Physicochemical Characteristics and Antioxidant Activities of Organic Strawberries (유기농 딸기의 이화학적 품질특성)

  • Increasing use of organically grown foods has renewed interest in the relationship between agricultural methods and food quality. The objective of this study was to evaluate the physicochemical characteristics and antioxidant activities of organic strawberries. For this study, strawberries were measured in terms of quality characteristics, including weight, length, diameter, hunter color, soluble solid contents (SSC), moisture contents, and pH, as well as antioxidant activities, including DPPH and ABTS radical scavenging activities and total phenol and flavonoid contents. Consequently, conventional strawberries showed higher weight, diameter, and L (lightness) and b (yellowness) values than organic strawberries (p<0.001). Length, moisture contents, pH, a (redness) value, and DPPH and ABTS radical scavenging activities were similar (p<0.05). However, organic strawberries showed higher SSC and total flavonoid and phenol contents than conventional strawberries (p<0.001). These results indicate that there were significant differences between organic and conventional agriculture techniques.

Comparison of Meat Quality and Physicochemical Characteristics of Pork between Korean Native Black Pigs (KNBP) and Landrace by Market Weight (출하체중에 따른 재래돼지와 랜드레이스의 도체 및 돈육의 이화학적 특성 비교)

  • Results of meat quality, physicochemical characteristics, fatty acid and amino acid composition of the Korean Native Black Pig(70 and 90 kg of slaughter weight; KNBP) versus Landrace(110kg of slaughter) are as below. Compared with Landrace, the KNBP exhibited a greater lean meat yield, with no difference in backfat thickness between Landrace and KNBP. There were no difference in chemical composition between Landrace and KNBP, but pH, and cooking loss in the KNBP were superior value than those of the Landrace. These results, KNBP were affected in sensory property and cooking yield. Amino acid content of KNBP and Landrace were significant differences between Landrace and KNBP. Except for the methionine, essential amino acid contents of KNBP had significantly higher than those of Landrace. In the change of fatty acid composition, the Landrace had significantly higher percentages of palmitic(l6: 0), stearic(18: 0) and linolenic(18: 3) acids than that of KNBP, but linoleic acid(l8: 2) was decreased.

Physicochemical and Sensory Quality Characteristics of Mango-Jelly added with Antler Powder (녹용첨가에 따른 망고젤리의 이화학적 관능적 품질특성)

  • The purpose of this study was to investigate the effects of the addition of various concentrations of antler powder on the physicochemical and sensory characteristics of mango jelly As for pH and viscosity of the mango jelly, antler powder added group showed higher pH and viscosity than that of control group. As for turbidity, absorbance increased significantly(p<.001) by the addition of antler while permeability decreased. The syneresis increased with the passage of time. According to sensory evaluation, Sleekness showed the highest by adding $0.2\%$ antler powder in mango jelly. The hunter color L and b value decreased significantly(p<.001) by adding antler powder. The mechanical properties such as hardness, springiness, cohesiveness and brittleness were highest by adding $1.0\%$ antler powder while gumminess was highest by adding $0.2\%$ antler powder in mango jelly. Overall quality, taste, appearance, texture were most superior by adding $0.2\%$ antler powder in mango jelly. From these test results, the optimum recipe for mango jelly added with antler powder was $0.2\%$ of antler powder, $10\%$ sugar, $\2%$ agar and 351.2ml of mango juice.

Studies on Physicochemical Characteristics for Quality Control of Zizyphi Fructus by Appearance Grade (국산 건대추의 외형 등급별 품질특성 연구)

  • Background: The purpose of this study was to analyze the applicability of dried jujube (Zizypui Fructus) distributed by size as a functional food material and herbal medicine by evaluating its physicochemical characteristics and betulinic acid content. Methods and Results: It was shown that the carbohydrate content of in jujube fruit significantly increased with fruit size; 81.42% for large, 79.83% for medium, and 76.39% for small. Similarly, the dilute ethanol extract content of each group was 72.48% (large), 69.56% (medium), and 64.16% (small). A free sugar analysis indicated that glucose, fructose and sucrose were found in quantitieds proportional to jujube fruit size, the total free sugar values were 68.85%, 63.93%, and 57.37% for large, medium, and small fruit sizes respectively. The betulinic acid content for large, medium, and small fruit was 0.50 mg/g, 0.54 mg/g, and 0.58 mg/g respectively, indicating that smaller jujube contained a higher amount of betulinic acid. Conclusions: It is considered that betulinic acid content could be used as a criteria for jujube fruit quality control.

Physicochemical properties of sausage manufactured with carp (Carassius carassius) muscle and pork

  • The purpose of this study was to compare the physicochemical properties of sausage manufactured with carp (Carassius carassius) muscle and pork. Sausages were prepared using either 100% pork sausage (P10), a mixture of 50% pork and 50% carp muscle (P5C5), or 100% carp muscle (C10). The quality of the sausage emulsion was determined by analyzing approximate composition, pH, instrumental color, cooking yield, water holding capacity (WHC), viscosity, and texture profile analysis (TPA). Moisture content of cooked C10 was significantly higher than that of P10 or P5C5 (p < 0.05); however, protein content of cooked P10 was significantly higher than that of C10 (p < 0.05). The pH of uncooked and cooked C10 was significantly higher than that of P10 and P5C5 (p < 0.05). The cooking yield, WHC, and texture profile analysis of C10 were higher than those of P10 and P5C5 (p < 0.05). In addition, the viscosity of uncooked C10 was higher than that of P10 and P5C5. These results suggest that carp muscle can enhance sausage quality with respect to pH, WHC, cooking yield, viscosity, and TPA.

Long-term Changes of Physicochemical Water Quality in Lake Youngrang, Korea

  • Physicochemical properties of water quality were analyzed to understand the long-term variations in Lake Youngrang from 1998 to 2015. Nonparametric statistical methods were applied to deduct correlation among water quality parameters and water quality trend. In total observations(N=64), the Secchi depth (SD) transparency showed significant positive correlation with salinity (r=0.458) and highly significant negative correlation with chlorophyll-a (r= -0.649) for p<0.0001 in two-tailed test of Spearman's rank correlation. Significant negative correlations of SD were observed with chemical oxygen demand (COD), total phosphorus (TP) and total nitrogen (TN). These correlation patterns were very similar in rainy (N=25) and non-rainy (N=39) periods too. Chlorophyll-a (Chl-a) had significant correlation with COD. Sen's slope test was performed along with Mann-Kendall trend test (significance ${\alpha}=0.05$, two-tailed) to find water quality trend. Positive trends were observed for SD and salinity with Sen's slopes 0.012 and 0.385, respectively (p<0.0001). Negative significant trends were observed for total nitrogen (TN) and Chl-a with Sen's slopes -0.02 (p<0.0001) and -0.346 (p=0.0010), respectively. Temperature, COD and phosphorus components had no trends. Carlson's trophic state index (TSI) for SD, TP and Chl-a were obtained in the ranges of 46~80, 37~82 and 39~82, respectively. Trophic index values suggest that Lake Youngrang was mesoeutrophic to eutrophic and there could be possibility of anoxia during the summer and dominance of blue-green algae. Excess nutrient inputs from external and internal sources were the causes of eutrophication in this lake. The findings of this study would be helpful to recognize water quality variables to manage the water body.

Responses of Low-Quality Soil Microbial Community Structure and Activities to Application of a Mixed Material of Humic Acid, Biochar, and Super Absorbent Polymer

  • Low-quality soil for land reuse is a crucial problem in vegetation quality and especially to waste disposal sites in mining areas. It is necessary to find suitable materials to improve the soil quality and especially to increase soil microbial diversity and activity. In this study, pot experiments were conducted to investigate the effect of a mixed material of humic acid, super absorbent polymer and biochar on low-quality soil indexes and the microbial community response. The indexes included soil physicochemical properties and the corresponding plant growth. The results showed that the mixed material could improve chemical properties and physical structure of soil by increasing the bulk density, porosity, macro aggregate, and promote the mineralization of nutrient elements in soil. The best performance was achieved by adding 3 g·kg-1 super absorbent polymer, 3 g·kg-1 humic acid, and 10 g·kg-1 biochar to soil with plant total nitrogen, dry weight and height increased by 85.18%, 266.41% and 74.06%, respectively. Physicochemical properties caused changes in soil microbial diversity. Acidobacteria, Bacteroidetes, Chloroflexi, Cyanobacteria, Firmicutes, Nitrospirae, Planctomycetes, and Proteobacteria were significantly positively correlated with most of the physical, chemical and plant indicators. Actinobacteria and Armatimonadetes were significantly negatively correlated with most measurement factors. Therefore, this study can contribute to improving the understanding of low-quality soil and how it affects soil microbial functions and sustainability.

Characteristics on Seasonal Variation of Stream Water Quality on Upland Headwater Streams in Forested Catchments (산림유역의 계류수질 현황 및 계절적 변동 특성)

  • Seasonal variability of water quality in the upland headwater streams in ten forested catchments (37.0~209.0 ha) was examined from April to November 2021. Here, seven physicochemical parameters were analyzed including pH, electrical conductivity (EC), biochemical oxygen demand (BOD), chemical oxygen demand (COD), total nitrogen (T-N), total phosphorous (T-P), and BOD/TOC. The parameters were compared with those of lowerland rivers as middle and lower reaches within a watershed. The pH showed was low (6.4~6.9) during all the seasons, however, BOD and BOD/TOC in the fall season were 2-fold higher than in the spring and summer seasons. Based on environmental standards, the water quality level revealed that the upland headwater streams maintained the purity and cleanliness of water except for pH in the summer season. BOD/TOC of all the seasons and BOD of the fall season in the upland headwater streams were higher than that in the lowerland rivers, whereas the rest of the physicochemical parameters in the upland headwater streams were lower than that in the lowerland rivers. Additionally, the water quality level maintained the purity and cleanliness of water as "Good" in two reaches. The unique aspects of our study design enabled us to draw inferences about water quality characteristics with temporal and spatial analysis in upland headwater streams. This design will be useful for the long-term strategy of effective water quality management for integrated upland headwater streams and lowerland rivers within a watershed.

Effects of Dietary Energy Level on Growth Efficiency and Carcass Quality Traits of Finishing Pigs

  • A total of 96 non-lean-type (Yorkshire $\times$ Landrace) $\times$ Duroc gilts and barrows weighing approximately 80 kg were randomly allocated to 24 pens under a 2 (sex) $\times$ 3 [diet; 3.4, 3.2, and 3.0 Mcal DE/kg {'high'-, 'medium'-, and 'low'-energy diets (HE, ME, and LE), respectively}] factorial arrangement of treatments. All animals were slaughtered approximately at 115 kg, after which carcass quality traits and grades and physicochemical and sensory characteristics of the loin related to meat quality were analyzed. The ADG and gain:feed were not affected by the sex or dietary treatment, whereas ADFI was greater in the ME vs HE group. Backfat thickness was greater in barrows vs gilts and also in ME and HE vs LE only in barrows. Enumerated carcass marbling and quality grade, which were highly correlated (r=0.56; P<0.01), were greater in barrows vs gilts. Physicochemical characteristics including the color, pH, drip loss and contents of moisture, protein, and fat of fresh loin, as well as sensory characteristics of fresh and cooked loin, were not affected by the sex or dietary treatment, except for shear force for cooked loin which was greater (P<0.05) in LE and ME vs HE. In conclusion, it is thought that ME is comparable to HE in terms of the effect on growth and carcass quality of finishing pigs, but that the relative effect of LE vs ME needs to be further studied.

Quality and physicochemical characteristics of soybean flours after germination and roasting (발아와 볶음처리에 따른 콩가루 품질 및 이화학 특성)

  • The quality and physicochemical characteristics of the soybean flours after germination and roasting were evaluated to partly fulfill the purpose of establishing quality standards of soybean flours for each of their applications. Moisture content of roasted soybean flours decreased significantly based on the roasting conditions, and crude ash, protein, and fat content increased. Water binding capacity increases with an increase in roasting temperature and time; however, water solubility index and swelling power decreased. The lightness of roasted soybean flour decreased significantly, and its redness and yellowness increased in intensity. Phenolic compounds and radical scavenging activity of roasted soybean flour increased with an increase in roasting temperature and time. 2,2'-Azino-bis(3-ethylbenzothiazoline-6-sulphonic acid) radical scavenging activity of roasted soybean flour without and with germination was 380.88-537.32 and 419.34-587.99 mg TE/100 g, respectively. Consequently, it is necessary to set quality standards for each application, considering the quality and antioxidant properties of roasted soybean flours.
