고추의 품질보존에 대한 연구 (A Study on Quality Maintaining of Dried Red Pepper Fruits)

  • This study examined the quality change of red peppers during storage at various temperatures and humidities. It was observed that red peppers showed mold at aw 0.75(>25% water content), discoloration at aw 0.33(<10%) and browning at aw 0.75(>19%). The most ideal condition of the storage for red peppers was a 13∼15% water content and 60${\pm}$5% RH. The storage life for whole red peppers were 2.0 months at 40$^{\circ}C$, 13.6 months at 25$^{\circ}C$, 27.3 months at 15$^{\circ}C$, 30.0 months at 10$^{\circ}C$, and 65.0 months at -3$^{\circ}C$. During any storage period above, level of capsanthin, browning and capsaicin were changed for whole peppers. Browning appeared to be a crucial factor for marketable quality of stored red peppers. It was found that the level of capsaicin & capsanthin have a miner relationship with marketable quality for consumer. Storing red peppers in nitrogen and vacuum atmosphere packing condition was found to be better than storing them in air at various temperatures in terms of storage life and quality maintenance. The nitrogen gas packaged red peppers kept longer shelf life and better quality compared with vacuum packaging.

원적외선 가열에 의한 고추의 건조특성 (Drying Characteristics of Red Peppers by Infrared Heating)

  • Infrared heating has been traditionally used in industrial applications for processes such as dehydration of food industrial. This heating method involves the application of radiation in the wavelength range of 5~50 micrometers. In this work, simultaneous heat balance equations were developed to simulate the infrared radiation heating of red peppers. The equations assume that moisture diffuses to the outer boundaries of the material in liquid form and evaporation occurs at the surface of the red peppers. Energy for moisture evaporation is supplied by the infrared radiant energy. The equations were validated with experimental data on surface temperature and average moisture content of red peppers. Average deviations of predicted surface red peppers temperature and average red peppers moisture from experimental data were 323~353K and 50~80%, respectively. The spectral extinction coefficients in the wavelength range $1.5<{\lambda}<27$ micrometer at 293K for Red Peppers were determined from results of reflection measurements and the four flux radiative heat transfer calculation. The radiation extinction coefficients were obtained from effective drying factor the temperature 373K.

Comparison of Volatile Components in Fresh and Dried Red Peppers (Capsicum annuum L.)

  • Fresh, and sun- and oven-dried red peppers were analyzed for volatile components. Also, their odor-active compounds were determined using gas chromatography-olfactometry (GC-O). More diverse volatile components, such as aldehydes, ketones, acids, and esters, were found in dried samples than in fresh ones. They included hexanal, ethyl acetate, ${\alpha}$-ionone, and ${\beta}$-ionone. Some Strecker aldehydes, 2-methyl butanal and 3-methyl butanal, were found only in dried red peppers. More hydrocarbons of high volatility and terpene-type components, such as ${\gamma}$-terpinene and aromadendrene, were detected only in fresh red peppers. A considerable amount of naphthalene was formed during sun-drying, whereas 2-furancarboxaldehyde, 1-methyl-1H-pyrrole and benzeneethanol were detected only in oven-dried red peppers. Characteristic odor of fresh ones could be attributed to 3-penten-2-o1, 2-methyl-2-butenal, 2-methoxy phenol, 2-hydroxy-methyl-benzoate, and 2-phenoxy ethanol, whereas some odorants, including 2-pentyl furan, naphthalene, hexyl hexanoate, and ${\alpha}$-ionone, could be responsible for distinctive odor property of sun-dried red peppers. 2-Furancarboxaldehyde, benzeneethanol, 4-vinyl-2-methoxy phenol, and unknown played important roles in odor property of oven-dried red peppers.

건조방법에 따른 건고추의 품질평가 (Evaluation of Quality of Red Pepper with variations in Drying Methods)

  • In order to produce the high-quality of dried red pepper with respect to a color and a taste we developed a automatic drier equipped with combined several heat energies(ADCHE). and compared the quality of ADCHE-treated red pepper with that of the pepper treated with conventional dryings such as natural, hot-air, and far-infrared ray dryings. The results obtained were as follows : (1) The contents of capsanthin varied significantly with drying methods within the range of 1.7 to 6. 4mg/g dry weight. The capsanthin level of red pepper treated with far-infrared ray drying was higher than that of the pepper treated with ADCHE showed the highest at 51.46mg/g dry weight of three drying methods. (2) As a result of determination of color intensity of-red-pepper using-a colorimeter, the red color intensity of the peppers was affected by drying methods irrespective of drying temperature, and especially a value of red pepper treated with ADCHE was appeared to be 19. 1, indicated that this pepper have the most bright color intensity. (3) The contents of soluble browing subatances increased with a increase in drying temperature, but L* value of red pepper treated with ADCHE was appeared to be 0.187, indicated that this red pepper have the most clear red color (4) The changes of capsanthin level of red pepper according to drying methodes did not show significantly, but generally a decreasing rate of capsanthin levels were lower in that order ADCHE

Comparison of forecasting performance of time series models for the wholesale price of dried red peppers: focused on ARX and EGARCH

  • Dried red peppers are a staple agricultural product used in Korean cuisine and as such, are an important aspect of agricultural producers' income. Correctly forecasting both their supply and demand situations and price is very important in terms of the producers' income and consumer price stability. The primary objective of this study was to compare the performance of time series forecasting models for dried red peppers in Korea. In this study, three models (an autoregressive model with exogenous variables [ARX], AR-exponential generalized autoregressive conditional heteroscedasticity [EGARCH], and ARX-EGARCH) are presented for forecasting the wholesale price of dried red peppers. As a result of the analysis, it was shown that the ARX model and ARX-EGARCH model, each of which adopt both the rolling window and the adding approach and use the agricultural cooperatives price as the exogenous variable, showed a better forecasting performance compared to the autoregressive model (AR)-EGARCH model. Based on the estimation methods and results, there was no significant difference in the accuracy of the estimation between the rolling window and adding approach. In the case of dried red peppers, there is limitation in building the price forecasting models with a market-structured approach. In this regard, estimating a forecasting model using only price data and identifying the forecast performance can be expected to complement the current pricing forecast model which relies on market shipments.

Ochratoxin A Contamination of Red Chili Peppers from Chile, Bolivia and Peru, Countries with a High Incidence of Gallbladder Cancer

  • Our previous study detected aflatoxins in red chili peppers from Chile, Bolivia, and Peru, each of which have a high incidence of gallbladder cancer (GBC). Since the aflatoxin B1 concentration was not so high in these peppers, it is important to clarify the presence of other mycotoxins. Here we attempted to determine any associations between the concentrations of aflatoxins and ochratoxin A (OTA) in red chili peppers, and the corresponding GBC incidences. We collected red chili peppers from three areas in Peru: Trujillo (a high GBC incidence area), Cusco (an intermediate GBC incidence area), and Lima (a low GBC incidence rate), and from Chile and Bolivia. Aflatoxins and OTA were extracted with organic solvents. The concentrations of aflatoxins B1, B2, G1, and G2, and OTA were measured by high-performance liquid chromatography. The values obtained were compared with the incidence of GBC in each area or country. All of the red chili peppers from the three areas showed contamination with aflatoxins below the Commission of the European Communities (EC) recommended limits ($5{\mu}g/kg$), but the OTA contamination of two samples was above the EC recommended limit ($15{\mu}g/kg$). The mean concentrations of OTA in the peppers from Chile (mean $355{\mu}g/kg$, range < $5-1,059{\mu}g/kg$) and Bolivia (mean $207{\mu}g/kg$, range $0.8-628{\mu}g/kg$), which has a high incidence of GBC, were higher than that in Peru ($14{\mu}g/kg$, range < $5-47{\mu}g/kg$), which has an intermediate GBC incidence. The OTA contamination in the red chili peppers from Chile, Bolivia, and Peru was stronger than that of aflatoxins. Our data suggest that OTA in red chili peppers may be associated with the development of GBC.

Effects of Temperature and Humidity on Fungal Occurrence in Dried Red Pepper during Storage

  • Dried red peppers are frequently contaminated with mycotoxins during storage. To determine the effect of storage environments on fungal occurrence and subsequent mycotoxin accumulation in dried red peppers, we monitored red pepper powder and whole fruit samples for fungal occurrence under various temperatures and relative humidity (RH) conditions during 340 days. Fungal occurrences fluctuated in both pepper forms throughout the storage but they were higher in pepper powder than whole one, higher under low temperatures (-20℃, 0℃, or 4℃) than others (10℃, 25℃, or 30℃), and higher under RH 93% than RH 51% and 69% in both peppers. The samples exhibiting high fungal occurrences were associated mainly with dominant species such as Aspergillussydowii, Penicillium solitum, P. roqueforti, P. polonicum, or P. chrysogenum. Mycotoxigenic species, including A. flavus, A. ochraceus, A. westerdijkiae, A. tubingensis, and P. citrinum, were also detected throughout the samples. Although mycotoxins were not detected in the samples, mycotoxigenic potential of A. flavus, A. ochraceus, and A. westerdijkiae isolates were confirmed. These results show that low temperatures (-20℃, 0℃, or 4℃) and/or high surrounding RH (>93%) are not safe environments for storage of dried red peppers as fungal growth can occur under these conditions.

우리나라 전통조리에서 고추의 활용 (Using the Red Pepper in Korean Traditonal Cuisine)

  • Red pepper have affected traditional cuisines through various ways since they were first introduced in Korea over 400 years. But we on easily determine that red pepper powder and red pepper paste were not used daily dishes until 1940 as we look into traditional cookbooks. Chinese pepper and black pepper were used for hot spices before red pepper was introduced in Korea. It is estimated that red pepper was introduced during the last of 1500s the Japanese invasion of Chosun dynasty, but it was first used to make Sunchang red pepper paste in $\boxDr$Sumunsasul(수문사설)$\boxUl$(1740), and to make Kimchi in $\boxDr$Jeungbo Sanlimkungje(증보 산림경제)$\boxUl$(1766), and it became a general spice for vegetables in the middle of the 1800s. Pepper is mostly used to make Kochujang(red pepper paste), Kimchi, Jutkal(salted flesh) and Jangaji(salited very.) etc as fermentable cuisines. The attribute of using pepper was developed fur fermentable spices, and to give spicy flavor to cuisines. The types of peppers using traditional cuisines are various such as unripened pepper, red pepper, red pepper powder, red pepper paste, and pepper leaves. Traditional dishes with vegetables mostly use red peppers. Fish dishes(soup, stew, bracing, roasting, steaming) also use red peppers. Soup '||'&'||' stew with meat item partly use red pepper but steaming, roasting dishes with meat item not use pepper. roasted pork, pork ribs, steamed chicken of spicy meat cuisines in the 1930s did not use pepper. Kochujangbokkum(고추장볶음) is one of the oldest cuisines for using red pepper paste in the 1800s. Sliced red peppers and red pepper powder are mostly used for garnishing of cuisines.

  • To develop a stalk detaching system the effect of shape factor of red pepper affecting the performance of unfolding, arranging and cutting was analysed. The obtained results are as follows : By cutting experiment, it was found that the bending of stalk affected the cutting rate of stalk, and that the bending of body increased the amount of peppers that were expelled from the cutting guide by conveying brush. The ratios, 'bending length of a body/body length'and 'bending length of a stalk/stalk length', could be used as criteria far abnormality of body and stalk of peppers, respectively. As a result of experiment, it was concluded that mechanical treatment would be difficult for the peppers with indexes greater than 0.4 and 0.3 fur body bending and stack bending. respectively. So, these indexes were used as criteria for distinguishing abnormality from normality of peppers. In the unfolding unit, conveyance of peppers was impossible for both of normal and abnormal ones at the inclination angle of 10°, especially, at the frequency of 8.3 Hz peppers maintained stationary state. At the inclination angle of 20°, both of normal and abnormal peppers showed similar tendencies, but abnormal ones showed an accumulation trend gradually with increased feeding speed. In the arranging unit, conveyance of peppers was almost impossible for both of normal and abnormal ones at the inclination angle of 20°, showing almost no difference between the conveyances of normal and abnormal ones. In the case of the inclination angle of 30°, at the condition of the feeding speeds and frequency corresponding 0.06 m/s, 0.08 m/s and 8.3 Hz, respectively, the passing time of the abnormal peppers on the arranging plate increased rapidly.

PHYSICAL PROPERTIES OF FRESH RED PEPPER

  • Geometrical characteristics of fresh red pepper(Capsicum annuum L.) were measured and indexed to define some important geometrical characteristics, and malformation of body and fruit stalk which are necessary for the design of the equipments for cutting, spreading and alignment of red pepper in developing a fruit stalk remover of fresh red pepper. The effects of bending of body and fruit stalk on the equipments of cutting, spreading and alignment were studied. The maximum lengths of some parts of fresh red pepper were found to be 180 mm, 125 mm, 144 mm, 67 mm and 76 mm for the body, the bent part of body, the fruit stalk, the bent part and the straight part of fruit stalk, respectively. The fresh red pepper with bending indices more than 0.4 and 0.3 for the body and the fruit stalk, respectively, was defined to be malformed based on the result of cutting rate using cutting unit; while the other ones to be normal in shape. Based on this, among the total fresh red peppers tested, 47%, 40% and 20% were found malformed for the body, the fruit stalk, and for both of the body and the fruit stalk. Malformed red peppers were poorer in spreading and alignment than normal ones, and the processed quantity was decreased with increased feed rate. The required time for the malformed peppers to pass on the alignment plate inclined at 30 increased rapidly at 8.3 Hz with increased feed rate. For the fresh red peppers with average moisture content of 85%,w.b., the maximum tensile strength between fruit stalk and body was 88.1 N; the maximum cutting resistances were 92.1 N and 94.9 N for the fruit stalk-calyx joint and body, respectively. Average coefficients of static friction were 0.99, 0.62, 0.59 and OJ, respectively, for the surfaces of rubber, galvanized iron, acryl and plywood.
