This study developed a fermented chestnut puree by lactic acid bacteria fermentation using steamed chestnut paste at 95℃ for 90 min and the quality characteristics were investigated. In addition, quality of the characteristics of the fermented chestnut puree during fermentation by lactic acid bacteria were reported. 12 strains of lactic acid bacteria were inoculated to steamed chestnut paste at a concentration of 2%(v/w), respectively, and incubated at 37℃ for 48 hr. Lactobacillus plantarum(KCTC 21004) was the most superior in acid production among 12 strains of lactic acid bacteria to the fermented chestnut puree. The effect of steamed chestnut concentration, inoculum size and fermentation temperature for fermented chestnut puree on physical properties and fermentation characteristics were investigated. As a result there was no significant difference on physiochemical properties but the optimum concentration of the steamed chestnut for puree properties is 50%.
Proximate analysis of Ipomea batatass L. grown in two different locations in Imo State were investigated. Standard soil analytical method was used to determine the physiochemical contents of the two soil sample collected from Mgbidi and Orji Ipomea batatass L. farm land. The soil sand from Ipomea batatass L. root in Orji farm recorded highest percentage value of 75.00% compared to the soil sand Ipomea batatass L. root in Mgbidi farm with 27.00% value. The percentage value of silt was different as the soil Ipomea batatass L. root in Mgbidi farm had high value of 29.40% while soil silt of Ipomea batatass L. root in Orji farm had 13.40%. The soil clay, pH, Phosphorus and Nitrogen from Ipomea batatass L. root in Mgbidi farm recorded highest percentage value of 43.60%, 5.7, 23.20 and 0.35 compared to the soil sand Ipomea root in Orji farm with 11.60%, 5.4, 16.70 and 0.09 value respectively. Ca, Mg, K, and Na analyzed followed the same trend as the soil from Ipomea root in Mgbidi farm had high percentage value of Ca (10.00), Mg (1.60), K (0.54) and Na (0.43) respectively. The systematic study of physiochemical of the Ipomea soils could help in understanding the nutritional composition, the basic characteristics of the soils and the constraints associated with the management of the soils from the two locations.
Two hydrophobic imidazolium based ionic liquids including 1-benzyl-3-butylimidazolium hexafluorophosphate [BzBIM]PF6 and 1-pentyl-3-butylimidazolium hexafluorophosphate [PBIM]PF6 having the same anion and different cation parts were synthesized. The structural composition of these ionic liquids were confirmed with Fourier-transform infrared spectroscopy (FT-IR) and proton nuclear magnetic resonance (1H-NMR). Their physiochemical properties such as viscosity, ionic conductivity and thermal stability alongside electrochemical potential window range for both ionic liquid electrolytes were characterized and compared to each other. The overall results revealed that [BzBIM]PF6 has higher thermal and electrochemical stabilities and viscosity than that of [PBIM]PF6 probably due to the presence of benzyl ring in the imidazolium cation providing strong intermolecular π-π interactions.
This study was conducted to understand the quality characteristics of 89 types of commercial salt-fermented fishery products by measuring their physiochemical compositions and biogenic amine contents. All samples had the following measurements; 41.59-89.20 g/100 g of moisture, 1.71-25.70 g/100 g of salinity, 3.21-7.05 of pH, 0.80-2.93 g/100 g of total nitrogen, 87.02-1,296.78 mg/100 g of amino nitrogen, and 7.30-926.34 mg/100 g of volatile basic nitrogen. The physicochemical components differed extensively between samples from different raw materials, including, fish, shellfish, and others. Histamine (0 to 1,072.2 mg/kg), putrescine (0 to 2,536.4 mg/kg), cadaverine (0 to 545.2 mg/kg of cadaverine), tryptamine (0 to 1,287.9 mg/kg), and tyramine (11.3 to 563.3 mg/kg) were the major biogenic amines detected in the samples. These findings suggest that salt-fermented fishery products meet the domestic criteria but have different ingredient compositions and most had high biogenic amine contents. The results suggest that it is necessary to establish criteria for evaluating the quality characteristics using the ingredient composition and biogenic amine contents of commercial salt-fermented fishery products.

Microfibrillated cellulose (MFC) is a valuable material with wide industrial applications, particularly for the food and cosmetics industries, owing to its excellent physiochemical properties. Here, we prepared high-solid microfibrillated cellulose (HMFC) from the centrifugation of Gelidium amansiiderived MFC right after fibrillation. Dispersion properties, morphology, and structural changes were monitored during processing. HMFC has a five-fold higher solid concentration than MFC without significant changes to dispersion properties. SEM images and FTIR spectra of HMFC revealed a stable surface and structure against centrifugal forces. HMFC exhibited 2,2'-azino-bis (3-ethylbenzothiazoline6-sulfonic acid) (ABTS) radical scavenging activity, although it could not scavenge 2,2-diphenyl-1- picrylhydrazyl (DPPH). Moreover, HMFC inhibited the generation of LPS-induced excessive nitrite and radial oxygen species in murine macrophage RAW264.7 cells. Additionally, HMFC suppressed LPS-induced Keap-1 expression in the cytosol but did not alter iNOS expression. HMFC also attenuated the UVB-induced phosphorylation of p38, c-Jun N-terminal kinase (JNK) 1/2, and extracellular-signal-regulated kinase (ERK) 1/2, as well as the phosphorylation of c-Jun in the immortalized human skin keratinocyte HaCaT cells. Therefore, the application of centrifugation is suitable for producing high-solid MFC as a candidate material for anti-inflammatory and antioxidative marine cosmeceuticals.
In this study, we evaluated productivity, soil physiochemical properties, and soil microbial characteristics in Kimchi cabbage(Brassica rapa subsp. pekinensis) cultivation within a highland environment during summer. Specifically, we examined the effect of different cropping systems, namely monoculture and rotation with soybean, over an 8-year cropping period. The results of our investigation revealed that significant differences were absent in terms of yield and soil physiochemical properties between the two cropping systems. However, microbial characteristics exhibited distinctive patterns. Bacterial diversity was significantly higher in the rotation system that in the monoculture, whereas fungal diversity demonstrated a preference for rotation although the result was not significant. Our findings identified the presence of Bradyrhizobium stylosanthis, a nitrogen-fixation symbiont, as an indicator ASV (amplicon sequence variant) in the rotation system, where it displayed significantly higher abundances. These observations suggest a potential positive effect of the rotation system on nitrogen fixation. Notably, throughout the cultivation period, both cropping systems did not exhibit critical disease incidences. However, Fusarium oxysporum, a well-known pathogen responsible for inducing fusarium wilt disease in Kimchi cabbage, was detected with significantly higher abundance in the monoculture system. This finding raises concerns about the potential risk associated with Kimchi cabbage cultivation in a long-term monoculture system.
This research investigated the synergic outcome of high intensity ultrasound (HIU) treatment and wet-dry combined aging (WDCA) on physiochemical characteristics and lipid oxidation during refrigerated storage to ameliorate pork meat's quality and shelf life. The CIE b* values, cooking loss (CL %), and pH of the HIU treated samples were higher than those of the control over the aging period. They were significantly (p<0.05) modified by the aging period and ultrasound (US) treatment. However, the released water (RW %) and moisture were not significantly influenced by US treatment (p>0.05). The Warner-Bratzler shear force of HIU-treated samples was lower over control values except in 7-14 d, and it showed a significant difference between control and US treatment according to the significance of HIU (p<0.05). The thiobarbituric acid reactive substance of HIU-treated samples was significantly higher (p<0.05) than control values over the aging period. These results suggested that HIU treatment and WDCA showed a synergistic effect of maximizing the tenderness, but lipid oxidation was higher than before ultrasonic treatment. In agreement with this, the most favorable approach would involve implementing wet aging for a period of two weeks followed by dry aging for a period not exceeding one week after the application of HIU.

Norfloxacin complexes of $Fe^{2+}$, $Cu^{2+}$ and $Al^{3+}$ have been prepared as solids. The stoichiometry of the complexes has been established. IR investigation indicates the metal-ligating sites in norfloxacin. The bioactivities of complexes all lower than that of norfloxacin. The solubilities and partition coefficients have been measured as a function of temperature. The data are used to evaluate the thermodynamic parameters ${\Delta}G$, ${\Delta}H$, ${\Delta}S$ for the solute transfer process and compared with the parent quinolone, norfloxacin. The existence of such complexes is discussed in the light of quinolone mode-of-action theories.
Genistein, one of the isoflavones in doenjang, is generally known to prevent various cancers, osteoporosis, climacterium, and menopause symptoms, and has better bioavailability and healthful physiological effects than its glucoside, genistin. In both traditional and commercial doenjangs, genistein content ranged from 370 to 1,510 mg/kg, however, significant amounts of genistin also existed at the level of 190 to 350 mg/kg. After treating with corn $\beta$-glucosidase, over 84% of genistin in doenjang was converted to genistein. However, physiochemical characteristics such as pH, viscosity, 2-thiobarbituric acid (TBA) value, and color were not changed significantly after corn $\beta$-glucosidase treatments. Therefore, this study shows that the improved doenjang with the increased genistein content can be produced using corn $\beta$-glucosidase.
In research. which Korean pickled cucumber was treated wish various methods, including blanching. brining in hot solution, and treating with trehalose. I examined the changes of properties of material. The Korean pickled cucumber were fermented 4∼5$^{\circ}C$ for 42 days in 1% salt solution. The physiochemical properties were pH, total acidity, total cell count, lactic acid bacteria and texture properties were also evaluated. The result showed that the effect of blanching and soaking cucumber in 100$^{\circ}C$ hot salt solution significantly reduced the softening rate of texture while a rather rapid fermentation was found for those preserved with salt. The effect of trehalose treatment inhenced fermentation but it was significantly reduced softening rate of texture. The texture evaluation of Korean pickled cucumber was found that heat treatment with blanching after soaked in hot solution and trehalose treatment had a positive effect for reduction of softening of cucumber tissue.
