Physicochemical Characteristics and Fatty Acid Composition of the Meat from Korean Native Black Pig with Different Slaughter Weight

  • The Korean native black pig (KNP) have several desirable meat qualities, which are highly demanded by Koreans in spite of its slow growth rate, low feed efficiency, and small litter size. The aim of this study was to evaluate meat quality and fatty acid composition of KNP at different slaughter weight in order to provide information to industry. Ninety female KNP of the same age (220 days) were divided into three groups by live body weights (30 pigs per each group); live weight of 50$\sim$59 kg (T1), 60$\sim$69 kg (T2) and 70$\sim$80 kg (T3), respectively. After slaughtering the longissimus dorsi muscle (LD) and backfat from each group were obtained after 24 hr chilling. Crude protein content and shear force of LD from T3 was higher than that from T1 and pH of LD was significantly lower in that from T1 than from T2 and T3. Color measurement indicated that LD of T2 group had a higher $L^*$-value and lower $a^*$-value than those of T1 and T3. Slaughter weight of KNP generally did not affect the fatty acid composition of LD and backfat but the content of oleic acid (C18:1) of T2 in LD was significantly higher than those of T1 and T3. The results may provide basic information to industry to promote the production and processing of KNP, and assist in meeting the Korean consumer's demand.

돈혈의 적정 건조조건과 육계사료로서의 재활용 방안 (Optimum Drying Condition for Slaughter Porcine Blood and Its Utilization as Broiler Diets)

  • Optimum drying conditions to utilize porcine blood from slaughter house for blood meals, and the effects of blood meals on growth in broiler chicks were investigated. Moisture and protein con-tents of slaughter porcine blood were 79.8 and 16.4%, respectively. The protein contents of the flash dried blood meals at 80˚C were not different from those of the spray dried blood meals at 160 and 190˚C, but higher by 17% relative to those of the spray dried blood meals at 80 and 120˚C. Results from protein analysis by SDS-polyacrylamide electrophoresis showed that flash dried blood meals at 80˚C and spray dried blood meals at 160˚C were better than spray dried blood meals at 80, 120 and 190˚C in terms of protein quality. In Feeding Trial I with broiler chicks, body weights of chicks fed 2, 4 and 6% flash dried blood meal diets at 80˚C were increased at 35 days by 5.6, 7.9 and 4.0%, respectively, compared to control group(P<0.05). In Feeding Trial II, body weights of chicks fed 4 and 6% flash dried blood meal diets at 80˚C were increased at 42 days by 4.9 and 5.3%, respectively, compared to control group(P<0.05). Feed conversion ratios of chicks fed diets 4 and 6% flash dried blood meal diets at 80˚C were significantly improved at 42 days by 7.0 and 3.7%, respectively, compared to that of control group(P<0.05). Transport losses in finisher pigs: impact of transport distance and season of the year

  • Objective: The death of animals during transport for slaughter is a major factor indicating the level of welfare in transported animals. The aim of this study was to assess mortality related to the commercial transport of finisher pigs for slaughter in the Czech Republic. Methods: The inspectors of the State Veterinary Administration of the Czech Republic recorded the numbers of finisher pigs transported to processing plants in the Czech Republic for slaughter and the mortality in these pigs in relation to transport in the period from 2009 to 2014. Results: Our results show that the likelihood of death losses in transported pigs increases with increasing transport distance. The transport-related mortality ranged from 0.049% in pigs transported for distances below 50 km to 0.145% in pigs transported for distances exceeding 300 km. The impact of external air temperature on the transport-related mortality found in our study clearly shows that current transport practices fail to ensure the welfare of pigs transported under other than moderate weather. Particularly cold temperatures below $-2^{\circ}C$ were associated with increased death losses in winter transport. Conclusion: Despite a decreasing trend in the mortality of finisher pigs transported for slaughter in Europe, our study suggests that current transport conditions are not efficient at ensuring the welfare of pigs during transport for longer distances and the protection of pigs against the negative impact of extreme ambient temperatures. Further research should focus on developing practical guidelines to improve the welfare of pigs in transit accordingly.

2010-2011년도에 발생한 구제역 살처분 원인에 대한 문화 분석 (The Cultural Analysis of 2010-2011 Foot and Mouth Disease Massacre in Korea)

  • Between January 2010 and March 2011, there were three outbreaks of foot and mouth disease (FMD) in South Korea. Over 3.45 million animals (5,660 farms) were slaughtered, which was 33.3% of the existing pigs, 8.4% of dairy cows and 3.4% of cattle. FMD disaster costs were estimated at around three billion Korean won. Nine civil servants were killed, over 150 people were wounded and 4,788 landfills were confronted with a pollution problem. Vaccination and slaughter are the two basic alternatives for eradication of FMD. Altho ugh slaughter is more violent, risky and expensive than vaccination, the Korean government had chosen only slaughter eradication by the end of 2010. Even though over three million animals were killed, FMD spread out over most of the country. Finally, the government chose to begin vaccination. Following vaccination, outbreaks decreased dramatically. The purpose of this report is a cultural analysis of the related decision-making process, laws and systems. For the culture analysis, we utilize interviews, symposiums, laws, FMD manual, government reports and press releases. In conclusion, we found that the FMD massacre was influenced by cultural and organizational factors. The cultural factors were economism, cheapening of the value of life, biased perceptions and fears. The organizational factors were a closed process of decision-making, monopoly system, a small homogeneous group and group-think. Therefore, more studies will be needed for those factors of FMD disasters in national-scale cases.

Effects of Strain on Performance, and Age at Slaughter and Duration of Post-chilling Aging on Meat Quality Traits of Broiler

  • This study was conducted to investigate the effects of strain on broiler performance, and age at slaughter and postchilling (PC) aging time on meat quality traits. A total of 500 one-day-old chicks (250 Hubbard classic and 250 Lohman) were reared under commercial conditions. Half of the broiler birds from each strain were slaughtered at 32 days and the other half at 42 days old. At each processing day, 168 carcasses were randomly selected (84 Hubbard and 84 Lohman) and divided into groups of 28 carcasses within each strain, and aged for 0, 4 and 24 h after chilling. Average weekly body weight was comparable between strains. Feed conversion ratio was higher (p<0.05) for the Hubbard strain during the second and third week of age. Initial carcass pH was significantly (p<0.05) affected by age where younger birds (32-d-old) had lower pH values than older (41-d-old) birds. Breast temperature was higher (p<0.001) for Lohman than Hubbard at 0, 2 and 4 h of PC. Younger birds had a lower breast temperature (p<0.001) at all measured times of PC. Thaw loss, cook loss and water holding capacity were not significantly affected by strain, age or aging time. Lohman strain had more tender meat (p<0.05) than Hubbard strain, and tenderness was improved with the increase of broiler age and aging time. Meats from Hubbard were lighter and less red than those from Lohman strain where younger birds had darker color. In conclusion, strain, age at slaughter and PC aging duration are critical to breast meat quality characteristics, and 4 h of aging are required before deboning in order to obtain more tender fillets.

Negative Trends in Transport-related Mortality Rates in Broiler Chickens

  • The high incidence of deaths during transport for slaughter is associated with poor welfare and represents a considerable loss to the poultry industry. In the period from 2009 to 2014, all shipments of broiler chickens to poultry processing plants were monitored in the Czech Republic and the numbers of chickens transported and those dying as a result of their transport were recorded and analysed. Overall transport-related mortality of broiler chickens transported for slaughter in the Czech Republic was 0.37%. It ranged from 0.31% to 0.72%, the increase approximately corresponding to the increasing transport distance. Statistically highly significant (p<0.001) differences were found when comparing transport-related mortality rates in individual seasons of the year. The greatest mortality (0.55%) was associated with transports carried out in winter months whereas the lowest death losses (0.30%) were found in chickens transported for slaughter in summer months. Our study revealed greater transport-related mortality rates in broiler chickens transported for slaughter in the Czech Republic than expected when considering earlier studies. The most pronounced increases were found in transports for shorter distances and in winter months. However, an increase was found at all transport distances monitored except for distances exceeding 300 km and all seasons except for summer. Furthermore, a general increasing tendency in chicken losses during the monitored period was found. The particularly alarming finding is that the mortality of broiler chickens being transported to processing plants has been showing a long-term increasing tendency over the last two decades. Further research should focus on the identification of specific factors leading to such high and growing mortality rates and developing practical guidelines to improve the welfare of the birds in transit accordingly.

타조 도축 공정에 따른 도체 특성 변화 및 부위에 따른 타조육의 물리적 특성에 관한 연구 (Studies on Changes of Carcass Characteristics during Slaughtering Process and Physical Properties of Ostrich Muscles)

  • 본 연구는 타조 도축 공정의 최적화 및 각 근육별 물리적 특성을 규명하고자 실시되었다. 도체의 pH는 방혈이 종료된 시점부터 급격한 저하를 나타내었고, 따라서 각 공정에 소요되는 시간 단축이 선행되어야 PSE육의 발생을 줄일 수 있을 것으로 판단되었다. 또한, 타조육은 부위에 따라 일부 차이는 있었지만 대체로 높은 pH 범위를 나타내었고, 이에 따라 보수력 또한 높게 나타났으며, 다리 근육에서 다소 높은 전단력을 보였지만, 이는 우육 등 다른 축종에 비해서 대단히 낮은 바, 이들 축종을 대체할 수 있는 우수한 축종으로 판단되며, 타조육에 대한 더 깊이 있는 연구가 요구되었다.

Analysis of the influence of sex, slaughter season, and feeding system on carcass traits in Hanwoo

  • This study was conducted to investigate the effects of sex, environmental factors, and feeding system on the carcass traits of Hanwoo (Korean Native Cattle). Data were collected from 7,866 heads slaughtered in Chungnam province during one-year period. Using the collected carcass traits data which greatly influence a Hanwoo's carcass grade, the effects of sex class, slaughter season, and feeding system were estimated. Backfat thickness of steers was significantly higher than that of bulls (p < 0.05). Marbling score was also the highest in steers when compared with cows and bulls (p < 0.05). Live weight and carcass weight were significantly higher in winter than in summer (p < 0.05). However, backfat thickness was significantly lower in summer than in other seasons (p < 0.05). Marbling score was higher in spring and fall than in summer and winter (p < 0.05). In terms of feeding systems, TMR (Total mixed ration) and TMF (Total mixed fermentation feed) fed groups showed the highest carcass grade (p < 0.05). However, the group fed TMR and formula feed at the final fattening period showed the lowest performance (p < 0.05) and it is assumed that some stress was associated to the feed change. The results reconfirm that castration may be recommended in order to improve meat quality and marbling scores in bulls. There was no consistent trend of seasonal effects of slaughter on carcass traits although some traits were significantly affected. Regarding the feeding system, either TMR or TMF can be supplied to achieve high feed efficiency and good carcass characteristics in Hanwoo.

Evaluation of Meat from Native Chickens: Analysis of Biochemical Components, Fatty Acids, Antioxidant Dipeptides, and Microstructure at Two Slaughter Ages

  • This study examined biochemical components, fatty acids, antioxidant dipeptides, and muscle fiber density of breast and thigh muscles from Korean new native chicken strains (A and B) at two slaughter ages, compared with white semi-broiler (W) or broilers. The pH values were different by chicken breed. The new native strains had the lowest fat content in the breast at 12 wk (p<0.05). Regardless of the muscles, A and B at 12 wk had higher levels of arachidonic acid (ARA; C20:4), docosahexaenoic acid (DHA; C22:6), and nervonic acid (C24:1) than broilers (p<0.05). A similar result was observed for the polyunsaturated fatty acids (PUFAs) and polyunsaturated and saturated fatty acids ratio (P/S) content in the breast. Irrespective of the muscles, A and B enriched with omega-3 fatty acids had a lower ω-6/ω-3 PUFA ratio than broilers (p<0.05) at 12 wk. Of the antioxidant di-peptides, the anserine contents were highest in A and B than in the W or broilers (p<0.05), regardless of the muscles and slaughter ages. Furthermore, the breast meat from A and B contained a higher muscle fiber density for both slaughter ages than the W and broilers (p<0.05). Based on these findings, even if the commercial birds (broilers or W) are raised under the similar environmental conditions as A and B, the new native chicken strains have distinct meat quality attributes, particularly higher ARA and DHA levels, lower ω-6/ω-3 PUFA ratio, and higher anserine contents.

110kg 대비 130kg에 도축된 비육돈의 성장효율, 도체 품질 특성 및 수익성 (Growth Efficiency, Carcass Quality Characteristics and Profitability of Finishing Pigs Slaughtered at 130 vs. 110Kg)

  • 양돈에 있어서 도살체중은 가장 중요한 경제 요인 중의 하나이다. 본 연구는 성장효율과 도체 품질에 크게 영향을 미치지 않고 비육돈의 도살체중을 130kg으로 증가시킬 수 있을 지의 여부를 알아보기 위해 착수되었다. 경남 지역에서 비육돈으로 가장 널리 사용되고있는 정육형 (Yorkshire×Landrace)×Duroc(YLD) 3원 교잡종 암퇘지 160두와 거세돼지 160두를 생체중 90kg에 선발하여 2(성)×2(도살체중; 110 vs. 130kg) ‘factorial’ 실험설계 하에 16돈방에 배치하였다. 공시돈에게는 3,200kcal/kg의 가소화 에너지와 15.5%의 조단백질을 함유하는 공시사료를 무제한 급여하였고, 계획된 체중에 도달하였을 때 도축하여 부분육 수율과 배최장근의 이화학적 특성을 조사하였다. 일당증체량은 거세돼지가 암퇘지보다 높았으나(0.86 vs. 0.79kg; P<0.01) 110kg 대비 130kg 도살체중 구 사이에는 차이가 없었다(0.83 vs. 0.81kg; P>0.05). 등지방두께는 암퇘지와 거세돼지 공히 130kg 도살체중 구가 110kg 도살체중 구보다 높았다(암: 17.6 vs. 21.6mm, 거세: 20.8 vs. 25.1mm). 정육중 삼겹살 비율은 거세돼지가 암퇘지보다 높았고(21.2 vs. 20.5%) 130kg 도살체중 구(21.4%)가 110kg 도살체중 구(20.2%)보다 높았다. 배최장근의 색깔, 48󰠏시간 육즙삼출율, 24󰠏시간 pH, 조단백질 및 조지방 함량 등의 이화학적 특성은 두 성간 혹은 두 도살체중간 차이를 나타내지 않았다. 110kg 대비 130kg 출하돈의 한계수익은 두당 약 󰠏20,000원에 달하였는데, 이 같은 손실은 거의 전적으로 130kg 출하돈의 도체가 너무 커 A, B 도체 등급의 도체중 상한선을 초과했기 때문이다. 그러나 만일 도체중 상한선이 철폐된다는 조건으로 계산하면 130kg 출하돈당 20,000원 이상의 한계수익이 발생할 수 있을 것으로 추정되었다. 이상의 결과는 정육형 비육돈에서는 성장효율이나 육질에 크게 영향을 미치지 않고 도살체중을 130kg까지 증가시킬 수 있고, 따라서 체중이 큰 출하돈을 수용하기 위해서는 ‘좋은 등급’의 도체중 상한선을 증가시킬 필요가 있음을 시사한다.
