고지방식이 및 운동훈련이 흰쥐 간조직의 총지방산 및 인지질 지방산패턴에 미치는 영향 (High Fat Diet or Exercise Training Alters Hepatic Total and Phospholipid fatty Acid Compositions in Rats)

  • Effects of high fat diet and/or endurance exercise training on hepatic total and phospholipid(PL) fatty acid compositions were evaluated in rats fed one of the following diets for 31 days. control diet(CD, 5 wt% corn oil) or high fat diet(HFD, 35 wt% corn oil). Half of the rats in each group were exercise-trained regularly on a treadmill for 90 minutes/day during the entire feeding period. Total and PL fatty acid compositions of hepatic lipid extracts were determined by a gas-liquid chromatograph),. Endurance exercise training did not change the daily food intake, but significantly reduced body weight gain and feed efficiency ratio of rats, which were most prominent in animals fed HFD. Exercise training did not significantly change the percentages of ∑saturated fatty acids (SFA) and ∑polyunsaturated fatty acids(PUEA), but decreased the percentage of ∑monounsaturated fatty acids(MUFA) in hepatic total fatty acids, which might be associated with the decrease in (equation omitted) 9-desaturation index of hepatic total fatty acid metabolism. Exercise training significantly lowered the percentages of 16 : 0 and 22 : 5$\omega$3, and increased the percentages of 20 : 1 and 20 : 3$\omega$3 in both total and PL fatty acid compositions in rat liver. Both total fatty acid and PL fatty acid compositions of rat liver responded more sensitively to changes in dietary fat content than to endurance exercise training in this study. Feeding HFD, whoch contains high level of linoleic acid(LA, 18 : 2$\omega$6), significantly decreased the percentages of ∑SFA and $\Sigma$MUFA, and increased the percentages of ∑PUFA and ∑$\omega$6 fatty acids of hepatic total fatty acids. Hepatic total fatty acid composition was affected by dietary fat content and dietary fatty acid composition more sensitively than those found in hepatic PL fatty acid composition. HFD significantly decreased most of desaturation indices, while exercise training significantly decreased elongation index(20 : 5$\omega$3⇒22 : 5$\omega$3) of hepatic total and PL fatty acid metabolism in rats. Effects of Flaxseed Diets on Performance, Carcass Characteristics and Fatty Acid Composition of Hanwoo Steers

  • This study was conducted to determine the effects of dietary level of whole flaxseed (WFS; 0, 10 and 15%) on performance, carcass characteristics and fatty acid composition of serum and subcutaneous, perirenal, and intramuscular adipose tissues of Korean Hanwoo cattle. The daily gains were not different among treatments. Dietary inclusion of WFS decreased (p<0.05) feed intake but improved (p<0.05) feed conversion ratio (feed/gain). Backfat thickness and marbling score were increased (p<0.05) by dietary WFS. Carcass weight, dressing percentage, loin-eye area, and carcass yield and quality were not different among treatments. The proportion of C18:3 in serum and, to a lesser extent, in adipose tissues were increased (p<0.01) by dietary WFS, indicating that lipids from WFS escaped ruminal biohydrogenation. Animals fed WFS had lower proportions of saturated fatty acid (SFA; C14:0 and 16:0) and higher proportions of polyunsaturated fatty acids (PUFA; C18:2. 18:3, 20:2, 20:4, 20:5 and 22:6) in perirenal and intramuscular fat than animals fed diets without WFS, resulting in an increased PUFA/SFA ratio. Furthermore, feeding WFS increased (p<0.01) proportions of $\omega$-3 and $\omega$-6 fatty acids in intramuscular fat but decreased (p<0.05) the $\omega$-6/$\omega$-3 ratio. Relative treatment effects were similar between 10 and 15% WFS. Feeding WFS can effectively alter composition of adipose tissues with enhanced feed conversion ratio.

어육의 배소에 의한 지질산화에 관한 연구 I. 적색육어의 배소 및 재가열에 의한 지질의 산패 (Lipid Oxidation in Roasted Fish Meat 1. Rancidity in Roasted and/or Reheated Dark Muscled Fish)

  • 어류의 배소 산화에 대한 체계적인 기초자료를 얻기위해 적색육어인 고등어와 꽁치를 온도와 시간을 달리하여 배소한 것과 배소한 시료를 저온 $(5^{\circ}C{\pm}2^{\circ}C)$에서 저장한 후 가열 및 재가열 했을 때의 지질 산패도를 조사하였다. 총지질의 지방산 조성은 포화산의 경우 고등어가 $36.7\%$, 꽁치가 $28.4\%$ 였으며, monoene산은 $33.0\%$$20.2\%$였다. 또한 polyene산에서는 고등어가 $29.9\%$ 인 반면 꽁치는 $49.7\%$였다. 고등어와 꽁치의 불포화지방산대 포화지방산 (UFA/SFA)의 비는 1.7과 2.5였으며, 특히 고등어는 총 지질 함량이 $16.5\%$로 꽁치보다는 높지만 UFA/SFA는 오히려 낮은 지방산 조성상의 특징을 나타내었다. 과산화 물가는 고등어에 있어서는 배소, 가열 및 재가열 후 계속 증가하였으며, 최고값은 51meq/kg였다. 꽁치는 가열 후까지 증가하였으나, 재가열 후 감소하였다. 카르보닐가의 경우 적색육어인 고등어나 꽁치 모두 배소에 의해 생성된 카르보닐화합물이 가열, 재가열 후에도 계속 증가하였으며, TBA가는 배소 및 가열 후 증가하였으나 재가열 후 크게 감소하였다. 배소, 가열 및 재가열 후 유리지방산의 생성은 지속적으로 증가하는 경향이었으며 특히 불포화지방산의 비율이 높은 꽁치가 고등어보다 생성된 유리지방산이 많았다. 공역이중결합은 배소, 가열 및 재가열 후 지속적으로 증가하였으며 특히 $180^{\circ}C$에서 배소한 것이 $200^{\circ}C$$220^{\circ}C$에서 배소한 것보다 많이 생성되었다. 따라서 같은 적색육어라도 배소에 의한 산화의 경우 지질 함량보다는 고도불포화지방산이 더 큰 영향을 받았으며 또한 어피가 열을 차단하는 역할을 하여, 초기 산화를 억제하는 효과를 나타내었다.

어미 쥐의 $\omega$3계 및 $\omega$6계 지방산 식이가 제2세대 쥐의 뇌조직 지방산 성분에 미치는 영향 (Effect of Maternal Dietary $\omega$3 and $\omega$6 Polyunsaturated Fatty Acids on the Fatty Acid Composition of the Second Generation Rat Brain)

  • The change in fatty acid composition in brain tissue of the second generation rats(Sprague-Dawley strain) was studied using four different fat diets(Corn oil=CO, Soybean oil=SO, Perilla oil=PO, Fish oil=FO, 10% by Wt). The experimental diets were started from pregnancy in four different groups, each consisting of 9 rats. The seound generation rats were fed the same diet as their mothers. Animals were anesthetized with ether at 0, 3, 9 & 16 weeks of age. Whole brains were dissected out, brain tissues were, then, homogenized and lipids were extracted from brain tissues. The fatty acid compositions were measured after methylation by gas-liquid chromatography at 0, 3, 9 and 16 weeks of age of offspring. The changes in the relative concentrations of polyunsaturated fatty acids(PUFA) or more specifically docosahexaenoic acid(22 : 6, $\omega$3, DHA), the major $\omega$3 fatty acid component in rat brain at different age were similar to changes in the amount of DNA in brain tissue showing the maximum value during the lactation. The changes in saturated fatty acid(SFA) content showed a contrasting patten to those of PUFA, while monounsaturated fatty acid(MUFA) increased steadily throughout the experimental period. At birth, the relative concentrations of $\omega$3 series fatty acids the relative concentrations of PUFA, MUFA and SFA converged to very similar values respectively regardless of the dietary fatty acid compositions. In brain tissue, it is of value to note that while changes in relative concentrations of linoleic acid (18 : 2, $\omega$6, LA) and arachidonic acid(20 : 4, $\omega$6, AA) showed a precursor-product-like relationship, $\alpha$-linolenic acid(18 : 3, $\omega$3, $\alpha$-LnA) and DHA showed a different pattern. Even when the $\omega$3 fatty acid content in very low in maternal diet(CO), the second generation rat brain tissues appeared to secure DHA content, suggesting an essential role of this fatty acid in the brain. The fact that a large amount of $\alpha$-LnA in the maternal diet did not have a significant effect on the second generation rat brain $\alpha$-LnA content, indicated that DHA seemed essential component for the brain development in our experimental condition. In all groups, the relative content of $\alpha$-LnA in the brain tissues remained relatively constant throughout the experimental period at the very low level. The study of the specific concentrations and essential role(s) of DHA in each parts of brain tissue is needed in more details.

Evaluation of Fatty Acid Composition in Korean Native Chicken Breast Meat

  • This study was conducted to investigate the composition of the fatty acids in the breast meat of Red-brown Korean native chickens (KNC-R). This study used a total sample of three hundred eighty-two KNC-R (males: 190, females: 192). We used the fatty acid methyl ester (FAME) method to extract the fatty acids. A 2-way ANOVA of the R program was used to assess the effects of batch and sex on each fatty acid trait. Analysis of the fatty acid in the sampled population showed that the predominant fatty acid was oleic acid (C18:1; 28.252%) which is monounsaturated fatty acid (MUFA), followed by palmitic acid (C16:0; 20.895%), saturated fatty acid (SFA), and two omega-6 polyunsaturated fatty acid (PUFAs): linoleic (C18:2; 15.975%), and arachidonic (C20:4; 10.541%). Indices used to evaluate the nutritional quality of fat in the diet: ratio between PUFAs and SFAs (P/S), thrombogenicity index (TI), and atherogenicity index (AI) were calculated and were 0.959, 0.814, and 0.355, respectively. Currently, meat consumers need healthier fatty acids. Therefore, information on the content of fatty acid in chicken meat is very important for meat consumers in choosing the type of the meat to be consumed.

사업체 집단급식소 근로자의 지방산 섭취 조사 연구 (Dietary Fatty Acid Intakes of Employees in Employee Feeding Operations)

  • This study was carried out to evaluate the fatty acid intakes of employees in employee feeding operations in Seoul and to provide prudent dietary guidelines with special concern on dietary fat. Four establishments were selected in large scale group and other four were selected as small scale group according to feeding numbers and food cost. Food intake was measured by substracting the leftover from the averaged portion amount. The leftover was measured by the modified aggregate selection plate waste measurement technique. The results were as follows : Employees from the large scale institution consumed more energy, protein, carbohydrate and niacin compared to those from the small scale institution(p<0.05). The mean calorie compositions of carbohydrate, protein and fat of all subjects were 66.7, 16.4 and 16.9%. The mean fat intake was 12.1g/lunch. Linoleic acid(C18:2 $\omega$6, 3.67g) was the most abundant fatty acid contained in the diet, followed by oleic acid (C18:1 $\omega$9, 3.53g) and palmitic acid(C16:0, 1.83g). The subjects consumed 5.2g polyunsaturated fatty acids(PUFA), 4.6g monounsaturated fatty acid(MUFA), 3.2g saturated fatty acid(SFA) per lunch per person. The average ratios of P/M/S and $\omega$6/$\omega$3 fatty acids were 1.6/1.5/1.0 and 8.5/1/0., respectively. the dietary $\omega$3 fatty acid status can be improved, even though the ratios found belong to the desirable range, by including $\omega$3 fatty acid rich-foods such as bean products and seafoods more frequently in the diet. Caution is needed for higher unsaturated nature of $\omega$3 series fatty acids to be prevented from peroxidation.

Effect of all-trans retinoic acid on casein and fatty acid synthesis in MAC-T cells

  • Objective: Caseins and fatty acids of milk are synthesized and secreted by the epithelial cells of the mammary gland. All-trans retinoic acid (ATRA), an active metabolite of vitamin A, has been shown to promote mammary development. This study was conducted to determine the effect of ATRA on casein synthesis and fatty acid composition in MAC-T cells. Methods: MAC-T cells were allowed to differentiate for 4 d, treated with ATRA (0, 1.0, 1.5, and 2.0 μM), and incubated for 3 d. We analyzed the fatty acid composition, the mRNA expression of casein and fatty acid synthesis-related genes, and the phosphorylation of casein synthesis-related proteins of MAC-T cells by gas chromatography, quantitative polymerase chain reaction, and western blotting, respectively. Results: In MAC-T cells, ATRA increased the mRNA levels of αS1-casein and β-casein, janus kinase 2 (JAK2) and E74-like factor 5 of the signal transducer and activator of transcription 5 β (STAT5-β) pathway, ribosomal protein S6 kinase beta-1 (S6K1) and eukaryotic translation initiation factor 4E binding protein 1 of the mammalian target of rapamycin (mTOR) pathway, inhibited the mRNA expression of phosphoinositide 3-kinase and eukaryotic initiation factor 4E of the mTOR pathway, and promoted the phosphorylation of STAT5-β and S6K1 proteins. Additionally, ATRA increased the de novo synthesis of fatty acids, reduced the content of long-chain fatty acids, the ratio of monounsaturated fatty acids to saturated fatty acids (SFA), the ratio of polyunsaturated fatty acids (PUFA) to SFA, and the ratio of ω-6 to ω-3 PUFA. The mRNA levels of acetyl-CoA carboxylase 1, fatty acid synthase, lipoprotein lipase, stearoyl-CoA desaturase, peroxisome proliferator-activated receptor gamma, and sterol regulatory element-binding protein 1 (SREBP1) were enhanced by ATRA. Conclusion: ATRA promotes the synthesis of casein by regulating JAK2/STAT5 pathway and downstream mTOR signaling pathway, and it improves the fatty acid composition of MAC-T cells by regulating SREBP1-related genes.

들국화분말, 생균제 및 Selenium 복합 급여가 비육기 돈육의 육질 특성에 미치는 영향 (Effect of Feeding Complex of Wild Chrysanthemum Powder, Probiotics and Selenium on Meat Quality in Finishing Porks)

  • 총 50두의 돼지를 출하하기 전 55일 동안 일반 사료에 0.3% 들국화분말, 0.1% 생균제, 0.1% 셀레늄을 급여한 시험구 돼지의 육질특성을 조사하였다. 대조구에 비하여 일반성분, 콜레스테롤함량, 이화학적 특성 및 육색의 변화에 유의적인 차이가 나타나지 않았다. 조직감의 경우 경도는 유의적으로 높았으나 파쇄성, 응집성, 탄력성, 검성 및 씹힘성에는 유의적인 차이가 나타나지 않았다. 관능검사의 경우 신선육의 종합적인 기호도, 조리육의 연도, 다즙성 및 종합적기호도가 대조구보다 높게 나타났으나, 신선육의 육색, 드립 및 마블링 지수, 조리육의 육색, 육향 및 맛에서는 유의적인 차이가 나타나지 않았다. 지방산 조성의 경우 처리구의 myristic acid, palmitoleic acid, oleic acid, unsaturated fatty acid(UFA), MUFA(monounsaturated fatty acid), MUFA/SFA(saturated fatty acid) 및 n-6/n-3 ratio가 높게 나타났으나, palmitic acid, stearic acid, linolenic acid, arachidonic acid, SFA, essential fatty acid(EFA)의 지방산의 함량은 낮게 나타났다.

식이 오일과 토코페롤 급여가 돈육의 지방산, 아미노산, TBARS, VBN 및 관능적 품질에 미치는 영향 (Effects of Dietary Oils and Tocopherol Supplementation on Fatty acid, Amino acid, TBARS, VBN and Sensory Characteristics of Pork Meat)

  • 우지가 5% 첨가되어 있는 일반적인 비육후기사료를 급여한 돈육(C), 우지 함량 중 2%를 들깨유로 대체 급여한 돈육(T1), 들깨유 2%에 비타민 E를 250ppm 첨가한 돈육(T2), 오징어유 2%를 대체 급여한 돈육(T3), 오징어유 2%에 비타민 E를 첨가 급여한 돈육(T4), CLA를 2% 대체 급여한 돈육(T5)의 육질특성을 조사한 결과는 다음과 같다. 지방산 조성에 있어서 오일간에는 T5가 다른 세 처리구들(C, T1, T3)에 비하여 SFA와 EFA는 높은 반면 UFA, MUFA, UFA/SFA MUFA/SFA는 낮았다. 총아미노산 함량은 오일간에는 T3가 다른 세 처리구들 (C, T1, T5)보다 높았으며, 동일한 오일에서는 비타민 첨가에 따라 높게 나타났다. TBARS의 경우 오일간에는 C와 T1에 비하여 T3와 T5가 높았고, VBN은 C

  • This study was designed to observe the effects of the mixed diets of edible mushrooms and vegetables oils on the lipid component and fatty acid composition in liver of the diet induced hydpercholesterolemic rats. Ten groups of male S.D. rats were fed a basal diet supplemented with 5% of one of three mushrooms(G.I, L.e, A.j) and 10% of one of three vegetable oils (olive ,safflower perilla) for three weeks. In liver, total cholesterol concentration was significantly low in group 3 (olive oil 10 % + L. edodes 5%) and 6 (safflower oil 10 % $_2$L. edodes 5%) , triglyceride concentration was low in groups 8 (perilla oil 10 % + g. lucidum 5%) and 9 (perilla oil 10% + L. edodes 5%) and phospholipid concentration was significantly low in groups 3, 5, (safflower oil 10 % + G.lucidum 5%), 6, 7 (safflower oil 10 % + A .judae 5%) 8, 9 and 10 (perilla oil 10% + a. judae 5%). in the fatty acid composition of total lipid inliver, monounsaturated fatty acid (MUFA) concentration s were high in groups 2 (olive oil 105 + g. lucidum 5%), 3, and 4 (olive oil 10% + A. judae 5%) and all the perilla oil groups, polyunsaturated fatty acid (PUFA) and linoleic aicd concentrations were signifciantly high in all the safflower oil groups. In the fatty acid composition of liver phospholipid , PUFA concentrations were ghih but MUFA concentrations were low. In the triglyceride component, MUFA were some more than saturated fatty acid (SFA) . In the cholesteryl ester component, MUFa concentrations were significantly high. In the fatty acid composition of liver lipid components, linholeic acid was high in the PUFA and so it was major fatty acid. Eicosapentaenoic acid (EPA) of phospholipid component in liver was significantly high.
