Effect of ethanol extracts from red pepper seeds on antioxidative defense system and oxidative stress in rats fed high-fat.high-cholesterol diet

  • The purpose of the present study was to investigate the effect of ethanol extracts from red pepper seeds on the antioxidative defense system and oxidative stress in rats fed a high fat high cholesterol diet. Rats were divided into four experimental groups which were composed of high fat high cholesterol diet group (HF), high fat high cholesterol diet with 0.1% ethanol extracts from red pepper seeds supplemented group (HEA), high fat high cholesterol diet with 0.2% ethanol extracts from red pepper seeds supplemented group (HEB) and high fat high cholesterol diet with 0.5% ethanol extracts from red pepper seeds supplemented group (HEC). Supplementation of ethanol extracts from red pepper seeds groups (HEA, HEB and HEC) resulted in significantly increased activities of hepatic glutathione peroxidase and catalase. Hepatic superoxide radical contents in microsome and mitochondria were significantly reduced in the groups supplemented with red pepper seeds ethanol extracts. Hepatic hydrogen peroxide content in the mitochondria was reduced in ethanol extracts from red pepper seeds supplemented groups. TBARS values in the liver were reduced in red pepper seeds ethanol extracts supplemented groups. Especially, HEB and HEC groups were significantly decreased compared to the HF group. Hepatic carbonyl values were significantly reduced in mitochondria in these supplemented groups. These results suggest that red pepper seeds ethanol extracts may reduce oxidative damage, by activation of antioxidative defense system in rats fed high fat high cholesterol diets.

고추씨를 첨가한 즉석 고추장의 품질특성 (Quality Characteristics of Instant Gochujang added with Red Pepper Seeds Powder)

  • This study produced instant Gochujang(red pepper paste) with enhanced convenience by increasing nutritional value and palatability, and by reducing production period, adding in the red pepper seed in the red pepper paste production in order to increase the use of the red pepper seed that is not used often as a food ingredient even though its nutrition value when producing red pepper paste was proven. Moisture content, pH, L-value, a-value, b-value, sugar contents, and salinity of instant Gochujang tended to increase as the amount of red pepper seed increased, while viscosity manifested the opposite trend. Sensory evaluations were conducted on instant Gochujang to assess differences in characteristics, which demonstrated that as the amount of red pepper seeds powder increased, the intensity of redness for the red pepper paste's external appearance, luster, spicy flavor and taste, and savory taste were evaluated strong. Meanwhile, fermentation value, which is red pepper paste's foremost weakness was evaluated as weak. Moreover, there was no difference in the size of the grain when compared to the contrast group consisting of regular red pepper paste. The results of preference test demonstrated that the RG3 with 30% of red pepper seed is optimal in terms of the external appearance, taste, texture and overall preference.

Effect of Red Pepper Seeds Powder on Lipid Composition in Rats Fed High-Fat.High-Cholesterol Diets

  • The purpose of the present study was to evaluate the effects of red pepper seeds powder on lipid metabolism in rats fed high fat high cholesterol diet. Rats were divided into five experimental groups: normal diet group, high fat high cholesterol diet group, high fat high cholesterol diet with 5% red pepper seeds powder supplemented group (SA group), high fat high cholesterol diet with 10% red pepper seeds powder supplemented group (SB group) and high fat high cholesterol diet with 15% red peeper seeds powder supplemented group (SC group). The serum triglyceride (TG) and cholesterol contents, and LDL-cholesterol and atherogenic index (AI) of the red pepper seed powder supplemented groups were significantly decreased compared to the HF group. The serum HDL-cholesterol contents of the red pepper seed powder supplemented groups were increased compared to the HF group. However, there was no significant difference in the serum HDL-cholesterol among all experimental groups. The hepatic TG and cholesterol contents of the red pepper seed powder supplemented groups were significantly decreased compared to the HF group. The fecal total cholesterol and triglyceride contents of the red pepper seeds powder supplemented groups were significantly increased compared to the HF group. These results suggest that supplementation of red pepper seed powder may have a pronounced impact on markers of lipid metabolism in serum and liver of rats fed high fat high cholesterol diets.

품종 및 건조방법에 따른 고추씨 기름의 이화학적 특성 (The Physico-Chemical Properties of Korean Red Pepper Seed Oil by Species and Dried methods)

  • Some Physico-chemical properties of korean red pepper seed oil were evaluated to find available method to utilize red pepper seeds used as useful cooking oil resources. Samples of red pepper seeds used as oil meterials were native, improved species and they were named such as NS (native spicies dried under sunlight), IS (improved spicies dried under sunlight), NF (native spicies dried by heating), and IF(improved spicies dried by heating), respectively. Moisture, ash, crude protein and crude fat contents of all red pepper seeds were 6.6%∼7.7%, 3.3∼3.5%, 18.25∼19.4% and 26.8∼27.5% in all samples, showing the specially high crude fat and crude protein content in NS. Capsaicin contents in crude red pepper seed oils were shown from 0.06 to 0.08% but after refining process, capsaicin contents were mostly tossed as 0∼0.006%. The types of tocopherol found in crude and refined red pepper seed oils were ${\gamma}$-, ${\alpha}$-, $\delta$-analogues, the amount of total tocopherol in IF was 2.10 mg/g oil which were the highest value of all red pepper seeds. In all red pepper seeds oils main fatty acids were linoleic acid (68∼70%), palmitic acid (14∼16%), oleic acid (10∼11%), and linolenic acid were extemely small amounts. The specific gravity (SG) 0.916∼0.919, refractive index (RI) 1.4724, acid value (AV) 0.26∼0.36, peroxide value (POV) 0.73∼1.19 and Iodine value (IV) 134.35∼134.92 were measured in all red pepper seed oils.

고추씨가 고지방.고콜레스테롤 식이 흰쥐의 항산화계 및 산화적 손상에 미치는 영향 (Effect of Red Pepper Seeds Powder on Antioxidative System and Oxidative Damage in Rats Fed High-Fat.High-Cholesterol Diet)

  • 본 연구에서는 고추씨의 생체 내 항산화작용을 규명하기 위하여 고콜레스테롤 고지방 식이 흰쥐 간조직의 항산화 방어계와 지질과산화에 미치는 영향을 관찰하였다. 실험동물은 체중 150$\pm$10 g 내외의 Sprague-Dawley종 수컷 흰쥐를 사용하였으며, 정상식이 대조군(N), 고지방.고콜레스테롤 공급군(HF), 고지방 고콜레스테롤 공급군에 고추씨파우더 5% 공급군(SA), 10% 공급군(SB) 및 15% 공급군(SC)으로 총 5군으로 나누었다. 식이 및 식수는 자유섭취하게 하였으며 4주간 사육한 후 희생시켰다. 실험기간 동안 체중 증가량은 정상군에 비해 고지방 고콜레스테롤 공급군에서 유의적으로 증가하였으나 고추씨 공급군에서는 정상군 수준이었으며 식이효율도 유사한 경향이었다. 간 조직 중의 항산화 효소계인 SOD 활성은 HF군에 비해 고추씨 공급군에서 다소 증가한 경향이었다. GSHpx의 활성은 정상군에 비해 고지방 콜레스테롤 공급군 모두에서 감소되었으나 SC군에서는 정상군 수준이었다. 또한 catalase 함량은 고지방 고콜레스테롤 공급군에 비해 고추씨파우더를 공급한 군에서 증가되었으나 유의적인 차이는 없었다. 유리기를 소거하는 지표인 간조직의 superoxide radical 함량을 microsome에서 관찰한 결과는 정상군에 비해 HF군에서 유의적으로 증가되었으나 고추씨파우더를 공급한 모든 군에서 감소되었다. 간조직의 mitochondria에서는 고추씨파우더를 공급한 모든 군에서 유의적으로 감소하였으며 특히 SB, SC군에서는 정상군 수준으로 감소하였다. 간조직의 cytosol에서 $H_2O_2$를 관찰한 결과 고지방 고콜레스테롤군 대조군에 비해 고추씨파우더 공급군에서 감소되었으나 유의적인 차이는 없었다. 간조직의 mitochondria에서는 정상군에 비해 HF군에서 유의적으로 증가되었으나 SC군에서는 정상군 수준으로 감소되었다. 간조직의 산화적 손상의 지표가 되는 carbonyl가 함량을 microsome에서 측정한 결과는 정상군에 비해 HF군에서 유의적으로 증가되었으나 고추씨파우더를 다량 공급한 두 군에서는 정상군 수준으로 감소되었다. 또한 mitochondria에서 측정한 결과는 HF군에 비해 고추씨파우더를 공급한 군에서 감소하였으나 군 간의 유의적인 차이는 없었다. 간 조직 중의 과산화지질의 함량을 관찰한 결과는 고지방 고콜레스테롤군에 비해 고추씨파우더를 공급한 모든 군에서 정상군 수준으로 감소하였다. 그리고 혈장에서 측정한 결과도 고추씨파우더를 공급한 군에서 정상군 수준으로 감소하는 것을 알 수 있었다. 이러한 결과는 고추씨파우더의 항산화 성분이 효과적으로 활성산소종의 소거에 관여함으로써 산화적 손상을 완화시킨 결과로 보인다.

  • The purpose of the present study was to examine the effects of water extracts from red pepper seeds powder on antioxidative enzyme activities and oxidative damage in groups of rrats fed high-fat and high-cholesterol diets group (HFC). The Rrats were divided into the following five experimental groups which are : composed of a normal diet group, a high fat high cholesterol diet group, and a high fat high cholesterol diet group supplemented with different amounts contents (1%, 2% and 4%) of red pepper seeds powder water extracts supplemented groups (HFCW1, HFCW2 and HFCW4, respectively). Body weight gains and food intake were lower ofin the red pepper seed water extracts groups were lower than those inof the HFC group. Hepartic xanthine oxidase (XOD) activity was decreased in the HFCW2 and HFCW4 groups compared to the HFC group. Hepartic glutathione peroxidase (GSH-px) activitiyactivity was increased in the HFCW4 group compared to the HFC group. Hepatic superoxide radicals within the mitochondria and microsomes of cells were significantly reduced in the HFCW2 and HFCW4 groups compared to the HFC group. Hepartic hydrogen peroxide in the cytosol was significantly reduced in the HFCW3 and HFCW4 groups compared to the HFC group. Hepatic carbonyl values in the microsomes and mitochondria were significantly reduced in the HFCW4 group compared to the HFC group. Hepartic thiobarbituric acid reaction substance (TBARS) activity was decreased in the HFCW2 group compared to the HFC group. These results suggest that water extracts of red pepper seeds powder may reduce oxidative damage by activation of antioxidative defense systems in rats fed high fat-high cholesterol diets.

근적외 분광분석법에 의한 분말고추중의 씨앗 및 꼭지혼입량의 신속한 측정 (Rapid Determination of Seed and Stem Content in Red Pepper Powder by Near-Infrared Reflectance Spectroscopic Analysis)

  • 분말고추가루에 씨앗이나 꼭지를 혼입시켜 저장시킨 결과 capsanthin, capsaicin, total-sugars 등의 성분이 감소되었으며 특히 꼭지가 혼입된 시료보다 씨앗이 혼입된 시료에 있어서 품질의 열화정도가 큼을 알 수 있었다. 이와 관련하여 씨앗이나 꼭지의 함량을 근적외 분광분석법으로 측정할 수 있는지의 가능성을 조사한 결과 씨앗의 혼입량은 1.76%의 측정오차로, 꼭지의 혼입량은 0.43%의 측정오차로 각각 30초 이내에 통시 측정할 수 있음을 확인하였다.

  • 고추씨 혼합비율에 따른 고추가루를 상대습도 11%에서 93%까지 8단계의 상대습도별로 $15^{\circ}C,\;25^{\circ}C$$40^{\circ}C$의 온도구에 저장하면서 고추가루의 흡습특성을 비교하였다. 저장시간에 따른 고추가루의 흡습곡선은 고추씨 혼합비율에 관계없이 RH 43% 이하에서는 단시간 내에 평형에 도달하여 수분함량의 변화가 거의 없었으나 RH 75% 이상에서는 평형수분함량이 급격히 증가하였다. 따라서 RH 75% 이상에서는 갈변현상이 나타났고, RH 33% 이하에서는 탈색현상이 나타났다. 고추씨를 완전히 제거한 고추가루의 단분자층 수분함량은 온도에 따라서 5.88%에서 7.35%로서 온도가 내려감에 따라 증가하였고, 고추씨 혼합비율이 높을 수록 단분자층 수분함량은 감소하였다.

품종별 고추씨의 화학적 성분 분석 (Chemical Component Analysis of Red Pepper (Capsicum annuum L.) Seeds with Various Cultivars)

  • 국내산 고추씨 품종 20여종과 미국 New Mexico주에서 재배된 고추씨 4품종의 일반성분 및 캡사이신노이드 및 유기산 함량을 분석하였다. 일반성분의 경우 회분 함량은 $3.11{\sim}3.77%$의 범위로 시료 간 큰 차이가 없었고, 단백질 함량은 $13.25{\sim}16.53%$의 범위를 보였다. 반면에 지방 함량은 18%에서 30%까지의 조지방 분포도를 보였고, 총 식이섬유 함량은 품종에 따라 크게 $40{\sim}65%$의 범위로 비교적 넓은 분포도를 나타내었다. 또 품종별 고추씨의 capsaicin 함량은 $0.09{\sim}5.32\;mg%$, dihydrocapsaicin 함량은 $0.00{\sim}2.17\;mg%$로 capsaicin 함량이 dihydrocapsaicin 함량보다 높았다. 유기산 함량은 당찬, 조향, 혼합된 고추씨가 $1.6{\sim}1.9%$로 낮은 함량을 보였고, 5% 이상의 유기산 함량을 가진 고추씨 품종은 천하무적, 삼강, 강건, 왕대박, 천하일품, 대찬과 미국산 고추 품종인 New Mexico 6와 LB-25였다.

Red Pepper Cultivation Using a Native Legume Cover Crop in Korea

  • Four seed vetch (Vicia tetrasperma), a biennial native leguminous plant, was used for a cover crop with different quantity of sowed seeds. Weed suppression and yield were evaluated for the red pepper cultivation in the following year of the vetch seeding. Seeding of 1.0, 2.0, 3.0, 4.5, and 6.0 kg 10 $a^{-1}$ suppressed weed occurrences until late in the growing season of the red pepper. Consequently, red pepper in the cover cropping system with seeding of 3.0, 4.5, and 6.0 kg 10 $a^{-1}$ had a similar yield to the conventional red pepper. The ideal seed rate in four seed vetch was 3.0 and 4.5 kg 10 $a^{-1}$ in terms of reducing weed occurrence as well as increasing growth and yield in red pepper.
