인천지역 학교급식 영양사의 가공포장식품 영양표시에 대한 인식 (School Dietitians′ Perception on Nutrition Labelling of the Processed and Packaged Foods in Incheon)

  • The purpose of this study was to investigate school dietitians' perception on nutrition labelling of processed and packaged foods in the Incheon area. This study was carried out through a self-administered questionnaire and the subjects were 203 school dietitians. The results were summarized as follows. Most of the subjects checked nutrition labeling of processed and packaged foods when they purchased these foods for school lunch. However, the main reason for their checking nutrition labeling of processed and packaged foods was not for nutrition but for food safety. There were significant differences in the subjects' understanding and trust on nutrition labeling of processed and packaged foods by employment school. The scores of the subjects' satisfaction, understanding and trust on nutrition labeling of processed and packaged foods were not high. There were significant differences in the subjects' perception and concern about content information on nutrition labeling of domestic processed and packaged foods by employment school. Most of the subjects answered that it is almost necessary or very necessary to implement nutrition labelling of processed and packaged foods. Also their most preferred method of nutrition labelling was to label nutrient content. As the most important nutrient and functional component necessary for nutrition labelling, they answered energy, mineral such as calcium and iron, protein, total fat, cholesterol, vitamin, sodium and dietary fiber in order. As the major prerequisite task for the implementation of nutrition labelling, they answered formulation of nutrition labelling-related rules, and education and motivation for consumer, Therefore, it is necessary to activate the mandatory nutrition labelling of the processed and packaged foods and to prepare its consumer education program for school dietitian.

Assessment of Anthropometry, Nutritional Compositions and Contribution of School Meals to the Daily Nutrient Requirements of Primary School Children from Rural Communities

  • The study aims to evaluate the nutritional status and influence of school meal intakes on RDA of primary school children in Akure community, Ondo State, Nigeria. A cross-sectional study was conducted among 728 primary school children aged between 6 and 15 years. Data were collected using interviewer-administered semi-structured questionnaires. The questionnaires collect information on demographic characteristics and home dietary intake of the subjects. The heights and weights of the children were measured using a standard procedure and height-far-age and weight-far-height z-score were determined. The children's school meal intakes were weighed for 4 days and samples were collected for chemical analysis. The results showed that 37.8% of the children were not wasted, 35.7% mildly wasted, 18.7% moderately wasted and 7.8% severely wasted. Also, 57.8% were not stunted, 29.3% mildly stunted, 11.0% moderately stunted and 1.9% were severely stunted. The subjects' home dietary intakes showed that 73.6% ate starchy food only, 19.9% ate protein based food, while 11.6% and 11.5% consumed fruits/vegetables and snacks to complement home meals respectively. The chemical composition of school meal was energy 379 - 413kcal, moisture content 5.9 -7.3g, carbohydrate 56.5 - 69.4g, fat 4.6 - 12.7g, crude fiber 0.1 - 2.4g, ash content 3.6 - 8.5g and protein 14.9 - 22.3g. The mineral contents were calcium 45.9 - 59.2mg, sodium 5004 - 59.6mg, zinc 2.3 - 3.1mg, magnesium 55.0 - 61.6mg, potassium 55.3 - 69.3mg, copper 0.2 - 0.3 mg, while others 1.3 - 1.9mg, 243 - 659mg and 831 - 9,510mg were iron, phosphorous and vitamin-A respectively. The contribution of school meals to subjects' RDA was within 2.9% and 1540%. In summary, school meal intake contributed positively to the RDA and nutritional status of the school children.

Nutrient dynamics in montane wetlands, emphasizing the relationship between cellulose decomposition and water chemistry

  • Wetlands often function as a nutrient sink. It is well known that increased input of nutrient increases the primary productivity but it is not well understood what is the fate of produced biomass in wetland ecosystem. Water and sediment quality, decomposition rate of cellulose, and sediment accumulation rate in 11 montane marshes in northern Sierra Nevada, California were analyzed to trace the effect of nitrogen and phosphorus content in water on nutrient dynamics. Concentrations of ammonium, nitrate, soluble reactive phosphorus (SRP) in water were in the range of 27 to 607, 8 to 73, and 6 to 109 ppb, respectively. Concentrations of ammonium, calcium, magnesium, sodium, and potassium in water were the highest in Markleeville, which has been impacted by animal farming. Nitrate and SRP concentrations in water were the highest in Snow Creek, which has been impacted by human residence and a golf course. Cellulose decomposition rates ranged from 4 to 75 % per 90 days and the highest values were measured in Snow Creek. Concentrations of total carbon, nitrogen, and phosphorus in sediment ranged from 8.0 to 42.8, 0.5 to 3.0, and 0.076 to 0.162 %, respectively. Accumulation rates of carbon, nitrogen, and phosphorus fluctuated between 32.7 to 97.1, 2.4 to 9.0, and 0.08 to $1.14gm^{-2}yr{-1}$, respectively. Accumulation rates of carbon and nitrogen were highest in Markleeville and that of phosphorus was highest in Lake Van Norden. Correlation analysis showed that decay rate is correlated with ammonium, nitrate, and SRP in water. There was no correlation between element content in sediment and water quality. Nitrogen accumulation rate was correlated with ammonium in water. These results showed that element accumulation rates in montane wetland ecosystems are determined by decomposition rate rather than nutrient input. This study stresses a need for eco-physiological researches on the response of microbial community to increased nutrient input and environmental change because the microbial community is responsible for the decomposition process.

도시 저속득층 지역의 모자 영양 및 섭식에 관한 생태학적 연구 -I. 임산부의 인체 계측, 식이 섭취 및 혈청 지질/지방산 조성 - (Ecological Studies of Maternal-Infant Nutrition and Feeding in Urban Low Income Areas)

  • This study was aimed at evaluating the lipid status of 122 pregnant women, who were attending peripheral community clinics in low-income areas and were vulnerable in terms of public health, by anthropometric measurements, estimating dietary intakes and analyzing serum lipids content and fatty acids composition. Regarding the skinfold thickness, it has increased more significantly in suprailliac than in triceps, biceps, subscapular, which means body fat has been accumulated in central parts more than in distal parts of the pregnants. It is found that intakes of energy, protein, lipid and carbohydrate are desirable while calcium, zinc and copper are low and sodium is excessive. Regarding dietary fat intake, the energy $\%$ of fat was within the same range as RDA(20%) for adults, but energy $\%$ intake from each fatty acid was usually low, especially energy % of monoun-saturated fatty acid intake was below RDA for adult women. And intake ratio of $\omega$6$\omega$3 fatty acids was desirable. Accordingly, it is thought that dietary fat intake was balanced in quality. Serum lipids concentrations were increased with the length of pregnancy and were higher as compared with non-pregnant women. Polyunsaturated fatty acids, especially $\omega$6 fatty acids, have gradually decreased with the length of pregnancy. Serum lipids content and fatty acids composition were not greatly influenced by dietary fat but serum free fatty acid level was negatively related to energy, carbohydrate, fatty acids and cholesterol intake. On the basis of the above results, it can be predicted that lipid metabolism for mother and fetus is changed by pregnant status and multilateral research on maternal nutrition in terms of areas and income levels will have to be made. 늙은 호박의 첨가비율을 달리하여 제조한 양갱의 영양성분 (Nutritional Components of Yanggeng Prepared by Different Ratio Pumpkin)

  • 늙은 호박을 이용하여 기능성 있는 양갱을 제조하기 위하여 호박 페이스트의 양을 $87\%$(A제품), $90\%$(B제품), $93\%$(C제품)로 비율을 달리하여 한천, 설탕, 물엿, 소금을 이용한 3가지 호박양갱 제품을 제조하여 영양성분을 분석한 결과는 다음과 같다. 아미노산은 glutamic acid와 aspartic acid가 가장 높게 나타났고, 비타민 E는 C 제품이 A와 B제품에 비하여 유의적으로 높게 나타났다. 또한 구성 당 함량에서는 glucose와 galactose는 C제품이, fructose와 lactose는 A제품이 다른 제품에 비하여 유의적으로 높게 나타나 대조를 이루었다. 무기질 중 다량원소인 칼슘, 마그네슘, 칼륨과 나트륨은 C제품이, 미량원소인 아연과 망간은 A제품이 가장 높게 나타났다. 특히 칼륨의 함량이 다른 무기질에 비하여 가장 높게 나타났다.

Inoculation with Indole-3-Acetic Acid-Producing Rhizospheric Rhodobacter sphaeroides KE149 Augments Growth of Adzuki Bean Plants Under Water Stress

  • The use of plant growth-promoting rhizobacteria is economically viable and environmentally safe for mitigating various plant stresses. Abiotic stresses such as flood and drought are a serious threat to modern agriculture. In the present study, the indole-3-acetic acid-producing rhizobacterium R. sphaeroides KE149 was selected, and its effects on the growth of adzuki bean plants under flood stress (FS) and drought stress (DS) were investigated. IAA quantification of bacterial pure culture revealed that KE149 produced a significant amount of IAA. Moreover, KE149 inoculation notably decreased stress-responsive endogenous abscisic acid and jasmonic acid and increased salicylic acid in plants under DS and FS. KE149 inoculation also increased proline under DS and methionine under FS. In addition, KE149 inoculation significantly increased the levels of calcium (Ca), magnesium (Mg), and potassium (K) while lowering the sodium (Na) content in the plant shoot under stress. KE149-treated plants had markedly greater root length, shoot length, stem diameter, biomass, and higher chlorophyll content under both normal and stressed conditions. These results suggest that KE149 could be an efficient biofertilizer for mitigating water stress.

제주의 화산회토양 및 비화산회토양에서 재배한 난지형 마늘의 주요성분과 토양의 화학적 특성 비교 (Comparison of the Chemical Properties of Soil and the Main Components of the Southern Ecotype Garlic Cultivar Cultivated in the Volcanic or Nonvolcanic Ash Soil of Jeju Island)

  • 본 연구에서 제주의 화산회토와 비화산회토에서 난지형 마늘인 남도 마늘과 대서 마늘을 재배하여 토양 및 마늘의 성분을 비교 분석하였다. 남도 마늘을 재배한 화산회토양에서는 전기전도도 및 가용성 황 함량이 높았으며 대서 마늘을 재배한 화산 회토양에서는 유기물함량 및 총 질소함량이 높게 나타났다. 남도 마늘을 재배한 비화산회토의 경우 가용성 인 함량이 높게 나타났다. 화산회토에서 재배한 남도 마늘의 경우 가용성고형물 및 알리신 함량이 높았으며, 화산회토에서 재배한 대서 마늘의 경우 환원당 함량이 높게 나타났다. 또한 제주에서 재배된 마늘의 대량원소 함량은 칼륨이 가장 높았으며 다음으로 황, 마그네슘, 칼슘 및 나트륨 순이었으며 미량원소의 경우 철, 아연, 망간, 구리 순이었다. 이러한 결과는 고품질 마늘 생산을 목표로 하는 재배농가들에게 유용한 정보를 제공하게 될 것이다.

국내 팥 육성계통의 잎과 종실의 무기질 및 항산화 특성 비교 (Comparison of the Antioxidant and Mineral Properties of Korean Adzuki Bean (Vigna angularis L.) Leaves and Seeds)

  • This study compared the antioxidant and mineral properties of the leaves and seeds of fifteen Korean adzuki bean (Vigna angularisL.) breeding lines. This study was conducted in an attempt to expand the use of Korean adzuki bean leaves. The potassium, calcium, magnesium, and sodium contents of the leaves were significantly higher than the seeds, in particularly, the potassium content. The leaves had approximately 3.3 times higher potassium content than the seeds. For instance, the potassium content of YA1317 leaves was 21% higher than that of Arari. The total polyphenol content and ABTS activity of Adzuki bean leaves were significantly higher than the seeds, as opposed to the total flavonoid content and DPPH scavenging activity. Among the 15 breeding lines, YA1402 had 1.2~3.2 times higher antioxidant content and activity as compared to the Arari variety. It was concluded that adzuki bean leaves had higher mineral content, antioxidant component and activity as compared to the seeds. Therefore, adzuki bean leaves could be used an ingredient for dishes and as a medicine.

Peat 및 화학비료 시용이 금잔디(Zoysia matrella Merr.)의 생육에 미치는 영향 (The Effect of Peat and Chemical Fertilizer Application on the Growth of Manilagrass(Zoysia matrella Merr.))

  • Peat 및 화학 비료시용에 따른 잔디식물의 생장반응에 대한 실험 결과를 요약하면 다음과 같다. 1. 금잔디 생장반응 효과는 peat와 복합비료를 혼용했을 때 무처리 또는 peat나 복합비료의 단용시 보다 지상부와 지하부의 생장이 지속적으로 현저하게 증가되었다. 2. 줄기의 수는 무비상태보다 peat의 시용량이 증가함에 따라 많아졌으며 peat 3,000kg과 복합비료 혼용구에서 2배 이상 증가하였다. 3. 시험 후의 토양성분 변화는 peat 시용량이 증가할수록 대조구에 비해 pH와 유기물 함량이 높아지는 경향을 보였다. 4. 토양 중 Ca과 Mg의 함량은 대조구에 비해 peat의 시용량이 증가할 수록 높아지는 경향을 보였지만, Na의 함량은 peat시용량에 따라 큰 차이를 보이지 않았다.

새우의 품질에 미치는 가열 및 건조방법의 영향 (Effects of Cooking and Drying Methods on the Quality of Shrimp)

  • 가열처리 및 건조방법이 새우의 품질에 미치는 영향을 밝히고자 하였다. 생새우의 콜레스테롤 함량은 건물 100g당 81.4mg이었으며, 동결 건조한 것은 열풍건조한 것보다 그의 함량이 $5{\sim}28%$가 적었다. 새우의 신선도와 관계가 있는 volatile basic nitrogen과 trimethylamine의 함량은 열풍건조한 것이 동결건조한 것보다 이들의 함량이 높았고 세균수는 동결건조한 것이 열풍건조한 것보다 낮았다. 생새우를 가열하거나 건조하면 L값이 크게 상승하여 새우의 색깔이 밝아졌는데 동결건조한 것은 열풍건조한 것보다 그 폭이 더 컸고 색차는 L값과 반대현상을 나타냈다. 생새우의 무기질 중에는 칼슘 함량이 가장 많았고 그 다음은 칼륨, 나트륨이었으며, 이들 무기질 성분은 전체 무기질 성분의 96%를 차지하였으며 가열 및 건조방법에 따라 차이가 없었다.
