$, and the lightest was in EC $1.8dS{\cdot}m^{-1}$ in the first cluster and also lightest in EC $1.8dS{\cdot}m^{-1}$ but no significant differences was found among other treatments in the second & third cluster. Also the fruit weight was significantly light in plants grown in EC $1.8dS{\cdot}m^{-1}$ than $0.6dS{\cdot}m^{-1}$ in the fourth cluster. Soluble solids content of fruit was the highest in EC $0.6dS{\cdot}m^{-1}$ in all cluster. As a result, we came to the conclusion that the optimum EC for strawberry 'Maehyang' was EC 0.8 - $1.2dS{\cdot}m^{-1}$ during low temperature season. This result will be utilized as an indicator for strawberry hydroponics.
This study was conducted to investigate the effect of climate conditions during cultivation and harvesting on the quality and storability of fresh bulb cabbage (Brassica oleracea L. var. capitata). Plug seedlings of six cabbage cultivars were transplanted to Gangneung-Wonju University high elevation research station in Gangwon province (780 m above sea level, lat. $37.5^{\circ}N$.) and harvested with four different harvest times like August 3 ($1^{st}$), August 13 ($2^{nd}$), August 23 ($3^{rd}$), and September 10 ($4^{th}$), respectively from 50 days after transplanting. Weight loss, Hunter color factors, firmness, and soluble solids content (SSC) of the cabbage bulbs were investigated during storage at $3^{\circ}C$ (85% RH) and $25^{\circ}C$ (60% RH). Decreased bulb weight and poor quality cabbages were apparent at the late transplanting (July 14) and harvest (September 10) respectively. Quality index such as firmness and SSC at August 23 ($3^{rd}$) harvested cabbage was better than August 3 ($1^{st}$) and August 13 ($2^{nd}$) cabbages due to the good weather condition just before harvesting. The cv. 'Speed king' and 'Minix 40' showed good qualities among the cultivars, especially when the bulbs were harvested during sunny day conditions from one week before harvesting. Also SSC was influenced by weather condition before harvesting rather than transplanting date, while firmness was influenced by transplanting and harvest date. However, the differences among the cultivars were not significant. The potential of storage as maintaining the quality was different, depending on weather conditions at harvest time. Generally the storage periods of six cultivars were around 3~5 days and 9~10 days at room and low temperature, respectively. However, the August 3 ($1^{st}$) harvested cabbage lost their marketable quality very fast because of rainy and cloudy weather condition before harvesting and also storability of bulbs was 2 days and 4 days at room temperature and $3^{\circ}C$, respectively. Quality index was also not significant difference among cultivars.
This study, basic research for releasing new chestnut cultivar, is conducted to consider quantitative nut characteristics according to combinations and individuals In 11 chestnut hybrids. Number of bur on bearing branch(NBB) and nut yield(NY), which showed large difference among combinations, was superior in JO ($Joook{\times}Otanba$) and KO ($Kwangeun{\times}Otanba$) combinations, respectively. Average nut weight (NW) was 21.1g, the highest in EO ($Eunsan{\times}Otanba$) combination. Nut shape which was expressed to the rate of nut height and width, was investigated to the range of 1.13-1.23 in the all combinations, so nut shape of all combinations showed oval type. EO and JO combinations, which were measured to 30.0% and 27.5%, respectively in the percentage with the pericarp split(PPS), were produced more bad fruits than the others. OK ($Otanba{\times}Kwangeun$) combination, 1.7%, was the most excellent in the percentage of polyembryonic nuts(PPN), and the superior combinations which was measured to the below 5%, could be included five combinations. ER and RK combinations, were the highest values, 16.3% and $10.0kg/cm^2$, in soluble solids content(SSC) and kernel hardness (KH), respectively. NBB showed highly positive correlation with NY, but showed highly negative correlation with SSC and NW. NW showed highly positive correlation with PPS, but showed highly negative correlation with SSC and NH. PPS showed highly positive correlation with PPN. Eight individuals such as superior individuals could be selected by selection criteria.

In recent decades, health concerns related to sodium intake have caused an increased demand for salt or sodium-reduced foods. Umami substance can enhance taste sensitivity to NaCl and may offer a unique approach to replace and reduce the sodium content in foods. In this study, hot water extraction conditions of Wando sea tangle with high umami taste were investigated. Wando sea tangle harvested in June was selected for hot water extraction based on its free amino acids composition. The quality properties of sea tangle extract were investigated at various extraction temperatures ($60^{\circ}C$, $80^{\circ}C$, and $100^{\circ}C$) and times (1 h, 2 h, and 3 h). Sea tangle extracts at the extraction temperature of $100^{\circ}C$ contained the highest soluble solids (35.47%~36.93%), and crude protein (3.75%~4.00%). Viscosities of sea tangle extracts decreased with increasing extraction temperature. Umami amino acids (glutamic acid and aspartic acid) and sensory characteristics were best at extraction conditions of $100^{\circ}C$ for 2 h. Saltiness enhancement of sea tangle extract powder was determined. Saltiness intensities of NaCl solution after adding 1% sea tangle extract powder were enhanced (1.84~4.25-fold). At the same saltiness intensity, sodium contents of NaCl solution with 1% sea tangle extract powder were 12.24~24.33% lower than that of NaCl solution. These results suggest that it is possible to reduce sodium in foods with sea tangle extract as a natural salt enhancer without lowering overall taste intensity.
The effects of temperature variations during storage on the quality characteristics of muskmelons (Cucumis melo L.) were investigated. In samples stored at $4^{\circ}C$ and $10^{\circ}C$, weight losses were almost 2.9- and 3.4-fold higher, respectively, compared to samples stored at $0^{\circ}C$. Soluble solids slightly increased except in the samples stored at $10^{\circ}C$, but acidity decreased over the entire storage period. Firmness decreased with storage time, but the samples stored at $0^{\circ}C$ had a lesser decrease in firmness than the samples stored at other temperatures. Water loss from the muskmelon stalk was most inhibited, and vitamin C content was maintained for the longest period, with storage at $4^{\circ}C$. Mineral contents (Ca, Na, Fe, Mg, K) were best maintained in muskmelon samples stored at $10^{\circ}C$ for 15 days, but levels had decreased by 30 days. Microbiological quality was not appreciably different at any storage temperature at 18 days; however, samples stored at $4^{\circ}C$ and $10^{\circ}C$ had deteriorated by 25 days. The results of sensory evaluations indicated that taste was best retained in samples stored at $10^{\circ}C$ for 15 days, although changes in taste were evident at all storage temperatures. When the samples were stored over 22 days at $10^{\circ}C$, retention of texture and overall acceptability were more inferior compared to samples stored at $0^{\circ}C$ and $4^{\circ}C$. These results suggest that storage at $4^{\circ}C$ can be used to reduce deterioration in muskmelons without significant loss of their quality attributes.
'Yumyeong' is one of the most popular peach varieties in Korea. This study was conducted to monitor the developments of cells and tissues, and the changes in sugar contents during fruit growth and development. At bloom, there were two rows of vascular tissues, and the number and the position of internal vascular bundles were consistent during the fruit growth, however, the number of vascular tissues were increased and the distribution was irregular in the flesh tissues. The tissues between the inner integument and the internal vascular bundles showed different development characteristics from other parenchyma cells which were consisted of small and dense cells containing tannins. Such observation suggested that the stone of peach was consisted of inner epidermis and cells in the internal vascular tissues. The outer epidermis consisted of single layer cells at bloom differrentiated into 1-2 layers by horizontal cell divisions on 14 days after full bloom. On 30 days after full bloom, the epidermis was consisted of 5-6 layers by vertical cell divisions. The cell layers consisting the outer epidermis were gradually decreased to 1-2 layers at maturity. The observations on the changes in the epidermis confirmed that some of the cells consisting the hypodermis of peach fruit were originated from the cells of outer epidermis. Tylosis was observed from 35 days after full bloom and the size and number of tylosis were increased until full fruit maturity. The sucrose content showed the tendency of sharp increase from 50 days to 120 days after full bloom then decrease slightly. After when stone hardening ended, other solids showed a gradual decrease tendency from 80 days after full bloom.
This research was conducted to investigate a difference in quality according to control of fruit load and cluster weight when seeded 'Heukboseok' grape was grown in a conventional cultivation system. Clusters per vine were set to harvest 1,500 kg, 1,800 kg, and 2,200 kg grapes per $990m^2$. In p lots t reated t o produce 1,800 kg grapes, clusters were set to 3 grades produce grapes with 350 g, 500 g, and 700 g in cluster weight. Based on color chart (National Institute of Horticultural & Herbal Science, Rural Development Admnistration) which show maturation stage for 'Kyoho' grape, grapes with higher than grade 9 were harvested at 80 and 90 days after full bloom, and the r est of them were harvested a t 100 days after full bloom. The final yield of 'Heukboseok' grape was the lowest in target yield of 1,800 kg with 700 g clusters with 75.5% of target yield, but 92.1%-100.1% of target yield were harvested in other treatments. Among treatments with several fruit setting, 83.3% of grapes harvested in treatment to produce 1,500 kg grapes as a target yield at 90 days after full bloom. Among the treatments with different cluster weights, 93.5% grapes were harvested in the treatment with 350 g in cluster weight. 'Heukboseok' grape showed rapid maturation pattern with no significant difference in either soluble solids content or acidity between 90 days from 80 days after full bloom. Therefore, to prevent flesh softening, it is appropriate to harvest fruit at 90 days after full blooms, and both yield and cluster weight were important factors influencing the quality of the fruits in 'Heukboseok' grape. It is confirmed that coloring and firmness was influenced by the final yield and weight per cluster, respectively. Therefore, the yield should be set as grape of 1,500 kg per $990m^2$ in target yield, and cluster weight should be adjusted to 350 g to produce grape of 1,800 kg with the fruits of high quality. It is considered to be hard to produce grape of high quality with 700 g in cluster weight in 'Heukboseok' grape.
Germinated brown rice (GBR) has received considerable attention over the last decade as a means of enhancing the nutritional value and health-promoting functions of rice. The effect of germination on the physicochemical and textural properties of brown rice (BR) was investigated in different rice varieties (Samkwang, Misomi, Chindeul, and Hyeonpum). Cooking properties, such as water absorption, expanded volume, and soluble solids were significantly increased by germination in all rice varieties. Textural properties (hardness, toughness, adhesiveness, and stickiness) of cooked samples were determined using a texture analyzer. Hardness and toughness were decreased by germination, whereas stickiness and adhesiveness increased significantly. These results revealed that germination leads to improvements in the cooking and eating properties of BR. In Rapid Visco Analyzer (RVA), significant reductions were observed for peak viscosity, break down, set back, and final viscosity after germination. Although the amylose content of Misomi was slightly decreased by germination, that of other varieties increased significantly. Germination induced no noticeable change in the average chain length of amylopectin in Misomi, Chindeul and Hyeonpum, but led to a significant increase in Samkwang.

We investigated the changes of fruit quality parameters, polysaccharide contents and cell wall components during maturation and ripening of two Korean pear cultivar 'Hanareum' and 'Manpungbae' compared with 'Niitaka' pear (Pyrus pyrifolia Nakai) which showed different physiological maturity based on days after full bloom (DAFB). Flesh firmness decreased continuously with fruit development and maturation, reaching a final level of 29.4, 33.5, and 27.4N at maturity in 'Hanareum' (127 DAFB), 'Manpungbae' (163 DAFB), and 'Niitaka' (170 DAFB), respectively. The level of ethylene production was very low in early season 'Hanareum' pear which showed at most 0.39 ${\mu}L{\cdot}L^{-1}$ at maturity and no ethylene was detected in 'Manpungbae' and 'Niitaka' at maturity. Fructose was the most abundant soluble sugar during fruit maturation in the pears tested and an increase of sucrose was observed during fruit ripening in the Asian pears commonly. Ethanol insoluble solids (EIS) content decreased gradually with different levels among the pear cultivars as fruit ripens consisted of 10.79, 12.72, and 12.75 $mg{\cdot}g^{-1}$ FW. The amount of total soluble polyuronides was higher in early season cultivars 'Hanareum' than those of mid-season cultivar 'Manpungbae' and 'Niitaka'. In 'Niitaka' which harvested most late season, the level of 4% KOH soluble hemicelluloses was lower than 'Hanareum' and 'Manpungbae' and maintained constantly during fruit ripening period. Cellulosic residues were determined high level in 'Niitaka' which showed 612.33 ${\mu}g{\cdot}mg^{-1}$ EIS at maturity when compared with 'Hanareum' (408.0 ${\mu}g{\cdot}mg^{-1}$ EIS) and 'Manpungbae' (538.67 ${\mu}g{\cdot}mg^{-1}$ EIS). The main constituents of cell wall neutral sugars which consisted of arabinose, xylose, galactose, and glucose were decreased gradually with onset of fruit ripening regardless of cultivar. Arabinose which was predominant in 'Hanareum' pear decreased at the last stage of ripening, but the changes of cell wall neutral sugar during ripening were not occurred in 'Niitaka' pear. The change of molecular mass distribution in water soluble pectin observed dominantly at the early stage of fruit development. Depolymerization of 4% KOH-soluble hemicelluloses and degradation of xyloglucan showed in early-season cultivar 'Hanareum' during fruit maturation, and degradation of those fractions were detected only at the early stage fruit development in mid-season cultivar 'Manpungbae' and 'Niitaka'. The molecular mass profile of CDTA soluble pectin, $Na_2CO_3$-SP and 24% KOH soluble hemicelluloses showed no significant change during fruit maturation regardless of cultivar.
This study was conducted to investigate the effect of 1-methylcyclopropene (1-MCP, $1.0{\mu}L{\cdot}L^{-1}$), a known ethylene action inhibitor, on fruit quality and incidence of physiological disorders during a simulated marketing period at $25^{\circ}C$ for 20 days in early-season Asian pear (Pyrus pyrifolia Nakai) 'Hanareum' that had been treated with 0, 0.5, 1.2 or 2.4% $GA_{4+7}$. Weight loss of stored fruits increased with $GA_{4+7}$ concentration, and the 1-MCP treatment slightly reduced the weight loss rates during the marketing period. Flesh firmness decreased abruptly in all 1-MCP-untreated fruits as the storage period extended to 10 d, whereas the firmness of 1-MCP-treated fruits remained high (> 30 N) during 15 days shelf-life. The effect of 1-MCP was significantly reduced when fruits were subjected to increased GA concentration. Higher soluble solids content and acidity during extended shelf-life were also apparent in 1-MCP-treated 'Hanareum' pears. The L-values (lightness) and hue angles of 1-MCP treated samples were higher than those of controls during 20 days shelf-life, but the a-value (redness) was lower in 1-MCP treated fruits. 1-MCP treatment did not decrease the level of ethylene evolution regardless of $GA_{4+7}$ concentration during shelf-life in early-season Asian pear 'Hanareum'. By contrast, 1-MCP treatment decreased the respiration rate significantly during shelf-life. The efficacy of 1-MCP was greatest in the GA-untreated fruit and was reduced as the $GA_{4+7}$ concentration increased. 1-MCP treatment influenced the severity of physiological disorders including core browning and mealiness: 1-MCP treatment completely blocked the incidence of core browning of during 15 days shelf-life, and reduced the severity of mealiness during 20 days shelf-life regardless of $GA_{4+7}$ concentration. Based on our results, we conclude that the use of $1{\mu}L{\cdot}L^{-1}$ 1-MCP can be of great benefit for maintaining quality and preventing physiological disorders in early-season pear cultivar 'Hanareum' pear, whereas its efficacy decreases with the concentration of $GA_{4+7}$ whereas its efficacy gradually decreases when the concentration of $GA_{4+7}$ paste increased.
