패밀리 레스토랑 근무자의 직무 만족과 직무 교육이 서비스 품질에 미치는 영향에 관한 연구 (The Effect of the Job Satisfaction and Job Training of Family Restaurant Employees on Service Quality)

  • The purpose of this study is to identify how and job satisfaction and job training affect service quality and to offer strategic tools for enhancing competitiveness of the food service business industry. To fulfill this purpose, this study utilized a factor analysis, frequence test, a reliability analysis and a covariance structure analysis. The results of the analyses show that one dimension such as "job training" influenced service quality. This means that restaurants should put more focus on job training to improve service quality for customers.

  • Up to these days, hotels are assumed to compete each other. Due to the spread of high quality the hotel restaurants have begun to face an intensive competition. Hotel food at Beverage have become the more competitive along with fund, good price, service, quality food, and management know-how. It causes the hotel restaurants confront with management difficulties. In order to overcome the management difficulties, hotel restaurants have to improve their marketing abilities and especially to improve their service quality. For this, it is necessary fur hotel restaurants to investigate how their service providers and receivers recognize their service quality. In this research, we examined the cognitive three types of cognitive gaps among customers, service providers, and managers both on the service quality and on the positioning of hotel restaurants. Their cognitive gaps proved negatively correlated with hotel's performance. This research suggests the following findings. Firstly, the competitiveness of hotel restaurant depends on the accurate communication and consensus among managers, service providers, and customers. Secondly, using the information about cognitive gaps recognized, each hotel restaurant should develop concrete marketing plans and strategies with a careful consideration about its current competitive position and management condition.

  • 본 연구에서는 한식당 이용객들의 CRM이 고객 행동의도에 얼마나 영향을 끼치는지 측정하였다. 특히 한식당 이용객들의 CRM이 고객 행동의도 중 고객 감정반응을 매개효과로 어떤 영향을 미치는지 선행연구를 토대로 변수 간의 영향관계를 규명하고자 하였다. 첫째, 독립변수는 한식당 이용객들의 CRM 중 서비스 품질, 정보 품질, 시스템 품질 3가지를 변수로 설정하였고, 종속변수는 매개변수인 고객 감정반응을 다중회귀분석으로 실시하였다. 다중회귀분석의 결과는 서비스 품질, 정보 품질, 시스템 품질 모두 종속변수인 고객 감정반응에 대하여 유의한 정(+)의 영향관계가 있는 것으로 분석되었다. 둘째, 다중회귀분석의 결과는 3개의 독립변수 중에서 서비스 품질(${\beta}=.104$, P<.01), 정보 품질(${\beta}=.215$, P<.001), 시스템 품질(${\beta}=.682$, P<.001)은 종속변수인 고객 행동의도에 대하여 유의한 정(+)의 영향관계가 있는 것으로 분석되었다. 셋째, 식당 이용객들의 CRM 중 서비스 품질, 정보 품질, 시스템 품질은 고객 행동의도에 영향을 미치는 것으로 나타나, 모두 부분 매개 효과가 있는 것으로 나타났다.

외식 건강증진사업에 대한 소비자의 요구도 및 실행의지 분석: 서울지역 거주자를 중심으로 (An Analysis of Consumers' Needs and Practice Willingness for the Health Promotion Program in Restaurant Industry among Seoul Residents)

  • This study examined the needs and practice willingness for the health promotion program of restaurant industry among Seoul residents. Using structured self-administered questionnaires, data on subjects' general characteristics, health status, and eating out behavior characteristics, the needs and practice willingness of the health promotion program for restaurant industry were collected from 765 adults above the age of 19. The needs for nutrition labeling such as fat, calorie, sodium, fiber, and the practice willingness for consuming nutrition labeled food were high. Results showed that gender, restaurant's management status, and food quality status were significant indicators for needs for health promotion program. Education duration, food quality status, and the frequency of eating out were significant variables for practice willingness. The results imply that health promotion program for the restaurant industry should be based on the consumer's characteristics. Also, the results imply the necessity of several activities such as social marketing to inform the benefit of participation in the health promotion program for consumers, guidance to maintain the food quality and improve the ambiance of restaurant for suppliers, and the new establishment of research centers to validate the labeled information on meals and analyze the nutrients of the meals for agencies.

외식업 경영주의 직업만족도 및 경영의식 조사연구 - 경남지 역을 중심으로 - (Job Satisfaction and Business Attitude of Restaurant Owners - Focused Mainly in the Gyeone-nam Area -)

  • The purpose of this research was to analyze the job satisfaction and business attitudes of restaurant owners in order to explore solutions for improving restaurant management. The results were as follows : 1) The motive for starting a restaurant business was vocational aptitude \longrightarrow possibilities \longrightarrow good income : 2) In terms of job satisfaction, most respondents were satisfied with both the work itself and the income. It was also observed that the younger owners were more satisfied with their jobs than the older owners : 3) Increased costs, including labor and food costs, was indicated as the biggest problem in restaurant management. Respondents also perceived labor shortage as one of the most difficult problems. Men were more likely than women to consider the following problems as being more serious: rent, financial problems, taxes, regulation restrictions, menu development and customer complaints. It was found that as the size of the restaurants grew, the respondents perceived the shortage of labor as the hardest part of running a business : 4) Respondents agreed that employing good foodservice workers was the most important part of foodservice management. Owners also believed that they needed more research time for menu and service development 5) To be successful, the restaurant owners paid the most careful attention to food taste. Service, sanitation, and menu development were also emphasized. Respondents stressed the focus on service, good relationships, diligence, and faithfulness in order to be a good restaurant owner. The results of this research suggest that restaurant owners should have more professional conscientiousness to succeed in their own businesses, as well as improve the quality of the foodservice industry. Other important aspects related to the overall improved quality of the foodservice industry are: the continuation of government support, the enlargement of educational opportunities and greater respect for foodservice employees.   • The purpose of this thesis is to find the effect of family restaurant quality on the customer satisfaction level. As these days well development industrial society, not only service business but also most of business area needs to high quality service. According to taking this importance into account, this researcher performed the literature on the service quality and the degree of satisfaction level through a theoretical consideration. In addition, an empirical survey was performed with the subjects of customer in family restaurant in Korea. The collected material through SPSS10.0 was analyzed by statistical methods such as frequency analysis, Cronbach's a, and regression analysis.

A Study on the Difference in Expectation-Performance of Service Recovery Measurement Scale's 4 Dimensions both Korean Native Cattle Beef and Imported Beef Restaurant

  • A considerable amount of research has focused on the dimensionality of service failure and recovery construct. This paper is focused on service failure and recovery in the Korean native cattle and imported beef restaurant industry in the Korea. So, this paper has adapted Kau and Loh's Service recovery measurement scale so that restaurant managers can use it to determine how customers perceive the service quality in Korean native cattle beef restaurant and imported beef restaurant. The purpose of this research is to test the difference in pre-purchase expectation and post-purchase actual performance of 4 dimensions between the restaurants that sell the beef of Korean native cattle and imported cattle. The paired t -test is used to test difference of pre-purchase expectation and post-purchase actual performance for service recovery measurement scale's 4 dimensions of the 2 restaurant types. But, there is significant difference between pre-purchase expectation and post-purchase actual performance in the 2 restaurant types.

감염병 확산에 따른 레스토랑 선택속성 변화 분석: 텍스트마이닝 기법 적용 (Analysis of Changes in Restaurant Attributes According to the Spread of Infectious Diseases: Application of Text Mining Techniques)

  • 2020년 3월, 코로나바이러스 팬데믹으로 선포되면서, 다양한 방역 조치가 취해져 왔다. 이에 따라, 관광 및 환대 산업 내의 많은 변화들이 야기되었다. 특히 레스토랑 산업에서는 비대면 서비스 및 좌석 간 거리두기 등 방역 지침이 시행되었다. 전통적으로 레스토랑 선택속성에 대한 연구는 분위기, 서비스 품질, 음식의 품질을 포함한 3가지 속성의 중요성이 강조해 온 데 반해, 코로나19 이후 레스토랑 이용자를 대상으로 레스토랑 선택속성을 탐색한 연구는 미비한 실정이다. 이에 따라, 본 연구에서는 코로나19라는 환대 산업 내의 환경적 변화에 대한 이해에 기반하여, 국내 온라인 리뷰 데이터 상에서 새로운 레스토랑 경험적 속성을 확인하기 위한 탐색적인 접근을 시도하였다. 본 연구는 서울 을지로 지역에 위치한 일반음식점 및 휴게음식점 475개로 네이버 플레이스에 등록된 총 31,115개의 온라인 리뷰를 분석 단위로 고려하였다. 분석 방법은 단어 빈도와 역문서 빈도의 곱으로 산출된 TF-IDF와 잠재적 토픽들을 추출하는 확률적 모델 알고리즘인 LDA 토픽모델링 기법을 통해 온라인 리뷰 내에서 단어들의 군집화를 통해 레스토랑 선택속성을 재분류하고자 하였다. 분석 결과, 분위기, 서비스 품질, 음식 품질과 함께 코로나19 이후 레스토랑의 새로운 속성으로 "감염병 예방"요인이 도출되었다. 본 연구는 기존 레스토랑 선택속성에서 제시하는 세 가지 속성들을 범주화하고, 나아가 새로운 속성을 제시하였다는 점에서 기존 레스토랑 선택속성 문헌을 확장하여 학술적 의의가 있다. 나아가, 분석 결과에 기반하여 레스토랑 운영의 측면 및 정책적 관점에서의 실무적 제언을 시도하였다.

개인 가치에 따른 저가 프랜차이즈 레스토랑의 선택속성이 이용 만족도에 미치는 영향 연구 (The Relationships among Personal Values, Selection Attributes, and Customer Satisfaction in Low-Cost Restaurant)

  • This study conducted to find influences of selection attributes on consumer satisfaction as perceived by low-cost restaurant visiter by considering personal value. Developed survey was distributed and 428 sample who visited the low-cost franchise restaurant were employed the statistical analyze. The internal value and the external value included individual value in order to estimate the influence of the choice factor of the low-cost franchise restaurant on the quality of the product, and the choice factors were consisted of 3 variables that are quality, accessibility and service. Regression analysis was conducted to verify the relationships among the variables. As a result, the internal value (${\beta}=.236$, p<.0.01), and external value (${\beta}=.352$, p<.001) have the significant positive relationships with respect to quality. Second, the external value (${\beta}=.305$, p<.001) has the positive relationship with regard to accessibility, but the internal value has no significant relationships with level of accessibility. Third, the internal value (${\beta}=.828$, p<.001) has the significant positive relationship with regard to service, but there was no significant influences between external value and service in this study. Fourth, the internal value (${\beta}=.472$, p<.001), the external value (${\beta}=.479$, p<.001) were critical antecedents of the quality. Last, while quality (${\beta}=.858$, p<.001) has significant positive relationship with satisfaction, but it didn't show any relationships with accessibility and service.

Kano 모질 및 PCSI 지수를 통한 패밀리레스토랑 이용고객 Needs에 관한 연구 - 젊은 여성 고객을 중심으로 - (A Study on the Family Restaurant Customers' Needs by Kano Model & Potential Customer Satisfaction Improvement Index - Based on Female Customers -)

  • In this paper, we try to find success factor to satisfy Female Customer of a Family Restaurant We survey Female Customers Requirement and make a Questionnaire based on Female Customer by interview and internet Homepage. We find Potential customer satisfying factor by using Kano Analysis and Timko's CS coefficient and Potential Customer Satisfactionv improvement Index(PCSI) which is suggested by Leem represents how much a service feature can increase the degree of customer satisfaction when the service feature is fully fulfilled. We also discuss how to use this result, we hope our result to apply customer satisfying many fields not only Family Restaurant.
