Quality Characteristics of Fish Cake made with Saury (Cololabis saira) Fishmeat (꽁치 어육을 이용하여 제조한 어묵의 품질 특성)

  • The purpose of this study was to investigate the overall preference of saury fish cake made. To reduce off flavor of saury and improve sensory properties of saury fish cake, different types of spices (ginger, garlic, basil and rosemary) and different types of vegetables (onion, carrot, paprica, cabbage and hot pepper) were added, after which sensory properties were evaluated. The results of preference test showed that ginger, rosemary, and onion scored the highest in terms of taste, and overall preference. Moisture, hardness and gumminess of saury fish cake with vegetables was reduced but increased during storage. On the other hand, cohesiveness and resilience were reduced. Finally, ginger and rosemary showed the lowest off flavor taste. Saury fish cake made with onion and hot pepper scored the highest in the preference test.

A Study on Sensory Properties of the Saury (Cololabis saira) Fishmeat Nuggets (꽁치 어육을 이용한 너겟의 풍미특성에 관한 연구)

  • The purpose of this study was to test the overall preference of Saury fishmeat nuggets. In order to remove off-flavor of Saury and to improve the sensory properties of Saury fishmeat nuggets, different concentrations of vegetables (onion, 0-20%), different types of spices (ginger powder, white pepper powder, garlic powder) and different types of vegetables (onion & hot pepper, onion & pimento, mushroom & hot pepper, and mushroom & pimento) were added and the sensory properties were evaluated. Different types of herbs (Anthemis nobillis, Rosemarinus offcinalis L) and oriental herb (Angelica gigas Nakai, Acanthopanax sessiliflorus Seed) extracts were included as well to preserve the antioxidants in the nuggets after reheating. The main ingredients included saury mince, mild pizza cheese, hydrated textured soy protein, and egg white powder. The samples were molded (dia. 4.5 cm, thickness 1.5 cm, 20 g), lightly battered and fried for 2 min (2 time) at $160^{\circ}C$. The samples were then frozen, reheated ($150^{\circ}C$, 20 min) and subjected to a sensory evaluation. In the sensory evaluation, Saury nuggets made with a vegetable concentration of 15% had the highest flavor, taste, and overall preference (V5). In addition, Saury nuggets made with 1 g of ginger powder and garlic powder scored the highest in the preference test (S2). Saury nuggets made with onion and pepper had the highest score in the preference test relative to all the other tested vegetables (SV1). Finally, in terms of the herb and oriental herb extracts, the nuggets made with the condensed extracts at a 1/20 ratio of Acanthopanax sessiliflorus Seed (AS) scored the highest in the preference test, since AS had the lowest off-flavor taste.

  • This study was conducted to prepare curry potato pancakes (CPP), curry fish balls (CFB) and steamed eggs (SE) using Pacific saury Cololabis saira as senior-friendly seafood and to determine the physical property stages and quality characteristics of the prepared food. Escherichia coli concentrations were undetected in all the products, which is considered an acceptable limit for senior-friendly foods. On applying the physical properties standards according to the Korean Industrial Standard, saury CPP, saury CFB, and saury SE were classified as the 1st, 2nd, and the 3rd stages as senior-friendly seafood, respectively. Regarding the nutritional properties per 100 g of the three types of senior-friendly seafood using saury according to the Korean food code, CPP had three types of nutrients (protein, riboflavin, and niacin), whereas CFB and SE had four (protein, riboflavin, niacin and calcium) and six (protein, vitamin D, vitamin C, riboflavin, niacin, and calcium) types of nutrients, respectively.

Effects of Saury Meat on Antihyperlipidemic and Antiarteriosclerosis Activities in Sprague-Dawley Rats (꽁치육의 고지혈증 유발 쥐에서의 항고지혈증 및 항동맥경화증 효능)

  • The effects of dietary supplementation of pacific saury on anti-hyperlipidemic activities were investigated using an animal test study in which normal rats were fed four different parts of saury, such as the whole body, meat, internal organs, or a mixture of head, caudal fin, and bone. Serum total lipid and triglyceride levels were significantly (p<0.05) reduced in rats fed saury meat at a dose of 200 mg/kg of body weight compared to hyperlipidemic control rats. There were also significant decreases in serum total cholesterol and LDL-cholesterol levels in the rats fed saury meat at 200 mg/kg of body weight. In addition, the atheroscrelosis index and superoxide dismutase in blood lipids were significantly (p<0.05) lowered in rats fed saury meat at 200 mg/kg of body weight compared to the control rats. In conclusion, our results indicate that saury meat contains unknown physiologically active components as than compared to other parts of saury, and has potential for use in the prevention of hyperlipidemic arteriosclerosis.

  • Interannual and decadal scale changes in body size of Pacific saury, catch and catch per unit effort were examined to investigate the environmental effects on the stock structure and abundance in the Tsushima Warm Current region. Interannual changes in thermal conditions are responsible for the different occurrence (catch) rates of sized group of the fish. Changes in body size due to environmental variables lead the stock to be homogeneous during the period of high abundance, while one of the reminder cohorts supports the stock during the period of low level of abundance. Migration circuits of two cohorts of saury stock are hypothesized on the basis of short life span and spatio-temporal changes of the stock structure in normal environmental conditions. Changes in upper ocean structure and production cycles by the decadal scale climate changes lead changes in stock structure and recruitment, resulting in the fluctuation of saury abundance. Hypothesized mechanism of the effects of climate changes on stock structure and abundance is illustrated on the basis of changes in thermal regime and production cycle.

  • The results which were examined changes In contents of constitutive lipid and fatty acid during the natural drying of Pacific Saury were as follows. During the natural drying of Pacific Saury, offal lipid and moisture contents gradually decreased. In the survey of rancidity degree extracted lipid of Pacific Saury, peroxide value was gradually Increased, TBA and acid value were radically increased thereafter 9 days of drying. Neutral lipid, phospholipid and glycolipid contents of total lipid were 95%, 4% and 2%, respectively, and in the neutral lipid, content of TG was more than 90%, and in the phospholipid, contents of PC and PE were 45∼85%, 27∼34%, respectively. Fatty acid composition of total lipid was substantially higher in C18:0 and C20:1, C22:1, C22:6 contents and fatty acid composition of neutral lipid was higher In C22:1, C22:1, contents and fatty acid composition of phospholipid was the highest in C22:6 content. In the fatty acid composition of glycolipid, monounsaturated fatty acid content has substantially higher, C16:0 content was gradually Increased In saturated fatty acid and C22:1 content was gradually decreased in monounsaturated fatty acid. It showed that fatty acid composition of triglyceride has higher in monounsaturated fatty acid content and contents of C20:1, C22:1 was gradually decreased.

Effect of Chlorine Dioxide Treatment on Microbial Safety and Quality of Saury during Storage (이산화염소 처리가 꽁치의 저장 기간 중 미생물학적 안전성 및 품질변화에 미치는 영향)

  • We determined the effect of chlorine dioxide ($ClO_{2}$) treatment on microbial growth and quality of saury. Saury samples were treated with aqueous $ClO_{2}$ at 3, 10, and 50 ppm. After the treatment, saury samples were stored at -20$^{\circ}C$ and 4$ ^{\circ}C$, respectively. Saury samples treated with $ClO_{2}$ had significantly lower total bacterial counts during storage. In particular, treatment of 50 rpm $ClO_{2}$ decreased total bacterial count most significantly among the $ClO_{2}$ treated saury samples. After 4 days, populations of total bacteria for the control reached 6.43 log CFU/g, while the sample treated with 50 ppm of $ClO_{2}$ had 5.47 log CFU/g at the 9th day of storage. $ClO_{2}$ treatment also delayed increase in the population of psychrotrophic bacteria on saury. The pH of saury samples decreased with increase of $ClO_{2}$ concentration. Volatile basic nitrogen (VBN) and thiobarbituric acid reactive substance (TBARS ) values of saury samples increased during storage, regardless of $ClO_{2}$ concentration. Sen-sory evaluation of saury samples showed that treatment with $ClO_{2}$ could improve the quality of saury. These results indicate that $ClO_{2}$ treatment could be useful in improving microbial safety and quality of saury.

  • Among dark fleshed fishes, especially, Pacific saury has not well been used for processing because of its properties of weak tissue and high lipid content. If a simple and modified technique such as liquid smoking method for Pacific saury processing is applied successfully, it could give a lot of advantages on the field of fishery processing. In the aspects of effective utilization of dark fleshed fishes, therefore, we have attempted to process seasoned-dried Pacific saury with commercial liquid smoke. (omitted)
