지역아동센터의 배식 실태 및 배식량 측정을 통한 영양적 질 평가 (Status of Meal Serving and Nutritional Quality of Foods Served for Children at Community Child Centers in Korea)

  • 본 연구는 지역아동센터에서 수행되고 있는 배식 실태 및 영양적 질을 평가하기 위해 2014년 7월에 설문조사 및 배식량 측정 실험을 수행하였다. 지역아동센터 급식관리자 39명이 본 설문조사에 참여하였으며, 이 중 15개소의 지역아동센터에서 근무하는 급식관리자가 배식량 측정 실험에 참여하였다. 설문조사 결과, 응답자의 51.3%가 센터장이었고, 38.5%가 생활복지사였으며, 1년 이내에 급식과 관련한 교육을 수강한 경험이 있는 경우는 69.2%였다. 응답자의 영양 및 위생분야 지식 점수는 10.0점 만점에 5.59점이었다. 응답자 중 교육 수강자의 영양 및 위생분야 지식 점수의 평균은 6.04점, 교육 비수강자의 평균은 4.58점으로 교육 수강 여부에 따라 통계적으로 유의한 차이를 보였다(p<0.05). 지역아동센터에서는 절반 정도가 대면배식(51.3%)으로 배식하고 있었고, 자율배식(23.1%), 개별배식(20.5%) 순이었다. 지역아동센터의 급식관리자들은 센터의 배식량이 적절하다고 생각하고 있었다(3.6점/5점 만점). 지역아동센터 배식 시 위생모 또는 배식용 앞치마를 착용하는 정도에서 교육 수강자와 교육 비수강자 간에 통계적으로 유의하게 차이가 있었으며, 교육 수강자들의 수행도가 높았다. 또한 '지역아동센터를 이용하는 초등학교 5학년 남학생에게 배식을 하는 상황'에 대한 배식량 측정 실험 결과, 메뉴로 제공되는 모든 음식은 배식량 기준을 충족시키지 못하였으며, 밥, 국, 주찬, 부찬, 김치는 배식량 기준 대비 각각 87.3%, 65.2%, 56.5%, 37.1%, 81.3%를 충족시켰다. 측정한 배식량에 대한 영양소 분석을 수행하였으며, 에너지와 비타민 A, 티아민, 리보플라빈, 칼슘은 영양기준 대비 섭취가 충분하지 못한 것으로 나타났으며, 단백질과 비타민C, 철은 영양기준 대비 100.0% 이상을 충족하는 것으로 나타났다. 단백질의 에너지 비율은 권장비율에 해당하였으나, 탄수화물은 72.0%, 지방은 13.3%로 각각의 권장비율인 55~70%, 15~30%에 조금 넘거나, 못 미치는 것으로 나타났다. 본 연구결과, 지역아동센터의 급식 담당자의 교육 수강 여부는 영양 및 위생관련 지식 점수와 배식 서비스의 수행도에 영향을 미치는 것으로 나타났다. 또한 지역아동센터 급식관리자가 배식하는 배식량이 배식량 기준 및 영양기준을 충족시키지 못하는 것으로 나타났다. 이에 지역아동센터 급식관리자의 급식관리 수행능력을 향상시키기 위해서는 관련한 교육 기회 제공이 이루어져야 한다. 지역아동센터 급식에서 적절량 배식을 통해 아동의 영양수준을 향상시키기 위해서는 배식량 기준으로 영양관리 지침을 마련하고, 배식의 중요성 및 아동 연령별 적절한 배식량에 대한 교육이 필요하겠다. 아동의 배식량과 관련하여 정부차원에서 이루어진 연구 및 보고에 대해 충분한 홍보가 미흡했으며, 현장에서 활용 방법에 대해 인지하지 못하고 있으므로, 이에 대한 홍보 및 교육이 실시되어야 한다. 본 연구결과는 지역아동센터의 급식관리자의 교육 자료 개발 및 취약 계층 영양 관련한 후속 연구에 활용될 수 있을 것으로 기대된다.

대전의 대표음식 발전 방향 모색을 위한 대전시가 선정한 ‘육미’에 대한 인지 및 수용성 조사 (Public Recognition and Acceptance of Yookmee (‘6 dishes’) Designated by Daejeon Metropolitan City as the Foods Representative of the Daejeon Area)

  • This study was conducted to devise a scheme for the development of foods designated as Yookmee (“6 dishes), which are representative food of Daejeon area. The Yookmee consist of Seolleongtang(ox bone soup and boiled rice), Samgyetang (chicken stew stuffed with glutinous rice and ginseng), Dolsotbap (boiled rice mixed with vegetables), Goojeukmook (acorn jelly), Sootgol-naengmyeon (cold buckwheat noodles with broth) and Daecheongho minmulgogi-maeuntang (spicy hot freshwater fish soup). A questionnaire was developed and administered by means of an interview regarding the subjects' recognition of and preference for the six dishes, their usual eating places and eating frequencies, the need for some standardization of recipes and for nutrition labeling including serving sizes and nutrient content. The total number of subjects who participated in this study were 328 (male 112, female 216) living in Daejeon. The subjects who were aware of the presence of Yookmee were more in their thirties or older (15%) compared to those in their twenties (9.6%) The percentages of the subjects who recognized the Yookmee as the representative foods were twice among those in their thirties (over 60%), as compared to 31.5% in their twenties (p<0.001). Samgyetang was one of the favorite foods of all the Yookmee among those in their twenties and Goojeukmook was the favorite for all the other age groups. The incidence of those eating one of Yookmee more than once a month was 51.5% in all the age groups, but the intake frequency was lower among those in their twenties (43.8%). The percentage of those who recommended Yookmee as a food for guests was the highest among those in their fifties (54.7%). The first reason why the subjects do not recommend these foods was because they were unfamiliar with Yookmee; among those in their thirties and forties the 2nd reason was because it is not much enough in quality or quantity to be served as a food for guests. Over 60% of the subjects felt the need for standardization of Yookmee, recipes for especially those in their fifties did feel the needs (92.5%). Furthemore, regarding labeling of sowing sizes and nutrients contents, over 80% of the subjects wanted these, and this desire tended to increase with age. From these results, it seems reasonable to accept Yookmee as the representative foods of Daejeon, despite the fact that many people do not yet currently do so. Since most of the subjects (85.4%) partake Yookmee outside of their homes, it is recommended that efforts need to be expanded on enhancing the nutritional quality, the taste and the quality control of Yookmee by standardizing the recipes, labeling the serving sizes and nutrient contents, and providing educational and publicity programs.

24시간 회상법으로 조사한 한국 농촌성인의 섭취영양별 주요 급원식품 및 변이식품 (Contribution of Specific Foods to Absolute Intake and between-Person Variation of Nutrient Consumption in Korean Adults Living in Rural Area)

  • This study was conducted to examine contribution of specific foods to absolute intake and between-person variation in nutrients consumed by 2037 adults living in Korean rural area using one day 24-hour recall method. To measure contribution of food to absolute nutrient intake, all foods consumed were ranked by percentages calculated as the sum of the nutrient intake contributed by a given food divided by the total nutrient intake from al categories. To assess between-person variability in nutrient intake, stepwise multiple regression analysis was used with total nutrient intake from al foods as the dependent variable and the nutrient amount from each of all foods as independent variables. The kind and the number of foods necessary to account for the variation in nutrient intake among persons varied significantly depending on the nutrient. The nutrients contributing more than 80% of total intake with a few number of food items were ${\beta}$-carotene(ll), vitamin C(15) and vitamin A(16). Foods sometimes overlooked as important sources were found in some instances to be quantitatively important to population intake. Even though rice and Korean cabbage kimchi do not contain much nutrients in quantity, they made a major contribution to most nutrient intake of subjects because of large serving size and high frequency of intake. The food items and contributing order for between person variance was different from those of absolute intake. A large fraction of the variability of nutrient intake in this population was explained by a small number of foods. Fewer foods were required to explain a given proportion of the between-person variance in intake than to account for the same proportion of the popylation\`s total intake. 패스트푸드의 종류 및 특징에 대한 연구 - 대전지역 고등학생을 대상으로 - (A Study on The Kinds and Characteristics of Fast Foods - By Highschool Students in Daejeon -)

  • 패스트푸드는 간단한 조리를 거쳐 신속히 제공되는 음식으로 정의하고 있는데, 어떤 종류의 음식을 패스트푸드로 분류할 수 있는지, 패스트푸드와 패스트푸드가 아닌 음식을 구분하는 특징은 무엇인지 분명하지 않다. 본 연구는 선행 연구에서 패스트푸드로 제시한 14종 음식을 대상으로 패스트푸드의 인정 여부를 조사하였으며, 패스트푸드 인정 여부를 결정하는 패스트푸드의 특징에 대하여 조사하였다. 남 여 고등학생 306명을 대상으로 설문조사를 실시하였으며, 그 결과를 분석하였다. 조사대상자는 패스트푸드가 맛있고 편리한 음식이지만 영양가가 낮은 음식 즉, 고지방, 저비타민 음식으로 평가하였다. 햄버거, 피자, 프라이드치킨, 라면, 핫도그는 80% 이상의 조사대상자가 패스트푸드로 인정하였으나, 떡볶이, 스파게티, 샌드위치, 김밥, 샐러드의 경우 패스트푸드 인정 비율이 50%에 미치지 못하였다. 패스트푸드의 5가지 특징 중 음식의 패스트푸드 인정 여부를 결정하는 가장 확실한 특징은 건강에 해로운 음식이었고, 가장 불확실한 특징은 신속한 제공과 저렴한 가격으로 조사되었다. 패스트푸드가 흔히 fast, cheap foods로 지칭되지만 조사대상 남 여 고등학생은 패스트푸드를 신속히 제공되는 값싼 음식으로 인식하지 않는다는 것을 확인할 수 있었다.

2010 당뇨병 환자를 위한 식품교환표 개정 (Korean Food Exchange Lists for Diabetes: Revised 2010)

  • A food exchange system for diabetes is a useful tool for meal planning and nutritional education. The first edition of the Korean food exchange lists was developed in 1988 and the second edition was revised in 1995. With recent changes in the food marketplace and eating patterns of Koreans, the third edition of food exchange lists was revised in 2010 by the Korean Diabetes Association, the Korean Nutrition Society, the Korean Society of Community Nutrition, the Korean Dietetic Association and the Korean Association of Diabetes Dietetic Educators through a joint research effort. The third edition is based on nutritional recommendations for people with diabetes and focuses on adding foods to implement personalized nutrition therapy considering individual preferences in diverse dietary environment. Foods were selected based on scientific evidence including the 2007 Korea National Health and Nutrition Examination Survey data analysis and survey responses from 53 diabetes dietetic educators. While a few foods were deleted, a number of foods were added, with 313 food items in food group lists and 339 food items in the appendix. Consistent with previous editions, the third edition of the food exchange lists included six food categories (grains, meat, vegetables, fats and oils, milk, and fruits). The milk group was subdivided into whole milk group and low fat milk. The standard nutrient content in one exchange from each food group was almost the same as the previous edition. Korea Food & Drug Administration's FANTASY (Food And Nutrient daTA SYstem) database was used to obtain nutrient values for each individual food and to determine the serving size most appropriate for matching reference nutrients values by each food group. The revised food exchange lists were subjected to a public hearing by experts. The third edition of the food exchange lists will be a helpful tool for educating people with diabetes to select the kinds and amounts of foods for glycemic control, which will eventually lead to preventing complications while maintaining the pleasure of eating.

한식 식단 급식을 제공받는 경기도의 일부 중학생과 학부모의 한식에 대한 인식 및 급식 만족도 (Perceptions of Traditional Korean Foods and Satisfaction Levels toward School Foodservice among Middle School Students and Parents of Schools Serving Traditional Korean Menus in Gyeonggi Province)

  • The purpose of this study was to investigate perceptions of Korean foods and school foodservice satisfaction levels among middle school students as provided by a Korean menu-focused school foodservice. The study subjects included middle school freshmen attending a school providing Korean menus and their parents. A survey questionnaire was administered to obtain information on general characteristics, perceptions of traditional Korean foods, and degrees of satisfaction toward school foodservice. The student subjects had significantly lower interest and preference for traditional Korean foods and less positive perceptions of traditional Korean foods than the parent subjects. In regard to degrees of satisfaction for school foodservice, the students evaluated the current Korean menu-focused foodservice significantly higher than the previous foodservice provided to them during their elementary school days. The parent subjects' also generally reported very high satisfaction levels of the foodservice. The current study findings suggest there are positive effects of Korean-style school foodservice and support its further expansion to other schools. It is recommended that dietary education on the excellence of traditional Korean foods should accompany the provision of Korean-style foodservices in order to better guide adolescents' recognition of the matter.

길거리 음식에 대한 중${\cdot}$${\cdot}$대학생의 섭취 및 위생상태 인식과 미생물 분석 (A Study on Students' Intake of Street Foods and Their Perception toward Hygiene Status of Street Foods and Microbiological Analysis)

  • We investigated the intake trends of street foods for middle school, high school and colleges students through the survey study. In addition, the factors affecting the students' consumption of street foods and their perception toward hygiene status of street vendor were studied. The levels of total aerobic bacteria, coliform groups and enterobacteriaceae in Kimbab, eomuk, and eomuk-kukmul were counted using 3M petrifilms. More than ninety seven % of the respondents had experienced street foods. All the respondents ate street foods 1 to 5 times a month. Forty percent of the respondent stated that 'good taste' and 'time-saving convenience' were their reason for eating the street foods. Their favorite foods were ddokbokgi and various fried foods. All the students responded that frying oil, drinking water, and soy sauce as well as the street vendors' attire and their cooking tools in street vendor were unsanitary. Forty percent of the respondents ranked frying oil as the most unsanitary substance. Eighty percent of the respondents responded that an enforcement of hygiene should be imposed on the street foods vendor. There were significant differences (p<0.001) among the student's age in the opinion related to the reasons of eating street foods, hygiene enforcement, existence of street foods and interest of hygiene status of street foods. High correlation (p<0.05) between the frequency of street foods and snack intakes was shown, regardless of student's age. The result shows that those who eat snacks more than once a day tend to eat street foods more frequently. Aerobic plate counts in Kimbab in 5 different vendors exceeded 10$^5$/g and contamination levels of enterobacteriaceae or coliform in Kimbab exceeded more than 10$^3$/g, which did not satisfy the microbiological standards. In conclusion, although the respondents thought that the sanitation of street foods was poor, most of them want the street food vendor to be maintained with better hygiene condition. This indicated that the regulation for safe street foods should be enforced and educational information about the preparation and serving for safe street foods should be provided to street food vendor.

광주지역 식품안전보호구역내 어린이 기호식품에 대한 고열량·저영양 성분함량 조사 (A Survey on the Calorie and Nutrient in Children-favored Food within Green Food Zone in Gwangju)

  • 2012년 3월부터 2012년 10월까지 광주시내 초 중 고등학교 주변 어린이 식품안전보호구역내 분식점, 길거리음식점 등에서 판매되고 있는 김밥, 떡볶이, 꼬치류, 오뎅, 튀김류 등 식사대용 및 간식용 어린이 기호식품 중 조리식품 124건에 대해서 탄수화물, 지방, 단백질 등 영양성분과 나트륨, 당함량 등을 검사하여 고열량 저영양 식품 해당여부에 대해서 조사하였다. 식사대용 어린이 기호식품 35건 중 토스트 12건이 모두 포화지방과 나트륨의 기준을 초과하여 고열량 저영양 식품에 해당되었고, 간식용 어린이 기호식품 89건 중에서 튀김류 4건과 닭강정 5건이 열량기준을 초과하였고, 또한 슬러쉬 27건 중에서 20건이 당함량을 초과한 것으로 나타나 총 29건이 고열량 저영양식품에 해당되었다. 그러나 이번에 조사한 식품들은 슬러쉬를 제외하고는 모두 저영양 식품 판단의 한 요소인 단백질 함량이 높고, 튀김류 등은 식품의 특성상 지방함량이 많아서 열량이 높고, 모두 조리식품들이기 때문에 식사로 섭취하게 되는 식품과 마찬가지로 나트륨 함량이 높아서 고열량 저영양 식품으로 분류된 것으로 보인다. 따라서 고열량 저영양 식품이라 하더라도 한두 번 섭취한다고 해서 문제가 생기는 것은 아니기 때문에 편식을 피하고 싱거운 맛에 익숙해지도록 하는 노력과 더불어 전체적으로 여러 유형의 식품들을 골고루 섭취하는 등, 올바른 식생활 습관이 어릴 때부터 형성되도록 소비자의 지속적인 노력이 필요할 것으로 생각된다.

단체급식소에서 이용되는 전처리 식품 중 생채소의 품질에 관한 연구 (A study for the quality of vegetable dishes without heat treatment in foodservice establishments)

  • The purposes of this study were to estimate the microbial and physicochemical quality of vegetable dishes without heat treatment such as sengchae, a traditional Korean vegetable dish, and to suggest a safer method of preparation. Platycodon sengchae and vegetable salad were monitored from the ingredient to final product before serving while storing at different temperature (4, 10$^{\circ}C$) and period (1, 2, 4, 7 days) at foodservice establishments. The results showed that the storage temperature pH, Aw, moisture content, and microbial loads are the important factors affecting the quality of vegetable dishes without heat treatment, and a thorough hygienic management from the purchase to the preparation of the dishes is needed to secure the quality of prepared foods in the foodservice establishments.

냉장 중 품질변화 측정 지표 개발을 위한 냉장고 형태별(개방형 및 도어형) 저장 중 주요 냉장 식품의 품질변화 측정 (Comparative Assessment of Quality Changes in Refrigerated Foods Stored in Open-type and Door-type Refrigerators: Towards Developing Quality Indicators)

  • This study was conducted to investigate the impact of refrigerator type and temperature fluctuations on the quality changes of refrigerated foods. Phycochemical and sensory quality, as well as microbial growth, were measured for various foods stored in open- or door-type refrigerators set at 5℃ during storage. The average temperatures recorded were 11.50±1.14℃ in an open refrigerator, and 6.34±0.97℃ in a closed refrigerator. The average surface temperatures of the food items were 9.60±1.20 and 6.00±0.80℃ for open and closed refrigerators, respectively. Significant changes in color and appearance quality were observed in lettuce, mackerel, ground beef, and cut pineapples when stored in open refrigerators. Ready-to-Eat foods such as gimbap and sandwiches exhibited higher levels of microbiological proliferation when stored in open refrigerators compared to closed refrigerators. Processed foods, such as sterilized milk and packaged tofu, did not show significant differences in quality among various types of refrigerators. The installation of refrigerator doors can effectively minimize temperature fluctuations caused by external factors, thereby reducing variations in food quality. These findings provide essential insights into the quality changes associated with the implementation of refrigerator doors, serving as fundamental data for ensuring optimal food preservation.
