대구지역 고등학생의 학교급식서비스 공급 유형에 따른 석식만족도 조사 (A Study on the Degree of Satisfaction with School Dinner by School Meal Service in Daegu)

  • 본 연구는 고등학교 학교급식서비스 공급유형에 따른 급식만족도를 비교해보기 위해 대구시내 석식 운영위탁 급식고등학교 133명과 운반위탁 급식고등학교 119명을 대상으로 총 252명(남학생 138명, 여학생 114)에게 실시하였다. 조사대상자의 신체계측을 실시한 결과 BMI는 남학생 68.1%, 여학생 41.2%가 정상인 반면에 남학생은 10.1%, 여학생의 경우 50.0%가 저체중으로 분류되어 성별에 따른 유의한 차이를 보였다. 음식 섭취 시 중요하게 생각하는 요인으로 두 학교 모두에서 맛, 영양, 위생, 기호도의 순이었으며, 식습관에 영향을 주는 요인에서 가족이 가장 많이 영향을 주는 것으로 조사되었다. 아침결식은 여학생(17.5%)이 남학생(8.0%)보다 많았다. 학교급식(석식) 만족도는 운영위탁 급식 학교의 68.4%, 운반위탁 급식학교는 9.2%가 '만족한다'고 답해 급식형태별 만족도 차이가 큰 것으로 조사되었다. 불만족한 경우 이유를 묻는 질문에서는 두 학교 모두에서 "음식의 맛'이 가장 높게 조사되었으나, 운반위탁 급식학교의 경우 '음식의 양'이 36.3%로 다음으로 높게 나타났다. 메뉴 만족도, 음식의 온도에 대한 만족도, 음식의 양에 대한 만족도에서 운반위탁 급식학교의 불만족도가 유의한 수준에서 높게 조사되었다. 학교급식(석식) 서비스 만족도, 시설 위생 관련 만족도에 대한 조사에서는 모든 항목의 만족도에서 운영위탁 급식학교의 만족도가 높게 조사되어 유의한 차이를 보였다. 학교급식(석식)에서 개선되어야 할 점은 운영위탁 급식학교에서는 음식의 맛 25.6%, 식단의 다양성 21.1%, 위생상태 17.3%, 균형 잡힌 영양과 음식의 양이 각 10.5% 등이었으며, 외부운반 급식학교는 음식의 맛 62.2%, 음식의 양 17.6%, 위생상태 8.4%, 식단의 다양성 8.4%로 응답해 운영 위탁급식학교와 외부운반 위탁급식학교와의 석식 개선사항에 유의한 차이가 나타났다. 이상의 연구결과를 통하여 볼 때 위탁급식의 운영형태에 따라 유의한 차이를 보였으며 운반위탁급식에 있어서 불만족한 응답이 많았다. 이는 운영형태에 따른 한계라고 판단하기보다는 민간위탁을 통한 학교급식서비스가 잘 운영될 수 있도록 정기적인 모니터링과 서비스의 질적 수준을 평가할 수 있는 객관적 측정지표 등의 제도적 뒷받침이 이루어져야 할 것으로 사료된다.

충남 일부 지역 초등학생의 학교급식 만족도와 음식 기호도 (Satisfaction on School Meal Service and Food Preference of Elementary School Students in Chungnam)

  • The purpose of this study was to evaluate the satisfaction with school meal service and the food preference in elementary school students who are in their growth period. A total of 484 students (242 boys) participated and completed a questionnaire survey. The results indicated that the merit of school meals was the highest in 'balanced diet'. 'Food hygiene' and 'delicious food' were the most important factors in school meals. Most of the students wanted 'balance between eastern and western foods' and 'new dishes' for the menu of school meals. For the distribution of meals, 'various kinds of side dishes' and 'warmth of dishes' were mainly required. The main problems of the current environment of school meals were 'long waiting time' and 'noise of the cafeteria'. In satisfaction with the school meal service, the highest satisfactory factor was 'staffs' cleanliness', following 'arrangement of furniture in cafeteria' and 'nutrition information-providing'; whereas, the lowest factor was 'staffs' kindness'. In the preference of foods, students preferred 'white rice'; whereas they did not like 'bean rice'; and 'fried rice' was preferred. In side dishes with meat and fish, most of the meats including 'Tangsuyuk' and 'Bulgogi' were preferred. For fish, 'fried hairtail' was preferred; whereas, 'fried Spanish mackerel' was not. In case of kimchi, 'Chinese cabbage kimchi' and 'cubed radish kimchi' were especially preferred. Considering these results, intensive improvement is required to increase school meal satisfaction by understanding the students' needs. An effort to allow the students' preferences to be reflected in the menu is also needed.

서울시내 고등학교 위탁급식의 재무성과 분석을 통한 급식비 및 투자비의 적정 수준 산정 (Income Statement Analysis and Developing the Guidelines of Meal-pricing and Facilities Investment Cost in Contract-Managed High School Foodservice in Seoul)

  • The purposes of this study were: 1) to investigate the operational and financial characteristics of contract-managed high school food services in Seoul, 2) to analyze the financial performance of high school food services 3) to develop guidelines for meal pricing and facilities investment costs. From Oct to Nov 2001, questionnaires were mailed to 249 high schools that were managed by contract food service companies. A 40.2% response rate was recorded. The results of this study were as follows: 1. Student enrollment in high schools run by contract-managed food services was 1,518, with a 68.5% participation rate in the school lunch program. The average meal price was 2,141 won. 2. Based on the income statement analysis, average total sales were 410,440,504 won and average net profit was 16,098,558 won. 3. The optimum food cost per meal was 1,200-1,300 won per meal, calculating using the methods of conversion factor, RDA (Recommended Daily Allowance), and nutrient exchange unit. 4. Guidelines for meal pricing were developed using the modified actual pricing method based on facilities investment cost, number of meals and food cost. The ratio of labor cost, general management expenses and ordinary profit were adopted from the schools with liability. The food cost, depreciation and interest cost were calculated based on unit meal. 5. The guideline for facilities investment was developed based on the number of meals, meal price and food cost. The guideline included the maximum facilities investment cost paid by the contract food service management company. (Korean J Nutrition 36(5): 528∼535, 2003)

대전지역 급식학교 초등학생들의 식습관 조사 (Study on Food Habits of Elementary School Food service Children in Taejon)

  • To investigate the children's food habit, one thousand of children from eleven elementary school food service were randomly selected in Taejon. The survey was conducted by questionnaires and data were analyzed by SAS program. The results are summarized as follows. 1.The average height and weight for the 3th grader are 132.0cm and 29.4kg for boys. 131.2cm and 27.9kg for girls. In the case of the 6th grader the average height and weight are 147.1cm, 41.1kg for male, 148.6cm, 41.0kg for female, repectively. Those values are less than national averages. 2. The third grader eats breakfast more regularly than the sixth grader(p<0.001) and 51.5% of the children answer that they take foods for their health. The third grader has better eating habits that the six grader. This survey shows that the sixth grader eat more cereal, milk and vegetable and the third grader has less fruits than the sixth grader. 49.3% of the total children likes eating food at home, 36.6% eating outside and 14.1% school meal service. 25.8% of the children reply that they do not eat now foods during school meal service. 82.5% of the total children are willing to eat foods served from school meal service if a teacher explains about the information of foods.

중학생의 학교급식에 대한 음식기호도 - 광주ㆍ전남지역을 중심으로 - (Meal Preference on the School Food Service of Middle School Students in Gwangju and Chollanamdo Area)

  • A survey on meal preferences from 693 middle school students was conducted with the objective to enhance the quality of the school food service in Gwangju and the Chollanamdo area. Data were collected by questionnaires and analysed with the SAS program. The most preferred rice was cooked rice; the most unusual meal preference was laver rice; and the most-liked bread was sweet red bean jam bun. The noodle of choice was Tchajangmyon, and the most-liked rice cake was reasoned bar rice cake. The highest ranted korean soups were boiled fish paste soup, kimchi stew, and short rib sour. The most preferred fried meal included fried beef with sweet and sour sauce, and favorite side-dishes were seasoning vinegar squid and kimchi. Yogurt and strawberry were the preferred desserts. A gender difference in preferred foods was seen. The males tended to favor rice with blackish bean sauce, dumpling soup, beef bean curd soup, beef soup, short rib soup, beef bone and tripe soup, hot shredded beef soup, chopped roast chicken, pork roast, roast meat, steamed pork short-ribs, fried port, fried ham, sausage, milk, and yogurt. Males were partial to staple foods and side dishes, The, females favored laver rice, seasoned bar rice cake, bean sprouts soup, fried squid ring, seasoned cucumber, seasoned bean sprouts, fried kimchi, fruits salad, corn salad and citrus fruits. Females tended to choose lighter meals. Meal preference according to residential area showed that, students in Gwangju had more preferences than students in the Chollanamdo area. Classified according to grades, third graders had the greatest meal preference.

고교급식의 서비스품질에 대한 중요도와 만족도에 관한 연구 - 경주지역을 중심으로 - (Importance & Satisfaction of Students on Service Quality of High School Foodservice: Focused on Kyungjoo City)

  • This study examines the service satisfaction rate on high school students(637) in order to provide the basic data for marketing direction by analyzing the importance and satisfaction rate of the service quality. In IPA for the service quality, as the following properties are high in expectation as well as satisfaction they needed to maintain. They are the taste, scent, saltiness, proper temperature of the food, the quantity main food, nutritional value, the degree of freshness, and the smell of dining room. The following properties need the excessive efforts. They are the number of side dishes, eating place, the shape and material quality of dish, the costume of dining workers. As the following showed low importance degrees as well as satisfaction degrees, they don't need concentrated efforts. They are the harmony of color and shape, the interior design of the dining room, the arrangement of tables and chairs, the atmosphere of dining room, and the effect of nutrition instruction. As the education of nutrition is compulsory among the school group meal, the analysis based on the response of questioned students is supposed to be more careful. The items showing low satisfaction degrees while high importance degrees are considered to make an operational plans for the improvement through a variety of menu, the quality of food, the quantity for side-dishes, health control, the cleanness of dishes, the kindness of cooks, the performance of nutritionists, the charge of school meal, and meal time.

COVID-19 상황의 학교급식에서 위기대응식에 대한 급식관리자의 인식 조사 (A Study on the Perception about Emergency Meal as School Meal Services among Nutrition Teachers in the COVID-19 Situation)

  • This study aimed to evaluate the perception of nutrition teachers about emergency meals in all schools affiliated with the Seoul Office of Education. The purpose of this study was to suggest the need for emergency meals and provide directions for future development, thereby assisting meal service sites. An online survey was conducted from May 26 to 31, 2021, analyzing 130 collected samples. The summary of the results is as follows: First, the nutrition teachers recognized the need for school meal services for the prevention of the spread of infectious diseases and considered the variance among school meal consumers. Also, they generally thought of emergency meals due to the need for social distancing and the decrease in the distribution of food. Secondly, in terms of the differences in the perception about emergency meals, nutrition teachers (45.4%) who have provided emergency meals (t=2.584, P<0.05) were more aware of the need for emergency meals than nutrition teachers (54.6%) who had not provided emergency meals. Nutrition teachers conceived emergency meals to minimize the contact between people (45.6%) and to rectify the imbalance in nutrition (37.5). Next, emergency meal attributes were observed to be ranked in the order of convenience (3.49), safety (3.15), and satisfaction (2.88). Fourthly, although there were no meaningful differences in emergency meal attributes, there were statistically significant differences in the safety of the cooking process, menu familiarity, the low unit price compared to regular meals and the excellent satisfaction with nutrition provided (t=2.603, P<0.05), (t=2.039, P<0.05), (t=2.154, P<0.05), (t=2.477, P<0.05) respectively.

대학교 급식의 외부음식점 도입에 대한 필요성 평가 (Necessity Evaluation about the Outside Dining Room Accommodation to the University Meal Service)

  • 본 연구의 목적은 대학교 급식의 외부 음식점 도입에 대한 필요성을 제시하기 위한 기초 자료 확보를 목적으로 하고 있으며, 이를 위해 대학생의 학교 급식 이용 행태 및 욕구를 파악하여 제시하여 시장에 필요한 상품과 학교 급식의 경영의 합리화를 위한 기초 자료를 확보하고자 한다. 학교 급식의 혁신적인 이미지 전략의 일환으로 외부 음식점 도입을 선택할 수 있는데 학생들이 패스트푸드를 선호 하는 이유는 음식이 빠르게 서빙된다는 잇점과 가격이 저렴하다는 잇점을 들고 있다. 즉, 현재 시행되고 있는 학교 급식에 대한 불만으로 도출되는 것은 맛의 저하와 가격의 상승, 서비스의 저하 현상을 이유로 살펴볼 수 있다. 학교 급식의 질은 외부 음식점에 비해 학교 급식의 가격대의 만족도를 평가한 결과 학교 급식의 질은 낮게 평가되었으며, 외부 음식점의 가격이 높다고 평가되었다. 외부 음식점 도입시 선호하는 음식의 조율에 따라 평균값을 분석한 결과, 한식류나 햄버거를 희망하는 집단이 학교 급식의 질적인 수준을 낮게 평가하고 있는 것으로 나타나 학교 급식의 질적인 향상이 시급히 요구되고 있다. 따라서 학교 급식의 발전 방안으로 외부 음식점의 도입의 필요성도 제기되며, 학교 급식 이미지의 강화와 질적인 향상이 필요하리라 보며, 가격 수준의 적절한 배치도 함께 이루어져야 한다.

실버타운 입주자 개인 특성에 따른 급식 및 전체 만족에 관한 연구 (A Study on the Feeding and Whole Satisfaction of Silver Town Tenants according to Individual Characteristics)

  • It is a real situation that the meal service at silver towns such as the welfare facilities for the elderly is giving help in maintaining health, preventing diseases, and giving mental pleasure to the dwelling elderly people, thus the importance of meal service for housing occupants is being demanded together. This study is based on some inconvenient matters when using the meal-service facilities within the silver town targeting housing occupants at the silver town, aiming to examine which influence it can have upon the satisfaction with meal service in housing occupants. Accordingly, the purpose of this study is to present a desirably developmental direction for the meal-service facilities, which can cope with diverse needs of housing occupants. To achieve the objectives of this study, it was analyzed by selecting research variables that were verified by the consideration of preceding studies.

학교 급식 영양(교)사의 나트륨 저감화 인식도, 실천도 및 저감화 방안 (School Dietitian Awareness, Practice, and Sodium Reduction Plan in School Meal Service)

  • Purpose: Sodium intake in school meals is very high. Accordingly, many health problems have emerged. The objective of this study was to assess school dietitian's awareness and practice of sodium contents in urban and rural locations schools and suggest sodium reduction plan in school meal service. Methods: A total of 524 nationwide school dietitians from elementary, middle, and high schools in south Korea were surveyed using questionnaires to determine their awareness and practicing behavior for reducing high-salt contents in meals. Sodium reduction plan was then suggested accordingly. Results: Most school dietitians (83%, n=436) were aware of the necessities of sodium reduction in school meals. They were aware of optimum sodium levels at 700-1000 mg. However, the percentages of dietitians who had practicing behavior of using measuring utensils for seasoning were 20.7% (n=108), 14.9% (n=78), and 13.5% (n=71) in elementary, middle, and high schools, respectively (p<0.001). Dietitians in urban elementary and middle schools had significantly (p<0.01) higher practicing behavior of using measuring utensils compared to those in rural locations. Considering low levels of soup contents with high amount of leftover, the desirable soup portions to be reduced were '50-100 mL' (n=66, 12.7%) for elementary school and '100-150 mL' for middle school (n=62, 12.0%) and high school (n=57, 11.0%, p<0.001). Conclusion: Dietitians' awareness for sodium reduction was high but their practicing behavior was relatively low. Thus, continuous efforts are required to develop reduced-sodium menu by promoting the use of measuring utensils when preparing meals and by planning no soup meal day or educating students and teachers about the importances of reducing sodium in school meals.
