The purpose of this study was to develop protein enriched menu for the aged and running an acceptance test on the protein enriched menu. Four kinds of the menu were developed with emphasis on protein enriched food materials of chicken and beans for menu1, chunggukjang for menu2, pork for menu3, beef and mackerel for menu4. one portion of calorie, polysaccharide, protein and fats for the aged were calculated at 567kcal, 92.8g, 21.3g and 12.6g respectively based on recommended daily allowances for adults. Protein content increased in the menus 1, 2, 3 and 4 were 13.2%, 17.5%, 12.4%, and 13.3%, respectively. In the result of the acceptance test, the cooked rice with black beans and chicken soup of menu1 had significantly the highest acceptance score among the rice and soup groups, respectively (p<0.05). In the side dish, bean curd, cucumber and onion salad in menu1 had relatively higher acceptance scores than the others with significant difference at p<0.05. Overall acceptance of menu 1 had significantly the highest acceptance scores of all. Female showed significantly the higher scores of overall acceptance on menu 2 and 4 than those of male from the t test results of acceptance test.

Conventional methods for pathogen detection and identification are labor-intensive and take several days to complete. Recently developed biosensors have shown potential for the rapid detection of foodborne pathogens. In this study, an impedimetric biosensor was developed for rapid detection of Salmonella typhimurium. To develop the biosensor, an interdigitated microelectrode (IME) was fabricated by using semiconductor fabrication process. Anti-Salmonella antibodies were immobilized based on either avidin-biotin binding or self assembled monolayer (SAM) on the surface of the IME to form an active sensing layer. To evaluate effect of antibody immobilization methods on sensitivity of the sensor, detection limit of the biosensor was analyzed with Salmonella samples innoculated in phosphate buffered saline (PBS) or food extract. The impedimetric biosensor based on SAM immobilization method produced better detection limit. The biosensor could detect 107 CFU/mL of Salmonella in pork meat extract. This method may provide a simple, rapid, and sensitive method to detect foodborne pathogens.

Objective: The present study is to examine the effect of high inclusion of co-products in pig diets (referred to as an alternative diet) during the finishing stage on pig growth performance, meat quality and boar taint compounds. Methods: Growing pigs were fed an alternative diet made with distillers dried grains with solubles (25%), canola meal (20%), and wheat middling (15%) or a control diet based on barley and soybean meal to investigate the impact of co-products on pig performance and meat quality. Sixteen female and sixteen entire male Duroc×(Large White×Landrace) pigs (22.6±2.07 kg, body weight±standard error) were equally allocated to the diets. Results: Pigs fed the alternative diet had a lower feed intake; however, growth rate and feed conversion efficiency were unaffected by diet. A diet by sex interaction was found for gain:feed whereby males fed the alternative diet had the best feed conversion (p<0.01). Pork from pigs fed the alternative diet had lower a* and Chroma and protein % (p<0.05), while other meat quality characteristics were unaffected. The alternative diet reduced backfat skatole levels (p<0.001). Conclusion: A diet containing high inclusion levels of co-products can be fed to pigs during the finishing stage without detrimental effects on pig performance or meat quality and with the potential to enhance pork flavour. This finding suggests a solution to increase the sustainable development of pig production.
This study was to investigate the amount of protein and essential amino acid in 19 fast-foods. fast-food samples were freeze dried, then assayed for protein and eight essential amino acids by Kjeldahl and amino acid autoanalyzer method. A.S.(amino acid score) based on FAO/WHO(1973) provi-sional Pattern & C.S.(chemical score) based on whole e99 Pattern(1972) were calculated from the amount of essential amino acid of fast-foods. The 1st limiting amino acid of the tested fast-foods was found to be SAA based on both whole e99 Pattern& FAO/WHO Provisional Pattern.

This study was designed to compare the effectiveness and applicability of the HApS$^{TM}$ (Hazard Analysis process System; HUKO, Seoul, Korea) based on Petrifilm$^{TM}$ (3M, St. Paul, MN, USA) with the AOAC (the Association of Official Analytical Chemists) standard total aerobic count (TAC) method and coliform count (CC) method for meat products. The comparisons were carried out using 230 meat samples collected from various retailers: 80 pork samples, 80 chicken samples, and 70 beef samples. In the comparison of the correlation coefficient (r) between conventional method and HApS$^{TM}$ method by a linear regression analysis, the correlation coefficients in total microorganism were 0.97767, 0.90712, and 0.95594 in pork, beef, and chicken samples, respectively. The correlation coefficients in coliform count were 0.82062, 0.94833, and 0.96839 in pork, beef and chicken samples, respectively. All the independent t-test on measurement values between conventional method and HApS$^{TM}$ method represented no significant differences in the means between two methods at the 0.05 of significance level($\alpha$=0.05). Based on the high correlation between HApS$^{TM}$ and the AOAC standard methods in the TAC and CC, it might be compatible to employ the HApS$^{TM}$ method to measure the microbial contamination in livestock products. HApS$^{TM}$ method was simpler and less time-consuming in sample preparation and procedures faster than the conventional method. These results suggested that the HApS$^{TM}$ method could be substitute for the conventional methods in the analysis of microbial contamination measurement in meat products.n meat products.
A simultaneous determination was developed for 9 aminoglycoside antibiotics (amikacin, apramycin, dihydrostreptomycin, gentamicin, hygromycin B, kanamycin, neomycin, spectinomycin, and streptomycin) in meat by liquid chromatography tandem mass spectrometry (LC-MS/MS). Each parameter was established by multiple reaction monitoring in positive ion mode. The developed method was validated for specificity, linearity, accuracy, and precision based on CODEX validation guideline. Linearity was over 0.98 with calibration curves of the mixed standards. Recovery of 9 aminoglycosides ranged on 60.5~114% for beef, 60.1~112% for pork and 63.8~131% for chicken. The limit of detection (LOD) and limit of quantification (LOQ) were 0.001~0.009 mg/kg and 0.006~0.03 mg/kg, respectively in livestock products including beef, pork and chicken. This study also performed survey of residual aminoglycoside antibiotics for 193 samples of beef, pork and chicken collected from 9 cities in Korea. Aminoglycosides were not found in any of the samples.
BACKGROUND/OBJECTIVES: The aim of this study was to analyze specific foods influencing absolute nutrient intake and between-person variations of nutrient intake among Korean preschoolers. SUBJECTS/METHODS: This study included 2,766 participants aged 1-5 years in the 2009-2013 Korea National Health and Nutrition Examination Surveys. Dietary data were obtained from a 24-h dietary recall method. Major food sources of absolute nutrient intake were evaluated based on percent contribution of each food. To assess the contribution of specific foods to between-person variations in nutrient intake, stepwise multiple regressions were performed and cumulative $R^2$ was used. RESULTS: White rice and milk were main food sources of energy, protein, carbohydrate, phosphorus, iron, potassium, thiamin, riboflavin, and niacin. The percentage of fat contributed by milk was 21.3% which was the highest, followed by pork, soybean oil, and egg. White rice accounted for 25% and 40% of total variability in total energy and carbohydrate intakes, respectively. About 39% of variation in calcium intake was explained by milk while 40% of variation in phosphorous intake was explained by cheese. The top 10 foods contributing to between-person variations in nutrient intakes were similar with food items that mainly contributed to absolute nutrient intakes. The number of foods explaining 90% of absolute amounts of nutrient intakes varied from 28 for vitamin A to 80 for iron. CONCLUSIONS: This study identified specific foods that contributed to absolute nutrient intakes and between-person variations in nutrient intakes among Korean preschoolers. Our findings can be used to develop dietary assessment tools and establish food-based dietary guidelines for young children.
Objectives: This study evaluated dietary intake and food sources of essential fatty acids in Korean adolescents. Methods: This study was comprised of 3,932 adolescents (9-18 years) who participated in the 2016-2021 Korea National Health and Nutrition Examination Surveys. Dietary intake and food sources of essential fatty acids, including alpha-linolenic acid (ALA), eicosapentaenoic acid (EPA), docosahexaenoic acid (DHA), and linoleic acid (LA) were evaluated using data obtained from one-day 24-hour dietary recall. The proportions of adolescents consuming ALA, EPA + DHA, and LA above or below the adequate intake (AI) of the 2020 Dietary Reference Intakes for Koreans were calculated. All statistical analyses accounted for the complex sampling design effect and appropriate sample weights. Results: The mean intakes of ALA, EPA, DHA, and LA among Korean adolescents were 1.29 g/day, 69.6 mg/day, 166.0 mg/day, and 11.1 g/day, respectively. Boys had higher intakes of all essential fatty acids compared to girls. By age group, adolescents aged 15-18 years showed lower intakes of EPA and DHA compared to adolescents in younger age groups. The 9-11-year-old adolescents had lower intakes of ALA and LA than older adolescents. The proportions of adolescents who consumed more than AI were 35.7% for ALA, 30.4% for EPA + DHA, and 41.5% for LA. Adherence to the AI for ALA did not differ by sex or age group, although boys showed a lower adherence to the AI for EPA + DHA than girls. Major food sources for ALA and LA were plant-based oils, mayonnaise, pork, and eggs. Mackerel was the most significant contributor to EPA and DHA intake (EPA, 22.6%; DHA, 22.2%), followed by laver, squid, and anchovy. Conclusions: The proportion of Korean adolescents who consumed EPA + DHA more than AI was low. Our findings highlight that nutrition education emphasizing an intake of essential fatty acids from healthy food sources is needed among Korean adolescents.

Globally, the demand for food and water resources are increasing rapidly with the growing concerns of meeting the projected population upsurge, specifically by 2050. The global population is projected to hit 9.8 billion in 2050 while the food demand is expected to increase by 77% from the 2007 base year. Moreover, the already scarce water resources, especially in the food-producing regions, expected to be significantly affected as food production already accounts for over 70% of the global water resources. However, the estimated food demand encapsulated the actual demand for both human consumption and animal feed in addition to the exuberant food waste at the consumption stage of the supply chain, notably in the developed countries. Managing the food consumption demand and food waste can have across-the-board benefits on water resources and other associated food production impacts. This study assessed the water-saving potentials through food waste in Korean households using the food waste data obtained from the direct weighing analysis. The household food waste collection and characterization were carried out during the summer (July), fall (September), and winter (December) seasons of 2019. The water footprint related to the food waste within Korean households was based on the water footprint concept, i.e. indirect water use. The results of our estimation showed that an average Korean household wasted 6.15 ± 4.36 kg daily, amounting to 12.53 ± 11.10 m3 of water resources associated with the waste. On the per capita basis, an average of 0.024 ± 0.017 kg/capita/day of food was wasted resulting to 0.049 ± 0.044 m3/capital/day of water resources wasted. The food waste types that accounted for the principal share in the water footprint were beef, soybean, rice and pork with values 30.7, 10.1, 9.6, and 7.5%, respectively. Considering that the production of meat and meat products are water intensive and the agricultural water use in Korea is largely for rice production, addressing the food waste of these two important agricultural products can be a hotspot for water saving potential in the country. This study therefore provides an insight to addressing the water scarcity in the country through reducing household food waste.
We performed case-control study to evaluate relationship between food intake and risk of breast cancer. We interviewed breast cancer cases(n=108) who were newly histologically identified and selected from Hanyang and Soonchunhyang University Hospital in Seoul. We used hospital-based control subjects(n=121), who were selected from the patients in the department of plastic surgery, general surgery and opthalmology of the same hospital by frequency matching. Matching variables were age($\pm$4 age) and menopausal status. We collected information on general characteristics of subjects, history of disease, family history of breast cancer, vitamin supplementation, alcohol intake, and food intake through individual interview. Dietary information was ascertained via a food frequency questionnaire method(total item=98). All analyses was conducted according to menopausal status. Especially, pepper and grape intake in premenopausal women, showed protective effect in breast cancer. Otherwise consumption of meat, pork, and fish was not associated with breast cancer risk in this study. At milk and dairy products, milk intake was associated with lower risk of breast cancer in postmenopausal women and overall intake of soy products was associated with breast cancer risk, but not significant. These findings suggested that consumption of some fruit and vegetable intake was a protective factor on breast cancer and further study with more number of subjects should be need to evaluate the breast cancer risk.
