The Combined Effect of Enzyme Activity and Sensory Test of Blanching and Brining in Hot Solution and Trehalose Treatment on the Cucumber Kimchi for the Storage Period (데침과 열수의 침적과 Trehalose 처리가 오이 김치의 저장중 효소 활성의 변화와 관능 검사에 미치는 병용효과)

  • The enzyme activity and organoleptic properties of Korean pickled cucumber were studies for their changes during fermentation. The Korean pickled cucumber were prepared by blanching and high temperature soaking in salt solution and trehalose treament. The results showed that the effect of combined heat and trehalose treatment significantly reduced the fermentation rate and softening rate of texture while a rather rapid fermentation was for those preserved with salt. The effect of terhalose treatment enhanced fermentation and it was significantly reduced softening rate of texture by 2% treatment. The sensory evaluation of Korean pickled cucumber was found that combined heat treatment with blanching and hot solution had a positive effect for reduction of softening of cucumber tissue, however, odor and taste were not significantly affected. This study suggested that combined heat and trehalose treament might have potential for affording protection against softness of cucumber tissue during the fermentation time.

Quality Changes in Jicama (Pachyrhizus erosus) Pickle Due to Variations in Soaking Solution Temperature During Storage (담금액 온도에 따른 히카마 피클의 저장 중 품질변화)

  • This study was carried out to determine the optimum temperature of the jicama pickle solution by evaluating physicochemical and sensory characteristics at various temperatures. The soaking solution of the jicama pickle was prepared at different temperatures (95, 75, 50, and 25℃). During storage, the titratable acidity, Brix, and the salinity of the jicama pickles increased, and these values increased with increasing temperature of the soaking solution. The higher the temperature of the soaking solution, the lower the L and b values. In all samples, the hardness increased rapidly until the 5th day of storage, and then gradually decreased. During storage, the jicama pickles showed a high tendency to harden at soaking solution temperatures of 75 and 95℃. Sensory evaluation indicated that the taste, flavor, crispness, and overall preference of the jicama pickle were higher at a soaking solution temperature of 75℃ and above. The higher the temperature of the soaking solution, the higher the acceptability. Based on these results, we conclude that soaking solution temperature of 75°¦95℃ in the manufacture of jicama pickles had a positive effect on the reduction in tissue softening and the sensory properties of the jicama pickle.

  • High temperature deformation behavior of a Ti-Al intermetallic compound has been investigated. Specimens with a near gamma and a lamella structures were obtained by performing heat treatment at 1200 and 1330$^{\circ}C$, respectively, for 24 hr and stabilized at 900$^{\circ}C$ for 4 hr followed by air cooling. A series of load relaxation tests has been conducted on these samples at temperatures ranging from 850 to 950$^{\circ}C$ to construct flow curves in the strain rate range from 10$\^$-6//s to 10$\^$-3//s. Strain hardening was observed even at the temperature of 950$^{\circ}C$ in both the near gamma and the lamella structures. Further aging treatment for 12 hr at test temperatures has found to cause no softening in both microstructures.

  • Brazing between cemented carbides and steel for tool investigated by copper alloy brazing filler. Copper alloy filler was high liquidus temperature($990^{\circ}C$), therefor the shank(steel) occurred softening. Because brazing sample was necessary to heat treatment after brazing process. This experiment, influence of austenite time and purge temperature on heat treatment were investigated. As a result, these treatments obtained to high deflective strength In case of austenite time was short and purge temperature was low. Especially, nitride precipitated brazing layers was strongly influenced by the deflective strength.

  • The ferritic 2.25CrMo steel has been used for high temperature structure applications such as turbine rotors, boilers and pressure vessels in fossil plant and petroleum chemical facilities. However, this steel is known to result in aging degradation due to temper embrittlement, carbide induced brittleness and softening of matrix after long time exposure to high temperature. This research investigated the microstructural and mechanical changes after artificial degradation treatment and evaluated the degree of degradation by several nondestructive methods. The decrease of electrical resistivity and increase of magnetic Barkhausen noise(RMS voltage) with increasing aging time were observed. The change of electrical resistivity and Barkhausen noise showed a good correlation with the ductile-brittle transition temperature.

  • the high temperature deformation behavior of 304 stainless steel was characterized by the hot torsion test. Continuous deformation was carried out at the temperature ranges 900-110$0^{\circ}C$ and the strain rate ranges 5x10-2~5/sec. The formulation of the flow stress curves was developed as subtraction form which was based on dynamic softening mechanisms The volume fraction of dynamic recrystallization and the mean grain size could be expressed as a function of deformation variables temperature (T) strain ($\varepsilon$) strain rate ($\varepsilon$) The calculated values of flow stress and mean grain size could be well matched with experimental values.

  • The tool life is not long enough under sever forming condition in warm forging. The tool life is affected by wear heat fatigue plastic deformation and so on. Especially wear is one of the most serious factors for tool life. To increase tool life we should consider various factors like processing design die design die materials lubrication and cooling system This study design to obtain the steady state temperature of die by FEM analysis under several conditions of cooling. There are four cooling conditions in this study no cooling internal cooling external cooling and both internal and external cooling. With above obtained temperatures tool life is predicted using Archard's model that is considered softening of die. The effect of internal cooling system is better than that of externally cooled die. To predict the die life the steady state temperature is calculated by using mean temperature of die. Considering only wear the die life much longer as the cooling effect is bigger. The more accurate die life will be predicted if we consider heat crack as well as wear.

  • The powder mixtures of Al, Ti and Cr were mechanically alloyed to obtain nanocrystalline powders of $Ti_{25}Cr_8Al_{67}$ composition. Both FCC phase and undissolved metal chromium formed by MA. During the annealing of the MA powders, the phase transition from FCC to ordered $Ll_2$ started at ~$300^{\circ}C$ and was completed below $600^{\circ}C$. As a result of the high-temperature compressive test for the MA powder compacts, the stress-strain curves showed serrated yielding behavior at 400 and $600^{\circ}C$, and softening phenomenon below the strain rate of $5{\times}10^{-3}s^{-1}$ at $800^{\circ}C$. The compressive yield strength as a function of test temperatures showed the nature of the positive-temperature dependence which has the peak temperature around $600^{\circ}C$.

  • We have examined the electrical and optical characteristics of the plasma display panel produced by vacuum in-line sealing technology. In the MgO layer deposited at room temperature, after sealing at the panel temperature of $430^{\circ}C$, the luminous efficiency decreased compared with that of the panel before sealing. Moreover, firing and sustain voltage of the sealed panel increased compared with that of the panel before sealing. This was resulted from that the MgO protective layer was cracked by the softening of the dielectric layer during the sealing process. In order to avoid the MgO crack during the vacuum in-line sealing, thermally stable MgO layer or lower temperature sealing is required.
