The Change of Major Cellular Fatty Acids Composition and Morphology of Escherichia coli Affected by Toxic Substances

  • This study was performed to compare the growth rates, cellular fatty acid compositions and morphology by using electron microscope of Escherichia coli (E. coli) grown in various conditions including different concentrations of phenol, CdCl₂ and HgCl₂. Ninety eight E. coli strains were isolated from Naktong river and human feces. The content of unsaturated fatty acids, especially 16:1ω7c and 18:1ωc increased as the concentration of phenol and CdCl₂ increased. The content of unsaturated fatty acid increased up to 50 ppb of HgCl₂, but decreased at 75 ppb of HgCl₂. There were more unsaturated fatty acids than saturated fatty acid in the presence of toxic substances. However, the ration was reversed when the affected E. coli was transferred to toxic substance free fresh trypticase soy broth medium. Also, by using transmission electron microscope these cells were observed to various morphological deformation by heavy metals and their deposition on the surface. From these results, we suggested that the changes of major fatty acids composition and morphology of E. coli may be considered to indicate contaminated levels of heavy metals or organic solvents. The information presented here may be useful in predicting effects of heavy-metal and organic solvent contamination in streams and provides a basis for further studies of metal or organic solvent effects on microbial communities.

무항생제 사육방식으로 생산된 한우육내 코티졸과 지방산 함량 (Cortisol and Fatty Acid Contents in Hanwoo Meat Produced by Antibiotics-free Rearing System)

  • 본 시험은 무항생제 사육방식이 한우육내 코티졸과 지방산 함량에 미치는 영향을 구명하고자 실시하였다. 무항생제 및 관행 축산으로 생산된 한우육 1등급 등심(M. longissimus)부위를 3가지의 브랜드별로 각각 3회씩 구매하여 시료로 공시하였고, 분석한 결과는 다음과 같다. 한우육 등심내 코티졸 함량은 무항생제 처리구에서 관행사육 처리구 대비 유의적(p=0.0176)으로 낮게 나타났으며, 포화지방산 및 불포화지방산 함량에서는 유의적(p>0.05)인 차이를 나타내지는 않았으나, 관행사육 처리구에서는 포화지방산이, 무항생제 처리구에서는 불포화지방산이 각각 높은 경향으로 분석되었다. 또한, 불포화지방산 중 n-3과 n-9 지방산을 제외한 n-6 지방산(linoleic acid, ${\gamma}$-linolenic acid)에서 유의적(p<0.01)인 차이를 보였다. 또한, 한우육내 코티졸 농도와 n-6 지방산 농도간의 상관관계를 분석한 결과, 특히 linoleic acid와 유의적(p=0.0140)으로 부(-)의 상관관계가 성립되었다. 결과적으로, 무항생제 인증으로 사육된 한우육은 관행적으로 사육된 한우육에서 보다 상대적으로 코티졸 함량이 낮았으며, 건강에 유익한 불포화지방산 함량이 다소 높은 경향으로 분석됨으로써 육질을 향상시키는 것으로 나타났다.

홍어의 콜레스테롤과 지방산 함량 조사 연구 (Studies on the fatty acids and cholesterol level of Raja Skate)

  • To investigate of the content of fatty acids and cholesterol level in Raja Skates, the skate was purchesed from Yangdong Fisheries market in Kwangju, Korea. The experimental skate contained moisture 77.1%, crude protein 20.5%, crude lipid 0.68% and ash 1.72% as the general components. The fatty acids composition of skate are 28 kinds, such as 10 kinds of saturated fatty acid and 18 kinds of unsaturated fatty acid. There are 5 kinds of odd numbered fatty acid, such as C15:0, C17:0, C19:0, C25:0. Lignoceric acid shows 11% content. As an unsaturated fatty acid, getoleic acid, C22:1: selecholeic acid, C24:1:9, 12-hexadecadienic acid, C16:2: trans-linolelaidic acid, C18:2:13, 16-docosadienoic acid, C22:2: are analyzed as the particular one. The p/s ratio of skates is 1.02 and n-3/n-6 ratio of Skates is 0.82, respectively. The content of cholesterol level of Skates muscle is less than 20mg%, and liver contains 300-500 mg% and Nechang-tang contains 100mg% each.

혼합 생균제 급여가 한국 토종닭의 생산성과 가슴살의 지방산 조성에 미치는 영향 (Growth Performance and Fatty Acid Profiles of Korean Native Chicken Fed Diets with Mixed Probiotics)

  • This study aimed to investigate the effects of dietary supplementation of mixed probiotics on growth performance and fatty acid profiles of Korean native chicken and to provide information regarding producers. Ninety six Korean native chicken (48 males and 48 females, Hanhyup-3-ho) were allocated to 16 wire cages with 4 treatments, 4 replicates and 6 chicks (3 males and 3 females) per wire cage and fed one of four diets containing 0, 0.5, 1 and 1.5% mixed probiotics for 6 weeks. There were no differences among treatments in growth performance of Korean native chicken. For fatty acid profiles, no statistically differences in each fatty acid, total saturated fatty acid and unsaturated fatty acids were observed in all treatments. In the present study, irrespective of statistically differences, inclusion of mixed probiotics tended to improve growth performance, reduce saturated fatty acid and increase unsaturated fatty acids in breast muscles from Korean native chicken compared to controls.

규산시용량(珪酸施用量)이 수도(水稻)의 지방산(脂肪酸) 및 Sterol 조성(組成)에 미치는 영향(影響) (Effect of Silicates on the Fatty Acid and Sterol Composition of Paddy Rice)

  • 1. 식물체(植物體) 중(中) 전생육기간(全生育期間)동안 검출(檢出)된 지방산(脂肪酸)의 종류(種類)는 $C_{12:0}$, $C_{14:0}$, $C_{16:0}$, $C_{16:1}$, $C_{16:2}$, $C_{18:0}$, $C_{18:1}$, $C_{18:2}$, $C_{18:3}$, $C_{20:2}$와 몇종(種)의 미동정(未同定)된 지방산(脂肪酸)으로 구성(構成)되어 있었다. 2. 규산흡수양(珪酸吸收量), 건물중(乾物重) 및 수량(收量)은 unsaturated fatty acid/saturated fatty acid와 최고분얼기(最高分蘖期) 및 출수기(出穗期)에는 유의적(有意的)인 정(正)(+)의 상관(相關)이 있었으며 수확기(收穫期)에는 유의적(有意的)인 상관(相關)은 없었으나 전반적(全般的)으로 역(逆)(-)의 관계(關係)가 있었다. 3. 식물체중(植物體中) UFA/SFA 비(比)의 평균치(平均値)는 최고분얼기(最高分蘖期) 및 출수기(出穗期)에서는 토양중(土壤中) 규산함량(珪酸含量)이 180ppm까지는 규산함량(珪酸含量)이 높을수록 증가(增加)하였고, 규산자원(珪酸資源) 200kg/10a 시비구(施肥區)(약(約) 410ppm)에서는 감소(減少)하였다. 4. 최고분얼기(最高分蘖期)의 sitosterol/stigmasterol 비(比)는 토양중(土壤中) 규산농도(珪酸濃度)가 높을수록 계속 증가(增加하였으나, 출수기(出穗期)에 있어서는 그 비(比)가 토양중(土壤中) 규산농도(珪酸濃度)를 180ppm 조절시(調節時)까지는 증가(增加)하다가 200kg/10a 시용(施用)(410ppm)에서는 감소(減少)하였다.

Variations in the Chemical Compositions of Peanut Mutants Induced by Gamma Radiation

  • This study was carried out to investigate the chemical composition of peanut mutants induced by gamma radiation (Co-60) at 300 Gy in seeds of the cultivar Shinnamkwang. The protein contents of twenty-eight peanut mutants ranged from 23.3% to 31.7% and were increased by from 0.5% to 8.4% in fifteen mutants lines from the 26.8% of the original variety, cv. Shinnamkwang. Lipid contents of in mutants ranged from 43.2% to 53.5%, an increase of 0.2% to 5.7% from the 47.8% of the original variety. The range of unsaturated oleic acid in 28 mutants was from 38.9% to 56.9% an increase of from 1.3% to 14.0% from the 50.6% in the original variety. Linoleic acid, the highest unsaturated fatty acid, constituted 32.6% meanly of mutants, it was 17.4% lesser than oleic acid, ranging from 25.9% to 42.0%. Palmitic acid (16:0) contents ranged from 8.6% to 11.1%, and the mutant line-9 had the highest content. The ratio of oleic to linoleic acid was 0.9 to 2.2. A negative coefficient (r=-0.98**) was obtained between oleic and linoleic acid, but for other fatty acids, no significant relation was observed. Similarly, a negative coefficient of r=-0.68**was observed between saturated and unsaturated acids. The sucrose compositions of mutants ranged from 2.6% to 6.2%.

Seamustard (Undaria pinnatifida) Improves Growth, Immunity, Fatty Acid Profile and Reduces Cholesterol in Hanwoo Steers

  • The study was designed to evaluate the effect of 2% seamustard (Undaria pinnatifida) by-product (SW) on growth performance, immunity, carcass characteristics, cholesterol content and fatty acid profile in Hanwoo steers. A total of 20 Hanwoo steers (ave. 22 months old; 619 kg body weight) were randomly assigned to control (basal diet) and 2% SW supplemented diet. Dietary SW supplementation significantly (p<0.05) improved average daily gain and gain:feed ratio as well as serum immunoglobulin G concentration. Chemical composition and quality grade of meat and carcass yield grades evaluated at the end of the trial were found to be unaffected by SW supplementation. Dietary SW significantly reduced meat cholesterol concentration (p<0.05). Dietary SW supplementation significantly reduced the myristic acid (C14:0) and palmitoleic acid (C16:ln-7) concentration, while SW increased the concentration of stearic acid (C18:0) and linolenic acid (C18:3n-3) compared to control (p<0.05). Dietary SW supplementation had no effect on saturated fatty acids (SFA), unsaturated fatty acids, poly unsaturated fatty acid (PUFA) or mono unsaturated fatty acid content in muscles. A reduced ratio of PUFA/SFA and n-6/n-3 were found in SW supplemented group (p<0.05). In conclusion, 2% SW supplementation was found to improve growth, immunity and fatty acid profile with significantly reduced cholesterol of beef.

녹두나물 성장과정중의 지질 및 지방산변화에 관한 연구 (Changes of Lipid and Free Fatty Acid in Mung-bean Sprouts during Growth)

  • The changes of various lipid content and fatty acids composition of mung-bean sprout during 6 days. The results are summarized as follows 1) The total lipid contents of mung-bean sprouts are generally decreased during growing. 2) On T.L.C. gram, triglyceride contents are decreased and free fatty acids and sterol are increased with time. 3) The ratio of unsaturated fatty acids to saturated fatty acids U/S are increased by six times after 4 days of mung-bean germination. 4) The contents of palmitic acid as main fatty acid in the mangbean but oleid, linoleic acid were increased after 2 days, 4 days, 6 days. 5) Total lipids from mung-bean sprouts contained fatty acid in order of linoleic acid, oleic acid. 6) The content of essential fatty acid are rich in 4 days.

시중 유통 자장면의 지방함량과 지방산 조성 조사 (Studies on the Fat Content and Fatty Acid Composition of the Black-bean-sauce Noodles in the Chinese Restaurants)

  • In this study, we determined lipid content, total fatty acid composition, trans fatty acid(tFA) content, and acid value of twenty black-bean-sauce noodles collected in Seoul city area. Total lipid contents of twenty samples were determined to be 3.33~9.23% on wet base. Total unsaturated fatty acids were from 47.83% to 83.18%(mainly oleic and linoleic acid). Total saturated fatty acids ranged from 16.06% to 51.48%. Besides, tFA contents in total lipid of samples were ranged from 0.38% to 1.39%, equivalent to 20 to 80mg per 100g of black-bean-sauce noodles. Acid values of lipids extracted from samples ranged from 0.56 to 2.88.

오존처리가 인삼분말의 지방산과 유기산 함량 및 향미특성에 미치는 영향 (Effect of Ozone Treatment on the Changes of Fatty Acids, Organic acids, and Sensory Properties in Ginseng Powder)

  • As a preliminary experiment to investigate the effect of ozone sterelization on the ginseng powder, the changes of fatty acid composition and organic acid content and sensory properties in ginseng powder treated with ozone was investigated. Ginseng powder was treated with 0.5 ppm ozone for 24 hours and 48 hours, respectively. With increase in ozone treatment time, the content of crude lipid and increase. Contents of unsaturated fatty acid-linolenic acid, linoleic acid, and oleic acid, etc.-decreased with ozone treatment time, whereas saturated fatty acid or same number-stearic acid-increased odor, bitter taste, roasted taste and sweet taste were thiner with ozone treatment times, but pungent taste was thicker with those treatment. These changes of ordors and tastes of ginseng powder with ozone treatment were predicted by oxydation of lipids, flavor components and saponins.
