Identification of Pork Contamination in Meatballs of Indonesia Local Market Using Polymerase Chain Reaction-Restriction Fragment Length Polymorphism (PCR-RFLP) Analysis

  • This research applied and evaluated a polymerase chain reaction-restriction fragment length polymorphism (PCR-RFLP) using cytochrome b gene to detect pork contamination in meatballs from local markets in Surabaya and Yogyakarta regions, Indonesia. To confirm the effectiveness and specificity of this fragment, thirty nine DNA samples from different meatball shops were isolated and amplified, and then the PCR amplicon was digested by BseDI restriction enzyme to detect the presence of pork in meatballs. BseDI restriction enzyme was able to cleave porcine cytochrome b gene into two fragments (131 bp and 228 bp). Testing the meatballs from the local market showed that nine of twenty meatball shops in Yogyakarta region were detected to have pork contamination, but there was no pork contamination in meatball shops in Surabaya region. In conclusion, specific PCR amplification of cytochrome b gen and cleaved by BseDI restriction enzymes seems to be a powerful technique for the identification of pork presence in meatball because of its simplicity, specificity and sensitivity. Furthermore, pork contamination intended for commercial products of sausage, nugget, steak and meat burger can be checked. The procedure is also much cheaper than other methods based on PCR, immunodiffusion and other techniques that need expensive equipment.

품질기준설정을 위한 국내 시판 육포의 품질 특성 조사 (Investigation of Quality Properties of Commercial Jerky from Korean Market for Establishment of Quality Parameters)

  • The study was carried out to evaluate the quality of commercial pork and beef jerky at a market in Korea. The amount of food additives, place of origin, meat content, microbiological and physicochemical characteristics were investigated in 46 different jerky samples. Meat contents of pork and beef jerky were 75.2~94.0% and 80.0~95.6%, respectively. Food additives, including sodium nitrite, potassium sorbate, and sodium erythorbate were mainly used in jerky. Pork jerky was processed from domestic pork, and beef jerky was mostly processed from imported beef from the USA, Australia, or New Zealand. Pork jerky contained $23.82{\pm}5.74%$ moisture, $37.86{\pm}7.05%$ crude protein, $6.16{\pm}4.91%$ crude fat, and $4.6.87{\pm}1.76%$ crude ash. Beef jerky contained $26.64{\pm}5.21%$ moisture, $41.36{\pm}3.50%$ crude protein, $4.67{\pm}3.46%$ crude fat, and $7.21{\pm}1.91%$ crude ash. Water activity (Aw) of pork jerky was $0.73{\pm}0.09$ while that of beef jerky was $0.78{\pm}0.08$. Volatile basic nitrogen (VBN) content to jerky was 7.1~36.0 mg/100 g. There was no significant difference in the physicochemical composition of meat type (p<0.05). Coliform, Escherichia coli and Staphylococcus aureus were not detected in pork or beef jerky, whereas yeast and molds were detected below $1.2{\times}10^1CFU/g$ in beef jerky samples.

  • This study aims to investigate protein consumption market trends in Korea. Protein consumption was divided according to the protein source into meat, fishery, and plant-based protein. To accomplish the goal of this study, food purchase data from 525 households panels collected by the Rural Development Administration over the last 10 years were used. The results of the study showed an increase or decrease in protein consumption by protein type over the last 10 years, and a reason to explain this change has been suggested. Specifically, this study found a dramatic increase in the consumption of several proteins, including beef sirloin, beef tenderloin, seasoned beef & steak, pork belly, pork shoulder, pork neck, seasoned pork, pork cutlet, sweet and sour pork, canned ham, chicken drumstick, chicken breast, dak gangjeong, Chinese fried chili chicken, salmon, eel, abalone, squid, octopus, webfoot octopus, octopus minor, canned whelk, tofu, cold bean soup,and plant-based milk. Some items showed no increase in consumption (such as beef jerky, pork rib, sausage, bacon, whole raw chicken, cutlass fish, oyster, fish cake, crab stick, surimi sausage,and canned fishery), whereas a few items showed decreased consumption (e.g., mackerel, pollack, cod,and canned tuna)

  • The cost of production of high quality pork is compensated by high returns, but constraints by the market are increasing. A few opportunities to maintain and improve pork quality by dietary means are presented. The healthy value of pork is a prerequisite. A careful control of suppliers and preservation of feeds are essential to protect pork against presence of contaminants from the feed. The feeding level and some dietary components modify the partition of the dietary energy into different pig tissues and chemical components of pork, affecting the hygienic and nutritional value, tenderness and taste. It is difficult to transfer a nutrient from the diet to pork, if the requirements. for growth are satisfied. Fatty acids and Vitamin E are the most studied exceptions. There is some evidence that iron and selenium contents can be affected too. Varying the content of a nutrient frequently changes sensorial and technological properties of pork. The addition of oils improves the acidic profile of depot fats, but the effect on phospholipid composition is not well studied and negative effects on oxidability and consistency of meat products are observed. Vitamin E can improve many healthy and sensorial characteristics, but its effect is clearer when the meat is stressed or manipulated.

축산물 군납사업의 사회적 후생효과 분석 (The Welfare Effects of the Military Purveyance Program of Livestock Products)

  • This study empirically analyzed the welfare effect of the military purveyance program, which plays an important role in maintaining the sales channel and demand base in Korea's agricultural and livestock industry, as well as the stable supply of safe ingredients for military meals essential for the morale and combat power of soldiers. The military purveyance program causes additional demand for domestic livestock products, affecting the trading volumes and price levels in the market. This will change the welfare of producers and consumers, and affect the welfare of soldiers who are subject to military meals. The analysis results obtained through a simulation method based on the equilibrium displacement model are as follows. In the case of pork delivered for military service, producer surplus increased by KRW 55.3-62.2 billion and consumer surplus decreased by KRW 55.1~62.0 billion based on pork production in 2021. It wad analyzed that the consumer surplus in the military supply market, rather than the conventional market, increased by KRW 96.9 billion won, resulting in a total welfare gain of KRW 97.1 billion.

  • Consumers are increasingly quality orientated and an understanding of the factors that influence product quality is a prerequisite to the development of programs to produce quality pork to meet market requirements. Pork quality is comprised of many components and is multi-factorial in nature. This review focuses on genetic and environmental influences on muscle color, water holding capacity, and palatability attributes. The impact of genetic factors such as breed variation and the influence of major genes (the Halothane and Rendement Napole genes), as well as relationships between carcass leanness and quality, are considered. In addition, the effect of nutrition, including vitamins and minerals, feeding level, and dietary energy:protein ratio, on pork quality is reviewed. Finally, the impact of diet on fat composition and quality is summarized.

한식에 대한 하와이 현지 소비자들의 평가 (Consumer Test of Korean Food in Hawaii)

  • 하와이 호놀룰루에서 현지인을 대상으로 돼지갈비, 순두부찌게, 돼지불고기, 닭볶음, 삼계탕 등 전통 한식 10개 품목에 대하여 소비자 기호도 평가를 실시하였다. 참여자들은 총 436명이었으며 인종별로는 일본인 32.8%, 전형적 미국인(코카시언(백인)+아프리카계 미국인(흑인)) 25.3%로 주를 이루었으며 나이별로 거의 고른 분포를 보였고 성별에서는 남성이 여성 보다 20% 많았다. 기호도 평가 결과, 전반적으로 향 7.2~8.2점, 색상 7.0~8.2점, 맛 7.2~8.2점, 종합적 기호도 7.0~8.1점으로 우수하였고 종합적 기호도에서는 돼지갈비 8.2점, 돼지불고기와 감자조림이 8.1점, 닭볶음 8.0점, 김치제육볶음 7.9, 순두부 7.6점, 잡채와 두부조림 7.5점, 오징어볶음 7.2점, 삼계탕은 7.0점의 순으로 우수하게 평가되었다. 한편, 한식 시험운영 2달 후 전체적 기호도, 음식의 양, 음식의 품질, 가격, 조화도, 추천의사, 재구매의사, 민족음식으로서의 유일성, 타민족 음식과의 차별성, take-out의 편리성에 대하여 5점 척도법으로 평가한 바 4.1~4.6의 범위로 매우 우수하였다. 상기 결과를 통하여 평가된 10종의 한식 품목들은 미국 하와이 시장에서 충분한 경쟁력을 가질 수 있을 것으로 기대되었다.

Fate and Risk Comparison of Foodborne Pathogens in Raw Chicken, Pork, and Beef Meat at Various Temperatures

  • The objectives of this study were to investigate the behavior characteristics of pathogenic E. coli, Salmonella Typhimurium, Campylobacter jejuni, and Listeria monocytogenes in various kinds of meat (beef, chicken, and pork) and to compare their risk using FDA-iRISK. The growth of S. Typhimurium in chicken and pathogenic E. coli in pork and beef was well supported and posed a high risk. A similar trend was observed in the risk comparison results using the iRISK. When comparing total disability adjusted life years (DALY) per year based on the kinds of meat, chicken was the highest (88.2), followed by pork (58.5) and beef for "yukhoe" (18.8). When comparing scenarios grouped by bacteria, The highest total DALYs per year was observed with pathogenic E. coli (121), followed by S. Typhimurium (44.8) and L. monocytogenes (1.67E-3). These results indicate that the risk of combining meat and foodborne pathogens varies under the same distribution environment. Thus, strict management and supervision are required to store and deliver raw meat to prevent cross-contamination among the raw meats at the processing plant and retail market.

시판 육류중의 Tetracycline계 항생물질 잔류량과 가열분해에 관한 연구 (Studies on the Content and Heat Decomposition of Residual Tetracycline in Meats on the Market)

  • 육류중의 Tetracycline계 항상물질의 잔류량을 조사하기 위하여 시판 중인 쇠고기, 돼지고기. 닭고기 3종을 각각 3개시료씩 구입하여 Tetracycline(TC), Oxyteracycline(OTC) , Chlortetracycline(CTC) 의 잔류량을 분석하였으며, 아울러 잔류 항생물질의 조리가열에 의한 분해감소량을 조사한 결과는 다음과 같다. 1. 시판 육류중의 OTC 및 CTC 잔류량: OTC 잔류량은 닭고기의 경우 A 시료에서 흔적정도, B시료에서 불검출 , C시료에서는 0.09mg/kg이 검출되었다. 쇠고기 3개 시료에서는 C 시료에서만 돼지고기 A 및 B에서는 흔적정도로 검출되었다. CTC은 닭고기 A,C시료에서 0.14, 0.02mg/kg으로 각각 검출되었으며, 쇠고기와 돼지고기의 경우에는 쇠고기 B에서만 0.01mg/kg의 잔류량이 확인되었다. 2. TC 잔류량 : 쇠고기와 돼지고기의 Tc 분석에는 육류 자체에서 유래된 성분의 peak와 TC의 peak가 중복되어 잔류량의 판단을 방해하였으나, 닭고기의 경우에는 이러한 방해 성분이 없었으며, 3개중 A 시료에서만 0.01mg/kg의 잔류량이 검출되었다. 3. 가열방법별 항생물질의 분해정도 : 가장 고온가열인 굽기에서, 특히 TC 및 OTC의 분해가 많았다.. 4. 가열시간에 따른 분해정도 : 자불에서는 상당시간이 경과하여도 미량의 분해가 있었으나, 굽기에서는 시간경과에 따라 분해량의 현저한 증가를 보였다. 굽기와 같은 조리 효과를 가진 전자오븐 가열에서는 덜 분해되었다. 가열에 대한 각 항생물질의 내열성은 CTC>OTC>TC 의 순으로 나타났다.

Pig production in Latin America

  • Latin America is a culturally, geographically, politically, and economically diverse region. Agriculture in Latin America is marked by a remarkable diversity of production systems, reflecting various agroecological zones, farm sizes, and technological levels. In the last decade, the swine industry increased by 30.6%, emerging as a great contributor to food security and economic development in Latin America. Brazil and Mexico dominate the pig production landscape, together accounting for 70% of sow inventory in the region. The swine industry in Latin America is predominantly comprised of small and medium-sized farms, however, in the past 30 years, the number of pig producers in Brazil dropped by 78%, whereas pork production increased by 326%. Similar to the global pork industry, the growing demand for pork, driven by population growth and changing dietary habits, presents an opportunity for the industry with an expected growth of 16% over the next decade. The export prospects are promising, however subject to potential disruptions from global market conditions and shifts in trade policies. Among the challenges faced by the swine industry, disease outbreaks, particularly African Swine Fever (ASF), present significant threats, necessitating enhanced biosecurity and surveillance systems. In 2023, ASF was reported to the Dominican Republic and Haiti, Porcine Reproductive and Respiratory Syndrome (PRRS) in Mexico, Costa Rica, the Dominican Republic, Colombia, and Venezuela, and Porcine Epidemic Diarrhea (PED) in Mexico, Peru, the Dominican Republic, Colombia, and Ecuador. Additionally, feed costs, supply chain disruptions, and energy expenses have affected mainly the smaller and less efficient producers. The swine industry is also transitioning towards more sustainable and environmentally friendly practices, including efficient feed usage, and precision farming. Ensuring long-term success in the swine industry in Latin America requires a holistic approach that prioritizes sustainability, animal welfare, and consumer preferences, ultimately positioning the industry to thrive in the evolving global market.
