부산 경남지역 산업체급식소의 급식평가 연구 -I. 급식소 운영특성을 중심으로- (Consumer's Perceptions of Industrial Foodservice Institutions in Pusan city and Kyeung Nam Provinces -I. Emphasis on the Foodservice Operation-)

  • Consumer's perceptions of the quality of food and food-related servcie were surveyed through questionnaires by 672 adults randomly selected from 20 industrial foodservice in Pusan Kyeung Nam area. Data from consumers were analyzed by using $SPSSPC^+$ program in terms of $x^2-test$, oneway ANOVA, t-test. The results are as follows: 1) Among the food characteristics, the mean rating for temperature of food was 3.18 over 5, for quality of food vs. food price 2.97, for fresshness 2.96, for taste 2.86, and for combination of colors 2.73; 2) In the food-related service, the mean rating was 3.20 for cleanliness of dishes, 3.18 for quality of dishes, 3.01 for varity of food items, 2.95 for courtesy of employees, and 2.57 for availability of favorite food. 3) Self-operated foodservice showed higher mean ratings in nutrition of food, quality of food vs. food price, and availability of favorite food than does the contracted one. 4) The rice (85.0%) and the kimchi (81.4%) were right in amount, but the soup (42.5%) and the side dish (49.0%) were not enough. 5) In seasoning of food, 45.2% of the respondents agreed that the salty taste and the amount of MSG were just right. However, 38.0% and 37.9% of them responded that the salty tast was strong and the amount of MSG was much. 6) The respondents mostly required the improvement of the taste of side dish, nutrition of food, sanitation of food, and variety of menu items.

우리나라 농업의 변천과 비료의 역할 (Role of Chemical Fertilizer and Change of Agriculture in Korea)

  • The self-supply rate of Korea in 2006 was approximately 27.3 % by importing 13.99Mt for 19.79Mt of demanded amount. Among the imported crops, wheat, corn, and soybean consumed 95 % for the total imported amount, and wheat, corn, and soybean were 3.5Mt(Table use : 0.22Mt; Feed stuff : 0.13Mt), 8.7Mt(Table use : 0.19Mt; Feed stuff : 0.68Mt), and 1.2Mt (Table use : 0.03Mt; Feed stuff : 0.09Mt), respectively. On the other hand, our government has prepared the strategies for a great fear of food according to sharp price rise of the international crops by maintaining the self-supply rate of 5 % excluding 5.23Mt of rice in Korea. Also concern for recycled energy known as future energy for era of high oil price and global warming due to green house gas is rapidly growing. Therefore, our country which has relied on import of the whole oil needed in Korea and has to keep Kyoto Agent to request reduction of green house gas fully support research and practical use for agricultural products as resource of alternate energy. At first, we have to develop the mass production technology in order to secure a program of self-supply of food for bioenergy production utilizing agricultural product in Korea. But we assume that this matter is difficult to achieve under the current agriculture system that more emphasizes the environment conservation such as environmentally-friendly agriculture than production of food.

부산지역 대학생들의 대학가 음식문화 실태조사 연구 (A study on the Dietary Culture Practice of the University Students at Campus Town in Pusan)

  • The purpose of this study was to investigate a dietary life style of university student at campus towns and the actual condition of F&B(Food and Beverage) shop. This survey about the dietary was carried out with a variety of questionares about the life style. The subjects are 364 males and 278 females university students in Pusan area. The collected data were analyzed by SPSS Package Program. The summary of the results are as follows : The most of the subjects have a meal in-cam-pus restaurant with rice during daytime. In out-campus popular restaurant is a flouryfood restaurant and the most of subject used to go the restaurant to take a meal more than once for 2~3 days. Although a half of the subjects are satisfied with the restaurant in out-campus. Some of the subjects are unsatisfied with a price of food. A taste is the most popular criteria for selecting food in the restaurant and almost of the subjects take a meal in price 2000~2500won. Cchachangmyun is the most popular with the subject in the flouryfood restaurant, coffee is popular with the subject in the coffee shop. A half of the subjects used to go a hof house to drink, and beer is the most popular liquor with them. More than a half of the subject have a drinking at least more than once for a week in the drinking shop. A half of male subjects are able to drink more than 2,ooocc beer and more than a half of female subjects are able to drink more than 500cc beer. More than a half of the subjects want to new F&B shop to got a new experience.

서울지역 주부들의 식생활관리실태 조사 연구 (A Survey Study on the Meal Management of Housewives in Seoul)

  • This study was undertaken to investigate the current meal management situation and behaviors of the housewives in Seoul during the period January in 1933. The aim of this study was to improve meal managenment in 1980. This study has been performed by questionnaire about kitchen forms, cooking machines. foodstuffs buying forms, plan of the price in meal and meal management behaviors. 1. 85% of the housewives had stand-up fashioned kitchen forms, and they were equipped with variety of cooking machines and high possession percentage that. 2. 66.7% of the housewives spent the price of meal under plan, 3.1% of them purchased foodstuffs daily. 3. The time spent in preparing the table of breakfast and lunch was about 60 minutes and dinner was about 90 minutes. the time spent in clearing the table of breakfast and lunch was about 20 minutes and dinner was about 40 minutes. 4. The numbers of daily cooking rice was the higher percentage twice a day than once a day, but increased higher percentage once a day than 1980's. 5. In preparing kimchi most of housewives were making it in their homes and number of making kimchi once a 15day and a month was high percentage. 6. When they prepared meals they gave higher percentage to the tastes of families than nutrition. The number of preparing a side dish in breakfast and lunch was 3~4, and dinner was 5~6. 7. In most cases housewives cooked for themselves, and the number of husbands who help their wives for kitchen work was increased in group of younger housewives than older. 8. The environment of kitchen work is improved to many facility but not to be desired facility, and meal management behavior is changing gradually into more convenience but not to be changing into more scientific forms.

쌀을 이용한 편의식품의 선택속성에 관한 중요도-수행도 분석(IPA) (Study on Importance-Performance Analysis Regarding Selection Attributes of Rice-Convenience Foods)

  • 본 연구에서는 쌀을 이용한 편의식품의 선택속성에 대한 중요도와 수행도를 조사함으로써 쌀을 이용한 편의식품과 관련된 업체의 제품 개발 전략에 필요한 기초자료를 제공하고자 하였다. 연구 결과를 요약하면 다음과 같다. 쌀을 이용한 편의식품은 점심 대용으로 이용하는 경우가 37.4%로 가장 많았고, '주먹밥 및 김밥류'가 식사대용으로 39.9%, 간식대용으로 61.5%로 가장 많이 이용되었다. 쌀을 이용한 편의식품에 대한 정보를 '마트 및 매장에서 직접 얻는다'가 53.7%로 가장 많은 것으로 조사되었으며, 쌀을 이용한 편의식품을 이용하는 이유는 '시간이 충분하지 않거나 식사준비가 번거로워서'가 42.2%로 가장 높게 조사되었다. 요인분석 결과 내재적 속성의 16가지 항목은 3개의 요인으로 나뉘었으며, 그 중 첫 번째 요인은 건강요인으로 안전성(식품첨가물 등), 위생(청결성), 제품의 영양, 식재료 계절상품 활용, 식재료의 조화, 제품의 소화성, 제품의 신선도, 식재료의 다양성, 제품의 가격이 속하였고, 두 번째 요인은 감각요인으로 제품의 맛, 제품의 질, 제품의 양, 제품의 식감이 속하였으며, 마지막 요인은 다양성 요인으로 제품의 신 메뉴 출시, 제품의 독창성, 제품 종류의 다양성이 속하였다. 외재적 속성의 11가지 항목은 2개의 요인으로 나뉘었는데 첫 번째 요인은 신뢰요인으로 포장용기의 위생(청결), 유통기한 표시, 포장용기 운반 시 안정성(흐트러지지 않음), 포장용기 재질의 안전성, 원산지 표시, 영양성분 표시, 인증마크 표시(HACCP, LOHAS 등), 생산자 표시, 개폐의 용이성이 속하였고, 두 번째 요인은 외형요인으로 업체와 맞는 포장 이미지, 포장용기 색상이 속하였다. 쌀을 이용한 편의식품의 선택속성에 대한 중요도-수행도 차이 분석 결과에 대해서는 내재적 속성의 16가지 항목(P<0.01), 외재적 속성 중 포장용기의 색상을 제외한 10가지 항목(P<0.001)에서 유의적으로 차이가 있었으며, 내재적 및 외재적 속성 각각의 전체 중요도의 평균과 수행도의 평균 또한 유의적인 차이를 나타내었고(P<0.001) 모든 항목이 중요도가 수행도보다 높은 점수로 나타났다. 쌀을 이용한 편의식품 선택속성에 관한 IPA 분석 결과 높은 중요도에 비해 낮은 수행도를 보여 노력과 자원을 집중해야 하는 영역인 제 IV사분면에 해당하는 항목으로 내재적 속성에서는 제품의 가격과 안전성(식품첨가물 등)이, 외재적 속성에서는 포장용기 재질의 안전성, 영양성분 표시가 속하는 것으로 나타났다. 본 연구에서와 같이 IV사분면에 위치한 제품의 가격과 안전성(식품첨가물 등), 포장용기 재질의 안전성, 영양성분 표시는 소비자들이 매우 중요하게 생각하는 반면, 현재 수행되고 있다고 인지하는 정도는 낮으므로 이에 대한 개선 및 보완 등의 해결책이 필요할 것으로 생각된다. 식사 및 간식 대용으로 이용되는 편의식품 소비의 지속적인 증가가 기대되는 만큼 고객이 중요시하는 제품의 속성에 따른 전략적 마케팅 및 제품 개발 방향이 수행되어야 할 것이다.

가구 형태별 성인 여성의 전자상거래 식품 구매 실태 (E-commerce Food Purchases by Adult Women according to their Household Types)

  • Objectives: The purpose of this study was to compare and analyze e-commerce food purchase behavior and the perceptions of adult women according to their household types. Methods: The e-commerce food purchases of 318 adult women were surveyed and analyzed according to their household types (one-person or couple household (OCH); a household with children (HC); a household with parents (HP)). Results: The total amount of food purchases over 6 months through e-commerce according to household types was in the descending order of OCH (60.3%), HC (57%), and HP (55.1%) thus showing a significant difference (P < 0.05) in behavior between household types. The reasons for purchasing food through e-commerce included: a lower price than offline (30.8%), convenient delivery and transportation (30.2%), and food diversity (21.1%). When purchasing food online, the most important factor was price and quality, followed by quick and accurate delivery for OCH, exact information given about the product for HC, and recommendation from other consumers for HP (P < 0.01). The main foods purchased through e-commerce were coffee, tea (42.1%), instant and frozen foods (39.9%), water, beverages, dairy products (37.7%), snacks, bread, rice cakes (31.5%), and functional foods (27.4%). The percentage of respondents who were very satisfied or satisfied with their e-commerce food purchases was HP (84.1%), OCH (69.9%), and HC (65.6%) in that order (P < 0.05), and 96.5% of all subjects stated that they would be willing to purchase food through e-commerce in the future. The advantages of purchasing food through e-commerce were seen to be the highest in order and payment convenience with 4.1 points out of 5, followed by low price (4.0), variety of products (3.9), and ease of food purchase (3.9). Among the disadvantages listed, concerns about product damage and deterioration during delivery and differences between the displayed product and the delivered product were the highest with 3.7 points. Conclusions: The characteristics and perceptions of female consumers according to household types are important factors in enhancing the reach of e-commerce, and in preparing guidelines for food selection through e-commerce.

광학위성영상의 해상도에 따른 논지역의 정규식생지수 비교 (Comparison of NDVI in Rice Paddy according to the Resolution of Optical Satellite Images)

  • 정규식생지수는 농업분야에 가장 많이 사용된 원격탐사 자료로, 현재 대부분의 광학위성에서 제공되고 있다. 특히 고해상도 광학위성영상이 제공되면서 농업 활용 분야에 따른 최적의 광학위성영상의 선택이 매우 중요한 이슈가 되었다. 본 연구에서는 국내 논지역의 정규식생지수 모니터링 시 가장 최적의 광학위성영상을 정의하고 이를 위해 필요한 해상도 관련 요구조건을 도출하고자 한다. 이를 위해 전 세계적으로 많이 사용되는 MOD13, Landsat-8, Sentinel-2A/B, PlanetScope 위성의 정규식생지수영상을 대상으로 국내 당진 논지역의 공간분포 및 2019년부터 2022년까지 시계열 패턴을 비교, 분석하였다. 각 자료는 3-250 m의 공간해상도와 다양한 주기해상도로 제공되며, 정규식생지수를 산출할 때 사용되는 분광밴드의 영역도 약간의 차이가 있다. 분석 결과 Landsat-8은 가장 낮은 정규식생지수 값을 나타내며 공간적으로 변이도 매우 낮았다. 이에 비해 MOD13 정규식생지수 영상은 PlanetScope 자료와 비슷한 공간분포 및 시계열 패턴을 나타났으나 낮은 공간해상도로 인해 논 주변지역의 영향을 받았다. Sentinel-2A/B는 넓은 근적외선밴드 영역으로 인해 상대적으로 약간 낮은 정규식생지수 값을 나타내었으며, 특히 생육 초기시기에 그 특징이 두드러졌다. PlanetScope의 정규식생지수가 상세한 공간적 변이 및 안정적인 시계열 패턴을 제공하나 높은 구매가격을 고려하면 공간적으로 균일한 논지역보다는 밭지역에서 그 활용성이 높을 것으로 사료된다. 이에 따라 국내 논지역에 대해서는 250 m급 MOD13 정규식생지수나 10 m급 Sentinel-2A/B가 가장 효율적일 것으로 사료되나 작물의 개체에 대한 상세 물리량 추정을 위해서는 고해상도 위성영상이 활용될 수 있다.

순환식 유채건조기 개량 연구 (A Study on the Improvement of the Circulation Dryer for Rapeseed)

  • Current high oil price and the agreement on global climate change prevention have increased worldwide investment and research on renewable energy. In Korea, development of a rapeseed dryer for bio-diesel production has been started in 2007. Usually, rapeseeds are harvested in early summer, because rice cultivation is followed right after rapeseed harvesting. Early harvest and bad summer results in highly moistured rapeseed and development of artificial drying system is required to dry great amount of rapeseed that couldn't be processed by sun drying alone. The rapeseed dryer was modified from an existing circulation type grain dryer. Modification of the dryer was performed with the aid of CFD simulation. Drying test showed that drying rate of rapeseed was 1.51%/h and germination rate reduction was 4.5%p for the drying temperature of $60^{\circ}C$.

농가소득(農家所得) 측면(側面)에서 본 소작농가(小作農家)의 성격(性格)에 관한 실증적(實證的) 연구(硏究) (A Positive Study on the Characteristics of Tenant Farms according to Farm Income)

  • This paper aims to identify the characteristics of the tenant farm's income compared with farm household consumption. Farm household surplus is a critical criteria for the reproduction of agriculture. The degree of self sufficiency of farm household consumption according to agricultural income was rapidly decreasing for the period of 1980's. Only 78.9 percents of farm household consumption was earned by agricultural income. Tenant farms were classified according to the following characteristics; self-supported, semi self-supported, leased, deleted, over-consumption. Self-supported tenants are one of the backbones of Korea's future agriculture, because they are able to meet their household needs by only their farm work without other income producing endeavors. The rent paid by those tenants surveyed was estimated at 26.2 percents of their farm household income. However, the national average for such rental payment is equivalent to 4.7 percents of farm household income. 63 percents of paddy rental fee was paid by inkind of rice and 80 percents of the upland rental fee was paid by cash. Self-supported farms as 20 percents of total surveyed should be the target of agricultural price policy and semi self-supported & over-consumption farms as 30 percents be that of rural development policy, and the other half be that of social welfare policy.

농업기반정비사업 편익산정을 위한 지표 개선방안 (A Study of the Economic Evaluation for the Agricultural Infrastructure Projects)

  • The purposes of this research are to review the current economic measures to be used to assess the economic effects of agricultural infrastructure projects, to find some effects not included into the current measures, and to suggest new additional economic measures. So thus, economic assessment for agricultural infrastructure projects has been criticized to be overestimated. For example, some research reported that the projects enhanced rice productivity by 20% or 30%. We suggest four new measures to evaluate economic effects of agricultural infrastructure projects: (1) enhancement in productivity, (2) switchover from low-income crops to high-income crops, (3) rises in land price, and (4) lower fluctuation in production.
