PIGEON PEA AS A RUMINANT FEED

  • The study on the potential use of pigeon pea (PP) as a ruminant feed was carried out with sheep in 3 experiments. Digestibility of dry pigeon pea leaves (PPL) and pigeon pea seeds (PPS) determined by differential and regression methods respectively, with rice straw (RS) as a basal diet, revealed that PPS contained higher nutritive value and palatability than PPL. On dry matter (DM) basis, PPL and PPS contained 19.8 and 20.0% CP, 7.3 and 2.3% EE, 6.0 and 4.4% ash, 61.1 and 51.7% NDF, and 29.4 and 17.5% ADF, respectively. The trypsin inhibitor activity in the seed was 3 times of that in the leaves (19.5 vs 7.0 mg TIA/g DM). The digestibility of PPL and PPS were 50.2 and 72.2% in DM, 52.7 and 73.3% in OM, 51.0 and 65.1% in CP respectively. DM intake as well as the digestibility of most nutrients increased with the increasing level of PPS. Digestible energy (DE), Total digestible nutrient (TDN) and N-balance of sheep fed solely PPS, estimated by regression method, was 3.2 kcal/g, 71.1% and 6.3 g/d respectively. Pigeon pea seeds can be well used to substitute soybean meal in concentrate rations for ruminants or directly supplemented to low quality roughages.

A Study on Eating Behaviors and Food Preferences of the Workers at Transportation Business in Daegu Areas by Work Site (대구지역 운수종사자의 영업지역별 식행동 특성 및 음식 기호도 조사 연구)

  • This study was to investigate eating behaviors and food preferences of the worker at transportation business in Daegu areas by work site. The survey was performed by questionnaires from July 13 to August 25, 1999 against 353 of males. As a general factor, the subjects of survey were male drivers in their forties to fifties. Their education level was middle school (46.5%) and high school (47.3%) diploma. The subjects were composed of 44.2% of city workers and 55.5% of suburban workers. This study showed that the city workers eat three meals per day with high percentage (92.9%) and a large number of suburban workers (21.3%) eat two meals only. Most of the subjects 782.% responded that their diet life were irregular due to the property of their job. The food preferences of most of workers (94.9%) were Korean food rather than any other foods. Frequency of eating-out was much higher in city drivers than in suburban drivers. They considered taste of food firstly and the prices of food secondly, but the nutritional value of food was considered with a very low percentage (14.7%). Their favorite menu turned out to be the Korean style one-dish food, of those one-dish Koran food, they preferred rice or soup to the noodles. These results suggest that he nutritional education against the workers at transportation business is needed to set the proper menu considering the characteristics of the preference each group of workers.

Quality and Changes of Mineral Contents in Jeung-pyun according to the Addition Levels of Mulberry Leaves Powder (뽕잎분말 첨가수준에 따른 증편의 품질특성 및 무기질 함량변화)

  • Jeung-pyun added to mulberry leaves powder was tested to prove in inorganic ingredients, physical function, chromaticity and rheometer. For cake, mulberry leaves powder were added to rice flour in the ratio of 0%, 1%, 2%, and 3% respectively. In inorganic ingredients test, the amounts of calcium, magnesium and potassium were increased according to adding levels of mulberry leaves powder. But the amounts of iron, copper and zinc, were not correlated with it. Calcium, magnesium and potassium are anti-hypertension inorganic substances. Thus, it is considered that food with plenty amountsz of inorganic ingredients is an effective diet for the patients who suffer from cardiovascular disease. In physical evalution test, the ratio of mulberry leaves powder was not correlated with the appearance of Jeung-pyun. The value of color decreased as the ratio of mulberry leaves powder increases. In texture, Jeung-pyun. The value of color decreased as the ratio of mulberry leaves power increase. In texture, Jeung-pyun added with 2% mulberry leaves powder had the highest value. In moisture, as the level of mulberry leaves powder was increased, the value was decreased. In rheometer test, Jeung-pyun 0% mulberry leaves powder had the highest value in hardness. While the ratio of mulberry leaves powder was not correlated with cohesiveness. Jeung-pyun added to 1% mulberry leaves powder had the highest value. In gummines and brittleness, 0% Jeung-pyun had the highest value, but the ratio was not correlate with cohesiveness.

  • The purpose of this study was to investigate the dietary intakes of preschool children in rural areas and to develop programs of nutrition education, offering the mothers an appropriate advice for the improvement of the dietary practices corresponding to the modernization of the agriculture. The daily food intakes of 118 preschool children, randomly selected from the farm household, were studied by means of three-day records during summer season of 1972. The results showed that the dietary intakes of food groups such as meats and fishes, beans and the products, milks and small fishes, fruits, fats and oils were below 50 per cent of the recommended level-especially in that of milk. Therefore, the diet was generally below the recommended dietary allowances for protein with good quality, fat, calcium, vitamin A, thiamine, reboflavin and ascorbic acid. The dietary data revealed that most of preschool children in rural areas consumed rice and barley, almost every day. Other foods eaten less frequently were soybean paste, gimchi, potatoes, flour, and summer squash. The use of cereals should be curtailed some what and the use of milks, fishes, poultry, meats and protein extenders should be increased.

Effects of Whole Crop Corn Ensiled With Cage Layer Manure on Nutritional Quality and Microbial Protein Synthesis in Sheep

  • An experiment was conducted to study the nutritional quality of whole crop corn silage ensiled with cage layer manure in sheep. Treatments were designed as a $3{\times}3$ Latin square with 16-day periods. Sheep were allotted in one of three diet-treatments, which were whole crop corn silage (CS), whole crop corn+30% cage layer manure (CLM) silage (based on DM; MS) and rice straw+concentrate (SC) mixed at 8:2 ratio (on DM basis). Silage ensiled with CLM significantly increased (p<0.05) digestibilities of crude protein, NDF and ADF, TDN over the other treatments. Ruminal pH in sheep fed SC was significantly (p<0.05) higher than that of the other diets at 0.5, 1, 2, 4 and 8 h after feeding. Ruminal ammonia nitrogen concentration of the MS treatment was significantly (p<0.05) higher than that of the other treatments at 0, 1, 2 h after feeding. The MS treatment highly increased (p<0.05) feed intake, digestibility of organic matter and crude protein, nitrogen intake and retained nitrogen. The MS treatment highly increased (p<0.05) purine derivative (PD) excretion leading to higher microbial protein synthesis.

  • Natural substances, exploited in our daily life, have been applied to drugs to treat diseases and developed to functional foods by appropriate preparations, and these foods give beneficial effects on physical activities. In this paper, the utilization of traditional functional foods was studied with refer ring to old ancient writings published in the front-end of Chosun dynasty. The utilized vegetables were march mallow, turnip, radish, Chinese cabbage, lettuce, spinach, cucumber winter buds, flesh of a cabbage, eggplant, taro, burdock, Parsley, watershield plant, crown daisy, bamboo shoots, garlic, scallion, onion, acorn, bark of a tree, white goosefoot leaf, leaf of bean, pine mushroom, bracken. yam, mugwort, tea, ginseng, peppermint, fruit of the Maximowiczia chinensis, smartweed and pepper. The utilized fruits were chestnut, Chinese date, pine nuts, walnut, gingko nut, citrus. crab apple, pear, peach, grape, pomegranate, plum, Chinese quince, fig and watermelon. The utilized cereal were rice, barley, bean, buckweat and Job's-tears. The utilized sweetenings and seasonings were honey, wheat-gluten, sugar, oil, salt, soy sauce and vinegar. Our ancestors had a balanced diet using the various foods, and especially had a fundamental concept of "Foods have the efficacy of a remedy".edy".uot;.

A Study on the Importance, Satisfaction, Perception and Intake Frequency of Fusion Menu (퓨전 메뉴의 중요도, 만족도, 인지도 및 섭취 빈도에 관한 연구)

  • This thesis is aimed to analyze the importance, satisfaction, perception and intake frequency of fusion menu in order to develop the market segmentations and marketing strategies for useful information on the fusion menu and its improvement in the food industries. The findings of the study are as follows: First, the study revealed that diet menu(low fat, low-cal) and vegetarian menu items have more influence on females than males in regard to the importance of fusion menu when examining gender. Second, the study revealed that Bulgogi pizza, Bulgogi burger, cheese cutlet, cheese kimbab, sweet and sour pork items have great influence on customers in their 10s while green tea latte, rice burger, Bulgogi pizza, kimchi hamburger items have a high effect on customers in their 20s in regard to the perception of fusion menu when examining age. Finally, the study revealed that the taste of food, the cleanliness of vessels, food hygiene, the freshness of food, the quality of menu, the portions of food, the nutrition of food, the speed of food service, food material harmony, the temperature of food, the flavor of food, distinctions from existing food, environment-friendly organic agriculture food material items have maintaining the good performance of fusion menus. It also showed that various strategies for price of fusion menu should be made when examining the IPA analysis.

A Study on Dietary Attitudes of Preschool Children in Child Care Center (어린이집 아동들의 식생활 태도에 관한 연구)

  • This study aimed at examine dietary attitude, eating behavior and food preferences of children in child care center. The children involved in this study were 153 boys and 134 girls, aged 3 to 6 years old. The eating frequency of breakfast and the number of meal times a day were significant difference according to sex(P<0.01). Reason for skipping breakfast was ‘no appetite’(49.3%). It was found that 51.5% of the children belonged to ‘fair’ in food habit score, while children in ‘poor’ and in ‘excellent’ were 25.0% and 9.7% respectively. There was no significant difference in food habit score between boys and girls. Their preferred staple foods were ‘cooked rice’ and ‘Chajangmyon’, their preferred soup was ‘seaweed soup’. Also, their most preferred side dishes with animal foods were ‘fried chicken’ and ‘Bulgogi’. The preference of ‘hard boiled soybean curd’ and ‘pan fried soybean curd’ among the side dishes with vegetable foods were significant according to the obesity index(P<0.05). Children preferred side dishes with animal foods to those with vegetable foods. First considered item in meal preparation was child's favorite(58.1%). Mother's response to child's unbalanced diet was ‘trying to persuade the child’(56.6%). It was significant according to mother's occupation(P<0.01). The nutritional management program at child care center is required to enhance the nutritional status of children. Also the nutritional education for the children and their meal planners is required for better growth and health promotion of preschool children.

A Study on the Dietary Habit and the Food Preference of Pre-School Children (兒童의 食習慣과 嗜好에 관한 연구)

  • A study on the dietary habit and the food perference of Pre-school Children was made in order to identify the state of their dietary life and provide the data of dietetic education which can help the children to live a desirable food life, by analysing the present dietry life into the dietry habits, food preference, the actual condition of nutrition intake and table manners. 1. The Diet Habits. Both boys and girls were fond of dinner best and tended to neglect breakfast and lunch. 64.2% of the total children took meals regularly. 2. Food Preference. The most favorite food was beef, ham, Dupoo (beancurd), squid, ice-cream, bananas, watermelon, sweet potatoes, corn, Ingeolmi (cake form glutinous rice), doughnuts, JJajangmyon (Chinese noodles), Coke, fried chicken. 3. The Actual Conditions of Nutrition Intake. The frequency of intake of meat and its processed food was the lowest and that of fishes, shellfishes, fats and vegetables was low, too. 4. Table manners and Sanitary Conditions. The average mark of table manners and sanitary conditions is 12.49${\pm}$2.65. The children didn't practice well in the following points; talking at table, beginning to eat after the beginning of elder person's, brushing their teeth after taking meals, keeping a straight posture.

Diet-ralated Factors of Overweight Adolescent Girls (여중생의 비만과 관련된 식이요인에 관한 연구)

  • The purpose of this study was to search the obese related dietary factors of young adolescent girls for developing nutrition education program. In the cross-sectional study of 371 young adolescent girls, 25$\%$ were moderately obese, 13.2$\%$ obese, and a total of 39.1 were over moderately obese. The characteristics of obese girls were as follows. First, obese girls consumed more energy than is needed for physical activity. Their average daily energy intakes were not significantly higher and the daily energy expenditures were significantly lower than those of normal girls. Second, obese girls showed higher intakes of protein and fat, and ate more animal foods than normal girls. Fourth, obese girls skipped meals more often, especially breakfast. They ate less rice. For both normal and obese girls, their common dietary problems were low intake of calcium and iron, and high intake of snack foods. The result of this study shows that nutrition education programs for obese adolescent girls should be designed for eating habits, food balance and moderation. future research is to develop the effective nutrition education program for the obese adolescent girls.
