  • The restaurant franchise industry is one that could benefit significantly from the use of intranet technology, from its potential for improving communications between franchisors and franchisees, to providing easier inventory and ordering processes. However, there is a level of trepidation among potential users about whether the technology would improve their work performance. This study sought to examine the relationships between perceived uncertainty and perceived usefulness of intranet technology in the restaurant franchise industry. Through a review of available literature, 10 sub-dimensions of perceived uncertainty (Duncan, 1972) and six sub-dimensions of perceived usefulness (Davis, 1989) were derived. Canonical correlation analysis was used to examine the relationships between these concepts using data collected from 163 franchising restaurant managers in South Korea. Findings from the data analysis demonstrates two negative factors and one positive factor in perceived uncertainty that influence perceived usefulness, thus offering some implications of what to consider when implementing an intranet system in a restaurant franchise.

For this, 350 chefs of 11 five-star hotels were surveyed with a questionnaire about the process and consciousness in managing food materials. 293 copies of the questionnaire were used in the empirical study by excluding unanswered and insincere ones. Before verifying the hypothesis, the reliability and propriety of the concepts suggested by the study model were analyzed through structural equation model using AMOS 5.0 to analyze concepts and verify the hypothesis. As the result of, the job satisfaction of five-star hotel restaurant chefs appeared to have positive influence on the chefs' purchase attitude, food material satisfaction, food material management performance. Also, the supplier satisfaction increased when the cooking and purchase departments communicate well with each other. Therefore, for the efficient purchase of food materials, the purchase and cooking departments shall survey the market periodically, increase communication between departments to obtain food material satisfaction, organization satisfaction and job satisfaction.

  • This study analyzed the customer's revisit concepts and storytelling by restaurant customers to identify the elements that can attract the attention of customers. The restaurant concept or advertising, restaurant decor will also have to change to emphasize the comparative advantage of the features in the menu of a restaurant or other restaurants / service that tells a story. Membership cards or money, or the same convenience and use of the restaurant non-monetary 'transition cost' can compensate for the negative emotions and low satisfaction level of restaurant customers and help them choose to revisit the restaurant. Therefore, if such a transition takes full account of the effects of the cost to the customer, it can be used as an effective means. In class restaurants, such as the food and customer service, the increased levels of the restaurant atmosphere and empirical elements, such as store concept and physical environment, can improve the positive consumer sentiment, strengthen the customer satisfaction and have a positive effect on the customers' revisit intention. It is also important to improve the level of visual texture using light. In addition, positive consumer sentiment can be induced using the store concept, the physical environment, and experiential elements. In other words, membership cards, mileage points, and various financial and non-financial inducements as a marketing tool will have a positive impact on the customer's revisit intention.

  • This study attempts to investigate the relationships among psychological traits, environment, attitude on education, satisfaction with education, and learning transfer of restaurant entrepreneurship education. The samples of this study were selected from the restaurant entrepreneurs who were running restaurants after having taken the restaurant entrepreneurship education in Seoul and Kyonggi Province. Three hundred and eighty nine copies of the questionnaire, with a 86.4% response rate from a judgmental sample of 450 restaurant entrepreneurs, were utilized to study the relationships between research constructs. SPSS (11.5 version) and AMOS 5.0 were employed to analyze the uni-dimensionality of research concepts and reliability tests, and structural equation modeling was employed to verify the research hypotheses. Need for achievement and ambiguity tolerance, and environment showed a positive effect on attitude to education. Attitude to education was related positively with satisfaction with education, and satisfaction with education showed a positive effect on learning transfer of the restaurant entrepreneurship education. The managerial implications of these results were also examined.

  • Named entity recognition (NER) technique can play a crucial role in extracting information from the web. While NER systems with relatively high performances have been developed based on careful manipulation of terms with a statistical model, term mismatches often degrade the performance of such systems because the strings of all the candidate entities are not known a priori. Despite the importance of lexical-level term mismatches for NER systems, however, most NER approaches developed to date utilize only the term string itself and simple term-level features, and do not exploit the semantic features of terms which can handle the variations of terms effectively. As a solution to this problem, here we propose to match the semantic concepts of term units in restaurant named entities (NEs), where these units are automatically generated from multiple resolutions of a semantic tree. As a test experiment, we applied our restaurant NER scheme to 49,153 nouns in Korean restaurant web pages. Our scheme achieved an average accuracy of 87.89% when applied to test data, which was considerably better than the 78.70% accuracy obtained using the baseline system.

  • This study aimed to investigate the mechanism by which service companies transfer their services overseas and create new value while interacting with local characteristics. A narrative analysis method was used in a case study of Ajisen Ramen, a Japanese service company that created a Japanese-style ramen restaurant, which experienced rapid growth in China. This study analyzed the restaurant as global service innovation and constructed a causal mechanism to explain the resulting rapid growth. In the pre-entry stage, the tangible value source core service facilitated its successful overseas transfer. In the post-entry stage, value source core service standardization and value sharing were interrelated and locally accepted factors. Knowledge of the local characteristics influenced the local storefront format that allowed contact with local customers. This local front format made it possible to offer local customers new value. The global service innovation mechanism developed through this study reflects a causal diagram that correlated the theoretical concepts of these events.
