Cauliflower mushroom(Sparassis crispa) contains much amount of ${\beta}$-glucan, which make lots of farmer want to cultivate the mushroom. Since a practical cultivation method is not provided yet, the mushroom is considered as a difficult crop to deal with. In this study, we tried to develope a simple method to cultivate the mushroom by use of coniferous sawdust-based medium with wheat flour and molasses. There was no significant differences between the sawdust spawn and the liquid spawn for the mycelial growth of the mushroom. The cold shock in $4^{\circ}C$ for a day was thought to be the best way to seduce primordium formation. The sawdust medium of Pseudotsuga menziesii mixed with wheat flour, corn chip, cottonseed meal and 10% molasses was showed the best yield with 41% followed by that of Larix leptolepis mixed with the same additives with 37% of yield. There was good relations between the fruit-body production and the weight loss of the sawdust substrate.
The incorporation of Shiitake culture into sawdust is a widely utilized technique that can assist in reducing the cost and time consumption associated with oak cultivation. In sawdust cultivation, browning of the surface mycelia is an important stage with respect to the utility and longevity of the sawdust media. Surface browning forms a protective coating on the substrate, which can inhibit the invasion of pathogens and suppress water evaporation. Several different light sources (red LED, white LED, blue LED, and fluorescent light) were used and the intensity of illumination was carefully controlled (1.5, 10.5, $20.5{\mu}mol/m^2s$ for LEDs and 10, 100, 300 lux for the fluorescent light) to induce browning. The light sources were regulated via a 1 h on/off cycle in a controlled room environment at a temperature of $20^{\circ}C$, 60% humidity, and 1200 ppm $CO_2$ concentration for 60days. The browning effect varied depending on the source and the intensity of illumination. This effect was most effectively induced at $1.5{\mu}mol/m^2s$ for the red and blue LEDs. All light sources induced less browning at the highest intensity of illumination. This indicates that intensity values higher than $20.5{\mu}mol/m^2s$ in the case of the LEDs and 300 lux for the fluorescent light are not effective. After harvesting of the fruit bodies, we measured the weight, length, and width of the pileus and stipe in addition to their chromaticity and hardness. Treatment with $1.5{\mu}mol/m^2s$ blue LED produced the best harvest with the highest average chromaticity, weight (21.2 g), stipe length (30.8 mm), and hardness (377.9 g), with a fine length and width of the pileus.
The effects of liquid spawn to sawdust substrate on the growth of Flammulina velutipes were conducted for two years. The duration of optimal incubation for preculture and main culture of liquid spawn was 4 days and 6 days, respectively. When using liquid spawn, the application time for the first pinhead formation was similar with sawdust spawn, and incubation time of sawdust substrate was variable with liquid spawn and inoculum quantity. But, the overall yield of mushroom fruitbody was increased by using liquid spawn, excepting sesame hull extract medium.
The studies were carried out to examine the effects of supplementation of nutritional substances and physical conditions in substrate on the mycelial growth and yield of fresh sporophores of winter mushroom, Flammulina velutipes(Curt. ex Fr.) Sing. and to obtain further informations on the nutritional requirements of the fungus with reference to improvement of substrate through [analysis of chemical composition of the substrates during the cultivation period. The results obtained are summarized as follows: 1. The best yield of fresh sporophores, 84.4 g per 280 g substrate in a bottle, was obtained from the mixture of poplar sawdust 10 and rice bran 3 by volume when Flammulina velutipes was cultivated on the poplar sawdust supplemented by rice bran, wheat bran, cattle manure and various combinations of these materials as nutrient sources. The substrates of poplar sawdust 10 plus rice bran 3 and 2 or wheat bran 3 with a higher yield of fresh sporophores showed a comparatively higher content of total nitrogen. total sugar, and potassium. 2. The mycelial growth of the fungus was compared on the substrates of poplar sawdust supplemented by the several nutrient sources and poplar sawdust alone. The fastest linear growth occurred on substrates of poplar sawdust alone and poplar sawdust plus cattle manure deficient in sugar and nitrogen sources, but mycelial density was more sparse on the substrates. Also, growth in a solution extracted from these substrates was very meager. 3. In the substrates which varied with bulk density and moisture content optimum bulk density and moisture content for mycelial growth was 0.2g/cc and 72% on a dry weight basis, respectively, but the highest yield of fresh sporophores was obtained at the bulk density of 0.3g/cc and moisture content of 67%. 4. By increasing the ratio of rice bran in poplar sawdust the loss of total weight and ash, content at each stage was increased, and during the cultivation period of 75 days, loss of total weight of the substrates at inoculation was 17.8 to 28.8% and ash content increased about 12%. 5. 11 to 14% of the cellulose and 3 to 4% of the lignin content per original substrate were decreased without a great difference depending of the mixing ratio of rice bran. The soluble glucose concentration in the substrates was increased during the same period. 6. In the process of vegetative and reproductive growth of the fungus upon the substrates, the total nitrogen was increased in quantity per dry weight of sample but was reduced in absolute quantity to a minute extent. There is no great changes in content of organic nitrogen including amino acid nitrogen, and hydrolysable ammonium nitrogen during the vegetative growth period, but occurrence of sporophores resulted in a decrease in the nitrogen content of these forms. On the one hand, by an increase of additive amounts of rice bran, nitrogen contents of these forms were higher and the reduction range during the reproductive growth period became wider. 7. Mycelial growth of the fungus was accelerated in various liquid media supplemented with organic nitrogen sources such as peptone and yeast extract in comparison with addition of inorganic nitrogen sources. Furthermore, mycelial growth was mere vigorous in the media with higher content of organic nitrogen sources.
This study was carried out to investigated optimum mixing ratio of Korean natural Rhus verniciflua for production of functional oyster mushroom. Mycerial growth was some fast at addition of R. verniciflua sawdust, and not significant difference by increase of R. verniciflua substrate. Yields of fruiting body show the highest to 150.2 g/850 ml of medium which are addition 20% of R. verniciflua sawdust, and diameter of pileus and thick of stipes were the highest at addition 10% of R. verniciflua sawdust. The L value of stipes were the highest at addition 10% of R. verniciflua sawdust and the L value of pileus were decreased by increase of R. verniciflua substrate, but there was no significant difference in the a-value and the b-value.
Cultural characteristics and phylogenic relationships were investigated and classified among collected strains in Pholiota spp. which contain P. adiposa, P. squarrosa, P. nameko etc. They were tested on the four different media(PDA, MCM, YM, MEA) and sawdust(Alder, Oak, Pine, Popular) substrates. There was a little variation according to the media and sawdust substrates, although PDA and popular sawdust substrate seemed to be better. Most strains showed white colonies, but some strains were brown. Mycelial growth length differed according to the strains. To classify species, the internal transcribed spacer regions(ITS) of the ribosomal DNA(rDNA) repeats from Pholiota spp. were amplified using polymerase chain reaction(PCR) and then sequenced. According to the analysis of ITS sequences, they were classified into five clusters. Their spacer regions were $644{\sim}700$ nucleotides in length. The reciprocal homologies of each ITS region among these strains were ranged from $49.6{\sim}99.9%$. The phylogenic analysis might give a criterion to classify species in the collected strains.
Tile effects of addition of eggshell to sawdust substrate for the growth of F. velutipes were investigated. Eggshell used in this study contained 20.7% C, 0.81% N, 2530 ppm $P_2O_5$ and 44.37% Ca. The addition of eggshell resulted in the increase in bulk density and decrease of moisture content of the substrate. The addition of eggshell significantly increased the yield of the mushroom fruitbody. The addition rate of 15% (v/v), by 25% and at the rates of 5% and 10%, about 20%. Although the addition of eggshell to substrate did not improve the quality of mushroom, it increased the number of effective stipes as compared to control plot; approximately 13% more than in the control plot.
This study was carried out to investigate the suitability of various agricultural by-products as basal substrates for the mycelial growth and fruiting body formation of Hericium erinaceum. For this aim, oak sawdust, cotton waste, sugarcane bagasse, Job's tears, rice hull, Chinese cabbage, and coconut waste were used as sole or mixed substrate(s). Corn waste and rice bran were used as nutrient supplements. The growth and density of mycelium, yield of fruiting body, and biological efficiency were compared among tested substrates colonized by Hericium erinaceum. The best measurement of mycelial growth and density, yield of fruiting body, and biological efficiency in a laboratory test was found in a spawn substrate composed with oak sawdust 80% and rice bran 20%. The suitability of this spawn substrate composition for Hericium fruiting body production was testified through practical tests in plastic bottles (850 ml) in a mushroom farm which had bottle cultivation facility. However, test in a mushroom farm which had plastic bag cultivation facility, best production of Hericium fruiting body (520 g per one bag) was observed in a spawn substrate composed of cotton waste 40%, saw dust 40%, corn waste 10%, and rice bran 10%.
The nutritional value and yield of mushrooms depend on the substrate on which it is grown. This study sought to biofortify Pleurotus floridanus with calcium supplements and assess its effect on the yield and calcium levels. The experiment was set up in a 2 × 5 factorial and replicated thrice in a completely randomized design. Two calcium supplements, OML and OMW, were added to two growth media. The examination of total dry weight yield showed that calcium supplements OML and OMW in the sawdust medium containing wheatbran in the ratio 1:10 had a mean value of 4.37 g, which was significantly higher (P < 0.05) than that in the control (1.29 g). However, in the sawdust-only medium, there was no significant difference (p > 0.05) in the application of treatments. No significant difference (p > 0.05) was observed between the calcium types in both growth media. The mineral analysis showed that calcium levels were increased in harvested mushrooms with the addition of calcium OML and OMW to the growth media.

Required total substrates amounts for mushroom production are 212,186M/T in Korea. 80% of these total substrates amounts, 169,748 M/T is used for main substrates. Also 20%of these total substrates amounts, 42,438 M/T is used for additives. Main substrates 169,748 M/T is composed of sawdust, waste cotton, cotton seed hull, straw and com cob etc.. Additives 42,438 M/T is composed of rice bran, wheat bran and beet pulp etc. In the mushroom management, the cost of substrates purchase is composed for the most of management. Substrates amount is limited to supply, and the demand of mushroom substrates is on the increase continuously. So there is nothing but the cost of substrates are raising. Therefore the most important thing must develop the cheap substrates for the mushroom production.
