누에 분말을 이용한 젤리의 이화학적 특성 및 관능 평가 (The Physicochemical Properties and Sensory Evaluation of Jelly with Silkworm Powder)

  • This study was carried out to investigate the physicochemical quality characteristics of Nouaejelly(jelly using silkworm powder) sericultural products which were manufactured using various levels(0.5, 1, 1.5 and 2%) of silkworm powder. The effects of an additional amount of silkworm powder to Nouaejelly were determined by examining, the physicochemical, sensory, and textural properties. The moisture and crude protein content of the Nouaejelly were higher than that of the control(p<0.05). However, the crude fat content of the Nouaejelly was lower than that of the control(p<0.05). The mineral content increased with increasing addition of silkworm powder. The color of the Nouaejelly became darker with increasing levels of silkworm powder. For the texture measurements, the hardness, gumminess and chewiness of the Nouaejelly decreased with increasing levels of silkworm powder, but those of the jelly were decreased significantly by adding 0.5% silkworm powder(p<0.05). In terms of color, the texture and overall preference of Nouaejelly was highest in the jelly containing 1 % silkworm powder(p<0.05). Overall, the optimal amount of silkworm powder added in the manufacture of Nouaejelly was 1% of the total weight.

Effects of Silkworm Extract on Disaccharidase Activities of Small Intestine and Blood Glucose-Lowering in C57BL/6J Mice

  • This study examined the anti-diabetic effect of a silkworm extract in C57BL/6J mice, an ob/㏈ model, fed a high fat diet for 8 weeks. The body weight was not significantly different with the silkworm-extract supplement, nor did food intake and body weight gains also did not differ significantly among the high-fat diet groups. However, the water intake by the silkworm-extract supplemented groups increased significantly compared with that by the distilled-water supplement group, nonetheless, the FER did not differ significantly. For all groups, the blood glucose increased the most after 30 minutes and yet returned to a fasting level within 90 minutes. The fasting time and resulting glucose tolerance for the silkworm-extract supplemented groups were significantly decreased compared to that for the high fat diet with distilled water supplement group, while the level of blood glucose in silkworm-extract supplemented groups was significantly decreased compared with than in the diabetic control group. The HbA1c and insulin levels were no different among the groups. The sucrase and lactase activities in the proximal small intestine were significantly decreased in the silkworm-extract supplement groups compared to that in the diabetic control group. There was no significant difference in the glycogen contents in the liver and muscle among the groups. In conclusion, it was found that the silkworm-extract supplement repressed the disaccharidase activity in the small intestines mucosa of the C57BL/6J mice.

Antioxidant Effects of the Mixture of Mulberry Leaves and Silkworm Powder on the Plasma and Liver in Streptozotocin-Induced Diabetic Rats

  • This study was carried out to examine the antioxidant effects of a mixture of mulberry leaves and silkworm powder in plasma and liver of streptozotocin-induced diabetic rats. Sprague-Dawley male rats weighing 100$\pm$10 g were used and their diets were supplemented with $0.4\%$ (4 g/kg) of the mixtures. Experimental groups were diabetic rats without supplements (DM group) or with a combination of the supplements: $100\%$ mulberry leaves (M group), $25\%$ silkworm powder mixed with mulberry leaves (25SM group), $50\%$ silkworm powder mixed with mulberry leaves (50SM group), $75\%$ silkworm powder mixed with mulberry leaves (75SM group) or $100\%$ silkworm powder (100S group). The rats were fed experimental diets and water ad libitum. All animals were injected with streptozotocin at the $3^{rd}$ week for inducing diabetes and were sacrificed on $9^{th}$ day thereafter. Hepatic xanthine oxidase (XOD) activity significantly decreased in the mixture supplemented groups compared to the DM group. Hepatic superoxide dismutase (SOD) activity was not significantly different among any of the experimental groups, but glutathione peroxidase (GSH-px) activity increased in the mixture supplemented groups compared to the DM group. In particular, it was the highest in the 50SM group. The hepatic TBARS values were lower in all the mixture supplemented groups than in the DM group, and it was as lowest when ratio of mulberry leaves to silkworm powder was highest. Hepatic lipofuscin contents were similar with the TBARS value. In conclusion, the mixtures containing silkworm powder reduced oxidative damage by strengtbening the antioxidative system and suppressing oxidative stress in the STZ-induced diabetic rat. The 1:1 blend of silkworm powder and mulberry leaves was the most effective combination for antioxidant activity.

누에(Bombyx mori) 번데기 및 한약재의 In Vitro 에스트로젠 활성 (In Vitro Estrogenic Activity of Silkworm (Bombyx mon) Pupa and Herbs)

  • In this study we report on the estrogen activity of silkworm pupa and herb extracts in vitro. The estrogenic activity of these resources was investigated by competition binding assays with estrogen receptor $\alpha(ER{\alpha})\;or\;ER{\beta}$, and viability of MCF-7 cells, a human breast cancer cell line. Saturation ligand-binding analysis of $ER{\alpha}\;and\;ER{\beta}$ revealed that all plant extracts competed with estrogen ligand for binding to both ER subtypes with a similar preference and degree and competed stronger with ligand for binding to $ER{\beta}\;than\;to\;ER{\alpha}$. The highest $ER{\alpha}-binding$ sample was silkworm pupa aqueous extract The highest $ER{\beta}-binding$ sample was silkworm pupa oil. These samples were further tested for bioactivity based on their ability to regulate cell growth rate in ER(+) breast cancer cell line, MCF-7 cells. Our studies showed that silkworm pupa, soritae, sesame, yam, pueraria, malt, ginseng, Polygonum multiflorum, and Curcuma longa significantly stimulated the growth of MCF-7 cells (P<0.05). In summary, these results suggested that silkworm pupa and herbs might be useful as potential phytoestrogens.

오디, 뽕잎 및 누에의 혼합비율에 따른 Streptozotocin 유발 당뇨쥐에서의 항산화 효과 및 지질대사개선 효과 (Antioxidant Effects and Improvement of Lipid Metabolism of Mulberry fruit, Mulberry Leaves and Silkworm Powder with Different Mixing Ratios in Streptozotocin-Induced Diabetic Rats)

  • This study was conducted to investigate the effects of mulberry fruit, mulberry leaves and silkworm powder with different mixing ratios on hepatic antioxidative system and lipid metabolism in streptozotocin-induced diabetic rats. Sprague-Dawley male rats weighing $100{\pm}10g$ were induced diabetic by 50 mg/kg bw streptozotocin and randomly assigned to following experimental groups; normal diet group (DM), 0.3% and 0.6% mulberry fruit diet groups (F and 2F), 0.3% mulberry leaves diet group (M), 0.3% silkworm powder diet group (S), 0.15% mulberry fruit+0.15% mulberry leaves diet group (FM), 0.15% mulberry fruit+0.15% silkworm powder diet group (FS), 0.1 % mulberry fruit+0.1 % mulberry leaves+0.1% silkworm powder diet group (FMS). The experimental diets were fed for 4 weeks. Hepatic SOD activity was not changed significantly by any of single or combined supplementations of mulberry fruit, leaves and silkworm powder but GSH-px and catalase activities were increased by the groups supplemented with two or three of the test ingredients (FM, FS, FMS) as compared with the DM group. Hepatic TBARS value was not reduced significantly by any of the supplementations but lipofuscin contents were significantly reduced in the FM, FS and FMS groups as compared with the DM group. Hepatic mitochondria and microsomal carbonyl values were reduced by the single and combined supplementations of the test ingredients. Hepatic HMG-CoA reductase activities were increased in the all supplementation groups as compared with the DM group. Hepatic total lipid and triglyceride contents were increased but cholesterol contents reduced in the supplemented groups. The effects on the enzyme activities, peroxide or its products and lipid contents were most remarkable in the FMS group. In conclusion, mulberry fruit, mulberry leaves and silkworm powder have the favorable effects on antioxidative system and lipid metabolism in the diabetic liver and the mulberry fruit, leaves and silkworm powder with equal ratio exert the synergistic effect expectedly to prevent diabetic complications.

누에 분말 첨가빵이 Rat의 콜레스테롤 및 중성지질에 미치는 영향 (Effect of Bread with Added Silkworm Powder and Cholesterol on Lipid Metabolism of Rat)

  • The principal objective of this study was to assess the effects of bread supplemented with silkworm powder and cholesterol on the lipid metabolism in rats. When the rats were fed on bread supplemented with silkworm powder and cholesterol, their net weight tended to decrease as compared with the controls. Although the rats' food intake was increased, it did not increase significantly, but the feed efficiency ratio was substantially reduced. The levels of total and LDL-cholesterols were reduced, but the levels of HDL-cholesterol were increased. The HDL-cholesterol to total cholesterol ratio and level of triglyceride level were increased substantially. The atherogenic index was reduced when rats were fed on bread supplemented with silkworm powder, and thus we concluded that the bread caused an improvement in symptoms associated with high-cholesterol.

번데기 단백질(蛋白質)의 아미노산조성과 영양가(營養價)에 관한 연구 (Amino Acid Composition and Nutritional Value of Silkworm Larvae Protein)

  • 제사공장(製絲工場)에서 부산물(副産物)로 나오는 번데기 단백질(蛋白質) 영양가(營養價)를 측정(測定)하기 위하여 이의 아미노산조성을 분석하였고 casein군(群)($D_1$), 대두단백질군(大豆蛋白質群)($D_2$), 대두단백질(大豆蛋白質)+20%번데기단백질군(蛋白質群)($D_3$), 대두단백질(大豆蛋白質)+40%번데기단백질군(蛋白質群)($D_4$), 번데기단백질군(蛋白質群)($D_5$)등(等) 5군(群)의 식이(食餌)로 나누어 동물실험(動物實驗)을 통(通)해 성장률(成長率), protein efficiency ratio, 장기중량(臟器重量), 그리고 hematology 및 total serum protein과 albumin의 함량을 측정(測定)하여 비교(比較)하였다. 번데기단백질(蛋白質)의 아미노산조성은 FAO의 provisional scoring pattern과 비교(比較)하였을 때 필수아미노산 조성이 우수하였으며 특히 lysine과 methionine의 함량이 높은 것은 곡류(穀類)와 두류(豆類) 단백질(蛋白質)에 부족(不足)한 필수아미노산을 보충(補充)하는데 좋은 단백질원(蛋白質源)으로 이용(利用)될 수 있다. 번데기단백질군(蛋白質群)의 체중증가량(體重增加量)과 단백효율(蛋白效率)은 대두단백질(大豆蛋白質)보다 우수하였으며 대두단백질(大豆蛋白質)에 첨가하는 양(量)의 증가(增加)에 따라 성장율과 단백효율(蛋白效率)이 증가(增加)하는 경향을 나타내었다. liver와 spleen의 총 중량은 대두단백질군(大豆蛋白質群)에 비(比)해 번데기단백질(蛋白質) 첨가군(群)에 있어서 더욱 높았으며 RBC, WBC, Hct과 Hb함량(含量)은 5식이군(食餌群) 모두 정상치(定常値)에 속(屬)하였다. Total serum protein과 albumin의 함량(含量)은 번데기단백질(蛋白質)의 첨가로 인해 현저히 증가(增加)하는 결과를 보여주고 있다. 이상의 결과로서 번데기단백질(蛋白質)은 대두단백질(大豆蛋白質)의 질(質)을 향상(向上)시킬 수 있는 단백질원(蛋白質源)으로 사료(思料)된다.

Streptozotocin 유발 당뇨모델을 이용한 건조누에 동충하초의 항당뇨 효과 (Anti-diabetic Effect of Dried-silkworm Dongchunghacho in Streptozotocin-induced Diabetic Rats)

  • The anti-diabetic effect of dried-silkworm Dongchunghacho water extracts was investigated in streptozotocin (STZ)-induced diabetic rats. Seven-week-old SD rats were randomly assigned to six groups: normal control (NC) group, diabetic control (DC) group, water extracts of Paecilomyces japonica grown on a dried-silkworm (PJ-DS, 50 mg/kg) group, PJ-DS (250 mg/kg) group, water extracts of Cordyceps militaris grown on a dried-silkworm (CM-DS, 250 mg/kg) group, and water extracts of dried-silkworm (DS, 250 mg/kg) group. These groups were orally provided with sample dissolved in water respectively for four weeks after an injection of STZ (60 mg/kg, ip) followed by identification of diabetic control (DC) group. After four weeks, body weight of all diabetic groups was significantly lower than that of the normal control (NC) group, but among diabetic groups there were no significant differences. Blood glucose levels of the PJ-DS (50 mg/kg), PJ-DS (250 mg/kg), CM-DS (250 mg/kg) and DS (250 mg/kg) groups were reduced compared to the DC group by 3.0 percent, 18.5 percent, 6.9 percent and 13.1 percent, respectively. Concentration of total cholesterol and triglyceride in blood plasma were to some degree decreased in PJ-DS (250 mg/kg) and DS (250 mg/kg) groups compared to the DC group. According to these results dried-silkworm Dongchunghacho water extracts (PJ-DS) boost protection against STZ-induced toxicity.

식용곤충(食用昆蟲)으로서 누에 성장에 따른 아미노산함량(含量) 변화(變化)에 관한 연구(硏究) (Studies on the amino acid change in silkworm and silkworm-chrysalis as an edible insect)

  • 식용곤충(食用昆蟲)으로서 누에와 번데기를 분석(分析)하여 단백질(蛋白質)과 amino acid 함량(含量)을 알았고 이를 이용(利用)할 수 있는 가능성(可能性)을 알아보았다. (1) 누에와 번데기에 대(對)하여 단백질(蛋白質)을 정량(定量)한 결과(結果), $54.9{\sim}56%$ 정도의 단백질(蛋白質)이 함유(含有)되어 있음을 알았다. (2) 유리아미노산의 정량(定量)과 조성(組成)을 조사하였더니 tryptophan 을 제외(除外)한 대부분(大部分)의 아미노산이 함유되어 있으며 성장하여감에 따라 함량(含量)도 크게 변(變)하고 있음을 알게 되었다. (3) 탄수화물(炭水化物)로서 sucrose, glucose, fructose가 함유(含有)되어 있음을 확인하였다. (4) milk와의 반응(反應)을 $40^{\circ}C$ 항온조에서 방치하면서 pH와 산도변화(酸度變化)를 보았는데, 약 8시간(時間)동안 $40^{\circ}C$ 항온조에 놓아두는 경우 산도(酸度)는 약 8시간(時間)동안에는 별 변동이 없고, 그 후(後)에 변화(變化)가 심했다.

고탄수화물 식이 섭취 마우스에서 상엽 및 누에 추출물의 혈당강하 효과 (Blood Glucose Lowering Effects of Mulberry Leaves and Silkworm Extracts on Mice Fed with High-Carbohydrate Diet)

  • Mulberry leaves(Mori folium) and silkworm(Bombyx mori) are potnet inhibiters of intestinal $\alpha$-glycosidase, and inhibit the digestion of starch and sucrose in the small intestine. They are able to prevent postprandial hyperglycemia and decrease blood insulin levels. In this study , a high-carbohydrate diet(CHO ; 67.5%, protein ; 20.8%, fat : 11.7%) was received by the control group. In contrast, the experimental groups received a high-carbohydrate diet with extracts of mulberry leaves and silkwork(50mg.100g diet), and acarbose(6.7mg/100g diet). after a 10 week study period , the experimental groups had lower blood glucose and triglyceride levels. The experimental groups tended to have lwer Hb Alc levels. Also, blood insulin levels were lower than the control groups in accordance with blood glucose levels. The activities of intestinal $\alpha$-glucosidase in the middle and distal parts of small intestine were induced by the extracts of mulberry leaves and silkworm in the experimental groups. However, the activities of liver lysosomal glucosidase and the contents of glycogen in the liver were not affected by the mulberry leave and silkworm extracts nor by acarbose. Mulberry leaves and silkworm were able to prevent sudden postprandial peaks in blood glucose as a result of $\alpha$-glycosidase, inhibition, there by decreasing unnecessary insulin secretion.
