  • Possibilities of predicting eggshell ultrastructure from direct non-destructive and destructive measurements were examined using 120 Fayoumi eggs collected from the flock at 45 weeks of age. The non-destructive measurements included weight, length and width of the egg. The destructive measurements were breaking strength and shell thickness. The eggshell ultrastructure traits involved the total thickness of eggshell layer, thickness of palisade layer, cone layer and total score. Prediction of total thickness of eggshell layer based on non-destructive measurements individually or simultaneously was not possible ($R^2=0.01$ to 0.16). The destructive measurements were far more accurate than the non-destructive in predicting total thickness of eggshell layer. Prediction based on breaking strength alone was more accurate ($R^2=0.85$) than that based on shell thickness alone ($R^2=0.72$). Adding shell thickness to breaking strength (the best predictor) increased the accuracy of prediction by 5%. The results obtained indicated that both non-destructive and destructive measurements were not useful in predicting the cone layer ($R^2$ not exceeded 18%). The maximum accuracy of prediction of total score ($R^2=0.48$) was obtained from prediction based on breaking strength alone. Combining shell thicknesses and breaking strength into one equation was no help in improving the accuracy of prediction.

  • Among the several factors that affect shelf-life of washed shell eggs, storage temperature and relative humidity were the most important. Besides those factors listed above, temperature of washing water, composition of foreign substances and washing method of eggs were also the factors affecting the shelf-life of the eggs. The effect of sanitizer treatment was significant in extending the shelf-life of eggs compared with washed and unwashed eggs. In case of oil coating treatment, the shell eggs treated showed the better results than that of washed and unwashed eggs because the coating materials prevented the moisture evaporation from the inner shell eggs and kept the contamination of microorganisms from the environment. Consequently, it is considered that reducing egg shell contamination of microorganisms and proper treatment could be the key to extend the shelf-life of shell eggs.

  • To strengthen the competitiveness of agricultural sector of the Korea, the direction of market trends on agriculture of the Malaysia was reviewed. The most dominating agricultural area in value is palm oil products, and forest products, sea products poultry products and rubber products is in order. The cultivated area of highest two top plants, oil palm and rubber, was about 4.4 million hectares in 2005, but it is decreasing year by year. Comparatively, rice field, pine apple and fruits tree cultivating area is increasing in tendency by the year. Among all the agricultural products, those items such as pork meat, poultry, egg were self-sufficient, rice, fruits, vegetables and sea products were about 70 to 80% self-sufficient, and beef meat, goat meat and milk were below 20% self-sufficient. Most of the grains, such as wheat, rice, barley, corn etc. and their processed food were imported. Also, temperate fruits such as apple, pear, and water cultivated as well as sprouting vegetables are imported. Ornamental products as cutting flowers and orchids are exported to mainly to the Singapore, but high quality temperate fruits and vegetables are imported from Australia. Oil palm exportation covers the balance of the other items imported and obtaining the foreign money as well in Malaysia.

  • This study was carried out to investigate the effects of diverse dietary Ca levels and to determine whether bone mineral metabolism is influenced by the arnount of dietary Ca when given a choice of diets containing various levels of Ca. Forty Hy-line brown laying hens housed in separate cages were fed self-selected Ca diets. Birds were allowed a 7-day adaptation period followed by an 8-day collection period. Feed and water were available for ad libitum consumption. Eggs and excreta were collected at 6-h intervals during the day for mineral analysis. The Ca contents in excreta and retained Ca in the body on egg forming day were proportional to the amount of daily Ca intake. The retained Ca in the body were 0.97 g in control and 1.24~1.74 g in self-selected groups, respectively. Daily Ca contents (%) in tibial cortex were not consistent with feeding time intervals. The Ca content in tibial medulla in control group was lower than those of self-selected feeding groups(P<.05). The medullary Ca content in all treatment groups increased from 10:00 to 16:00 in a day. Ca content in plasma was low between 10:00 and 16:00 and was high between 22:00 and 04:00 in the following day.

  • Microbiological contamination of eggs should be prevented in the poultry industry, as poultry is one of the major reservoirs of human Salmonella. ClO2 gas has been reported to be an effective disinfectant in various industry fields, particularly the food industry. The aims of this study were to evaluate the antimicrobial effect of chlorine dioxide gas on two strains of Salmonella inoculated onto eggshells under various experimental conditions including concentrations, contact time, humidity, and percentage organic matter. As a result, it was shown that chlorine dioxide gas under wet conditions was more effective in inactivating Salmonella Enteritidis and Salmonella Gallinarum compared to that under dry conditions independently of the presence of organic matter (yeast extract). Under wet conditions, a greater than 4 log reduction in bacterial populations was achieved after 30 min of exposure to ClO2 each at 20 ppm, 40 ppm, and 80 ppm against S. Enteritidis; 40 ppm and 80 ppm against S. Gallinarum. These results suggest that chlorine dioxide gas is an effective agent for controlling Salmonella, the most prevalent contaminant in the egg industry.

  • The infectious bursal disease (IBD) is a highly contagious and acute poultry disease caused by Birnavirus. However, the vaccination is the only disease prevention, but several factors impeded vaccine development. Thus, a need for time to develop a novel technique for managing and treating respiratory diseases in poultry birds. Passive immunization is a hope and a possible alternative used in birds to meet this need. The current research attempted to produce egg yolk-based polyclonal antibodies against the IBD virus. The benefits of IgY include ease of extraction, lack of reaction with mammalian Fc receptors, and low production cost. Commercial layers were immunized with inactivated IBD virus subcutaneously according to the treatment regimen. The eggs were gathered daily, and yolk antibodies were extracted with the ammonium sulfate precipitation technique. The use of an indirect hemagglutination test demonstrated that IgY was IBD-specific. Until the end of the experiment, the specific IgY immunoglobulins did not lose activity when stored at 4℃. The specific immunoglobulin (IgY) treated challenged birds were demonstrated 92% recovery in comparison to the control group. The study implies that the IBDV specific IgY is an easily prepared and rich source of antibodies and offers an alternative therapeutic agent to cure IBD-infected birds.

  • This experiment was conducted to investigate the change of egg qualify by the height of thick albumen of egg, storage temperature and storage period. The albumen index and Haugh unit were measured and compared among five different storage periods(0, 2, 4, 6, and 10 days), four different storage temperatures($15^{\circ}C$ , $20^{\circ}C$ , $25^{\circ}C$ and $30^{\circ}C$ ), and five different Parts(0, 3, 6, 9, and 12 mm) aparted from egg yolk. The albumen index and Haugh unit were as follows: the albumen index of eggs was significantly(P<0.01) different by the storage temperature and by the measuring position of thick albumen of eggs. It means that the albumen index can be differed by the measuring position of thick albumen even if eggs have a same qualify. For measuring egg qualify in this country, it should be announced that which Parts in thick albumen of eggs are measured. The albumen index of fresh eggs was 0.16. However, the index when measured at 3 hour after oviposition was lower than 0.16. Therefore, it indicates that the criterion of 0.06 lower than 0.16 is required to set for considering practical point during the marketing periods of eggs. When the criterion of albumen index puts 0.06, it is as 100%. Therefore, eggs can be kept the same quality for 6, 4 and 2 days when eggs were stored at $15^{\circ}C$ , $20^{\circ}C$ and 25 ~$30^{\circ}C$ , respectively. When the criterion of Haugh unit score puts 79 as 100%, the eggs can be maintained the quality for 6, 4, and 2 days when eggs are stored at $15^{\circ}C$ , $20^{\circ}C$ and 25~$30^{\circ}C$ , respectively. When the criterion of Haugh unit 55 as 100%, the eggs can be maintained the same quality for 10, 8 and 2 days when eggs are stored at $15^{\circ}C$ , $20^{\circ}C$ and 25~$30^{\circ}C$ , respectively. From the experimental results, it can be considered that calculathing egg quality by the height of thick albumin of eggs which was measured at the attachment Parts of thick albumin layer and yolk of eggs was most reasonable and suitable when considering the marketing periods of eggs.

  • This research was carried out to determine the effect of Cudrania tricuspidata fruit (CTF) on the performance of laying hens, egg quality, yolk fatty acid composition, Immunoglobulin G (IgG) and blood composition. A total 288 Brown Nick laying hens of 48 weeks old replaced into 4 groups with 4 replicates of 18 birds in each. Treatments were added with 0, 0.25, 0.5, 1.0% CTF containing dried seed and pulp. Metabolizable energy (ME) and crude protein (CP) were 2,800 kcal/kg and 16.0% in basal diets, respectively. Egg production and daily eggmass were significantly increased in 1.0% CTF addition treatment compared to those of other treatments (P<0.05). Egg weight and feed intake were not different among treatments. Feed conversion ratio showed the lower result in 1.0% CTF treatment than other treatments (P<0.05). Eggshell color was not influenced by the addition of CTF. Albumin height, Haugh unit and eggshell breaking strength was not statistically different, but seemed to be higher as dietary CTF addition increased. Yolk color was increased as dietary CTF increased and was the highest in 1.0% CTF group (P<0.05). Fatty acids were not shown the consistency in yolk. Blood cholesterol and triglyceride (TG) of birds fed CTF were significantly low compared to those of control. IgG was also statistically higher in CTF treatments than control (P<0.05). As the results of this experiment, the addition of 1% CTF would be the most effective on performance and egg quality, whereas the 0.25% CTF addition in basal diets seemed to be optimum to improve the blood cholesterol, TG,high density lipoprotein cholesterol (HDL-CHOL), IgG in laying hens.

  • A total of 1,200 eggs obtained from 312-day-old Hy-line Brown laying breeder hens and 319-day-old Hy-line Brown commercial laying hens (600 eggs obtained from each one) at same day were used to investigate the effects of egg storage, storage temperature, and insemination of hens on the change of albumen height, Haugh unit(HU), albumen pH, shell strength, and yolk color. Eggs were stored up to 14 days after lay at $3^{\circ}C$ or $10^{\circ}C$ and sampled one day after stored and then 24 hours interval. Longer periods of storage resulted in lower albumen height and HU at both storage temperatures, but in higher albumen pH. The eggs stored at $3^{\circ}C$ were significantly (P<0.05) higher in HU and lower in albumen pH than the ones stored at $10^{\circ}C$. The eggs obtained from the non-inseminated-hens were significantly (P<0.05) higher in albumen height, HU, and albumen pH than the eggs obtained from the inseminated-hens. Whereas, the eggs obtained from the non-inseminated-hens in the mean albumen pH of eggs stored at $3^{\circ}C$ were significantly (P<0.05) higher than the ones obtained from the inseminated-hens, but the mean albumen pH of eggs stored at 10^{\circ}C did not differ each other. The mean shell strength of the eggs obtained from the inseminated-hens was significantly (P<0.05) stronger than that of the eggs obtained from the non-inseminated-hens at both storage temperatures. Albumen height and albumen pH were negatively correlated $(P<0.01\~0.001)$ in both inseminated and non-inseminated-hen's egg groups. The degree of yolk colors was not significantly changed overall of the experimental periods in both storage temperatures. The study suggests that the change of egg freshness such as albumen height and HU is relatively more associated with storage period and storage temperature than insemination or non-insemination of hens.

  • This study was conducted to investigate the effect of feeding with dietary silicate based complex mineral (SCM) on the performance of laying hens. SCM at five levels (0%, 0.2%, 0.4%, 0.6% and 0.8%) was added to commercial diets, and fed to four hundred fifty Hy-Line Brown from fifty four to sixty five weeks of age. Egg production increased as the addition of dietary SCM to basal diets increased up to 0.6% (P<0.05). Furthermore, Feed intake increased in a manner similar to that of egg production (P<0.05). However, there was no difference in feed efficiency among the treatments. Eggshell thickness and breaking strength were significantly higher for the chickens fed with SCM than control from sixty weeks old to the end of experiment (P<0.05). Similarly, albumen height and Haugh unit were significantly higher for the chickens fed with SCM compared to those of control group (P<0.05). AST of birds fed SCM showed significantly higher than control (P<0.05). However, blood neutral fat level tended to increase in SCM treatments. Moreover, bone mineral density increased with SCM addition up to 0.4% (P<0.05). IL-2 (Interleukin-2) and IL-6 (Interleukin-6) levels appeared to be improved in the chickens fed with SCM addition diets, although not statistically different from all treatments. The results of this study indicated that the optimum SCM for improving the performance, egg quality and immunological competence of laying hens from 54 to 65 weeks of age was 0.6%.
