  • 1. 환경조건을 달리하여 재배한 유채유의 지방산조성은 품종과 지방산의 종류에 따라 다르나 일반적으로 함량이 낮은 지방산에서는 함량차가 적은데 대해서 함량이 높은 Erucic acid에서는 뚜렷한 차가 있었다. 2. 국내의 3개지역에서 재배된 유채품종의 지방산조성은 목포가 제주, 강릉보다 Erucic acid함량이 높으며 Oleic acid와 Linoleic acid함량은 낮았다. 어느 경우나 단쇄지방산과 장쇄지방산과의 사이에는 높은 부의 상관이 있었다. 4. 목포에서 재배된 유채종자가 Erucic acid함량이 높았던 원인은 등숙기간의 적산온도가 낮고 강수량이 많으며 일조시수가 적은데 있으며 이들 환경조건과 Erucic acid함량과의 사이에는 각각 높은 상관관계가 있으며 이같은 경향은 한국과 일본의 지역차에서도 같은 원인과 상관관계가 성립되었다.5. 지방산개량육종은 등숙기간의 온도가 낮고 강수량이 많으며 일조량이 적어서 Erucic acid함량이 높아지기쉬운 지역에서 육종하는 것이 효과적이다.

  • 추출방법과 용매가 조 채종유중의 미량성분과 그 자동산화성에 미치는 영향에 관해 검토하였다. 불검화물과 Sterol 함량은 추출방법(Twisselmaun과 Soxhlet)과 사용한 용매의 종류(Pentan, Hexan, Heptan) 종류에 따라 변화되지 않았으며 Chlorophyll 함량은 추출용매의 분자량의 증가에 따라 증가되고 사용된 추출법 상호간에는 Chlorophyll 수율에 유의한 영향을 미치지 않았다. 채종유가 자동산화되는 경향을 추출용매의 비점이 상승함에 따라 증가되는 것으로 관찰되었다.

사료 내 지질원 및 필수지방산이 치어기 황복(Takifugu obscurus)의 성장 및 체조성에 미치는 영향 (Effects of Dietary Lipid Sources and Essential Fatty Acids on the Growth and Body Composition of the Juvenile River Puffer Fish Takifugu obscurus)

  • We conducted an 8-week feeding trial to evaluate dietary lipid sources on the growth performance and body composition of juvenile river puffer fish Takifugu obscurus. Nine experimental diets were formulated with fishmeal as the major protein ingredients, providing 50% crude protein. The experimental diets contained either beef fallow (BF), soybean oil (SO), rapeseed oil (RO), or linseed oil (LO). Each of these diets was then supplemented or not with 0.5% n-3 HUFA (BFH, SOH, ROH, and LOH), resulting in a total of eight experimental diets. The control diet contained fish oil (FO) as the lipid source. Fish averaging $10.3{\pm}0.03g$ were fed the experimental diets in randomly selected triplicate groups for 8 weeks. Weight gain and feeding efficiency of fish fed the FO and SOH diets were significantly higher than those of fish fed BF or RO (P<0.05), but these diets did not differ significantly from the other diets. The protein efficiency ratio of fish fed the SOH diet was significantly higher than that of fish fed the BF, SO, or RO diets (P<0.05), but these were not significantly different from the other diets. The specific growth rate of fish fed the FO and SOH diets was significantly higher than that of fish fed the BF diet (P<0.05). Whole body DHA and n-3 HUFA contents of fish fed the FO diet were significantly higher than those of fish fed the SO, RO, or LO diets (P<0.05), but were not significantly different from the other diets. These results indicate that soybean oil and linseed oil could replace up to 100% of fish oil in the diet containing 60% fishmeal for river puffer fish.

식이지방이 흰쥐의 혈청 지질상태 및 조직 지방산분포에 미치는 영향 (Effect of Dietary Fat and Oils on Serum Lipid Status and Fatty Acid Composition in Tissues of Rat)

  • In order to establish tissue lipid status in animal on feeding of various dietary fat and oils, each group of rats was fed a semisynthetic diet containing 10%(w/w) mackerel oil (MO), eel oil (EO), soybean oil (SO), rapeseed oil (RO) or beef tallow (BT) for 1, 2 and 4 weeks, After each feeding period, levels of cholesterol, triglyceride and phospholipid were measured in serum. Fatty acid ${\leftarrow}$ composition was also investigated in serum and tissue lipids. Levels of total serum cholesterol were lower but HDL-cholesterol were higher in fish oil groups, which resulted in significantly higher ratio of HDL to total cholesterol in the fish oil groups. Fish oil groups, in general, also had lower levels of serum triglyceride and phospholipid than other groups, but S0 group maintained as low phospholipid levrl as fish oil groups. Fatty acid composition of dietary fat was reflected in all the tissues investigated but with varying degrees. Very long chain fatty acids, specific components exclusively found in fish oils were most well reflected in liver and relatively well in serum, whereas linoleic acid and erucic acid of SO and RO in the diet were better shown up in heart and adipose tissue. It attracted a particular attention that major proportions of long chain monoenoic acids $(C_{22:1})$ occurring both in MO and RO were detected separately in liver and heart plus adipose tissue, the result of which strongly indicates that there is a significant difference in metabolism between isomers $(C_{22:1}\;w\;11\;and\;C_{22:1}\;w\;9,\;respectively)$. It is suggested from this study that differences in lipid status as well as in the levels of serum lipids result from uniqueness in metabolism of each different fatty acid and give rise to distinguishable change in serum lipoprotein pattern, followed by diet with different fat sources.

Studies on the Development of a Microbial Cryoprotectant Formulation Using a W/O/W Multiple Emulsion System

  • A microbial cryoprotectant formulation using a W/O/W multiple emulsion system was developed. The psychrotolerant microorganism, B4, isolated from soil in South Korea, was observed by the drop freezing method, in which the microorganism sample inhibited ice nucleation activity. The antifreeze activity was eliminated when the microorganism sample was treated with protease, indicating that the antifreeze activity was due to the presence of antifreeze protein. The result of the l6S rDNA sequencing indicated the B4 strain was most closely related to a species of the genus Bacillus. Culture broth of B4 strain (Bacillus sp.) and rapeseed oil containing 1 % polyglycerine polyricinolate (PGPR) were used as core and wall material, respectively. The most stable W/O emulsion was prepared at a core/oil ratio of 1:2. The highest W/O/W emulsion stability was achieved when the primary emulsion to external aqueous phase containing 0.5% caster oil polyoxyethylene ether $(COG25^{TM})$ ratio was 1:1. Microcrystalline cellulose showed better W/O/W emulsion stability than other polymer types. The viability of cells in a W/O/W emulsion was higher than free cells during storage at $37^\circ{C}$. An acidic pH and UV exposure decreased the viability of free cells, but cells in W/O/W emulsion were more stable under these conditions.

시판 튀김유지의 변패도 조사 (Chemical Values Related to Rancidity of Deep-frying oils)

  • The purpose of this investigation was performed for chemical values related to rancidity of fat and oils extracted from deep-frying food in Seoul. The samples were collected according to kinds of fat and oils, sampling sites and food stuffs for frying. The results were as follows 1. The most used frying oils were rice bran oil $(37.0\%)$ and shortening $(29.6\%)$, followed by rapeseed oil $(14.8\%)$. 2. The chemical values related to rancidity of fat and oils extracted from deep-frying foods were the next on average. Acid value-1.42, peoxide value-39.82, dinitrophenyl hydrazine value-16.73 thiobarbituric acid value-0.263. However the highest value among oils was showed in rice bran oil and the lowest value was shortening. 3. For the classification of sampling sites, acid value and peroxide value of samples of the markets were found higher than them of environs of school and roadside, and the differences between them were significant (P> 0.01), while dinitrophenyl hydrazine value and thiobar bituric acid value were not showed the significant differences. 4. For the classification of foodstuffs for frying, there were not recognized significant differences among all kinds of them.

유채박을 이용한 단판적층재용 접착제의 개발 및 성능평가 (Development of Adhesive Resins Formulated with Rapeseed Flour Hydrolyzates for Laminated Veneer Lumber and Its Performance Evaluation)

  • 목질계 판상재료 생산을 위하여 현재 주로 사용되고 있는 석유화학계 접착제는 원유의 가격 상승과 포름알데히드 방산과 같은 문제로 인해 대체 접착제에 대한 개발 필요성이 오래전부터 대두되었다. 본 연구에서는 석유화학계 접착제를 대체하기 위하여 바이오 디젤 부산물인 유채박의 효소 가수분해를 통해 접착제를 조제하고, 이 접착제를 단판적층재 제조에 적용한 후 물리 및 기계적 특성을 조사하여 유채박의 단판적층재 제조용 접착제 제조를 위한 원료화 가능성을 확인하고자 수행하였다. 먼저 유채박 접착제 조제를 위하여 유채박을 4가지 효소의 조합을 통해 개량한 다음, phenol formaldehyde (PF) prepolymer와 혼합하여 접착제를 제조하고 이를 단판적층재 제조에 사용하였다. 제조된 단판적층재의 평균함수율과 내수성은 모두 KS의 기준을 만족시키는 것으로 나타났으며, 유채박 접착제의 열분석에서 pectinase 가수분해물로 조제한 접착제를 제외하고 페놀수지 접착제와 열경화 특성이 큰 차이를 보이지 않았다. 단판적층재의 휨강도는 페놀수지 접착제로 제조한 단판적층재보다 높거나 유사한 것으로 나타나 기존 석유화학계 접착제의 대체 접착제로써 가능성을 보여주었다. 추후 접착성능의 향상을 위해 적절한 유채박의 효소가수분해 조건에 대한 연구와 도포성능 개선에 대한 연구가 필요할 것으로 생각된다.

Analysis of Trans Fat in Edible Oils with Cooking Process

  • Trans fat is a unsaturated fatty acid with trans configuration and separated double bonds. Analytical methods have been introduced to analyze trans fat content in foods including infrared (IR) spectroscopy, gas chromatography (GC), Fourier transform-infrared (FT-IR) spectroscopy, reverses-phase silver ion high performance liquid chromatography, and silver nitrate thin layer chromatography. Currently, FT-IR spectroscopy and GC are mostly used methods. Trans fat content in 6 vegetable oils were analyzed and processing effects including baking, stir-frying, pan-frying, and frying on the formation of trans fat in corn oil was evaluated by GC. Among tested vegetable oils, corn oil has 0.25 g trans fat/100 g, whereas other oils including rapeseed, soybean, olive, perilla, and sesame oils did not have detectable amount of trans fat content. Among cooking methods, stir-frying increased trans fat in corn oil whereas baking, pan-frying, and frying procedures did not make changes in trans fat content compared to untreated corn oils. However, the trans fat content was so low and food label can be declared as '0' trans based on the regulation of Ministry of Food ad Drug Safety (MFDS) (< 2 g/100 g edible oil).

액화기술 적용 식물체 잔사별 원유 생산량 비교 (Comparative Crude Oil Productions on Liquefaction of Crop Residues)

  • 본 연구는 볏짚, 보리짚, 밀짚 및 유채대를 이용한 액화공정을 적용하여 중유를 생산할 때 그 생산량을 비교하였다. 촉매제로 $K_2CO_3$, NaOH 및 KOH와 같은 촉매제를 사용하여 반응온도 $320^{\circ}C$에서 10분간 반응시켰다. 액화공정 시스템은 외부전기화로, 교반기 및 5,000ml 반응기로 구성되어 있다, 반응기에 식물체 잔사 160g, 증류수 2,000ml 및 촉매제를 혼합하였으며, 촉매제량은 식물체 잔사량의 10%(wt/wt)를 투입하였다. KOH 촉매제를 사용하며, 보릿짚을 이용할 경우 바이오매스 투입량과 비교하여 최고 중유 생산량은 29%였다. 바이오매스 발열량과 비교하여 식물체 잔사로부터 전환된 중유의 발열량은 55~66% 범위이었다. 밀짚으로부터 전환된 중유의 발열량은 약 6190 kcal/kg으로 가장 높게 관측되었다.

  • 바이오디젤은 식물성 또는 동물성 유지를 알콜과 화학적으로 반응하여 얻어진 지방산 알킬에스터로서 친환경적인 대체에너지로 주목받고 있다. 본 연구에서 폐식용유와 유채유에 대한 전처리 공정에 고체 산(acid)이온 교환수지를 도입하여 자유지방산을 제거함으로써 바이오디젤로의 전환율을 높이고자 하였다. 이온교환수지를 이용한 전처리를 통해 자유지방산의 90%이상을 제거할 수 있었으며 젖은 상태의 수지보다 건조 상태의 수지의 자유지방산 제거효율이 높은 것으로 나타났다. 전이에스테르화를 통해 최대 98%의 수율로 지방산 메틸에스터를 얻을 수 있었으며 본 연구 결과는 자유지방산의 제거가 필요한 바이오디젤 원료유의 전처리에 효과적으로 적용될 수 있다.
