천초(川椒)에 관(關)한 연구(硏究) - 1. 신미성분(辛味成分)과 정유성분(精油成分) - (Studies on the Zanthoxylum piperitum $D_E$ $C_{ANDOLIE}$ - 1. Pungent principles and Essential oil composition -)

  • 천초(川椒)나무를 과피(果皮) 및 수피(樹皮)로 구분(區分)하고 Chloroform으로 추출(抽出)한 신미성분(辛味成分)은 HPLC로, 수증기(水蒸氣) 증유(蒸溜)하여 얻은 정유성분(精油成分)은 GC로 각각(各各) 분리(分離)하였다. 과피(果皮)에서는 미지(未知)의 신미성분(辛味成分) 2가지와 함께 70.3%의 가장 높은 함유율(含有率)을 보인 Sanshool III를 비롯하여 SanshooI (17.2%) Sanshool IV(11.0%) Sanshool V(0.8%)가 분리되었으며, 수피(樹皮)에서는 미지(未知)의 신미성분(辛味成分) 4가지와 함께 53.9%의 가장 높은 함유율(含有率)을 보인 Sanshool III를 비롯하여 Sanshoo lVI(10.9%), Sanshool I(7.9%), Sanshool V(3.3%)가 분리되었는데, 과피(果皮)의 신미성분(辛味成分) 총함량(總含量)이 樹皮의 12배나 되었다. 과피(果皮) 및 수피중(樹皮中)의 정유성분(精油成分) 총함량(總含量)은 각각(各各) 1.8%와 0.5%로 과피(果皮)에서 더 높았는데, 과피(果皮)에서는 37.7%의 Cineol+Limonene이 주된 정유성분(精油成分)을 이루었으며, 수피(樹皮)에서는 16.5%의 D-Terpineol과 15.5%의 Pinene이 대부분이었다. 과피(果皮) 및 수피중(樹皮中)의 정유성분(精油成分)은 Pinene, Myrcene, Cineol+Limonene, Linalool, Isopulegol, Terpinen-4-ol, ${\alpha}-Terpineol$ 그리고 Piperitone 등으로 이루어졌으며, 그 외에 7가지 미지(未知)의 성분(成分)도 분리되었는데, 이 중 dl-Limonene은 천초(川椒)의 된 향기성분(香氣成分)이라 판정(判定)할 수 있는 것으로서 이의 함량(含量)은 수피(樹皮)에서보다 과피(果皮)에서 더 높았다.baryl 및 permethrin 처리구(處理區)에서 증대(增大)되었다.밝혀진 것 보다 더 많은 종류의 버섯이 초파리와 번식적인 면에서 상관관계를 가질 것으로 판단된다.의 쓴맛을 완화시켜 기호도를 상승시키는 효과가 있었다. 그러나 미삼추출분말 첨가군의 저장성이 향상되었던 것과는 달리 미삼추출분말과 오미자즙을 함께 넣은 처리구에서는 대조군과 비슷한 발효 양상을 보이는 결과가 나타났는데 이는 미삼과 오미자즙의 상호작용에 의한 결과라고 생각되며, 이에 관한 더 많은 연구가 필요하다고 생각한다.다.육(肉)의 평균 보존 일수는 비첨가육 보다 2 % 첨가육이 7일 (돈육(豚肉), 8일), 5% 첨가육이 9일(돈육(豚肉), 10일) 그리고 10% 첨가육은 12일(돈육(豚肉)도 동일(同一))까지 연장 가능하였다. 2당류인 maltose, lactose, saccharose를 첨가 하였을 경우 pH의 저하 효과는 있었으나 첨가 농도가 높을수록 산패 경향이 높았으며 보존 기간 연장을 위한 효과는 단당류인 glucose에 미치지 못하였다.성적은 돼지와 가토의 뇌동맥에서 ACh은 내피세포-의존성 이완반응을 일으키며그 이완반응은 muscarinic receptor를 통해 나타났고, 가묘뇌동맥에서 ACh은 혈관수축제의 역할을 갖고 있음을 시사하고 있다.an Evidence Based Medicine (EBM)3 for acupuncture)을 채택 공표한다. 독일 보험 회사들도 침의 효과와 효율성을 검증하기 위해 대규모 실험을 시작했다. 100,000 명이 넘는 환자들이 무작위 표본추출 대조군 실험을 통해 평가되고 있는데 이 실험은 병원이나 일차의료기관의 외래에서 진행되고 있다. 영국에서는 이 분야의 유력한 Edzard Ernst가 위의 개념과 비슷한 구도를 설정 공표하는데 보완의학 분야의 많은 다른 전문가들의 견해를 무릎 쓰고, 그는 증거기반 의학에 대한 그의 신념을 표방한다.   • There are eight kinds of formulas for invigorating the liver to cure its asthenic syndrome based on the types of preparation formulas Began-tang, Boganhwan, Bogansan, Bogandan, Boganeum, Boganjoo, Boganjeon and Bogango. Another formula called Bocheonghwan is to invigorate the green colour of liver. There are 22 kinds of Bogan-tang, 12 kinds of Boganhwan, 25 kinds of Bogansan, one kind of Bogandan, one kind of Boganeum, one kind of Boganjoo, one kind of Boganjeon, one kind of Bogango, and two kinds of Bocheonghwan. Combination of herbal medicines, carried out in formulas for invigorating the liver, consists of various kinds depending on medical scientists' personal experience in medical treatment without any general principles, which makes it difficult to apply it to clinical use. The objectives of this study lie in theoretical establishment of Bogan-tang for curing the asthenic syndrome of liver through analyzing the component medicines and combination principles of Hyeongok's Bogan-tang, and furthermore, maximizing the clinical use of Began-tang. This study analyzed the component medicines and combination principles of Hyeongok's Bogan-tang based on the theory for properties and tastes of herbal medicines from the ${\ulcorner}$yellow Emperor's Canon of Internal Medicine${\lrcorner}$ , the theory for principal herbal medicine, assistant herbal medicine, adjuvant herbal medicine, dispatcher herbal medicine, and the five elements doctrine. Hyeongok's Began-tang is an odd prescription, composed of 7 kinds of ingredients No.1 Radix Angelicas Sinensis (2don;7.5g), No.2 Rhizoma Chuanxiong (1don;3.75g), No.3 Radii Polygoni Multiflori (1don), No.4 Fructus Lycii (1don), No.5 Cortex Cinnamomi (1don), No.6 Rhizoma Gastrodiae (1don), and No.7 Radix Glycyrrhizae (1don). There are three methods for curing the asthenic syndrome of liver according to the five elements doctrine invigorating the liver, invigorating the kidney and purging the lung. First, if you suffer from the asthenic syndrome of the liver, you need to invigorate your liver. There are two available methods, including taste and property invigoration according to the theory for properties and tastes of herbal medicines. They each imply the pungent taste and the warm property invigorate the liver. In the case of taste invigoration, two herbal medicines with pungent taste, Radix Angelicas Sinensis and Rhizoma Chuanxiong, are combined into the principal and assistant herbal medicine, respectively. For property invigoration, two herDal medicines with the warm property, Cortex Cinnamomi and Rhizoma Gastrodiae, are combined into adjuvant herbal medicines. Secondly, if you suffer from the asthenic syndrome of the liver, you need to invigorate your kidney which is mother in the mother-child relationship in inter-promotion among the five elements. There are two methods to invigorate the kidney, including taste and property invigoration according to the theory for properties and tastes of herbal medicines. They each mean the bitter taste and the cold property invigorate the kidney. Therefore, it is important to use bitter herbal medicines for taste invigoration and cold ones for property invigoration. Both Differ and cold herbal medicines, Radix Polygoni Multiflori and Fructus Lycii, are combined into adjuvant herbal medicines. Lastly, if you suffer from the asthenic syndrome of the liver, you need to purge your lung which is an element being surpassed in the relationship between the elements surpassed and ones not surpassed in inter-restraint among the five elements. There are two methods to purge the lung, which include taste and property invigoration according to the theory for properties and tastes of herbal medicines. Taste invigoration means to purge the lung with pungent taste and property invigoration to purge the lung with warm property. Therefore, it is important to use pungent herbal medicines for taste invigoration and warm ones for property invigoration. Both pungent and warm herbal medicines, Radix Angelicas Sinensis and Rhizoma Chuanxiong, were combined to invigorate and purge the lung. In addition, Radix Glycyrrhizae are combined as dispatcher herbal medicine, harmonizing all the herbal medicines composing the formula. First, to cure the asthenic syndrome of the liver, the methods of invigorating the liver and the kidney, and purging the lung should be used according to the five elements doctrine. Secondly, herbal medicines appropriate for those treatment methods should be chosen according to the theory for properties and tastes of herDal medicine and thirdly, the combination of those herbal medicines should be carried out according to the theory for principal herbal medicine, assistant herbal medicine, adjuvant herbal medicine, dispatcher herbal medicine. As a good example, Hyeongok's Bogan-tangon is combined according to the above theories. In conclusion, this formula was created by applying to the theory for properties and tastes of herbal medicines.

  • This dissertation aims to study the five tastes in the Yellow Emperor's Canon of Internal Medicine. Medicinals as well as Foods are classified by the five tastes: sweet, sour, bitter, salty and pungent, which can be tasted by the tongue. With the development of the theory dealing with the medicinal properties, some flavors are summarized out of clinical actions of medicinals, therefore, there is a little difference between the flavors of medicinal herbs and the tastes got by tongue. Each taste acts on or has direct influence on a specific vital organ, and each of which has different physiologic actions. Taste also has a long-term or post digestive effect on the body and its metabolism. When each taste is consumed in moderation, it benefits the corresponding organ. Over-indulgence in any taste harms the organ and creates imbalance among the five vital organ systems. The Korean medicinal herbs with same flavor mostly possess similar actions while the medicinal herbs with different flavors show different actions in the treatment, which are shown as follows. Sour has absorbing, consolidating and astringent actions and acts on the liver. Bitter has the actions of drying or resolving dampness, purging and lowering and acts on the heart. Sweet has the nourishing, harmonizing and moistening actions and acts on the spleen. Pungent has an action of dispersing and promoting circulation of gi and blood and acts on the lungs. Salty has the effects of softening hard nodes or masses and promoting defecation, etc and acts on the kidneys. The five organ systems control and support each other. Proper coordination only exists when there is no one organ stronger or weaker than the rest. Since the five tastes have direct influences on the five organs, the diet we take should have a good combination of the five tastes in order to promote internal balance and harmony. They control our well-being and create dietary balance. Excessive consumption of any of these could result in adverse effects. In a word, when the properties of the five tastes respectively are distinguished, their natures and flavors cannot be separately considered. I think the harmonization of food and medicinals should be stressed on good nutritional diet to maintain good health. The traditional belief that food and medicine share the same origin is a part of Korean medicine tradition.

  • Capsaicin [N-(4-hydroxy-3-methoxybenzyl)-trans-8-methyl -6-nonenamide], a pungent principle of red pepper. is known to induce analgesia. Though it has shown remarkable pharmacological activity, the toxicity and side effects inhibited its wider application. The interest has been renewed by the emergence of its agonists, resineferatoxin and ruthenium red. Recently, few successful capsaicinoids including 01vanil (NE-19550), NE-28345, and NE-21610 were reported.

즙채의 과산화지질 생성 저해효과 (Antilipid Peroxidative Effect of Houttuynia cordata)

  • Houttuynia cordata (Saururaceae) has pungent smell and taste. It has been regarded as detoxicant, antipyretic, antiinflammantory and diuretic agents. In order to evaluate antioxidative and antilipidperoxidative efficacies, its fractions ($H_2O$, 20% MeOH, 40% MeOH, 60% MeOH, 170% MeOH) were measured by DPPH method and TBARS assay on rat liver homogenate. It was revealed that 60% MeOH fractions had potential antioxidative activity and inhibited lipid peroxidation significantly: In active fractions, we isolated rutin, hyperin, quercitrin and quercetin.

  • [6]-Gingerol, a major pungent ingredient of ginger (Zingiber officinale Roscoe, Zingiberaceae) has a wide array of pharmacologic effects. Our previous studies have demonstrated that [6]-gingerol inhibits mouse skin tumor promotion and anchorage-independent growth of cultured mouse epidermal cells stimulated with epidermal growth factor. In this study, we have investigated the molecular mechanisms underlying anti-tumor promoting effects of [6]-gingerol on mouse skin carcinogenesis. (omitted)

사기오미론(四氣五味論)의 구조적 해석 (Structural Interpretation of Properties and Flavors of Drugs)

  • Four Properties and five Flavors of Drugs is interpreted by adaptation of human body to the environmental theory(天人相應). The Structural model of the body is compared with sky, earth, sun and moon (天, 地, 日, 月). The natural changes of the four seasons give rise to that of Four Properties and five Flavors of Drugs. On equal terms it is happened in our body. On this study we can draw an analogy between sky, earth, sun & moon (天, 地, 日, 月) and the body. The six bu(六腑) is related to the earth, the five ju(五主) to the sky, the five jang(五臟) to the sun, the meridians system (經絡) to the moon. When spring, the air is warm, the water element of the earth is ascending, and the earth gives birth to the sour flavor. Like this, the water element is absorbed by six bu and then is ascended to the meridian system. When summer, the air is hot and the water element of the earth is floated, the earth make the bitter flavor. In the same way, the six bu absorbed the hot air from the five ju and the water element is quickly absorbed by six bu and then the water element is ascended to the meridian system. When rainy season (長夏), the earth creates the sweet flavor The sweet flavor give warmer energy to the five jang and the six bu. When autumn, the earth change the sweet flavor into pungent. The earth gives warmer energy to the sky, because of cool weather According to same process, the pungent flavor give warmer energy to the five jang and the six bu, and the meridian system gets back the water element from the five ju. When winter, the air is cold and the water element of the earth is hidden. The sky and the earth are not interchangeable. At that time, the earth produce the salty flavor and the water element is keeping in the meridian system.

  • 1. 등전씨(藤田氏)의 Ether-alkali partition extraction법(法)을 개량(改良)하여 Capsaicin을 순수(純粹)하게 분리(分離)하여 정량표준곡선(定量標準曲線)을 얻었다. 2. Soxhlet장치(裝置)를 사용(使用)하여 Ether-Acetone(3:1) 혼합용매(混合溶媒)로 Capsaicin을 추출(抽出)한 후(後) 58% Methanoldmf 전개제(展開劑)로 하는 paper partition chromatography에 의(依)하여 불순물(不純物)로부터 Capsaicin을 순수(純粹)하게 분리(分離)하였다. 3. Diazobenzenesulphonic acid를 발색제(發色劑)로 사용(使用)하는 Schulte-Kruger 변법(變法)에 약간(若干) 개량(改良)을 가(加)하여 각품종별(各品種別) 고추중(中) Capsaicin 함량(含量)을 측정(測定)하였다.

방문목적에 따른 갓김치에 대한 구매 선호도 평가 (Measuring Preferences for Leaf Mustard Kimchi across Visit Purpose)

  • The purpose of this study is to identify the combinated factors of leaf mustard kimchi which confer the highest utility on tourists, and to establish the relative factors of importance in terms of tourists' contribution to total utility to their tour purpose. Conjoint model, $X^2$ analysis, Max. Utility model, BTL model, Logit model, K-means cluster analysis, and one-way ANOVA analysis are used for this study. The findings from this study are as follows: First, the Pearson's R and Kendall's tau($\tau$) statistics shows that the model fits the data well to the tourists' visit purpose. Second, when they choose a sightseeing place, tourists' taste for food renowned in the local area is a very important factor. Third, the leaf mustard kimchi some tourists most prefer has light red color and mild taste, and they buy it in a shaped packing, at a cheap price and directly at the kimchi factory. The leaf mustard kimchi the other tourists most prefer has light red color and highly pungent taste, and they buy it in a shaped packing, at a cheap price and directly at the kimchi factory. Fourth, by the results of BTL model and Logit Model analysis, some tourists most prefer an experimental model of leaf mustard kimchi which has light red color and mild taste. They want to buy it in a shaped packing, at a cheap price and directly at the kimchi factory. The other tourists most prefer an experimental model of leaf mustard kimchi which has light red color and highly pungent taste. They want to buy it in a shaped packing, at a cheap price and directly in the kimchi factory. Finally, the writer hopes this study will provide the kimchi marketers with some insights into the types of popular leaf mustard kimchi designs that could be successfully developed.

  • This study covers the historical aspects of the turmeric and curcuma only in detail on the medicinal uses, supported by references to the medical texts. And the result is as follows: 1. Turmeric and curcuma are rhizomatous herbaceous perennial plants of the ginger family, but both produced on the same herb. The rhizome is considered turmeric while the tuber is considered curcuma. 2. Turmeric is the round, oval, or ovate, and scutiform rhizome. 3. Curcuma is yellowish externally, internally more or less orange-yellow passing into reddish-brown. The tuber has a round and cuspidate appearance. The smell is aromatic, somewhat analogous to ginger. 4. Turmeric is somewhat analogous to curcuma in shape, but turmeric is pungent and bitter in taste, warm and intoxious in property, and yellow in color, acting on the spleen and liver channels and governing the gi of the blood while curcuma is pungent and bitter in taste, cold and intoxious in property, red in color, acting on the heart and pericardium channels and governing the blood. 5. Turmeric is referred to zedoary, sliced turmeric, old jaundice, precious aromatic, and ovate rhizoma, and curcuma is referred to radix curcuma, curcuma aromatica, and cicada-belly curcuma
