Salmonella are Gram-negative pathogenic bacteria commonly found in food animals such as poultry and swine and potentially constitute risks and threats to food safety and public health through transmissible virulence and antimicrobial resistance (AMR) genes. Although there are previous studies in the Philippines regarding genotypic and phenotypic AMR in Salmonella, there are very few on virulence and their associations. Hence, this study collected 700 Salmonella isolates from swine samples in abattoirs and wet markets among four districts in Metro Manila and characterized their genotypic virulence and β-lactam AMR profiles. Gene frequency patterns and statistical associations between virulence and bla genes and comparisons based on location types (abattoirs and wet markets) and districts were also determined. High prevalence (>50%) of virulence genes was detected encompassing Salmonella pathogenicity islands (SPIs) 1-5 suggesting their pathogenic potential, but none possessed plasmid-borne virulence genes spvR and spvC. For bla, blaTEM was detected with high prevalence (>45%) and revealed significant associations to four SPI genes, namely, avrA, hilA, mgtC, and spi4R, which suggest high resistance potential particularly to β-lactam antibiotics and relationships with pathogenicity that remain mechanistically unestablished until now. Lastly, comparisons of location types and districts showed variations in gene prevalence suggesting effects from environmental factors throughout the swine production chain. This study provides vital data on the genotypic virulence and AMR of Salmonella from swine in abattoirs and wet markets that suggest their pathogenicity and resistance potential for policymakers to implement enforced surveillance and regulations for the improvement of the Philippine swine industry.

This study was conducted to evaluate the effect of age of laying hens on egg internal and external qualities. A total of 8,300 eggs were randomly collected from 15 grading & packaging (GP) centers, and 50 eggs per farm during April to May in 2015. Age of laying hens ranged from 18 to 65 weeks of age and they were classified into 5 age groups (18~25, 26~35, 36~45, 46~55, and 56~65 weeks). Egg weight increased, but the Haugh unit decreased as the age of laying hens increased. Yolk color was higher in eggs laid from 25~35 weeks of laying hens compared with that of 18~25-weeks-old chickens. The incidence of dirty eggs was highest (P<0.05) in 18~25 week group and remained constant after 26 weeks. Among eggshell defects, speckled and pimpled eggs increased as the age of laying hens increased. The incidence of calcium deposits and misshapen eggs was highest during 18~25 weeks of age and remained constant after 26 weeks. The percentage of total eggshell cracks increased as the age of laying hens increased. Among eggshell cracks, star- and hair-like cracks were frequently noted. The percentage of meat spot was higher than that of blood spot and their incidence was highest among the 56~65 week group. Age of laying hens significantly increased egg weight, incidence of pimpled or speckled eggs, star- or hair-like cracks, and meat spot. On the other hand, a significant negative interaction between age of laying hens and the Haugh unit was noted. In conclusion, our study revealed that the age of laying hens affected internal and external egg qualities.
A study of the levels of phthalate and adipate esters, which are suspected as endocrine disruptors, in food packaging wraps and packaged foods were carried out. Among 11 wrap samples, 8 household wraps purchased at retail markets were polyvinyl chloride(PVC) and polyethylene(PE), while 3 commercial wraps at wholesale markets were PVC. All of 51 selected food samples, such as 12 samples of vegetable, 11 samples of fruit, 6 samples of bread and rice cake, 4 samples of meat and poultry, 4 samples of fish and 14 samples of side dish, packaged with commercial PVC wraps containing adipate esters were purchased at retail markets. The level of di-(2-ethylhexyl) adipate(DEHA) and diisononyl adipate(DINA) was from 2.2 to 17.9% and from 4.2 to 22.3% in household PVC wraps, respectively. In the commercial PVC wraps, the level of DEHA showed from 18.3 to 22.5%, while other phthalate esters were not detected. The phthalate and adipate esters were not detected in PE wraps. The level of DEHA in packaged foods, such as vegetable, fruit, bread and rice cake, meat and poultry, fish and side dish, were determined up to $8.2\;{\mu}g/cm^2,\;17.4\;{\mu}g/cm^2,\;31.0{\mu}g/cm^2,\;8.3\;{\mu}g/cm^2,\;2.1\;{\mu}g/cm^2$ and $92.3\;{\mu}g/cm^2$, respectively. The results suggested that migration levels of DEHA in foods were closely related to the fat content, wrapping condition of food and stroage time and temperature.
In trying to predict the effect of genetics on the broiler in the year 2000, this is a relatively short period of time as far as broiler genetics in concerned. Modern broiler genetics started around 1945 and tremendous gains when made in past 35 years. Futher improvements on broiler will depend on the evolution and revolution: 1. This study was conducted to investigate the effects of dietary yeast culture containing rPST on growth performances and the characteristics of body compositions in broiler chickens. A total of 460 Ross male broiler chicks aged 2-day-old were fed one of five experimental diets; Control(devoid of all), TI (with $0.1\%$ antibiotics; chlorotetracycline), T2 (with $0.1\%$ rPST-yeast culture), T3 (with $0.2\%$ rPST-yeast culture) or T4 (with $0.2\%$ SC yeast culture) for 6 weeks. Feed consumption and body weights were measured weekly. At week 5 of the experiment, 10 chicks were randomly selected and sacrificed. The relative weights of each organ and the chemical composition of edible meat were measured. The enzyme activity, total cholesterol, Ca and P were also determined. Tibial weight, bone strength and chemical composition were investigated. There were no significant differences in feed intake and feed conversion ratios among the treatments throughout the experimental period. Body weight gains tended to be increased by feeding of diets containing rPST-yeast culture. The relative weight of breast muscle in T3 group was significantly higher than that of the control (P<0.05). The moisture contents of breast meat in groups fed diets containing rPST-yeast culture or SC yeast culture were significantly increased as compared with those of the control and n. However, the contents of crude protein and ether extract were not affected by feeding of rPST-yeast culture. There were no significant differences in GOT, total cholesterol, Ca and P. The relative weight and strength and proximal composition of the tibia were also not affected by dietary treatments. These results indicated that dietary rPST-yeast culture may be a valuable alternative for optimizing growth performances, particularly for improving the yield of breast muscle.
Seventy-five commercial male day-old broiler chicks were used to investigate the effects of Oxytetracycline(OTC) and Lonicera japonica Thunberg(LJT) to be active in anti-bacteria and anti-virus on the growth rate, carcass rate and various intestinal organs sizes in broiler at 3 wk of age. Five experimental diets were formulated to have similar protein and energy levels, with OTC 0.04% as low-level antibiotics and OTC 0.34% as high-level antibiotics and 0.5%, 1.0%, 3.0% level of LJT. Birds were housed randomly in 15 battery cages. Birds were 3 replicates per treatment and 5 chicks per replicate. In the body gain, 0.5% level of LJT addition grew significantly higher than the other birds. The feed intake and feed efficiency were not significantly between other birds. The addition levels in OTC and LJT did not any consistent effect on the carcass rate. However, the chest meat percentage vs carcass volume in LJT 0.5% treatment and the leg meat percentage vs carcass volume in DTC 0.04% addition level were significantly higher than those of birds fed other diets. The liver weight rate was significantly higher in OTC 0.04% level. However, the 0% and LJT levels did not exert any consistent effect on the weights of gizzard, heart, bursa of fabricius, head and spleen of broilers. The abdominal and gizzard surrounding fat content rate was higher in bird LJT 1.0% level than birds fed other levels.
This study presents the production characteristics and physiological characteristics of five Korean native chicken (KNC) breeds consisting of Hwanggalsaek Jaeraejong (HJ), Korean Rhode Island Red (KR), Korean White Leghorn (KL), Korean Brown Cornish (KC), and Korean Ogye (KO). We investigated their production performances, vitalities, and stress responses. We measured the survival rate, body weight, age at first egg-laying, hen-day egg production, egg weight, amount of telomeric DNA, heterophil-lymphocyte ratio (H/L ratio), and heat shock protein (HSP)-70, HSP-90α and HSP-90β gene expression levels for 493 KNCs. The survival rate was highest in KR, and lowest in KO. Body weights were steadily high in the order of KC, KR, HJ, KO and KL. Average hen-day egg production was highest in KL, and lowest in KC. While the amount of telomeric DNA was highest in KR, and lowest in KC. Furthermore, both the H/L ratio and the HSP-90β gene expression level were highest in KC, and lowest in KR. These results indicated that the KR breed was highly resistant to stress, whereas KC was more susceptible to stress. Taken together, it is considered that with improvements the KC breed would be more suited to be used as a Korean broiler breed while KL would be more appropriately used as a Korean layer breed. In addition, it is considered that the KR breed is appropriate to be used as a maternal chicken breeder based on good production capacity and excellent robustness, while the HJ breed is desirable to be improved as a high-quality Korean meat breed based on its excellent meat quality.
This experiment was conducted to investigate the effects of dietary Vita2000 on growth performances and immune response in broiler chickens. One-day-old male chicks were fed diets containing 0, 0.5 and 1% Vita2000 (with or without antibiotics) for 5 wks. There were no significant differences in daily weight gain among the treatments, but feed intake in 1% Vita2000 groups (T3 and T4) were significantly lower than control (P<0.05). The relative abdominal fat weight and the level of crude fat in leg meat on groups fed diets containing 1% Vita2000 (T3 and T4) were significantly decreased as compared to those of control (P<0.05). The content of cholesterol in leg meat was not affect by dietary treatment. The intestinal total microbes, Coli form, Lactic acid bacteria and Salmonella spp. from bird fed 1% Vita2000 diets was significantly reduced compared to those of control. The production of IB antibody in chicks fed diet containing 0.5% Vita2000 was significantly higher than that of control groups. The overall results indicate that dietary Vita2000 may be a valuable alternative to antibiotics for optimizing growth performances, particularly for reducing the abdominal fat of broiler chicks.
The micronutrients and flavor compounds of three new native chicken strains (A, C, and D) being developed in a breeding program (Golden Seed Project) were compared with a commercial native chicken strain (H) and the Baeksemi (W, white semi broiler). After 100 male chicks in each strains were reared for 5 weeks, the breast muscles from randomly selected 40 birds were analyzed at 8 replications. Native chicken strain A had greater amounts of α-tocopherol and α-tocotrienol compared with strain W. Native chicken strains showed higher contents of vitamin B12 than Stain W. Stain H strain had the highest values of cholesterol content and strain D did the lowest. There was no different content of most minerals between native chickens (A, C, D, and H) and W, but Cu were more contained in native chicken strains compared with W. In terms of nucleotide-related flavor compounds, Stain A had the lowest content of hypoxanthine and strain D had highest inosine monophosphate. Native chicken strains had higher contents of umami-related free amino acids (glutamate and aspartate) than W. Among native chickens, strain A had more amounts in the contents of taurine, tasty flavor compounds, and certain vitamins, despite of the relatively low growth productivity. This result will provide information to select a strain with characteristic meat quality in a chicken breeding program.

Two experiments were conducted to compare the dietary supplemental influence of conjugated linoleic acid(CLA), soybean oil(SBO) and commercial tallow(U) on performance and physiological related factor of broiler chicks. Diets contained CP 21.5, 19% and ME 3,100, 3,100kcal/kg for starting and finishing period. Each three levels(1.0, 2.0, 3.0%) of CLA, SBO, CT were supplemented to basal diets. Five hundred forty and three hundred sixty chicks were applied to 3${\times}$3, 2${\times}$3 factorial design with four replicates in Expt 1 and 2. Weight gain, food intake and feed conversion were weekly examined. Blood cholesterol, ND antibody titer, blood components and were measured at the end of experiment. Metabolizable energy(ME) were measured through the metabolic feeding trial in each oil. ME was 8,542, 9,179, 8,133 kcal/kg in CLA, SBO and CT, respectively. In Expt 1, weight gain of chicks fed 1% dietary oil was significantly lower than other treatments(P<0.05). Feed conversion was significantly improved in SBO supplemental groups of all treatments(P<0.05). In Expt 2, CLA supplements increased weight gain significantly for finishing period(P<0.05) compared to that of other treatments. Feed conversion of chicks fed 2% dietary oil was significantly improved relative that of 3%(P<0.05). HDL of 3% dietary supplemental oil treatments was significantly higher for finishing and starting period in Expt 1 and 2, respectively than other treatments(P<0.05). There were no significantly different M Antibody titer in Expt 1, but showed significance between dietary supplemental oil in Expt 2(P<0.05). CLA content of breast meat was 12.23, 18.74, 25.67 mg/g in 1, 2, and 3% CLA treatments and significantly different between them(P<0.05). As the results of these experiments, feeding CLA tended to improve the weight gain compared In that of other dietary oil, but was not increase the ND antibody titer of broiler chciks. CLA content of breast meat also showed the significance at different level of dietary supplement.
