Effect of Fermented Rice Bran on Rheological Properties of White Bread Dough (발효쌀겨의 첨가에 따른 식빵 반죽의 물리적 특성)

  • In this study, the rheological properties of doughs blended with 5% to 20% fermented rice bran (FRB) were investigated using farinographs, amylographs, extensographs, and SEM. In the farinograph analysis, the water absorption decreased and the replacement ratio of FRB increased over the time of development of the dough. The stability time of the dough was shortened, and the degree of softening decreased with added volume of FRB. The amylograph analysis showed that the temperature at the beginning of gelatinization showed a tendency to increase with increasing replacement ratio of FRB, but the gelatinization temperature showed no significant difference between the FRB-added groups and control group. The extensograph analysis showed that when the replacement ratio of FRB was over 10%, the extension of the dough decreased while the resistance was increased. In the SEM analysis, the added dough with less than 10% FRB had similar characteristics in gluten matrix and gas bubbles to those of the control of wheat flour alone. It was concluded that an added FRB volume of below 10% is most suitable for bread making.

Rheological and Thermal Properties of Acrylonitrile-Acrylamide Copolymers: Influence of Polymerization Temperature

  • An attempt was made to correlate the polymerization temperature and rheological and thermal properties of acrylonitrile (AN)-acrylamide (AM) copolymers. The copolymers were synthesized at different polymerization temperature. The copolymer structure was characterized by gel permeation chromatography (GPC) and Infrared spectrum (IR). The rheological and thermal properties were investigated by a viscometer and differential scanning calorimeter-thermogrametric (DSC-TG) analysis, respectively. When the polymerization temperature increased from $41^{\circ}C\;to\;65^{\circ}C$, the molecular weight $(\bar{M}_w)$ of copolymers decreased from 1,090,000 to 250,000, while its conversion increased from $18\%\;to\;63\%$, and the polymer composition changed slightly. To meet the requirements of carbon fibers, the rheological and thermal properties of products were also investigated. It was found that the relationship between viscosity and $\bar{M}_w$ was nonlinear and the viscosity index (n) decreased from 3.13 to 2.69, when the solution temperature increased from $30^{\circ}C\;to\;65^{\circ}C$. This suggests the dependence of viscosity upon $\bar{M}_w$ is higher at lower solution temperature. According to the result of activation energy, the sensivity of viscosity to solution temperature is higher for AN-AM copolymers synthesized at higher polymerization temperature. The result of thermal analysis shows that the copolymers obtained at higher polymerization temperature are easier to cyclization evidenced from lower initiation temperature. The weight loss behavior changed irregularly with polymerization temperature due to irregular change of liberation heat.

  • The magneto-rheological fluid expresses different cohesiveness according to the strength of the external electric current. The magneto-rheological fluid damper, which uses such characteristics of the fluid, generates shear force due to the fluid's cohesiveness. The core can be said to determine the magneto-rheological fluid damper's performance. This study uses the finite element analysis to compare the performance of different electromagnetic forces, which are affected by the shapes of the coil, and thus to find the optimum design for the core. In addition, as a step to construct a high-efficient damper, we suggest a type of damper that can control multiple coils and compares the performance of this damper and that of the standard damper by comparing the performance of their electro-magnetic fields.

Evaluation of 3D concrete printing performance from a rheological perspective

  • The objective of this study was to derive a cementitious material for three-dimensional (3D) concrete printing that fulfills key performance functions, extrudability, buildability and bondability for 3D concrete printing. For this purpose, the rheological properties shown by different compositions of cement paste, the most fundamental component of concrete, were assessed, and the correlation between the rheological properties and key performance functions was analyzed. The results of the experiments indicated that the overall properties of a binder have a greater influence on the yield stress than the plastic viscosity. When the performance of a cementitious material for 3D printing was considered in relation with the properties of a binder, a mixture with FA or SF was thought to be more appropriate; however, a mixture containing GGBS was found to be inappropriate as it failed to meet the required function especially, buildability and extrudability. For a simple quantitative evaluation, the correlation between the rheological parameters of cementitious materials and simplified flow performance test results-time taken to reach T-150 and the number of hits required to reach T-150-in consideration of the flow of cementitious materials was compared. The result of the analysis showed a high reliability for the correlation between the rheological parameters and the time taken to reach T-150, but a low reliability for the number of hits needed for the fluid to reach T-150. In conclusion, among several performance functions, extrudability and buildability were mainly assessed based on the results obtained from various formulations from a rheological perspective, and the suitable formulations of composite materials for 3D printing was derived.

  • Magneto-rheological fluids and magneto-strictive materials are of the well-known smart materials which are used to control and reduce the vibrations of the structures. Vibration analysis of a smart annular three-layered plate is provided in this work. MR fluids are used as the core's material type and the face sheets are made from MS materials and is assumed they are fully bonded to each other. The structure is rested on visco-Pasternak foundation and also is subjected to a transverse magnetic field. The governing motion equations are derived based on CPT and employing Hamilton's principle and are solved via GDQ as a numerical method for various boundary conditions. Effect of different parameters on the results are considered and discussed in detail. One of the salient features of this work is the consideration of MR fluids as the core, MS materials as the faces, and all of them under magnetic field. The outcomes of this study may be led to design and create smart structures such as sensors, actuators and also dampers.

  • Squeeze film dampers (SFDs) have been commonly used to effectively enhance the dynamic behavior of the rotating shaft supported by rolling element bearings. However, due to the recent trends of high operating speed, high load capacity and light weight in rotating machinery, it is becoming increasingly important to change the dynamic characteristics of rotating machines in operation so that the excessive vibrations, which may occurparticularly when passing through critical speeds or unstable regions, can be avoided. Semi-active type SFDs using magneto-rheological fluid (MR fluid), which responds to an applied magnetic field with a change in rheological behavior, are introduced in order to find its applications to rotating machinery as an effective device attenuating unbalance responses. In this paper, a semi-active SFD using MR fluid is designed, tested, and identified to investigate the capability of changing its dynamic properties such as damping and stiffness.In order to apply the MR-SFD to the vibration attenuation of a rotor, a systematic approach for determining the damper's optimal location is investigated, and also, a control algorithm that could improve the unbalance response characteristics of a flexible rotor is proposed and its control performance is validated with a numerical example.

  • The rheological models of acorn flour gels with different concentrations were investigated by stress relaxation test. The analysis of relaxation curves by successive residual method revealed that the rheological behavior of acorn flour gels could be expressed by the 7-element, generalized Maxwell model. The equilibrium modulus and modulus of elasticity increased by the increment of acorn flour concentration.

  • Electro-Rheological(ER) fluid are suspensions which show an abrupt increase in rheological properties under electric fields. ER effects arise from electrostatic forces between the starch particles dispersed in the electrically insulating silicone oil, induced when an electric field is applied. Yield stress of the fluids were measured on the couette cell type rheometer as a function of electric fields. This paper presents performance analyses of four types of the two parallel-plate. Which have different electrode length and width but same electrode area. On the basis of the pressure drop and flow rate analysis. Four types of the two parallel-plate are designed and manufactured. Using ER fluid, it is possible to directly interface between electric signals and fluid power without moving parts.

Relationship between morphology and viscosity of the main culture broth of Cephalosporium acremonium M25

  • In this study, the relationship between morphology and viscosity of the main culture broth of Cephalosporium acremonium M25 was investigated in a 2.5 L bioreactor. The differentiation of C. acremonium M25 showed a complex pattern during the main culture. The morphological changes of C. acremonium M25 were related to the rheological properties of the culture broth and it was well agreed with the power law model. As a result of rheology study, it was found that rheological properties of the main culture broths of C. acremonium M25 in bioreactor were closely related to morphological changes. Also, fractal dimension fairly predicted morphological and rheological changes in the main culture broth.

  • This paper presents some inherent characteristics of a semi-active variable damper featuring electro-rheological (ER) fluid. The damping force of the damper can be selectively adjusted or controlled by employing electric field to the ER fluid domain. This is possible owing to the pressure drop across the piston occured by field-dependent variable yield stress of the ER fluid. This is fundamentally different than the performance of a conventional adjustable viscous damper. To demonstrate the effectiveness and superiority over the conventional one, the proposed damper is incorporated with a suspension system. A quarter car model with the suspension system is formulated and represented by a state equation. By choosing numerical values based on realistic package size, power requirements and suitable ER properties, the performance characteristics of the suspension system are obtained and evaluated in both frequency and time domains. The effects of constant electric field and on-off controlled electric field which relates to the damping force are also examined.
