Effect of dried Hovenia dulcis fruit powder on quality characteristics and antioxidant properties of cookies

  • Hovenia dulcis fruit powder (HFP) has shown diverse functional activities; thus, it is rational to incorporate HFP into suitable food products with enhanced nutritional and functional quality, and their incorporation into bakery products such as cookies could be a good alternative for the increase of consumption. The aim of this study was to examine the effect of HFP addition on the quality characteristics of cookies. The pH of cookie doughs ranged from 5.80-6.34, with no remarkable differences by HFP addition. Density of cookie doughs significantly decreased upon addition of HFP (p<0.05), but there were no significant differences among samples added with HFP (p>0.05). Moisture content and spread factor of cookies significantly increased with higher content of HFP in the formulation (p<0.05). For color values of cookie surface, $L^*$ and $b^*-values$ decreased while $a^*-value$ increased as a result of HFP substitution (p<0.05). 2,2-Diphenyl-1-picrylhydrazyl (DPPH) and 2,2'-azino-bis-3-ethylbenzthiazoline-6-sulphonic acid (ABTS) radical scavenging activities were significantly increased (p<0.05) with higher substitution of HFP, showing a positive correlation. Hedonic sensory results indicated that cookies supplemented with 4% HFP received the most favorable acceptance scores for sensory attributes. Overall, HFP-added cookies could be developed with improved physicochemical qualities without sacrificing consumer acceptability.

말차(抹茶) 첨가에 따른 증편의 품질 특성 (Effect of Mal-Cha (Powdered Green Tea) on the Quality of Jeung-Pyun)

  • The purpose of this study is to find out the optimal mixing ratios of Mal-Cha for the preparation of Jeung-Pyun through sensory and mechanical tests. The proximate composition of Mal-Cha were $5.46\pm0.15\%$ of moisture, $4.43\pm0.11\%$ of total nitrogen, $7.52\pm0.21\%$ of crude lipid, $8.74\%$ of crude fiber, $8.51\pm0.09\%$ of ash. Overall quality of Jeung-Pyun with $1.5\%$ Mal-Cha was the worst compare with 0, 0.5 and $1.0\%$ ones(p<0.05). Especially, $1.0\%$ Mal-Cha Jeung-Pyun showed the best overall quality. But the sweetness, sourness, flavor, hardness, and moistnes were not significantly different among all the treatments. Acceptabilities of 0.5 and $1.0\%$ Mal-Cha Jeung-Pyuns were not significantly different from that of the control in their sensory and mechanical qualities. Total color difference increased with the amount of Mal-Cha significantly(p<0.001).

떫은 감 농축액을 첨가한 설기떡의 품질 특성 (Quality Characteristics of Sulgiduck by the Addition of Astringency Persimmon Paste)

  • The aim of this study was to fud the optimum addition mont of astringency persimmon paste to rice flour in the preparation of Gamsulgiduck (persimmon rice cake). The moisture content of Gamsulgiduck with added astringency persimmon paste was $42\~45\%$. With increasing addition of astringency persimmon paste, the L-value was decreased. The a- and b-values were the highest at the $15\%\;and\;10\%$ levels, respectively. In the mechanical evaluation of Gamsulgiduck the hardness was the lowest at the $20\%$ astringency persimmon paste-sulgiduck during storage. The adhesiveness and cohesiveness did not differ significantly with the addition of astringency persimmon paste for storage period. The springiness was the highest at the $0\%$ level except for 2days of storage. The gumminess was the lowest at the $20\%$ level and the brittleness was the highest at the $0\%$ level during storage. In the sensory evaluation of Gamsulgiduck the acceptance of the softness and chewiness characteristics was the best at the 15% level. Gamsulgiduck with the addition of $15\%$ of astringency persimmon paste to rice flour was found to be the best recipe in terms of the sensory qualities of softness, chewiness and overall acceptability.

살구를 첨가한 설기떡의 품질 특성 (Quality Characteristics of Sulgidduk Supplemented with Apricot Powder)

  • The purpose of this study was to determine the most desirable mixture ratio of apricot powder to rice flour for the preparation of apricot Sulgidduk (Sulgidduk containing apricot powder). The moisture contents of the samples ranged from 38% to 42%. The L-value decreased, while the a- and b-values increased, with increasing amounts of added apricot powder. In the mechanical evaluation of the physical properties, we found that the hardness, adhesiveness, cohesiveness and springiness decreased with increasing apricot powder content. And in addition, throughout the storage period, gumminess and chewiness decreased. Based on the sensory evaluations, the apricot power intensified the color, flavor, sweetness and sourness of the Sulgidduk. The sample containing 12% apricot powder had the highest moistness, chewiness however, but the overall-acceptability scores of the sample containing 6% apricot powder had were the highest. Consequently, the addition of 6% apricot powder to the rice flour was determined to be the best formula for apricot Sulgidduk in terms of the sensory qualities such as softness, moistness, chewiness and overall-acceptability.

다양한 젤화제와 감초추출액을 이용한 감초젤리의 특성 (Characteristics of Licorice Jellies using a Water Extract of Licorice Root and Various Gelling Agents)

  • This study was conducted to investigate the usefulness of a hot water extract of licorice root as a source for production of healthy food. The electron donating capacity of the hot water extract of licorice root was very strong. This activity decreased by $6.9\%$ after keeping it in 5 days of cold storage, but it was not significantly different. Ten types of licorice jellies were prepared, using agar, agar-pectin, agar-cellulose, 2 different proportions of agar-pectin-cellulose as a gelling agent, and 2 levels of sugar. Among the 5 jellies containing $10\%$ sugar, the elasticity and overall acceptance of the agar jelly obtained the highest sensory score, but the color and flavor were not affected by the type of gelling agents. As the sugar concentration increased to $15\%$, the elasticity of the agar jelly was also evaluated as being the best one among the 5 jellies, but the overall acceptance was not significantly different from the others.

백복령 가루를 첨가한 찰보리쌀 인절미의 품질특성 (Quality Characteristics of Waxy Barley Injeulmi Prepared with Baekbokryung Powder)

  • The purpose of this study was to investigate the quality characteristics of waxy barley Injeulmi made with additions of Baekbokryung powder. The moisture contents of the samples ranged from 48.10 to 49.74%, and among the treatments, the waxy barley Injeulmi that did not contain Baekbokryung powder had the highest moisture content 49.74%. The color values, for lightness(L-value), redness (a-value), and yellowness (b-value) were in ranges of $47.42{\sim}52.11,\;2.25{\sim}3.00,\;and\;l2.77{\sim}13.56$, respectively, and redness increased with increasing Baekbokryung powder content. In the texture analysis, hardness was lowest for the 12% Baekbokryung-added Injeulmi during 12 hours of storage. Adhesiveness and cohesiveness did not differ significantly among the treatments throughout the storage period. For all of the samples, springiness was highest immediately after steaming, and chewiness was lowest with 24 hours of storage. The 9% addition of Baekbokryung powder determined the best formula for the Injeulmi based on sensory qualities such as flavor, sweetness, and overall acceptability.

Effect of Cacao Bean Husk Powder on the Quality Properties of Pork Sausages

  • Cacao bean husk (Theobroma cacao L.) contains a high level of dietary fiber and therefore can be used as raw material in food processing. The objective of the present study was to measure the physicochemical properties and sensory traits of emulsion-type pork sausages with various levels of cacao bean husk powder (0.25%, 0.5%, 0.75%, 1%, and 2%). The moisture content in cooked sausages increased as the level of cacao bean husk power increased, whereas the protein content decreased (p<0.05). With respect to color, as the level of cacao bean husk power increased, there was a decrease in lightness and yellowness, but there was a considerable increase in redness (p<0.05). Cacao bean husk powder exhibited a positive effect on emulsion stability and apparent viscosity. In the sensory evaluation, increased level of cacao bean husk increased flavor acceptability; the 0.75% and 1% treatment groups showed significantly high overall acceptability (p<0.05). The thiobarbituric acid reactive species content of cooked sausages indicated that with the addition of cacao bean husk powder significantly inhibited lipid oxidation in the sausages during refrigerated storage (p<0.05). Overall, the findings of the present study suggest that adding 0.75% and 1% cacao bean husk powder as a natural ingredient in sausages can help develop meat products with excellent qualities.

쌀가루 입자크기와 녹차첨가량을 달리한 녹차다식 개발과 품질특성연구 (Quality Characteristics and of Green Tea Dasik Processing with Varied Levels of Rice Grain Particle Size and Green Tea Powder)

  • Quality characteristics of dasik were studied with varied the levels of rice grain particle size and green tea powder and compared them with commercially sold dasik. Among the samples with the same number of grinding times, the sample groups with the higher amount of green tea showed significantly the less mosture content(p<0.05). Hardness was higher in the samples containing higher amount of green tea among the ones with the same grain size (p<0.05). The M13G0.5 was evaluated to have the highest savory aroma with significance (p<0.05), and C1 to have the highest sweetness by sensory analysis. The developed dasik samples with lower rice grain particle size had significantly lower adhesiveness, chewiness, gumminess, and cohesiveness compared to those of commercial sample groups. In sensory tests, the compared groups showed significantly the higher savory aroma and flavor and very lower hardness when compared to those of commercial sample groups. With the results above, dasik with with varied the levels of rice grain particle size and green tea powder were developed with improved qualities compared to those of commercially sold dasik.

관능검사와 반응표면분석에 의한 브라운소스 제법의 최적화 (Optimization of Cooking Conditions of Brown Sauce by Sensory Evaluation and Response Surface Method)

  • 소스 분야의 과학화를 위하여 브라운소스를 대상으로 체계적인 품질평가와 그 제법의 최적화를 연구하였다. 또한 소스 관련 호텔 조리사를 패널요원으로 선정하고 실제 현장에서 사용되고 있는 브라운소스의 제법을 적용하여 매우 유효한 실무 자료를 제시하였다. 브라운소스 제법의 중요한 조건인 루(roux)의 첨가량과 가열시간의 수준을 $3^2$ 요인계획으로 설계하여 소스를 제조하고 관능검사를 통하여 소스의 색깔, 풍미, 점성, 맛, 종합적 기호도를 평가하였다. 관능검사 결과로부터 패널요원 12명의 시료간 기호도의 식별 능력과 평가 성향을 분석하여 신뢰성이 우수한 패널요원 9명의 평가 결과만을 반영하였다. 소소의 기호도는 루의 첨가량 11, 9, 13% 그리고 가열시간 8, 9, 7시간의 순으로 높게 나타났다. 또한 소스 제법을 독립변수로 정하고 기호도를 종속변수로 하여 2차 모형을 가정한 반응표면분석을 실시한 결과, 기호도가 가장 높은 소스 제법의 최적 조건은 루 첨가량 $10.3{\sim}10.8%$, 가열시간 8시간으로서 관능검사 결과와 일치함을 확인할 수 있었다.

대체감미료 사용이 백설기의 이화학적·관능적 특성 및 저장 중 경도변화에 미치는 영향 (Influences of Sugar Substitutes on the Physicochemical and Sensory Properties and Hardness of Baksulgi during Storage)

  • 설탕 및 다양한 대체감미료를 사용하여 제조한 백설기의 품질 특성을 평가함으로써, 대체감미료의 사용이 백설기의 이화학적 관능적 특성 및 저장 중 경도 변화에 미치는 영향을 평가하였다. 관능검사를 통해 개별 감미료의 상대당도를 결정한 후, 10% 설탕과 동일한 단맛을 주는 감미료의 양을 백설기 제조에 사용하였다. 제조된 백설기들은 완성 직후 수분함량에서는 유의적 차이를 나타내지 않았다. 그러나, 설탕 첨가군에 비해 아스파탐 첨가 백설기는 유의적으로 낮은 pH를 나타내었고, 포도당 첨가 백설기는 옅은 황색을 띄어 낮은 명도를 나타내었다. 이러한 차이는 각각 아스파탐 및 그 분해산물의 낮은 pKa값과 포도당에 의한 갈변 반응의 결과로 해석되었다. 제조 직후 실시한 기계적 물성 평가 결과는, 백설기 물성 결정의 주요 요인인 전분의 호화 및 팽윤 정도가 설탕 및 대체감미료로 제조된 7종의 백설기 사이에서 유의적 차이가 없었음을 시사하였다. 그러나, 저장 시간의 경과에 따른 백설기의 물성을 평가한 실험에서는, 에리스리톨과 수크랄로스 첨가 백설기들이 당류 및 자일리톨 첨가군들에 비해 경도가 큰 폭으로 증가하는 현상이 관찰되었다. 이는, 저장 중 백설기의 수분함량 변화보다는 두 감미료 자체의 흡습이 어려운 물성의 결과로 해석되었다. 한편, 관능검사 결과, 수크랄로스와 자일리톨 첨가 백설기는 평가된 모든 관능적 특성들에서 설탕 첨가군과 유의적 차이를 나타내지 않아 가장 높은 기호도를 지닌 것으로 평가되었다. 저장 기간에 따른 물성 변화의 결과를 함께 고려하면, 자일리톨 첨가 백설기가 설탕 첨가 백설기와 이화학적 관능적 특성에서 가장 유사한 결과를 보임으로써, 백설기 제조에 있어 대체 가능성이 높은 것으로 평가되었다.
