흑임자 분말을 첨가한 쿠키의 품질 및 항산화 활성 (Quality and Antioxidant Properties of Cookies Supplemented with Black Sesame Powder)

  • 흑임자 분말의 대체량을 0~8%로 달리하여 쿠키를 제조한 후 물리 화학적 품질, 항산화 활성 및 소비자 기호도를 조사하였다. 쿠키 반죽의 pH는 흑임자 분말의 첨가량이 증가함에 따라 유의적으로 증가하고(P<0.05), 수분 함량은 유의적으로 감소하는 경향을 보였으나(P<0.05), 밀도는 유의적인 차이 없이 감소하는 경향을 보였다(P>0.05). 쿠키의 퍼짐성과 손실률은 흑임자 분말의 첨가량이 증가함에 따라 유의적으로 증가하였으며, 경도, 명도($L^*$), 적색도($a^*$) 및 황색도($b^*$)는 유의적으로 감소하는 경향을 보였다(P<0.05). 항산화 활성을 나타내는 DPPH에 대한 전자공여능 및 ABTS에 대한 라디칼 소거능은 유의적인 차이를 나타내며 증가하였고(P<0.05), 두 지표 간의 상관관계가 매우 높은 것으로 나타났다. 소비자 기호도 검사 결과 색에 대한 기호도는 흑임자 분말의 거친 구조가 주로 반영되어 흑임자 분말의 첨가량이 증가함에 따라 감소하는 경향을 나타낸 반면 부드러운 정도에 대한 기호도는 반대의 경향이 나타났다(P<0.05). 흑임자 분말의 건강 기능성 효과와 관능적 품질 특성을 종합적으로 고려할 때 쿠키 제조 시 밀가루에 대한 흑임자 분말의 최적 대체량은 4%가 적합한 것으로 판단된다.

경상도 별미김치의 표준화 연구 (Standardizations of Traditional Special Kimchi in Kyungsang Province)

  • This study was conducted to standardize ingredient ratio and preparation method of mafor traditional special kimchies in kyungsang province, korea. There were about 35 varieties of special kimchi in Kyungsang province. Six varieties of them such as burdock kimchi, wild leek kimchi, green thread onion kimchi, perilla leaf kimchi, Godulbaegi(Korean wild lettuce) kimchi, and red pepper leaf kimchi were selected, because they tasted good and the physiological functions of their main ingredients were excellent. The ingredient ratios of the selected special kimchi were standardized through surveying hereditary preparation of some families in kyungsang province and using the literatures including cooking books. The standardized ingredient ratio of the burdock kimchi was 15.1 pickled anchovy juice, 6.8 red pepper powder, 5.7 garlic, 2.2 ginger, 18.0 rice flour paste, 13.5 green thread onion, and 1.2 sesame seed in proportion to 100 of burdock. The standardized preparation step of the selected special kimchies was similar except some preprocessing methods of main ingredients. The diagonally cut-up burdock ws usually parboiled or soaked in salted water, then it was mixed with the other ingredients. Wild leek and green thread onion were usually pickled with salt or pickled anchovy juice. Sometimes the green thread onion pickled was dried in the sun. General preprocessing of perilla leaf, Korean wild lettuce, and red pepper leaf was soaking them in salted water for about 5-10 days. Sometimes red pepper leaf was heated with steam and dried in the sun, then it was mixed with the other ingredients.

1400-1800년대 문헌연구를 통한 전통 면식(麵食)의 재료와 조리법 및 특성 고찰 (A Literature Review Regarding a Myeon-related Ingredients, Recipes and Characteristics in Korean Books published from the 1400's to the 1800's)

  • The study aims to perform a literature review regarding Korean traditional myeon (noodles)-related ingredients and recipes. A total of 45 myeon recipe data out of 9 books, documented in Korea from the 1400's to the 1800's was analyzed by ingredients and contents. As a result, it turned out that Korean traditional noodles were made with various ingredients including petals, vegetables and meat in addition to grain flour, and that they existed in various types in addition to long and thin noodles. As for main noodle-making ingredients, glutinous millet, buckwheat, mug beans, elms, beans, wheat and millets were used in diverse ways, and as for noodles soups, fermented soy bean sauces (Korean Jang), broth, omija and seeds (sesame, perilla) were used. In particular, noodles, soups and garnish materials were selectively combined and harmonized to advance noodle foods. In conclusion, traditional Koran noodles were precious foods considered to be healthy foods aimed to pray for longevity, and such diversified food ingredients as noodles, soup and garnish have been harmonized to advance recipes. Healthfulness and characteristics of traditional noodles are expected to contribute to exploring noodle-based Korean food culture contents and developing food industries.

단백질 추출 pH가 참깨 농축단백질의 성분에 미치는 영향 (The Effect of Protein Extraction pH on the Components of Sesame Protein Concentrates)

  • 본 연구는 참깨 단백질을 새로운 식품 단백질자원으로 이용하기 위한 목적으로 여러 pH조건에 따라 제조된 참깨 농축단백질의 성분을 비교.검토하였다. pH 2.0, 7.0, 9.0, 11.0에서 각각 추출된 농축단백질의 단백질 함량은 60.57, 67.72, 79.50, 83.44%로 추출 pH가 증가함에 따라 높은 단백정 함량을 나타내었다. 단백질의 추출은 phytate 항량을 상당량 제거시켰으며, 특히 phytate의 용해도가 낮은 pH 11 .0에서 추출된 농축단백질의 phytate 함량은 0.22%로 94.8%의 가장 높은 제거율을 나타내었다. 그러나 pH 2.0에서 추출한 농축단백질의 phytate 함량은 탈지 참깨분말과 비슷한 수준을 나타내었다. 모든 시료에서 가장 않은 양이 검출된 무기질은 칼슘이었다. 농축단백질의 무기질 함양을 보면 Ca, Mg, Zn, Fe의 함량은 pH 2.0에서 추출한 농축단백질에서 가장 높은 반면 Cu는 pH 11.0에서 추출한 농축 단백질에 가장 많이 함유되어 있었다. Na 함량은 모든 농축단백질에서 비슷한 수준을 보였고, Cd과 Pb은 검출되지 않았다. 참깨 농축단백질의 색도는 탈지 참깨 분말에 비해 약간 짙은 경향을 보였으며, 중성 (pH 7.0) 에서 추출한 농축단백질의 색도가 가장 밝게 나타났으며, 추출 pH가 낮은 단백질 일수록 밝은 색을 나타내었다.

식품에서 메밀 성분의 검출을 위한 PCR 방법 (A PCR Method for Rapid Detection of Buckwheat Ingredients in Food)

  • 메밀은 과민한 사람에게 식품알레르기를 일으킬 수 있다. 메밀 보통종의 BW10KD 단백질은 알레르기 유발단백질중의 하나로 알려져 있다. 가공식품에 함유된 메밀성분을 검출하기 위하여 메밀의 알레르기 유발단백질인 BW10KD의 유전자에 특이적인 primer를 사용하는 Polymerase Chain Reaction(PCR) 방법을 개발하였다. BW10KD유전자의 cDNA 염기서열을 이용한 5종의 primer sets로 7종의 다른 곡류 및 두류(보리, 밀, 조, 수수, 대두, 팥, 검은콩)에 대해 PCR을 수행한 결과, 사용한 primer set 모두 메밀에만 특이적인 반응을 나타냈다. 메밀 특이적 PCR방법을 이용하여 12종의 가공식품(메밀가루, 메밀국수, 메밀묵, 밀국수, 라면, 검은깨죽, 선식, 과자, 미숫가루 및 3종류의 시리얼)을 조사한 결과 메밀가루, 메밀묵 그리고 메밀국수가 메밀 성분을 함유하고 있는 것으로 나타났다. 메밀특이적 PCR 방법은 메밀 보통종의 DNA를 1 ng까지 검출할 수 있었다. 본 PCR 방법은 식품 중에 함유된 메밀 성분을 신속 정확하게 검출하는데 활용할 수 있을 것으로 기대된다.

다공성 전분의 향포접 효율과 이를 활용한 생면의 관능적 특성 (Flavor Entrapment Effect of Porous Starch and Sensory Characteristic of Boiled Instant Noodles Using Flavor-entrapped Porous Starch)

  • 다공성 전분에 향을 포접 시켜 가열에 의해서도 향이 빠져나오지 않지만 입안에서 기계적 작용에 의해 향이 배출되면서 현재 생면에서 나는 밀가루 냄새를 은폐시켜 줄 수 있는 생면을 제조하기 위하여 다공성 전분을 제조하였다. 분무건조기를 이용하여 제조된 다공성 전분의 평균 수율은 IT $170^{\circ}C$, ET $90^{\circ}C$, FR 50 mL/min의 조건에서 82%로 가장 높았으며, IT $180^{\circ}C$, ET $100^{\circ}C$, FR 70 mL/min에서 45.2로 가장 낮았다. 제조된 다공성 전분에 깻잎향을 추출하여 포접시킨 후 효율을 SPME-GC를 이용하여 깻잎향 중 가장 비율이 높은 perilla ketone의 양을 비교하였을 때 IT $200^{\circ}C$, ET $100^{\circ}C$, FR 50 mL/min에서 제조된 다공성 전분이 포접 효율이 68%로 나타났다. 관능평가를 실시한 결과로는 IT $200^{\circ}C$, ET $100^{\circ}C$, FR 50 mL/min으로 제조된 다공성 전분을 첨가시킨 우동면의 깻잎향과 기호도가 통계적으로 유의차를 내며 높게 나타났고 밀가루 맛은 가장 낮게 나타났다. 그러므로 가장 깻잎향 포접효율이 높으며 소비자 기호도도 높일 수 있는 다공성 전분은 IT $200^{\circ}C$, ET $100^{\circ}C$, FD 50 mL/min의 조건으로 제조된 것이다.

조선시대 왕실의 소선(素膳) 이용에 관한 연구: 『조선왕조실록』, 『춘관통고』를 이용하여 (A Study on the Use of Soseon in Joseon Dynasty Based on Literature Review: Based on 『The Annals of Joseon Dynasty』, 『Chungwantonggo』)

  • 본 연구는 조선왕실의 기록 문헌을 이용하여 소선 사례의 빈도, 식재료, 상차림 및 조리법 등에 관하여 알아보고자 하였다. 『조선왕조실록』 데이터베이스를 활용하여 조사한 소선 사례는 186개가 나타났다. 의례별 사례 빈도는 흉례가 전체 의례의 61.82%로 가장 많았고, 길례(21.51%), 빈례(11.29%), 가례(5.38%)순으로 나타났다. 소선 사례 횟수는 조선 전기(68.82%)가 조선 후기(31.18%)에 비해 높게 나타났다. 소선 식재료 목록을 살펴본 결과, 곡류는 밀가루, 메밀가루, 점이 있고, 두류는 황대두, 포태, 전시가 있으며, 해조류는 다시마, 김, 미역 등이 있었다. 버섯류는 표고, 석이가 있고 양념류로는 겨자, 참기름, 실임자 등이 있었다. 길례와 흉례의 소선 상차림의 주요 음식은 주식이 밥, 면, 부식류는 탕과 채, 적, 개장, 후식류는 유밀과와 산자, 다식, 정과, 떡, 과일로 나타났다. 주요 음식의 경우 밀가루, 두부, 해조류, 버섯, 잣, 참기름, 꿀 등의 식재료를 이용하여 조리되었다. 특히 두부, 밀가루, 해조류 등은 불교적 내용과 관련하여 문헌에서 언급되었다. 본 연구 결과는 소선이 조선시대로 전승되면서 불교의 영향을 받은 채식 문화의 형태란 것을 보여주며, 조선시대 왕실의례의 불교음식문화 연구를 위한 기초자료로 활용될 수 있을 것으로 기대된다.

홍삼과 녹차 첨가 약과에 대한 소비자의 인지도 및 기호도 - 한.중.일 신세대 여성 소비자를 대상으로 - (The Perception and Preference of Red-ginseng and Green Tea Yackwa Among Korean.Chinese.Japanese Female Consumer)

  • A type of Korean traditional cookies, yackwa is composed of ingredients which serve as good medicine to people. Further, it has a priceless value and possibility to be a healthy functional dessert. For this study, we developed variable yackwa, containing red-ginseng powder and green tea powder, in order to target the foreign market as well as to investigate the perception and preference of yackwa. The test sample for the control group, yackwa is made of flour, sugar, baking powder, sesame oil and alcohol. For the experimental group, yackwa contains red-ginseng and green tea powder (3, 6, 9, 12%). The investigation period was May 14th, 2013 and the total number of participants was 100. The investigation applied a consumer survey method by filling out a questionnaire while tasting 9 kinds of yackwa samples. They were used for frequency, one-way ANOVA and Pearson's correlation analysis with SPSS 19.0. In the yackwa perception survey, the result indicated that 52.0% of the customers replied 'Do not know well' and 'Do not know at all' which conveys that the perception of yackwa is very low. In contrast, the perception of the red-ginseng and green tea which are functional ingredients is high and the customers tend to prefer the taste and flavor of green tea than red-ginseng. And they prefer the yackwa containing 3% of red-ginseng and green tea powder compared to other ratio contents in the overall preference, color, taste, flavor, odor, degree of greasiness and texture. When people who have a higher perception of yackwa, they tended to prefer the color of red-ginseng yackwa and dislike the color of green tea yackwa. And the more people prefer the taste of green tea, the higher in overall preference, color, taste, flavor, and odor preference.

우리나라 국민의 비타민과 무기질 급원식품(I) -칼슘과 철분의 급원식품- (Food sources of vitamin and mineral for Korean people(I) -calcium and iron rich foods-)

  • The purpose of this study was to search the calcium and iron rich foods in Korean people. The food sources presented in the current home economics textbooks of middle and high school were investigated. And 40 kinds of calcium and iron rich foods were selected by the quantity in 100g edible portion. one serving size and according to 1997 food supply data. Also 3 major food groups of calcium and iron supply in Korean were identified, and 10 rich foods for each food groups were selected. The results were summarized as follows. 1. The food sources of calcium 1) The food sources of calcium presented in the home economics textbooks of middle and high school are milk and dairy products. small fishes such as anchovy icefish and dried strip and green vegetables etc. 2) The calcium rich foods by 100g edible portion were in order of skim milk powder river snail sesame sea mustard. whole milk powder. snapping turtle loach sea tangle(dried) opossum shrimp and sea lettuce(dried). And the calcium rich foods by the calcium content in one serving were in order of river snail snapping turtle opossum shrimp loach spiny lobster skate skim milk powder small alaska pollack freshwater crab condensed milk whole milk powder skate ray and milk. 3) The 3 major calcium supply food groups in Korean were vegetables fish and shellfishes and milk and dairy products. 4) The calcium supply foods according to the quantity of food supply in 1997 was in order of sea mustard, milk anchovy chinese cabbage soybean skin milk powder laver shrimp welsh onion and maize. The vegetables were the important sources of calcium in Korean. 2. The food sources of iron 1) The food sources of iron which are commonly presented in the textbooks of middle and high school were meat liver egg(egg yolk) and green vegetables etc 2) The iron rich foods on the basis of the iron content in 100g edible portion were in order of surf clam marsh clam laver(dried)( sea lettuce(dried), crayfish pelilla seed little neck clam orient hard clam, venus clam, and freshwater carab. And the iron rich foods by the iron content in one serving were in order of surf clam marsh clam crayfish little neck clam orient hard clam freshwater crab venus clam hen cockle green confertii(fresh) pen shell and spiny lobster. 3) The 3 major iron supply food groups in Korean were cereals an cereal products fishes and shellfishes and vegetables. 4) The iron supply food according to the quantity of food supply in 1997 was in order of soybean sea mustard maize rice meat edible viscera laver wheat flour, pook, red pepper, egg and bovine meat.

가정내 응급처치를 위한 민간요법 (Folk Remedies for First Aid at Home)

  • The purposes of this study were to identify the contents, frequency of use, and the rationales of folk remedies frequently used for first aid at home for stomachache, vomiting, strain, food poisoning, vaginal bleeding, or wounds of snake or dog bite, or bee sting. As the method of the study, data were collected by conducting a questionnaire of 185 persons, who filled it out or who were interviewed from May to August in 1998. The collected data was analyzed by using frequency and the rationales for the contents of the folk remedies were described base on literatures. The results were as follows,. 1. The folk remedies for stomachache in frequency order were 'warming the abdomen', 'rubbing the abdomen with a hand', or 'pricking a finger to bleed', which have the rationals. 2. The folk remedies for vomiting in frequency order are 'drinking water of watery radish' and 'pricking a finger to bleed', which have the rationales. 3. The folk remedies for strain in frequency order are 'soaking the affected area into cold water or applying an ice pack' and 'after soaking jasmine in water, making a dough with flour, and then attaching it on the affected area', which have the rationales, Additionally, although the frequencies are low, 'drinking brewed Achyranthis Radix' and 'applying brewed leaves and stalks of Sambuci Cortex' have the rationales. 4. The folk remedies for food poisoning in frequency order are 'drinking black beans and licorice brewed together' and 'eating mung beans', which have the scientific grounds. 5. The folk remedies for bloody discharge in frequency order are 'drinking brewed lotus root' and 'eating boiled chicken stuffed with root of bell-flower'. However, 'drinking brewed Thujae orientalis Folium' has the rationales. 6. The folk remedy for snake bite wounds that has the scientific grounds is 'sucking blood by a person without hurt in the mouth'. However, quite a lot of people apply alum or soy paste, which has no rationales. 7. The folk remedies for the bee sting in frequency order are 'after removing the sting, applying soy paste or sauce' and 'applying saliva'. No rationales for 'applying saliva' have been found. 8. The folk remedy for the dog bite wound that has the rationales is 'applying juice of leaves or stalks of Xanthii Fructus'. However, 85% of surveyed people use remedies that have no scientific grounds, such as 'applying burnt dog hair mixed with (sesame) oil' and 'applying soy paste or sauce'. Various materials are used in folk remedies for first aid treatment as shown above. Some of the folk remedies have the rationales since their medicinal actions have been found. However, the medicinal actions of the majority have not been found, but only known that they are effective, Especially for the materials except botanical drugs, they are used without knowing the effects since their components and pharmacognosies have not been described in any literature. The results of this research may be used for materials to educate the surveyed people or to consult them. Accordingly, the folk remedies that have the rationales are required to continue to study to find out the effects.
