쌀 수침 중 벼 품종별 수분흡수 특성 및 취반미 물성 (Water-absorption characteristics and cooked rice texture of milled rice)

  • 본 연구에서는 지역특화 수요자 참여형 SPP벼 품종이 보급된 지역에서 재배한 알찬미(AM)와 해맑은(HM) 품종과 일반 고품질 밥쌀용 품종을 대상으로 백미 수침 과정에서 미립의 외관 변화를 관찰하고, 수분흡수 특성 및 취반미 물성을 평가하였다. 수침 과정에서 쌀이 수분을 흡수하면서 미립 내부로의 수분 확산 현상으로 인해 투명했던(transparent) 외관이 불투명한(opaque) 상태로 변하여 마치 찹쌀과 같은 뽀얀 흰색을 보였다. 침지 20분 경과 후, 쌀의 50% 정도가 흰색으로 변하였고, 30분 경과된 쌀은 90% 정도가 흰색을 나타내었다. 또한, 수침으로 인해서 쌀 부피가 팽창하고, 미립 내부 구조에서 크랙(crack)이 형성되었는데, 이로 인해 미립 내부에 공간을 확보하여 물의 내부 확산이 가속화되면서 쌀 중심부까지 충분히 수화될 수 있는 것으로 보였다. 수분흡수율은 침지 후, 20분까지 비교적 빠른 속도로 증가하였고, 이후 30분까지는 매우 완만한 증가를 보였다. 30분 이후에는 시간이 경과해도 더 이상 증가하지 않고 일정한 상태를 유지하였으며, 품종별 수분흡수율에서 알찬미가 가장 높은 것으로 나타났다. 쌀 침지 중 색변화 및 크랙 형성은 쌀의 수분흡수율에 현저한 영향을 주는 것으로 사료된다. DSC에 의한 품종별 쌀 전분의 호화 양상은, 해맑은 품종이 호화온도 및 흡열엔탈피(𝚫H)가 낮은 경향으로, 해맑은 품종의 전분 구조의 결정도가 낮고, 호화 상전이에 필요한 에너지양이 적어서, 가열 시 전분의 팽윤이 빠르게 진행되어 밥맛에 영향을 줄 수 있음을 설명한다. 취반미 식감 분석 결과, SPP벼 품종이 밥의 경도는 비교적 낮고, 찰기는 높아서 찰기가 높은 쌀에 대한 선호도가 높은 우리나라의 경우 SPP벼에 대한 소비자 선호도가 높을 것으로 보인다. 또한, 취반 후 일정 시간 보온된 밥의 식감을 평가하기 위해서 취반 직후와 12시간 보온했을 때 평가한 취반미 물성은 SPP벼 품종인 알찬미와 해맑은 취반미가 시간이 경과했을 때 밥의 경도는 낮고, 찰기는 높아서 밥의 식감이 잘 유지되는 것으로 판단되며, 결국 SPP 벼 품종의 취반미 노화 속도도 늦게 진행될 것으로 예측된다.

$BaTiO_3-SrTiO_3$ 계의 유전성 (Dielectric Properties of $BaTiO_3-SrTiO_3$ System)

  • $BaTiO_3$ and $SrTiO_3$ were mixed with the mole ratio of 35:65, 50:50 and 65:35 and heated at 1100~120$0^{\circ}C$ for 1~64 hours. The dielectrics of $BaTiO_3$-$SrTiO_3$ system were investigated as a function of amount of solid solution formed. The dielectric constant was increased and Curie temperature was shifted to higher temperature with increasing of heating of soaking time for the same composition and heating temperature. This can be explained by the homogeneous distribution of $Ba^{2+}$ and $Sr^{2+}$ ion in the $BaTiO_3$ system. The Curie temperature was shifted to lower temperature with increasing $SrTiO_3$ in the $BaTiO_3$-$SrTiO_3$system because of decreasing the lattice constant.

Gypsum-Wood의 제조와 성질 (Manufacture and Properties of Gypsum-Wood)

  • Gypsum-wood composites were made by introducing inorganic substances into wood using calcium chloride, first treating solution, and sodium sulfate, secondary treating solution, by double diffusion process under atmospheric pressure at room temperature. The process conducted as follows: water saturated specimens were soaked in calcium chloride solutions at several concentration. Then the specimens were soaked further in saturated sodium sulfate solution, and they were leached in flowing tap water for 24h. To attain sufficient weight percent gain (WPG) values, the suitable concentration of calcium chloride and soaking time in saturated sodium sulfate solution were 20% and 48h, respectively. Inorganic substances were produced mainly in the lumina of tracheides. It was made sure that these substances were dihydrate gypsum($CaSO_4$ $2H_2O$) by X -ray microanalysis (SEM-EDX). The composites had good fire resistance due to low heat transfer rate of gypsum formed in wood. However, the composites had little decay resistances, because they showed high weight losses by test fungi attacks.

데침과 열수 침적의 병용 열처리와 trehalose 첨가가 오이 김치의 저장중의 효소 활성의 변화와 관능 검사에 미치는 효과

  • The enzyme activity and organoleptic properties of Korean pickled cucumber were studies for their changes during fermentation. The Korean pickled cucumber were prepared by blanching and high temperature soaking in salt solution and trehalose treatment The results shelved that the effect of combined heat and trehalose treatment significantly reduced the fermentation rate and softening rate of texture while a rather rapid fermentation was for those pleserved with salt. The effect of trehalose treatment enhenced fermentation and it was significantly reduced softening rate of texture by 2% treatment. The sensory evaluation of Korean pickled cucumber was found that combined heat treatment with blanching and hot solution had a positive effect for reduction of softening of cucumber tissue, however, odor and taste were not significantly affected. This study suggested that combined heat and trehalose treatment might have potential for affording protection against softness of cucumber tissue during the fermentation time.

가공조건에 따른 땅콩유의 물리화학적 특성의 변화 (The Changes in the Physicso-Chemical Properties of Peanut Milk by Processing Conditions)

  • 땅콩유 제조시 땅콩의 침지시에 NaHCO$_3$를 첨가하는것과 분쇄전에 땅콩을 열처리하는 것이 n-hexanal 함량에 미치는 영향을 조사하기 위하여 headspace gas chromatgraphy 방법을 이용하여 조사하였다. 분쇄전에 땅콩을 열처리한 경우에는 n-hexanal함량이 현저하게 감소됨을 알 수 있었으며 열처리 시간이 증가함에 따라 n-hexanal 함량도 감소하지만 땅콩유중의 충고형분과 단백질함량도 함께 감소하였다. 이상의 결과로볼 때 콩비린내의 원인물질 중의 하나인 hexanal 함량의 감소를 위해서는 두유의 경우처럼 분쇄전에 땅콩을 열처리하는 것은 필수적이지만 지나친 열처리는 땅콩유는 단백질함량을 감소시켜 영양가가 저하시키므로 땅콩을 10분간 가열하는 것이 가장 바람직한 가공조건이라고 판단된다.

아세틸화처리 낙엽송(Larix kaempferi) 소형 각재의 치수안정성 조사 (Investigation on the Dimensional Stability of Acetylated Larch (Larix kaempferi) Small Square)

  • It has been known that acetylation improves the dimensional stability of wood. Liquid phase acetylation is more popular than gas-phase acetylation for the effectiveness of weight gain of wood. In this study the specimens of domestic red and Korean pines are acetylated in liquid phase and their physical properties, such as density, bending strength, anti-hygroscopicity etc., are analyzed. Acetylation increases the average weights and volume of larch specimens by 11.4% and 3.4%, respectively, and their average oven-dry densities are increased by $0.03g/cm^3$. Acetylation does not influence on Modulus of Rupture (MOR) and Modulus of Elasticity (MOE). The average Percentage Reduction in Hygroscopicity (PRH) and average Percentage Reduction in Water soaking (PRW) of larch specimens are respectively 20.2% and 20.8%. Thus it can be concluded that acetylation improves the dimensional stability of larch specimens.

라미네이트 강도 특성에 미치는 Thermal Aging의 영향 (Effect of Thermal Aging on The Strength of Laminate Composites Structure)

  • Composite reinforced fiber materials are used in lots of fields such as a part of aeronautic space, ship, machinery and so on because can make structure wished for necessary condition by control fiber direction and laminated sequence. As the use of advanced composites increase, specific techniques have been developed to repair changed composite structures. In order to repair the damaged part production high quality composite reinforced fiber are completed by control the surrounding temperature and press in autoclave. The quality is influenced heat exposure degree by chemical reaction for precessing. This study considerated influence limit of using by repair structure part and change of properties according to heat exposure degree for repairing.

Mechanical properties of stabilized saline soil as road embankment filling material

  • In northern China, abundant summer rainfall and a higher water table can weaken the soil due to salt heave, collapsibility, and increased moisture absorption, thus the chlorine saline soil (silty clay) needs to be stabilized prior to use in road embankments. To optimize chlorine saline soil stabilizing programs, unconfined compressive strength tests were conducted on soil treated with five different stabilizers before and after soaking, followed by field compaction test and unconfined compressive strength test on a trial road embankment. In situ testing were performed with the stabilized soils in an expressway embankment, and the results demonstrated that the stabilized soil with lime and SH agent (an organic stabilizer composed of modified polyvinyl alcohol and water) is suitable for road embankments. The appropriate addition ratio of stabilized soil is 10% lime and 0.9% SH agent. SH agent wrapped soil particles, filled soil pores, and generated a silk-like web to improve the moisture stability, strength, and stress-strain performance of stabilized soil.

Catalytic hydrogenation-assisted preparation of melt spinnable pitches from petroleum residue for making mesophase pitch based carbon fibers

  • We demonstrated an effective way of preparing melt spinnable mesophase pitches via catalytic hydrogenation of petroleum residue (fluidized catalytic cracking-decant oil) and their subsequent thermal soaking. The mesophase pitches thus obtained were analyzed in terms of their viscosity, elemental composition, solubility, molecular weight, softening point and optical texture. We found that zeolite-induced catalytic hydrogenation under high hydrogen pressure contributed to a large variation in the properties of the pitches. As the hydrogen pressure increased, the C/H ratio decreased, and the solubility in n-hexane increased. The mesophase pitch with entirely anisotropic domains of flow texture exhibited good meltspinnability. The mesophase carbon fibers obtained from the catalytically hydrogenated petroleum residue showed moderate mechanical properties.

Fabrication of ZnO and CuO Nanostructures on Cellulose Papers

  • The use of cellulose papers has recently attracted much attention in various device applications owing to their natural advantageous properties of earth's abundance, bio-friendly, large-scale production, and flexibility. Conventional metal oxides with novel structures of nanorods, nanospindles, nanowires and nanobelts are being developed for emerging electronic and chemical sensing applications. In this work, both ZnO (n-type) nanorod arrays (NRAs) and CuO (p-type) nanospindles (NSs) were synthesized on cellulose papers and the p-n junction property was investigated using the electrode of indium tin oxide coated polyethylene terephthalate film. To synthesize ZnO and CuO nanostructures on cellulose paper, a simple and facile hydrothermal method was utilized. First, the CuO NSs were synthesized on cellulose paper by a simple soaking process, yielding the well adhered CuO NSs on cellulose paper. After that, the ZnO NRAs were grown on CuO NSs/cellulose paper via a facile hydrothermal route. The as-grown ZnO/CuO NSs on cellulose paper exhibited good crystalline and optical properties. The fabricated p-n junction device showed the I-V characteristics with a rectifying behaviour.
