냉동 자연 송이버섯의 피클 조리법 표준화를 위한 연구 (A Study on the Characteristics of Pine-tree Mushroom(Tricholoma matsutake Sing.) Pickle for the Standard Recipe)

  • This study investigated the rheological and sensory characteristics of pickle with frozen pine mushroom. P3(Developed pickle seasoning) was the best by preference among three kinds of pine mushroom pickle seasoning. For flavor and functionality, pine mushroom pickle was processed by using three kinds of method(P3-1: P3+cinnamon 10 g, P3-2: P3+licorice 10 g and P3-3: P3+licorice 5 g+cinnamon 5 g). As a result, the product from P3-3(P3+licorice 5 g+cinnamon 5 g) was the best preferred pine mushroom pickle. The pH value of P3-3 was 2.15, 42.9 degrees Brix, and its color value was L(54.65), a(-1.61), b(17.87). Its texture level was higher than that of other products, but it would be lowered on storage. Until the 28th day of storage, microorganisms in pine mushroom pickle seasoning were detected less than 30 CFU/mL.

  • Pickle성분이 linolenic acid의 산화효소인 lipoxygenase와 methemoglobin (nonenzymatic oxidant)에 미치는 효과를 조사하였다. 그외, 피클 성분중 건조 양념내의 lipoxygenase, peroxidase와 catalase 활성도 조사하였다. 시중에 판매중인 일부 pickle brine은 lipoxygenase와 methemoglobin에 의한 linolenic acid의 산화를 억제하였다. Dill oil emulsion, 양파 농축액 (onion concentrate), oil cassia, polysorbate 80, turmeric acid와 같은 피클 성분들은 lipoxygenase와 methemoglobin에 의한 산화를 감소시켰다. Lipoxygenase의 활성은 garlic, mustard seed, red pepper에서 발견되었다. Peroxidase의 활성은 mustard seed에서만 존재하였으며, gall black pepper, allspice와 red pepper에서는 catalase의 활성이 있었다.

담금액 온도에 따른 히카마 피클의 저장 중 품질변화 (Quality Changes in Jicama (Pachyrhizus erosus) Pickle Due to Variations in Soaking Solution Temperature During Storage)

  • This study was carried out to determine the optimum temperature of the jicama pickle solution by evaluating physicochemical and sensory characteristics at various temperatures. The soaking solution of the jicama pickle was prepared at different temperatures (95, 75, 50, and 25℃). During storage, the titratable acidity, Brix, and the salinity of the jicama pickles increased, and these values increased with increasing temperature of the soaking solution. The higher the temperature of the soaking solution, the lower the L and b values. In all samples, the hardness increased rapidly until the 5th day of storage, and then gradually decreased. During storage, the jicama pickles showed a high tendency to harden at soaking solution temperatures of 75 and 95℃. Sensory evaluation indicated that the taste, flavor, crispness, and overall preference of the jicama pickle were higher at a soaking solution temperature of 75℃ and above. The higher the temperature of the soaking solution, the higher the acceptability. Based on these results, we conclude that soaking solution temperature of 75°¦95℃ in the manufacture of jicama pickles had a positive effect on the reduction in tissue softening and the sensory properties of the jicama pickle.

피클에 대한 인식 및 기호도 조사 -경북지역을 중심으로 - (A Survey on the Recognition and Preferences of Pickles in Kyongbuk Area)

  • 피클에 대한 인식도, 중요도 및 기호도를 조사한 결과, 다음과 같은 결론을 얻었다. 1. 버섯피클에 대해서는 94.8%가 안다고 하려고 피클을 주로 곁들여 먹는 요리는 '피자, 햄버거 등이고 피클이 가장 잘 어울리는 요리는 오븐요리와 서양요리(87.5%)이고 피클이 음식 전체에 미치는 영향에 대해서는 '식욕을 증대시킨다'가 3.97점으로 가장 높게 나타났다. 2. 피클 제조과정과 상품적 가치요인에 대한 중요도는 위생이 4.77점, 4.26점으로 가장 높았다. 3. 피클에 대한 기호도는 41.3%가 '좋다' 이상으로 나타났고 연령에 따라서는 10대와 20대가 30, 40대 보다 피클을 훨씬 좋아하였으며 좋아하는 피클의 절임 형태는 식초절임이 77.2%로 가장 많았다. 각 요리와 피클을 곁들여 먹었을 때의 기호도는 피자(3.80점)에 곁들이는 것을 가장 좋아한다고 하였고 다음으로 햄버거샌드위치(3.38점), 돈까스 (3.38점), 샐러드(3.26점), 햄버거스테이크(3.23점)의 순으로 기호도가 높았다. 반면 멕시코식의 화지타(2.61점), 안주요리의 훈제연어(2.74점), 찹스테이크(2.76점), 이태리식의 전채(2.87점), 불고기 라이스(2.90점), 멕시칸샐러드(2.91점) 등에 곁들여 먹었을 때의 기호도는 비교적 낮은 것으로 조사되었다. 4. 시판 피클을 선택할 때는 84.4%가 맛을 가장 으뜸으로 여긴다고 하였고 앞으로 개발되기를 바라는 피클의 종류는 과일 피클이 49.7%로 가장 많았고 그 다음으로 버섯피클이 19.2%이었다.

Pickling Spice를 달리하여 제조한 순무 피클 저장 중 이화학적ㆍ관능적 특성 (Physicochemical and Sensory Characteristics of Turnip Pickle Prepared with Different Pickling Spices During Storage)

  • 시판 pickling spice와 본 실험실에서 개발한 pickling spice를 사용하여 순무피클올 제조한 후 200(에서 저장하면서 이화학 석, 관능적 특성플 분석하였다. 염도, 환원당 함량, L, a 및 b 값, 기계적 경도 측정치는 두 시료간에 차이가 없었으나, 산 E는 본 실험섣에서 개발한 피클링 스파이스로 제조한 순무 페클(이하 순무피클M)이 시판되는 피클링 스파이스로 만든 피클(이하 순무피클P)에 비해 유의적으로 높았다(p<0.05) 관 능겁사결과, 붉은색의 정도, 새콤한 냄새, 향신료향, 전반적인 기호도의 항목은 두 시료 모두 저장 14일까지 증가하여 최고 치에 달한 후 그 이후 감소하였다. 운무냄새는 제조직 후에 높게 나티났고, 저장기간이 지남에 따라 점차 감소하였다. 경 도는 저장기간이 경파됨에 따라 감소하였다. 순무피클M은 향신료향, 상큼한 신맛, 천반적인 기호도 접수가 순무피클P에 비하여 유의적으로 높았으며(p<0.05), 저장 14일에 전반적인 지호도 접수는 순무피클 M이 8.0접, 순무피클 P가 6.1점으로 순무피콜 M이 순무피올 P에 비하여 유의적으로 높았을 뿐 아니라 저장28일까지도 유의적으로 높아 본 실험실에서 개발 한 pickling spice로 만든 순무피클은 기호도와 저장면에서 우 수하였다.

Determination of Suitable Kohlrabi (Brassica oleracea var. gongylodes) Cultivars for Pickle Preparation

  • This study was designed to determine the best cultivar of kohlrabi for making pickles among KM-1 (Worldcol), KM-2 (Bejo), KM-3 (Takii), and KM-4 (Monsanto) cultivars. The initial pH of pickles was different in all cultivars; however, they all had a pH in the range of 3.81~3.86 after 28 days of storage. The pickles made from KM-4 had the lowest acidity, while there was no significant difference in acidity among the KM-1, KM-2, and KM-3 pickles. The salinity of all kohlrabi pickles was consistent during the storage period. The changes of color values were accelerated in the following order: KM-4>KM-1>KM-2>KM-3. Though kohlrabi pickles were non-fermented, the change in reducing sugar contents was similar to that of a fermented pickle. The highest value of reducing sugar content was found in pickles made with KM-4. In all cases, the firmness of the pickle decreased as time of storage increased. On the initial day, KM-4 pickle showed the highest firmness with 807.4 g. KM-4 also showed the highest firmness on the 28th day of storage with 602.3 g. In sensory evaluation, the KM-4 pickle exhibited the highest texture (hardness) among the pickles. The pickle made with the KM-4 cultivar showed relatively higher firmness of texture than other cultivars, suggesting that KM-4 could be utilized in other kinds of processed foods, in addition to being pickled.

당근과 무 피클의 저장기간 중의 성분 및 기호도의 변화 (The Changes of Components and Texture out of Carrot and Radish Pickles during the Storage)

  • 무와 당근으로 피클을 만들어 저장기간에 따른 변화들을 측정한 결과 다음과 같이 결과를 나타냈다. 1. 저장 기간에 따라 기계적 rheometer의 hardness는 무 피클보다 당근 피클 시료의 값이 높았다. 2. 색도에서 명도는 무피클의 저장기간에 따라 L값이 낮아졌고 당근 피클은 L값의 변화가 크지 않았다. a 값은 당근 피클이 무 피클보다 높았고, 무 피클은 시간이 지남에 따라 증가하였다. b 값은 무 피클의 보다는 당근 피클이 높았으나 무 피클도 b값의 변화를 나타내었다. 3. pH는 무 피클은 초기의 4.6에서 3.68로 낮아졌고 당근 피클은 4.7에서 4.0으로 낮아졌다. 4. 대장균과 일반 세균은 두 시료 모두 저장 기간 중에 대장균은 발견되지 않았고 일반 세균도 당근 피클의 경우는 실험 첫째날 이후로는 더 이상 발견되지 않았고, 무 피클은 20일까지는 증가하다가 그후로는 변화가 없었다. 5. 관능 검사 결과 무 피클은 hardness의 저하와 역겨운 맛이 증가가 하였고, 당근 피클은 신맛의 증가와 hardness의 저하도가 낮았으나, 전체적인 기호도에서는 당근 피클의 기호도가 낮았다. hardness의 기계적 측정과 관능 검사의 결과는 모두 전체적인 기호도와 1%내의 상관도를 나타냈다.

반응표면법을 이용한 양송이버섯 피클의 관능적 특성 최적화 (Optimization on Organoleptic Properties of Mushroom (Agaricus bisporus) Pickles using Response Surface Methodology)

  • The purpose of this study was to determine the organoleptic properties of mushroom pickles made at various compounding ratios according to central composite design for optimum organoleptic properties. In this study, various kinds of mushroom pickle were made at different compounding ratios of vinegar, sugar and salt-critical ingredients of the pickle recipe and the products were presented to an expert panel, who graded the subjects in 7 degrees for 5 items: color, flavor, hardness, taste and overall quality. As a result of sensory quality, mushroom pickles with 300g of vinegar, 150g of sugar and 60g of salt achieved the highest grade. Meanwhile, the results of Response Surface Methodology were different from the sensory quality results, showing that the optimum mixing conditions for overall organoleptic properties of mushroom pickle were 279.58g of vinegar, 179.34g of sugar and 59.09g of salt. 데리야끼(Teriyaki) 조미액을 이용한 송이 데리야끼 절임의 품질 특성 (Quality Characteristics of Pine Mushroom Teriyaki Pickle Prepared by Teriyaki Seasoning)

  • The pine mushroom is recognized as a valuable functional food and is considered the first kind of mushroom. One of the product development plans for the pine mushroom is a Teriyaki pickle. The physical properties and sensory evaluation of this product were measured, as well as sensory evaluations and microbe tests after a storage period. 9 types of high pressure-cooking conditions with Teriyaki seasoning were tested. The Teriyaki seasoning was heated from $110^{\circ}C$ for 2 hours, 1 hour or by the traditional method. Based on our testing and evaluations, the pine mushroom Teriyaki pickle heated from $110^{\circ}C$ for 2 hours or 1 hour had the highest preference and color ; Odor and overall preference increased with longer storage periods. Also, from the 21st day, the microbe levels in the traditional method Teriyaki seasoning measured less than those in 30 others. But, until storage 28th day, no microbes were detected in Teriyaki seasoning liquid from the high pressure-cooking condition. As a result, the high pressure-cooking condition was a simpler manufacturing process than the traditional method. The salinity of Teriyaki seasoning liquid from the high pressure-cooking condition was relatively lower than that from the traditional method. Therefore, the pine mushroom pickle prepared with Teriyaki seasoning under high pressure-cooking conditions will be considered for commercialization. The pine mushroom Teriyaki pickle heated from $110^{\circ}C$ for 2 hours was preferred the most, so this method is suitable for the Teriyaki seasoning.

  • More thau thirty kinds of sea food pickles have been eaten in Korea. Out of these, salted small sardine pickle was analyzed of their components and investigated the enzyme characteristics concerned. Also studied was the effect of enzymes on the production of flavorous 5'-mononucleotides. The results are summarized as follows: 1) No accumulation of flavorous 5'-mononucleotides was demonstrated because RNA-depolymerase in the raw materials and the pickles tended to decompose RNA into nucleoside and phosphoric acid. 2) 5'-Inosinic acid and 5'-adenylic acid were found in large amounts in the salted small sardine pickle. 3) 5'-Inosinic acid was contained in the salted small sardine pickle in a significant concentration, and it might be considered to be inosinic acid-type.
