A Study on Preference and Promoting' Consumption of Slice Raw Fish to Conduct a Questionnaire Survey of Citizens of Busan (부산시민을 대상으로 한 생선회 선호도 실태 및 소비촉진 방안)

  • The objective of this study consists of facilitating seafood consumption by increasing its intake opportunities for consumer through analysis of sliced raw fish. A study on sliced raw fish consumption was conducted on 630 citizens of Busan(252 men and 378 women), attending high school and university, and employedas housekeepers and salaried employees. The goal of the study was to assess the attitude and degree of satisfaction obtained from eating sliced raw fish and ultimately to promote greater seafood consumption. A self-administered questionnaire was used to record the results. The results were as follows : About sixty percent of the respondents appeared to like or not to be reluctant to eating sliced raw fish. The main reasons for favoring sliced raw fish were its taste and nutritious effects. All ages liked sliced raw fish, but teenaged women, on average, tend to dislike sliced raw fish. The most preferred sliced raw fish was flounder. Most of the panelists preferred korean rock fish, and red sea bream due to their ordinary muscle. Sliced raw fish of the 2nd and 3rd variety were the most popular. For most of the sliced raw fish, the own-price elasticity came out to be relatively low. This can be explained by the fact that sliced raw fish is characteristically purchased based more on quality and freshness, than on price. SINGSINGWHE(SSW)-fresh sliced raw fish should be stored at 0$^{\circ}C$ for no longer than 10hrs. Taste, nutritional value and low price have the potential to promote the consumption of seafood. Factors which can reduce the consumption of sliced raw fish were safety due to Vibrio septicemia, rainy day, indistinct origin, and high rices. To promote sliced raw fish consumption, the subjects recommended the quality improvement and low price.

Selection of Emergent Plants as for the Nesting Site by the Breeding Birds on the Marsh of Paldang Dam and Gyungan-cheon (팔당댐과 경안천 습지에 번식하는 조류의 둥지 장소로서의 정수식물의 선택)

  • This study was conducted on the marsh of Paldang dam and Gyungan-cheon, Gyeonggi-do province. 6 species bred on the emergent plants and the nests of Common Coots Fulica atra, Common Moorhens Gallinula chloropus, Great Reed-Warblers Acrocephalus orientalis, Yellow Bitterns Ixobrychus eurhythmus, Little Grebes Podiceps ruficollis and Great Crested Grebes Podiceps cristatus were found. The main vegetations of the nests were Narrow Leaf Cattails Typha angustata, Reeds Phragmites communis, and Wild Rices Zizania latitolia. Particularly, Narrow Leaf Cattails were the most favorite plants for breeding birds. Few nests were found on the emergent plants covered with rubbish, or on high density. And no nests found on the inside shrubs. The mean density of nests on the marsh was 3.1 nests per ha and the nests were highest in Non-island as 17 nests per ha. The nest density on the area of Sonae-islands was higher than the area of Kyangdong-kyo bridge. This would be related on the bulk of narrow-leaf cattails and the quality of water.

An Analysis of Consumers′ Preference on the Brand Rice (브랜드 쌀에 대한 소비자 선호요인 분석)

  • This aims is to estimate the consumers' preference on the brand rice using factor analysis, completed research on the consumption of brand rice revealed that the household supply in the Seoul area is increasing. An analysis whether housewives' preference in chosing the brand of rice was developed through the consumption experience and re-purchase intention investigation for the brand rice. Also the paper analyzed the consumers' preference using the logit and probit model. Number of respondents who participated in the study(95 %) totaled 1000 and the sampling method utilized was the multistage stratification and assignment abstraction. Results showed that the preference of housewives' depends on age, education and level of income. Such that as age, education, income level increase so thus their preference for brand rices also increase. Also the re-purchasing of brand rice is high when housewives have a higher educational attainment and prefers to go to work. Conclusively, the long-term sale view for brand rice is closely related to the economic conditions of a household. Hence, with the economic growth, there is a possibility that consumption of brand rice would increase compared to the ordinary rice. We can propose the following political intent from analysis of these results. First, There is a need for continuous public information as reinforcement for brand rice. Second, Marketing operation reinforcement could also be done for customer class security etc.

Radial Distribution of Calcium, Phosphorus, Iron, Thiamine and Riboflavin in the Degermed Brown Rice Kernel (현미입(玄米粒) 내의 칼슘, 인, 철, 비타민$B_1$$B_2$의 분포에 관한 연구)

  • Degermed brown rice of Akibare (short grain) and Milyang 23 (medium grain) was abraded fiveconsecutive times to remove outer $5{\sim}6%$ of the kernel per milling. Samples were analyzed for calcium, phosphorus, iron, thiamine and riboflavin. Milled fraction I (about $5{\sim}6%$ of the kernel) contained 8 times as much calcium and phosphorus as did the original kernel; iron, $4{\sim}5$; thiamine, 3; and riboflavin, 4. Contents of fraction I were much greater than those in the residual kernel; 18 times as great for calcium; $32{\sim}36$ times for phosphorus; $5{\sim}10$ times for iron 5 times for thiamine; and $19{\sim}30$ times for riboflavin. Milyang 23 showed a steeper concentration gradient of calcium and riboflavin, but more even distribution of iron than did Akibare. There were no significant differences in phosphorus and thiamine gradients between the two rices.

Climate Change and Its Impact on Agricultural Ecosystem (기후변화에 따른 농업생태계 변동과 대책)

  • If the atmospheric concentrations of greenhouse gases double, the annual temperature increase in mean surface temperature relative to 1990 will be about 2.0 to $2.5^{\circ}C$ and the annual precipitation increase about $15{\%}$ by 2100 in Korea. When the temperature rises $2^{\circ}C$, the annual temperature will be $13^{\circ}C,\;15^{\circ}C,\;and\;16^{\circ}C$ in Western Central, Yeongnam Basin, and Southern Coastal respectively. Consequently the crop period could be prolonged $10{\~}29$ days. In the case of gradual global warming, annual crops could be adapted to the changed environment by breeding, and the perennial crops should be shifted to ether area. If global warming happens suddenly over the threshold of atmospheric greenhouse gases concentration, then we shall have disturbance of ecosystem. When $2^{\circ}C$ higher than present, the optimum flowering date of rice plant delayed about 10 days, so it may not possible to adopt the fate with present japonica rices, therefore, the recommended characteristics of rice varieties are longer basic vegetative period, more late maturing and higher ripening temperature. Barley and wheat crops could be shifted to northern coastal areas and apple production areas should be shifted to those areas under $13.5^{\circ}C$ in annual mean temperature at global warming. Ideotypes of crops under climate changes should have such ecological characteristics that are indispensable to accomplish the sustainable agriculture under increased $CO_{2}$ and temperature condition as the diversification of genetic resources from yield-oriented to biomass-oriented characteristics with the higher potentials of $CO_{2}$ absorption and Primary production. In addition, a heat-tolerance, a pest resistance, an environmental adaptability and a production stability should be also incorporated collectively into our integrated agroecosystem.

Distribution of Minerals within the Degermed Brown Rice Kernel (배아를 제거한 현미립내의 무기질의 분포)

  • The contents of minerals of the milled fractions of degermed Japonica and J/Indica brown rices were determined. The fraction I(about 4.4% of the kernel weight) contained 14.8 times as much sodium as did the original kernel; phosphorus, 5.7 times; potassium and iron, 5.4 times; magnesium, 4.2 times; calcium, 3.8 times; manganese, 3.7 times; Copper, 3.6 times; and Zinc, 2.3 times. Concentrations of these minerals were the lowest in the residual kernel, which contained less than the original brown rice. Sodium showed the most deepest concentration gradient, while iron was the most evenly distributed within the kernel in all samples.

  • This study was carried out to investigate the physicochemical properties, antioxidant activity, physical properties and sensory evaluation of rice using three different varieties of rice (Odae rice-Chulwon, Chuncheong rice-Yeoju, Hwayoung rice-Sanchung) produced by organic and ordinary farming. Amylose content was higher in Chucheong rice and protein content was higher in Hwayoung rice in comparison to others. However, there was no difference in amylose and protein contents between organically grown and ordinarily grown rice. The electron donating activities and superoxide dismutase (SOD) activities of methanol extracts from organically grown rice were higher than those of ordinarily grown rice. There was no difference in amylographic characteristics between the differently cultured rices. The organically grown rice had a high springness, cohesiveness and was gummy in rheometer evaluation. However, the ordinarily grown rice had a good score for taste in sensory evaluation.

Effect of Surfactants on the Characteristics of Cooked Rice During Storage (계면활성제가 저장 중의 밥의 특성에 미치는 영향)

  • The effects of three surfactants (SSL, Dimodan, and SE1670) on the properties of cooked nonwaxy and waxy rice during storage were investigated by sensory evaluation, instrumental test, and measurement of retrogradation degree. The results of sensory evaluation revealed that the overall quality of cooked rice was affected by textural characteristics. The addition of surfactant decreased the roughness and hardness of cooked rice, however, increased the stickiness and moistness during the storage in the order of SE, SSL, and Dimodan. In instron test, the hardness of surfactant-added cooked rice was significant lower than that of control. The addition of surfactant decreased the degree of retrogradation both in cooked nonwaxy and waxy rices.

  • To develop a new traditional ginseng liquor by using rice and ginseng, the physicochemical properties and overall acceptability of ginseng liquors made by addition of different concentration (1-8%) of ginseng in some kinds of rice mash were investigated and compared. The Ilpum-4 traditional ginseng liquor which was prepared by adding 4% ginseng into Ilpum rice mash showed the best acceptability in the sensory evaluation test and high ethanol content (15.6%), and its angiotensin-converting enzyme inhibitory activity and electron-donating ability were better than those of the other ginseng liquors. The Ilpum-4 traditional ginseng liquor contained 0.53% (w/v) of crude saponin and it was mainly composed of ginsenoside Rg$_1$.

Effect of insect-resistant genetically engineered (Bt-T) rice and conventional cultivars on the brown planthopper (Nilaparvata lugens Stål)

  • Insect-resistant transgenic rice (Bt-T) expresses a toxic protein (mcry1Ac1) derived from the soil bacterium Bacillus thuringiensis found in the rice cultivar Dongjin with an insecticidal property against rice leaf roller (Cnaphalocrocis medinalis). In this study, to investigate the impact of Bt-T on non-target organisms, the feed and oviposition preferences and biological parameters of brown planthopper (Nilaparvata lugens Stål) were comparatively analyzed in four rice cultivars: Dongjin (parent variety), Ilmi (reference cultivar), Chinnong (brown planthopper resistant cultivar) and Bt-T. In the Bt-T and Dongjin cultivars, the feed preferences were 32.4 ± 8.3 and 34.1 ± 6.8%, and the oviposition preferences were 32.5 ± 5.1 and 30.0 ± 5.3% respectively, and there was no statistical significance between these rices. Additionally, in the Bt-T and Dongjin cultivars, the total lifespans from egg to adult were 39.5 ± 6.9 and 40.0 ± 5.8 days, and the weights of adult females were 1.78 ± 0.14 and 1.72 ± 0.16 mg, respectively. Therefore, there was no statistical difference in the biological parameters between these two varieties. Overall, the results indicate that the insect-resistant transgenic rice (Bt-T) did not negatively affect the reproduction and life cycle of brown planthopper, a non-target organism.
