경상남도 김해지역 고등학생의 식행동, 간식섭취 및 충치 실태조사 (A Study on Dietary Behaviors, Snack Habits and Dental Caries of High School Students in Gimhae, Kyungnam Province)

  • 경남 김해시에 소재한 고등학교 학생 626명 (남학생 333명, 여학생 293명)을 대상으로 충치 실태, 간식섭취빈도, 식행동 등에 관한 조사에서 과반수이상이 충치가 있고 특히 여학생이 충치가 많으며, 충치 예방을 위하여서는 대부분이 양치질을 올바르게 하려고 노력하고 있었다. 그러나 음식섭취 후 즉시 양치를 하는 학생은 1/5 수준이었고 양치방법은 이와 혀, 잇몸을 모두 닦는 율은 1/4 수준으로 낮았고 양치질에 대한 교육을 받지 않은 학생이 많았다. 간식섭취 빈도와 식행동은 충치유무에 따른 뚜렷한 차이가 없었으나. 충치가 없는 학생들은 백색우유 섭취빈도가 높은 반면 충치가 있는 학생들은 껌, 탄산음료의 섭취빈도가 유의적으로 높았다. 그리고 여학생에서 충치수가 많았는데 초콜릿, 과자류, 요구르트, 아이스크림 등의 섭취빈도가 남학생에 비하여 유의적으로 높았다. 따라서 올바른 양치 법에 대한 교육과 아울러 충치유발 식품 및 충치를 억제시키는 청정식품에 대한 교육이 필요하다고 하겠다.

대학생들의 건강 관심도에 따른 가공식품 관련 식행동과 식품표시 인식에 관한 비교 연구 (A Comparative Study on the Dietary Behavior and Recognition on Food Labelling of Processed Foods according to the Degree of Health Concern in University Students)

  • The purpose of this study was to analyze University student's dietary behavior for processed foods and recognition on food nutrition labelling according to the degree of health concern. For this study, 302 University students in Gyeonggi region was surveyed by questionnaire from May in 2016 and it included the questions about general matters, dietary behavior on processed foods, and the food nutrition label system. It was analysed by SPSS win 23.0 program. And the results are as follows. According to the result of the factor analysis, the preference of processed foods were showed 3.21~3.97. There were significant differences in milk and milk products preference according to health concern (p<0.05). Also frequency of processed foods was shown significant differences in milk and milk products, noodles, beverage, and fast food (p<0.05), whereas no significant differences were found in meat products, snack, bread and frozen food (p>0.05). Also, the processed food purchase consideration according to health concern was shown significant differences in nutrition, origin, manufacturing company (p<0.05), whereas no significant differences were found in taste, price, exterior, brand, and shelf life (p>0.05). Thus, it is necessary to do continuing public relations and to provide more opportunities for nutrition education so that the University students may obtain right dietary behavior on processed foods and the system of food nutrition indication be established properly.

가공식품의 영양표시에 대한 중학생과 학부모의 이용 및 인지도 실태 (Use and recognition of nutrition labelings in processed foods among middle school students and their parents)

  • In order to investigate the use and recognition of nutrition labelings of processed foods which adolescents frequently purchase, 277(boys 125, girls 152) middle school students and their parents were conveniently selected from the west Chonan City, and were surveyed by self-recording questionnaire on June, 2000. Nutrition labels were indicated only in 14.9% of 222 processed snack foods. At purchasing foods the students considered taste most importantly and in turn price, quantity, and nutrition. Of the subjects 79.4% of students and 89.2% of parents had experiences of reading nutrition labels, and the reasons were mainly to just know contained nutrients(76.8%, 72.1%, respectively) and for their health care(35.9%, 47.8%, respectively). The main reason not to confirm nutrition labels was that they were not interested in nutrition labels. But too small size and rudeness or hardness of understanding was also pointed out as a reason of not reading nutrition labels. The students ranked mineral, protein, and carbohydrate as the most important three nutrients at labelings, while the parents ranked protein, mineral, and calorie. Cholesterol, dietary fibers, and sodium were shown the lowest rank in both students and parents. Significant nutrients for specific processed foods did not well recognised in the students. Conclusively, nutrition labelings should be applied to all processed foods which students frequently buy, particularly in clear and large size. Also it is necessary to prepare education programs for both students and parents about accurate recognition of nutrition knowledge about processed foods and how to use nutrition labels.

길거리 음식에 대한 중${\cdot}$${\cdot}$대학생의 섭취 및 위생상태 인식과 미생물 분석 (A Study on Students' Intake of Street Foods and Their Perception toward Hygiene Status of Street Foods and Microbiological Analysis)

  • We investigated the intake trends of street foods for middle school, high school and colleges students through the survey study. In addition, the factors affecting the students' consumption of street foods and their perception toward hygiene status of street vendor were studied. The levels of total aerobic bacteria, coliform groups and enterobacteriaceae in Kimbab, eomuk, and eomuk-kukmul were counted using 3M petrifilms. More than ninety seven % of the respondents had experienced street foods. All the respondents ate street foods 1 to 5 times a month. Forty percent of the respondent stated that 'good taste' and 'time-saving convenience' were their reason for eating the street foods. Their favorite foods were ddokbokgi and various fried foods. All the students responded that frying oil, drinking water, and soy sauce as well as the street vendors' attire and their cooking tools in street vendor were unsanitary. Forty percent of the respondents ranked frying oil as the most unsanitary substance. Eighty percent of the respondents responded that an enforcement of hygiene should be imposed on the street foods vendor. There were significant differences (p<0.001) among the student's age in the opinion related to the reasons of eating street foods, hygiene enforcement, existence of street foods and interest of hygiene status of street foods. High correlation (p<0.05) between the frequency of street foods and snack intakes was shown, regardless of student's age. The result shows that those who eat snacks more than once a day tend to eat street foods more frequently. Aerobic plate counts in Kimbab in 5 different vendors exceeded 10$^5$/g and contamination levels of enterobacteriaceae or coliform in Kimbab exceeded more than 10$^3$/g, which did not satisfy the microbiological standards. In conclusion, although the respondents thought that the sanitation of street foods was poor, most of them want the street food vendor to be maintained with better hygiene condition. This indicated that the regulation for safe street foods should be enforced and educational information about the preparation and serving for safe street foods should be provided to street food vendor.

서울시내 대학생의 외식행동에 관한 조사 연구 (A Study on the Eating Out Behavior of University Students in Seoul)

  • In order to investigate the eating out behavior of university students, this survey was conducted using the questionaires for 710 students(369 male, 341 female) from 11 universities in Seoul. It was revealed that 39.4% of the subjects spent $60,000{\sim}100,000$ won for monthly eating out cost and 57.8% of them ate out more than once a day. Most of them expended less than 3,500 won for lunch, while 36.5% of them spent $4,000 {\sim}5,000$ won for dinner. Dinner was regarded more important than lunch. Korean foods were the most preferred menu for eating out with friends and fast foods were the second. But Boonsik(snack bar foods), Chinese foods and Japanease foods were rarely selected. Frequency of selecting fast foods was 8 times greater than that of Boonsik. This indicates that the preference of western flavor and the pursuit of convenience is getting more obvious. While dating, western foods were preferred, followed by Korean foods, fast foods. The 80 kinds of foods were reported as favored eating out foods. Although 50 among 80 were Korean foods, the rest of them were Koreanized foreign foods most of those were western style. This may suggest that when the students become adults, they will be much fond of western dish for their dinning out. This tendency of preferring western flavor were much apparent in foods for dinner compared with lunch. In both sexes, the standard of food choice was in the order of taste, price, mood, hygiene, service and brand name. But male students were more conscious of price and service while female students were more concerned about taste and hygiene. Most unsatisfying feature in restaurant was unstable atmosphere for both sexes. Taste was the most important sensory factor in selecting the foods, followed by appearance, smell and texture. Major source of restaurant information was recommendation by friends or relatives. But the use of internet or magazine was negligible. Female students had more positive attitude, compared with male students, in using restaurant information and pursuing eating out for gourmet. The dining out menu of which price ranges about $3,000{\sim}5,000$ won could be preferable foods for most people. Therefore, instead of blaming them for eating too much fast foods, new menus which fit the food preference and affordability of the students should be developed.

Dietary habits and gastroesophageal reflux disease in preschool children

  • Purpose: To identify the relationship between dietary habits and childhood gastroesophageal reflux disease (GERD) in preschool children. Methods: We performed a questionnaire study to analyze the relationship between dietary habits and GERD in 85 preschool children with GERD and 117 healthy children of the same age. Results: Irregular and picky eating were more p-revalent in the GERD group than in the control group (odds ratio [OR], 4.14; 95% confidence interval [CI], 1.37-12.54 and OR, 4.96; 95% CI, 1.88-13.14, respectively). The snack preferences and the late night eating habits were significantly more prevalent in the GERD group than in the control group (OR, 3.83; 95% CI, 1.23-11.87 and OR, 9.51; 95% CI, 2.55-35.49, respectively). A preference for liquid foods was significantly more prevalent in the GERD group (OR, 9.51; 95% CI, 2.548-35.485). The dinner-to-bedtime interval was significantly shorter in the GERD group than in the control group ($157.06{\pm}48.47$ vs. $174.62{\pm}55.10$, P=0.020). In addition, the time between dinner and bedtime was shorter than 3 hours in 47 children (55.3%) of the GERD group and 44 (37.6%) of the control group. This difference was statistical significance (P=0.015). Conclusion: Dietary habits such as picky and irregular eating, snack preference, a preference of liquid foods, late night eating, and a shorter dinner-to-bedtime interval had a significant correlation with GERD. Further large-scale studies are necessary to confirm our results.

초등학생 학부모들의 자녀 간식 및 식생활 교육에 대한 실태 및 인식 (Parent's Behavior and Perception of Their Kids' Snacking Behavior and Dietary Life Education)

  • The objective of this study was to investigate parents' behavior and attitudes regarding their kids' snacking and dietary life education. A survey was conducted with the parents (N=412) of elementary students from seven provinces, includeing Seoul, Busan, Daegu, Kwangju, Gyungnam, Chungnam, and Kangwon. Kids' snacks consisted mainly of purchased foods rather than homemade foods. Parents' main concerns regarding kids' snacks were nutrition (44.9%), taste (24.3%), and safety (23.5%). Over 50% of parents checked food labels, especially expiration date (96.4%), food ingredients (49.5%), and food additives (33.5%). The snack items frequently provided to kids were fruits (62.8%), milk (55.5%), bread (47.1%), and snack items (23.3%). Parents responded that the amount of their kids' snacking was adequate (47.8%), small (33.7%), or large (18.2%). The results show that more research is needed regarding the adequacy of kids' snacking, considering that 15.7% and 22.4% of the children ate more and less, respectively, than their daily energy requirement. 76.5% of the parents performed home education regarding their kids' dietary habits, especially on the topics of 'balanced diet' (83.9%), 'healthful food' (53.7%), and 'eating three meals a day' (40.2%). Parents obtained dietary information from TV (65.2%), internet (12.0%), and newspapers (7.0%). From this study, we found that parents perceived their kids' snacking behavior correctly, and considered home-education for their kids' dietary habits positively. However, the information resources were limited, which makes it necessary to develop parents' education programs.

초등학생의 트랜스 지방과 관련된 인식수준 및 식행동 실태조사 (Elementary Students' Perception and Behaviors Relating to Trans Fatty Acid)

  • The objectives of this study was to explore the knowledge, attitudes, and perceptions of elementary school students towards trans fatty acids. In addition, the students' preferences and consumption frequencies of processed food items containing trans fats, as well as their food behaviors relating to snack consumption, were investigated. The study population consisted of students from seven provinces, including Seoul, Busan, Daegu, Kwangju, Gyungnam, Chungnam, and Kangwon. Two schools were selected in each province and one class was randomly chosen in each school. All students from the selected classes were surveyed onsite (N=951). The data were analyzed with chi-square tests and t-tests using SPSS/Windows (ver.15.0) program. The results showed that the students' knowledge levels toward trans fatty acid were very low, particularly on the production process of trans fats. The students perceived that trans fatty acids can cause health problems and should be consumed in low amounts. They also felt there is a need for a good nutrition education on trans fats. Furthermore, the students responded that their most preferred foods were in the order of breads, biscuits, and snacks. The most frequently consumed snack item among 2nd graders was biscuits and among 5th graders it was breads. It was also found that 90% of the students had snacks once a day, and of them, 58% prepared their own snacks. Based on this, we propose that students who allowed to choose their own snacks should be carefully educated on trans fatty acids to prevent excessive consumption of high trans fat foods.

시판 가공식품의 비타민 A, E 함량 조사 연구 - 음료수, 시리얼, 과자, 기타코코아·당류·초콜릿가공품 등을 중심으로 - (A Study on Vitamin A and E Content in Commercially Processed Products - Beverage, Cereal, Snack, Other Cocoa, Sugar and Chocolate Processed Products -)

  • Purpose: People have long been interested about antioxidant nutrients such as vitamin A and E to stay in healthy states. This present study provides trustworthy nutritional information and evaluates vitamin A and E contents in emphasized food items. Methods: Vitamin A or vitamin E emphasized foods including beverage, cereal, snack, chocolate product, other cocoa products, and sugar products were analyzed. The contents of vitamin A, E in samples were examined by high performance liquid chromatography. Vitamin A and vitamin E contents were compared with the labeled value indicated on the nutrition label. Results: Vitamin A (n=18) value ranged from 90% to 248% and vitamin E (n=20) value ranged between 96-413% of labeled value. Analyzed samples ranged more than 80% of the labeled value, which complied with food labeling rules. Conclusion: Providing accurate information for nutrition label is essential to confirm nutrient contents in foods. It will help to decide the adequate level of nutrient intake. Therefore, the nutrition labeling system should be supervised continuously with regular monitoring analysis.

부산지역 초등학생의 비만도에 따른 식습관 조사 (The Reserch Study on the Food Habits According to Obesity Index of Primary School Children in Busan)

  • The factors of obesity related with food habits were assessed to provide information for nutrition education database. The subjects in this study were 234 primary school children in Busan. Children were classified into normal and obese groups(mildly obese, moderately obese and severely obese) by obesity index. In self-recognition of body image, only 28.6% of MI group considered themselves as 'overweight or obese'. 87.2% of the subjects controlled their weight method with exercise. With regard to meal speed, 64.5% of the subjects ate $fast({\leq}15\;min.)$. The study also found that 79.8% of the subjects ate breakfast, 56.4% of the subjects them were moderate by obese, 40.8% of the subjects ate snacks after dinner. Eating speed, meal volume and snacks money per day were significantly different in obesity. Preference for eating out was Korean Chinese, Western and Japanese food, in order. Favorite food for snack, such as ddukbokki, fruits, milk. fried foods and candy and caramel were significantly different in obesity(p<0.05). However hamberger, pizza and chocolate were not significantly different in obesity. The most preference snack for all the subjects were fruits and ice cream. In food preference, potato, dduk, meats, fishes, cheese, milk, ice cream were significantly different in obesity. The distasteful food for subjects were patbab, vegetables, shellfishes and salt-fermented foods. From above results, obesity of children was related to meal speed, meal volume and snacks motley per day. Therefore, these results suggest that continuous and practical nutrition education to change food habits art necessary to avoid child obesity.
