Development of Menu Labeling System (MLS) Using Nutri-API (Nutrition Analysis Application Programming Interface) (영양분석 API를 이용한 메뉴 라벨링 시스템 (MLS) 개발)

  • Now a days, people eat outside of the home more and more frequently. Menu labeling can help people make more informed decisions about the foods they eat and help them maintain a healthy diet. This study was conducted to develop menu labeling system using Nutri-API (Nutrition Analysis Application Programming Interface). This system offers convenient user interface and menu labeling information with printout format. This system provide useful functions such as new food/menu nutrients information, retrieval food semantic service, menu plan with subgroup and nutrient analysis informations and print format. This system provide nutritive values with nutrient information and ratio of 3 major energy nutrients. MLS system can analyze nutrients for menu and each subgroup. And MLS system can display nutrient comparisons with DRIs and % Daily Nutrient Values. And also this system provide 6 different menu labeling formate with nutrient information. Therefore it can be used by not only usual people but also dietitians and restaurant managers who take charge of making a menu and experts in the field of food and nutrition. It is expected that Menu Labeling System (MLS) can be useful of menu planning and nutrition education, nutrition counseling and expert meal management.

Nanomechanical Protein Detectors Using Electrothermal Nano-gap Actuators (나노간극 구동기를 이용한 나노기계적 단백질 검출기)

  • This paper presents a new method and an associated device, capable of detecting protein presence and size from the shift of the mechanical stiffness changing points due to the presence and size of proteins in a nano-gap actuator. Compared to the conventional resonant detection method, the present nanomechanical stiffness detection method shows higher precision for protein detection. The present method also offers simple and inexpensive protein detection devices by removing labeling process and optical components. We design and fabricate the nanomechanical protein detector using an electrothermal actuator with a nano-gap. In the experimental study, we measure the stiffness changing points and their coordinate shift from the devices with and without target proteins. The fabricated device detects the protein presence and the protein size of 14.0$\pm$7.4nm based on the coordinate shift of stiffness changing points. We experimentally verify the protein presence and size detection capability of the nanomechanical protein detector for applications to high-precision biomolecule detection.

A Study on the Current Nutritin Labeling Practices for the Processed Foods Retailed in the Supermarket in Korea (시판 포장가공 식품의 영양표시 현황에 관한 조사연구)

  • Our current food hygiene law mandates nutrition label (NL) for the special nutrition foods, health support foods, instant foods, and foods with certain nutrient emphasized note, only. Currently more processed foods are bearing nutrition labels though the format is quite inconsistant. This study examined the status on current nutrition labeling practices for the processed foods that are retailed in the supermarket. The obtained information was assessed in the aspects of numerical data presentation on nutrients content, descriptive terms, health claim, and the format. The results are summarized as follows. 1) Foods with NL are limited to the food category specified by current hygiene law while voluntary nutition labeling is few. 2) Descriptive terms such as free, low, and sufficient are not substantiated with quantitative data. The efficacy of microelements which has not been clalified yet are overemphasized but major nutrients are ignored. 3) The regulations for the descriptive terms are set on the base of the nutrient content per 100g or 100ml under current nutrition labeling act. It would mislead consumers thus the definition for these descriptor be better set on the unit of the amount of food customary eaten at one time. For this the standard serving size should be set officially. 4) Quantitative nutrition information given on food products is difficult to compare because of the lack in formality. The title of NL, load and kinds of nutritents, order of nutrients listed, the unit of expression, RDA comparision, and reference RDA are inconsistant among the foods similar in dietary property. Uniform format is needed to give NL the credibility and usefulness. Proividing nutrition information to the consumers with NL is a worldwide practice though its efficacy has been controversial. Under newly legistered health promotion law in Korean nutrition education is esxpected to take part in to improve national nutrition condition and NL would education is expected to take part in to improve national nutrition condition and NL would be a potent tool for public nutritions education. It appears to be the time to mandate NL to all the processed foods in the market. The result of present study would initiate further consumer experiments related to NL. Various interest groups such as food and nutrition professions, public health organizations, government regulatory agencies, food producers and marketers, and consumer groups need to particepate and communicate for the legislation of NL and the development of NL format.

An Exploratory Research for Development of Korean Protein Bar -Analysis on Labeling of Commercial Protein Bars in Korea and USA- (한국형 단백질 바 개발을 위한 탐색적 연구 -한국과 미국의 시판 단백질 바의 라벨 분석을 중심으로-)

  • The purpose of this study was to analyze the labeling of commercial protein bars in Korea and USA to develop Korean protein bars. Furthermore, we compared protein contents of products with daily protein intake, DRI, and AMDR. The protein bars were sampled in off- and on-line markets of both countries, with 17 in Korea and 113 in the US. As the results, since US products have bigger than one serving size than Korean ones, the intake of overall nutrients is higher, especially protein and sodium. Protein contents (per 100 g) of products in US were higher than those of Korea. The highest protein was soy protein isolate (SPI) in Korea and whey protein isolate (WPI) in the US. This is thought to be influenced by the preference and familiarity of food according to the country. In conclusion, since there are difference in eating habits, intake and preference of the protein source, it is necessary to develop suitable protein bars for Koreans. Therefore, this research provides the baseline of protein bars for consumers to choose products.

Efficient Processing of Transitive Closure Queries in Ontology using Graph Labeling (온톨로지에서의 그래프 레이블링을 이용한 효율적인 트랜지티브 클로저 질의 처리)

  • Ontology is a methodology on describing specific concepts and their relationships, and it is being considered important more and more as semantic web and variety of knowledge management systems are being highlighted. Ontology uses the relationships among concerts to represent some concrete semantics of specific concept. When we want to get some useful information from ontology, we severely have to process the transitive relationships because most of relationships among concepts represent transitivity. Technically, it causes recursive calls to process such transitive closure queries with heavy costs. This paper describes the efficient technique for processing transitive closure queries in ontology. To the purpose of it, we examine some approaches of current systems for transitive closure queries, and propose a technique by graph labeling scheme. Basically, we assume large size of ontology, and then we show that our approach gives relative efficiency in processing of transitive closure, queries.

Consumer Risk Perceptions and Milk Consumption associated with Food-Related Biotechnology: Exploring Gender Differences (생명공학기술 사용에 대한 소비자의 위험인지가 우유소비에 미치는 영향분석: 여성과 남성의 위험인지 및 소비행위 비교분석)

  • The purposes of this study were to determine what factors influence risk perceptions of females and males for milk produced using food-related biotechnology, to test whether risk perceptions or other factors influence self-protection actions and to estimate milk demand response in light of self-protection actions and other economic and demographic factors. The expected utility model was applied to explain the way consumers would take self-protection actions regarding risk perceptions and to drive milk demand. Telephone interviews were conducted and the data were collected from households(females=1,029, males=437) nationwide in the U.S. And the data were analyzed by Heckman two-step method using the software package LIMDEP. Risk perceptions were found to be influenced not by demographic factors but by outrage factors as well as attitudinal factors in both females and males, although some factors were different. In addition, risk perceptions and labeling availability were found to significantly influence self-protection actions in both groups. Furthermore, as an important concern in this study, self-protection action was found to significantly influence milk demand in only male group, implying a consistent behavior of males. Also milk price and household size were found to significantly influence milk demand in both groups. In fact, the results did demonstrate that labeling availability significantly influenced self-protection actions. That is, in markets where labeled laternatives were present, concerned consumers were more likely to self protect by substituting to these products. A policy implication of this result is that labeling food products produced using biotechnology enhances consumer choice. Hence, consumer could express a more accurate demand response and reduce the perceived food safety risk. Furthermore, education for females might be necessary to have a consistent behavior because self-protection action did not significantly influence female's milk demand, though they have greater risk perceptions than males have.

  • Social and environmental changes, such as the rise of single-person households and advances in the food industry, have led to the replacement of home-cooked meals with home meal replacements products (HMRs). This study compared the nutrient content of a total of 1,680 HMRs and 158 restaurant foods by collecting data on the nutrient content of comparable food types from the Food composition data for restaurant foods published by the Ministry of Food and Drug Safety (MFDS) and evaluating the calorie and nutrient content of HMRs based on nutrition labeling through market research from May 2022 to May 2024, focusing on rice, porridge, noodles, soup/stew. The nutritional content and price of the HMRs varied widely, even for similar foods, depending on the detailed food type. Therefore, it is necessary to make an appropriate choice based on nutrition labeling according to the purpose of consumption. The HMRs had a lower calorie and nutrient content due to the smaller serving size when compared with restaurant foods. However, when the same weights were compared, the sugar and sodium content in the rice and soup/stew were higher in the HMRs than in the restaurant foods. In addition, due to the wide variety of HMRs available, many HMRs that can replace restaurant foods are being produced. However, even for the same type of food, the serving sizes of the HMRs and the restaurant foods were widely different, suggesting the need for a study to examine the appropriateness of the serving sizes of HMRs and restaurant foods.

We prove that the Cartesian product of strongly odd harmonious trees is strongly odd harmonious. We find some new disconnected odd harmonious graphs.

  • Recently, the speed and size of data accumulation are increasing due to the development of networks. There are many difficulties in classifying these data. One of the difficulties is the difficulty of labeling. Labeling is usually done by people, but it is very difficult for everyone to understand the data in the same way and it is very difficult to label them on the same basis. In order to solve this problem, we implemented GAN to generate new image based on input image and to learn input data indirectly by using it for learning. This suggests that the accuracy of classification can be increased by increasing the number of learning data.

Identification of eleven species of the Pleuronectidae family using DNA-based techniques

  • Flatfish are one of the largest families in the order Pleuronectiformes and are economically important edible marine fish species. However, they have similar morphological characteristics leading to challenges in classifying correctly, which may result in mislabeling and illegal sales, such as fraudulent labeling of processed food. Therefore, accurate identification is important to ensure the quality and safety of domestic markets in Korea. Species-specific primers were prepared from the mainly consumed eleven species of the order Pleuronectiformes. To rapidly identify the 11 flatfish species, a highly efficient, rapid, multiplex polymerase chain reaction (PCR) with species-specific primers was developed. Species-specific primer sets were designed for the mitochondrial DNA cytochrome c oxidase subunit I gene. Species-specific multiplex PCR (MSS-PCR) either specifically amplified a PCR product of a unique size or failed. This MSS-PCR analysis is easy to perform and yields reliable results in less time than the previous Sanger sequencing methods. This technique could be a powerful tool for the identification of the 11 species b the family Pleuronectidae and can contribute to the prevention of falsified labeling and protection of consumer rights.
