  • Ninety feeder steers, predominantly Herefords weighing 280 kg, were assigned at random to each of nine diets: basal (high concentrate); 25 or 50% of untreated rice straw (25- or 50 URS) or ammoniated rice straw (25- or 50 ARS); a 50:50 mixture of URS - alfalfa or ARS - alfalfa replacing a proportion of the basal at 25 and 50%. Animals were slaughtered after 154 or 161 days of feeding. The cattle fed 50% URS had the lowest (P<.05) carcass weight, dressing & external fat thickness, kidney, pelvic and heart fat, rib eye area, marbling score, quality and yield grades, followed by cattle fed 50% ARS, 50% rice straw/alfalfa, and 25% rice straw alone or 25% rice straw/alfalfa mixture. Ammoniation of rice straw improved all measured traits. A 25% substitution of basal diet with untreated or ammoniated rice straw and a 50% substitution with rice straw/alfalfa mixture did not significantly affect carcass traits compared to the basal group. Only 50% ARS and 50% URS cattle showed differences in body composition (P<.05) with lower fat and higher water and protein contents. No significant differences were found in shear value, panel tenderness, connective tissue, juiciness, flavor and overall palatability of meat from steers fed the basal, ARS or URS diets.

  • One hundred and six Cordyceps cultures including five cultures of Paecilomyces tenuipes were used for production of artificial fruiting body. In the test of artificial fruiting body formation, no fruiting bodies were induced on media containing PDA and ground silkworm pupae with liquid nitrogen. The best fruiting body formation was showed on media which mixed at the ratio of 1 unsticky rice to 3.5 water. But fruiting bodies formed on media mixed at the ratio 1 unpolished rice to 2.5 water. Optimal temperature in inducing artificial fruiting body was at $20^{\circ}C$. Twenty seven isolates were selected as good cultures for production of artificial fruiting body. Maturation of fruiting bodies incubated on rice grain media was completed for about 50 to 65 days.

  • This study was carried out to investigate the supplementary effects of Suwon 464, which has over two times of dietary fiber content compared with normal rice (Ilpum), on blood glucose in diabetic mice. We supplied 5 kinds of experimental diets (corn starch diet as a control (CO), Ilpum polished rice diet (IP), Ilpum brown rice diet (IB), polished rice diet (SP) and brown rice diet (SB) of Suwon 464) to diabetic mice for 8 weeks, after analyzing dietary fiber contents of 5 experimental diets. Diet intake, body weight and contents of blood glucose, hemoglobin $A_{lc}$ and insulin were measured. The dietary fiber contents in CO, IP, IB, SP, and SB diets were 1.0, 1.2, l.4, l.4, and 2.0% respectively. Body weight was lower in SB group than the other groups though there was no significant difference in diet intake among experimental groups. The concentration of blood glucose in diabetic mice was lower in SB group than the other groups during the supplementary period of experimental diets. The hemoglobin Ale and serum insulin levels were lower in SP and SB groups. These results suggested that the brown rice of Suwon 464 with high dietary fiber can control diabetes in diabetic mice by reducing the blood glucose and hemoglobin Ale. • To screen additives and their mixed ratio suitable for the mycelial growth and fruiting body formation of Oudemansiella radicata in the oak sawdust, additives such as rice bran, fermented soybean powder and wheat bran were used. Generally, the mycelial growth of O. radicata has been stable on oak sawdust mixed with rice bran of $5{\sim}20%$. In case that O. radicata was cultured for about 30 days at $22{\pm}1^{\circ}C$ under the illumination (350 lux) of 12 hours and moisture condition of $90{\pm}5%$, the primordia have been formed gradually from red-brown crusts covering the surface of oak sawdust media. Based on the experimental results from 9 strains of O. radicata, fruiting bodies were produced widely on oak sawdust medium mixed with rice bran of 5 to 30%. Even though fruiting bodies of O. radicata have been produced well on oak sawdust media mixed with rice bran, fruiting bodies of O. radicata were produced intensively on oak sawdust media mixed with rice bran of 10%. Therefore, this result will provide a basic information for commercial production of fruiting body of wild O. radicata. This result is the first report associated with an artificial fruiting body formation of O. radicata in Korea.

  • The purpose of this study was to investigate the effect of Monacolin-inoculated rice embryo on the body fat and serum lipid profiles in 61 obese elementary school students. The subjects divided into two groups 31 obese children had the experimental diet (rice embryo inoculated Monacolin) and 30 obese children had the control diet three times a day after meals. The mean age, height, weight, and BMI of 61 subjects were $10.5\pm0.5$ years, $143.6\pm6.8cm,\;55.0\pm8.9kg,\;and\;26.1 \pm3.9$, respectively. The changes of body fat mass (kg) in experimental group and control group after 6 weeks were -0.60kg and -0.03kg, respectively. The changes of body fat $(\%)$ in experimental group and control group after 6weeks were $-1.44\%\;and\;-0.25\%$, respectively. These changes of body fat in experimental group were significantly higher than in control group (p<0.05). The change of total-cholesterol in experimental group and control group during 6weeks were -17.52mg/dL and -1.70mg/dL, respectively. The change of LDL-cholesterol in experimental group and control group during 6 weeks were -17.06mg/dL and - 2.80mg/dL, respectively. The change of triglyceride in experimental group and control group after 6 weeks were -9.58mg/dL and 11.67mg/dL. Total-cholesterol, LDL- cholesterol and triglyceride of experimental group after 6 weeks significantly decreased compared to control group (p<0.05). After experimental diet (6 weeks), total-cholesterol was negatively correlated with body water contents, soft lean mass and fat free mass (p<0.05). Triglyceride showed a significantly positive correlation with body weight and body fat mass, however, it was negatively correlated with fat free mass (p<0.05). HDL-cholesterol showed a significantly positive correlation with fat free mass (p<0.05). These results show that Monacolin-inoculated rice embryo is effective in decreasing body fat and blood lipid in obese children.

  • This study was carried out to investigate the effects of rice germ oil supplement on the lipid metabolism of insulin-dependent diabetic mice. Streptozotocin-induced diabetic mice were fed three kinds of experimental diets with 20% lipid, composed of 20% lard (L) : 10% lard and 10% rice germ oil (LRGO) ; and 20% rice germ oil (RBO), respectively, for 7 weeks. Diet intake, body weight, organ weight and lipid levels of serum, liver and feces were measured. There was no significant difference in diet intake, body weight and organ weight among the experimental groups. But the concentrations of serum triglyceride in the LRGO and RGO groups, and of serum total cholesterol in the RGO group, were significantly lower than those of the L group fed the 20% lard diet. The levels of hepatic total lipid of the RGO group, and of hepatic total cholesterol of the LRGO and RGO groups were significantly lower than those of the L group. The contents of total lipid and total cholesterol excreted in the feces of the LRGO and RGO groups were higher than those of the L group. These results suggest that rice germ oil can reduce the levels of total cholesterol concentrations in the serum or livers of insulin-dependent diabetic mice, and that the hypolipidemic effect of rice germ oil may be due to increasing fecal lipid excretion and decreasing lipid absorptivity.

  • This study was performed to investigate the effects of rice added with mulberry leaves and fruit on blood glucose, body fat and serum lipid levels in Sprague-Dawley male rats for 4 weeks. Mulberry rice diet was prepared with mixture of 50% of purified AIN-diet and 50% of formulated rice consisting of soybean, barley, polished rice, black rice, uncleaned rice bud, mulberry leaves and fruit. The experimental animals were fed the mulberry rice diet (group A) and the purified AIN-diet (group B, diabetic control) for 4 weeks in rats injected with streptozotocin. In terms of observing hypolipidemic effect of mulberry rice, rats were fed either high-fat diet (13% fat) with additional lard, corn oil, cholesterol to AIN-diet (group C, control) or mulberry rice diet mixed with high fat diet (group D) for 4 weeks. Blood glucose level at the 4th week of group A had increased 5 mg/dL compared with that of day 0, while group B increased 51 mg/dL. However, the glucose levels of the groups A and B at the final day were 156 mg/dL (12.4% decrease compared with B) and 178 mg/dL, respectively. As for hypolipidemic effect, weight gain and body fat were 8% lower in the group D and serum triglyceride level also 19% lower in the group D compared with those of group C (p<0.05).

  • These experiments were conducted to find the optimum mixing rate of used media for saving the production cost of Flammulina velutipes. The materials for media formation was used needle-leaf tree sawdust, media that finished 1th cultivation of F. velutipes, corncob meal, and rice bran, wheat bran as nutrition source. We inoculated the F. velutipes in 14 kinds of different media types and checked the spawn growth speed, fruit body quality and quantity. Two nutrition agents, which is rice bran and wheat bran, did not affected the incubation period, but the effective stem number, quality and quantity of fruit body was better at rice bran than wheat bran. The quality of fruit body produced at mixed 20% of used media (needle-leaf tree sawdust 60% + used media 20% + rice bran 20%) was similar to control plot (needle-leaf tree sawdust 80% + rice bran 20%), but the yield was improved 10% than control plot 130g. According as the used-media mixing amount increases, quality and quantity of fruit body became low remarkably. Therefore, the optimum mixing amount of used-media was 20% and it increased 10% of fruitbody yield.
